  • This study was performed to investigate the carcass composition and pork quality of Duroc breeding lines in Korea. A total of 200 Duroc pigs were used, and those were originated from four different great-grandparent (GGP) breeding stock farms (L1: N farm, L2: W farm, L3: S farm, L4: R farm). The carcasses of pigs from these farms were collected, and meat quality traits were evaluated. L1 and L2 had smaller carcass weights and thin backfat, whereas L3 and L4 had heavy carcass weights and thick backfat. L3 and L4 had higher contents of fat and protein than L1 and L2. For the meat quality characteristics, L1, L2, and L4 had higher pH values than L3. In addition, L4 had higher water holding capacity than the other lines. L4 had the highest sensory evaluation scores with regard to both juiciness and flavor. Consequently, the study results indicate that pork quality information from domestic Duroc breeding stock lines could be used to effectively improve pork quality in Korea.

  • In this paper, we propose a method that measures quality of digital correlator. Quality of digital correlator in field of image composition of radio astronomy have as important position for acquisition of radio wave image with high precision. Digital correlator should have wide bandwidth and high precision to study on deep space. Digital correlator, therefore, should be designed to have high speed processing and high precision. But, real time measurement of quality of digital correlator using acquisition data is difficult to compare accuracy of result because digital correlator should process a large quantity of data with high speed. Measurement method of quality, also, has intricate implementation of experiment equipment. this paper present methods that compose experiment equipment without external installation easily and verify quality of digital correlator perfectly.

  • For high quality bread wheat production in Korea, it is necessary to develop optimal nitrogen (N) fertilizer methods. For optimal N fertilizer, we evaluated the alteration of growth, yield, yield components and end-use qualities according to the treatment of N fertilizer amounts and timings at heading stages. Growth, yield, yield components, and end-use quality weren't altered by various timings of N fertilizer treatment conditions whereas, 1,000 grain weight and lodging degree was increased by increasing amounts of N fertilizer treatment conditions at 7 days after heading (7 DAH). Especially, lodging degree was significantly increased by 6kg/10a of N fertilizer treatment conditions at 7 DAH. The flour protein contents increased by various amounts of N fertilizer treatment conditions. However, SDS-sedimentation and bread loaf volumes were decreased by exceeding 6kg/10a of N fertilizer treatment conditions at 7 DAH. When considering the quality of bread, 6kg/10a N fertilizer treatment is best, but 3kg/10a N fertilizer treatment is more suitable for both quality and lodging at 7 DAH. Therefore, it is preferable to fertilize 3kg/10a of nitrogen at 7 DAH in addition to standard fertilizer when cultivate bread wheat.

  • The objectives of this study were to know the effect of repeated freeze-thaw cycles of beef on the sensory, physicochemical quality and microbiological assessment. The effects of three successive freeze-thaw cycles on beef forelimb were investigated comparing with unfrozen fresh beef for 75 d by keeping at $-20{\pm}1^{\circ}C$. The freeze-thaw cycles were subjected to three thawing methods and carried out to know the best one. As the number of freeze-thaw cycles increased color and odor declined significantly before cook within the cycles and tenderness, overall acceptability also declined among the cycles after cook by thawing methods. The thawing loss increased and dripping loss decreased significantly (p<0.05). Water holding capacity (WHC) increased (p<0.05) until two cycles and then decreased. Cooking loss increased in cycle 1 and 3, but decreased in cycle 2. pH decreased significantly (p<0.05) among the cycles. Moreover, drip loss, cooking loss and WHC were affected (p<0.05) by thawing methods within the cycles. 2-Thiobarbituric acid (TBARS) value increased (p<0.05) gradually within the cycles and among the cycles by thawing methods. Total viable bacteria, total coliform and total yeast-mould count decreased significantly (p<0.05) within and among the cycles in comparison to the initial count in repeated freeze-thaw cycles. As a result, repeated freeze-thaw cycles affected the sensory, physicochemical and microbiological quality of beef, causing the deterioration of beef quality, but improved the microbiological quality. Although repeated freeze-thaw cycles did not affect much on beef quality and safety but it may be concluded that repeated freeze and thaw should be minimized in terms of beef color for commercial value and WHC and tenderness/juiciness for eating quality.

  • This study was conducted to investigate the impact of harvest time on yield and seed quality in purple seed coat peanut. Compared to the average Virginia peanut variety, 'Heuksaeng', purple peanut variety has been reported to experience yield loss and reduced seed quality under delayed harvest. We examined the yield components and seed quality at different harvest times from 70 to 110 days after flowering (DAF), with harvesting occurring at intervals of 10 days. The number of mature pods per plant reached a maximum of 51.0 at 80 DAF, and average pod and seed yield peaked at 80 DAF with values of 5,229 and 3,532 kg per ha, respectively. Seed quality drastically decreased after 100 DAF, and the concentrations of two major anthocyanin compounds were significantly lower under delayed harvest. The antioxidative activities of DPPH and ABTS decreased to only 69 and 83% of their maximum values at 110 DAF. On the basis of these results, we recommend that 'Heuksaeng' is harvested approximately 10 to 15 days earlier that average Virginia-type cultivars to obtain the highest yield while minimizing the deterioration of seed quality.

  • The several enzymes reaction which involve the quality change of fresh vegetables, such as chlorophylase, polyphenol oxidase, lypoxygenase, C-S-lyase, myrosinase and enzymes related lignification were reviewed. Numerous enzyme reaction continuously proceeds to the deterioration of vegetables after harvest due to the respiration and biochemical metabolism reaction, especially in case of physical injuring. It is extremely important to inhibit and to control these enzyme reaction in order to maintain the organoleptic and nutritional quality of fresh vegetables.

  • Purpose - In a global economy, marketers are required to understand service quality from an international consumer viewpoint. Despite the increased need for cross-cultural research, few studies have developed service quality research international in scope. The present research aims to shed light on variations in airline service quality among international consumers. Research design, data, and methodology - Conducting crosscultural research, this study compares airline service quality variations, investigating an international consumer group and a Korean consumer group. T-test and factor analyses are applied to examine mean scores and factor structure of the airline service dimensions. Results - The results indicate there are significant differences in mean comparisons between the groups. The international consumers indicate significantly higher service perception scores than the Koreans. Further, we find that the factor structure of airline service quality diverges between the groups. The international group considers airline service quality in four dimensions, while Koreans consider it in two. Conclusions - The study sheds new light on international service variations and suggests that the field of airline service quality may differ by nations and/or cultures.
