자색당근 첨가가 돈육 햄버거 패티의 품질에 미치는 영향 (Effect of Black Carrot (Daucus carota L.) on the Quality of Pork Hamburger Patties)

  • The purpose of this study was to investigate the effects of black carrot (Daucus carota L.) on the quality characteristics and antioxidant activity of pork patties. Patties were provided with different amounts (0, 2, 4, 6 and 8%) of black carrot. Notably, the cooking loss rate of the group added with 8% black carrot was lowest (p<0.001). As the content of black carrot increased, the L value decreased and the a, b value increased. The texture analysis results showed that the hardness and chewiness to decrease as the amount of black carrot increased (p<0.05). Evaluation of consumer acceptability revealed that the 4% black carrot groups had a higher score in respect to overall preference and taste to the other groups (p<0.05). For antioxidant activities, both total phenolic compounds content and DPPH were increased (p<0.001) as the amount of added black carrot was increased. As a result, it can be concluded that adding the black carrot to patties in processing can improve antioxidant activities and quality of the patties. Considering various aspects of quality, the suitable amount is 4% of total weight.

  • The purpose of this study is to analyze the efficiency of the service quality activity itself by using the DEA Model, in contrast to previous quality evaluation methods, as an attempt to evaluate the service quality activities of the distribution industry. Furthermore, by complementing the shortfalls of the weighted value of the DEA Model, it recommends a DEA/PS Model that is appropriate in the evaluation of service quality activities. Based on this model, the study proposes the SQAE Model, an evaluation tool to complement the traditional measuring method. According to the results of the analysis of 18 sample distribution businesses, there was a discrepancy by business in the results of the Traditional Scoring System and the Evaluation Measuring System. Therefore, it is most desirable to not only be active in service quality activities but also increase efficiency at the same time.

융복합 시대의 국가 SW R&D 프로젝트에 대한 품질활동관리 적정성 평가 방안 연구 (A study of appropriateness evaluation method for quality activity management of Software R&D Project)

  • 최근에 소프트웨어(SW) 융복합 시대를 맞아 SW품질관리의 중요성에 대한 관심이 높아지고 있다. 이에 본 연구에서는 품질관리전담기관의 SW품질활동관리 적정성을 객관적으로 평가 할 수 있는 방안에 대하여 기존의 품질 활동관리 적정성 사례를 기반으로 새로운 적정성 평가 방안을 제안하고자 한다. 이를 위하여 다음과 같이 연구 목적을 세 가지로 설정한다. 첫째, 기존의 국가 SW R&D 프로젝트의 SW품질활동관리 적정성 평가의 문제점을 도출하고 분석한다. 둘째, 기존의 SW품질활동관리 적정성 평가에 대한 문제점을 극복할 수 있는 새로운 적정성 평가 방법을 제안한다. 셋째, 새로운 적정성 평가 방법을 WBS(World Best Software) 프로젝트를 대상으로 적용해서 그 가능성과 효과성에 대하여 살펴본다. 본 연구에서 새롭게 제시한 국가 SW R&D 품질활동관리 적정성 평가 프레임워크를 대형 SW R&D 프로젝트인 WBS 프로젝트의 2개 과제에 실질적으로 적용해봄으로써 새로운 품질활동관리 적정성 평가 프레임워크의 효과성과 실무 적용 가능성을 입증하였다.

보건소 건강증진사업 수행과정의 질 평가지표 개발 -고혈압관리사업에서의 타당도 검증- (The Development of a Quality Assessment Tool for the Process of Health Promotion Programs at Public Health Centers)

  • This study purports to develop a quality assessment tool for the process of health promotion programs at public health centers(PHC). The draft of the assessment tool developed by the literature was distributed to 242 staffs who were in charge of the health promotion programs at PHCs for evaluating the feasibility of the tool on September and October 2002. The major results of the study were as follows; The quality assessment tool developed in the study consisted of four domains: strategic planning, program management, monitoring and evaluation, and resources and information. The strategic planning dealt with the function of the planning staff and committees, community data analysis, the feasibility of the program, and the approach methods for attaining the goal of the program. The program management included the items on the qualification and power of the program staff. The monitoring and evaluation included the items on the reporting and communication among program units, and feed back after monitoring. Finally, the resources and information dealt with community networking, clients' response, and consulting activity of the staff. The validity of the tools was tested and partly supported by both formative and criterion-related methods. The assessment tools developed in this study could be used by health promotion workers in the self-evaluation of the program quality. In conclusion, the quality assessment tool developed in the study will be a good safeguard for assuring the quality of the process of health promotion programs.

상수리 쿠키의 항산화활성 및 품질특성 (Antioxidant Activity and Quality Characteristics of Acorn (Quercus autissima carruther) Cookies)

  • This study was conducted to investigate the effects of acorn ($Quercus$ autissima carruther) powder on the antioxidant activity and quality characteristics of cookies. Cookies were prepared with different amounts of acorn powder (at ratios of 0, 0.5, 1, 3 and 5% to total flour quantity). Antioxidant activity was estimated based on DPPH free radical scavenging activity and total phenol content in acorn powder and cookies. To analyze quality characteristics, bulk density, pH of the dough, spread factor, loss rate, leavening rate, color, texture profile analysis, and sensory evaluations were measured. Loss rate, a values, total polyphenol contents and DPPH free radical scavenging activity of cookies significantly increased with increasing acorn powder content (p<0.01), whereas pH of the dough, L values and b values of the cookies significantly decreased with increasing acorn powder content (p<0.01). The results of sensory evaluation (appearance, taste, flavor, texture and overall preference) demonstrate that the 3% acorn cookie group showed the highest degree of preference among all items of added acorn powder. From these results, we suggest that acorn is a good ingredient for increasing the consumer acceptability and functionality of cookies.

율피 분말을 첨가한 쿠키의 항산화 활성 및 품질 특성 (Antioxidant Activity and Quality Characteristics of Cookies with Chestnut Inner Shell)

  • This study was conducted to investigate the effect of chestnut inner shell powder on antioxidant activity and the quality characteristics of cookies. Cookies were prepared with different amounts of chestnut inner shell powder(in ratios of 0, 0.5, 1, 3 and 5% to the flour quantity). The antioxidant activity was estimated by DPPH free radical scavenging activity and the total phenol content in chestnut inner shell powder and cookies. For analyzing quality characteristics, bulk density and pH of the dough, spread factor, loss rate, leavening rate, color, texture profile analysis, and sensory evaluations were measured. The spread ratio, a values, total phenol contents and DPPH free radical scavenging activity of cookies significantly increased with increasing chestnut inner shell powder(p<0.001), while the pH of the dough, L values and b values of the cookies significantly decreased with increasing chestnut inner shell powder content(p<0.001). The consumer acceptability score for the 3% chestnut inner shell cookie groups ranked significantly higher(p<0.01) than those of the other groups in overall preference, flavor, taste and color. From these results, we suggest that chestnut inner shell is a good ingredient for increasing the consumer acceptability and the functionality of cookies.

사회복지서비스의 질적 향상을 위한 관리기법으로서 복지QC 활동에 관한 사례연구 (A Case Study on the Welfare QC Activity as a Management Technique for Improving Quality in Social Welfare Service)

  • The purpose of this paper is a case study on welfare QC circle which is considered as one of the management techniques to improve service quality among recently changing welfare environment. Futhermore this paper is also to suggest a new introduction of the welfare QC circle in korean social welfare agency. To accomplish these purpose, this study theoretically examines activity process and techniques of welfare QC circle. In practice, three social workers and one supervisor working at 'D' community welfare center in pusan are participated during six months. As a result, we founded the specific problems that is aroused from youth volunteer group within by fish bone chart, and proposed the alternative choices by 5W1H check sheet, and also certified to decrease turnover ratio in youth volunteering by pareto chart. This study, however, has its limitation in selection only one case study on welfare QC circle of youth volunteering. Welfare QC circle could be much contributed as one of the management techniques to enhance the quality of social welfare service from the viewpoint of the customer, If it is well developed korean welfare QC model which is suitable to social welfare organization and service. Therefore, in order to introduce welfare QC circle in korean social welfare organizations, I would like to suggest to find out a useful text of welfare QC and organize some welfare QC study groups including other suggestions.

개선활동의 재무성과 달성/기여 효과 분석 (An Effect of the Improvement Activities on the Financial Performance)

  • Top Managers are apt to do the decision making on the base of cost-benefit analysis. Therefore the return on quality is indispensable to get the commitment of the top managers on the quality programs. The monetary or tangible effects of the most improvement activities through the suggestion systems and the quality circle activities are computed and reported. In most cases the reported gains are much bigger than the input invested. In spite of the reported high return many top managers are doubtful about the truth of reports because the gains are not translated into the profit on the income statement. This paper discusses about the mechanism of individual improvement activities and analyze the system effect which sum the individual effect and the realization effect on the income statement during that period. This will help the top managers to commit on the quality programs with high confidence.

  • The relationship between the subcontractor and the subcontractor in current industries, especially in the machine manufacturing industry, should be developed to the "Efficient Q-C-D System" in which the three elements of consideration-Quality, Cost and Delivery condition, are in a state of equillibrium. From this point of view the two parts of a subcontract must cooperate in the whole activity: ranging from the initial products planning, through the manufacturing process, to the final usage by customers. In this report, we tried to present Korean machine manufacturing industry with the model of management system of subcontracts in order that machine manufacturers may assure the quality, reduce the production cost and enhance the productivity with the model.

  • This study investigated the management environment of medium and small business by examining the role of medium and small business in national economics, the change in management condition, and the problems in quality and technique. Also we analyzed problems in the past quality control activity of our medium and small business, and examined the driving direction and intorduction method of QM. And to understand the effect of manager's concern in quality management to observe the quality system before and after introduction of QM. A target for this investigation is the medium and small business which has introduced QM through ISO 9000. Also analyzed how 05 observance effects to the sale price, process effect customer complaint and on-time delibery by an oral test.
