  • We studied age and growth of the sea urchin, Pseudocentrotus depressus, to obtain some informations regarding its sustainable production and appropriate resources reinforcement. The samples were collected at two locations (Ongpo and Bubhwan) in Jeju, Korea. Annual rings were formed from October to January, and this period was well matched with the time just prior to or during their reproduction. Two population regression lines generated by using Walford's plotting with mean radius of each age group showed significant differences in their growth rate between the two sampling locations (p<0.0l). When the regression equations were calculated using either madreporite's radius (R) and test diameter (L) or body weight (W) and test diameter (L), the results were L=23.830+ 11.735R and $W=0.0004L^3$, and no statistically significant differences were detected between the two populations (p>0.2). Based on the data of madreporite's radius and test diameters, two estimated growth equations were $L_t(mm)=72.988(1-e^{-0.412(t-0.596)}\;and\;L_t(mm)=70.195(1-e{-0.365(t-0.51l)}$ in Ongpo and Bubhwan population, respectively. Three distinct annulus groups were recognizable within the distribution of the radii of the annual rings measured from age I to age 5. The mean radii calculated from the same annulus group were all identical even though they were from different age groups.

  • Gonadal development and reproductive cycles of red sea urchin Pseudocentrotus depressus were investigated based on the monthly variations of gonadosomatic index (GSI), gametogenesis and developmental phases of gonad. The specimens were sampled monthly in the north coastal waters of Ongpo and the south coastal waters Bubhwan of Jeju Island, Korea, from December 1994 to December 1995. Monthly changes of GSI values and reproductive cycles showed similar trends in Ongpo and Bubhwan. In females GSI values were reached the maximum in December ($17.8{\pm}4.04$ in Ongpo, $13.8{\pm}1.51$ in Bubhwan). In males GSI values were reached the maximum in December ($15.4{\pm}1.53$ in Ongpo, $13.6{\pm}1.32$ in Bubhwan). In both Ongpo and Bubhwan major spawning probably occurred between November and February when water temperatures and daylengths decrease. The histological observations of the gonads suggested that this species seemed to have a synchronous gametogenesis and one spawning season a year in Jeju Island costal waters.

  • To know the variation in the growth of the sea urchin, Pseudocentrotus depressus according to their localities, three different populations including the culture populations, the released populations, and the wild populations were investigated using the cluster analysis. For this purpose, pigment banding pattern on the genital plate was used as an age character. The population composed of the same year class was born between September 25th and October 5th every year. The population of 9 to 10 months old had no $r_1,\;whereas\;r_1$, was observed in the population of either 1 year and 10 or 11 months old, and both $r_1,\;and\;r_2$ in the population of either 2 year and 9 or 10 months old. Therefore, $r_1,\;and\;r_2$ radius were regarded as an annual ring. Growth in the culture populations was much better than that In either the released or the wild populations. However, when the cultured populations composed of 8 to 12 mm in test diameter was released to the shove near a culture farm, its growth appeared to be similar to that of the wild Populations. The wide distribution patterns of test diameter measured from the same year class of both the cultured and the wild populations were probably due to either long spawning period or growth differences between individuals. Except Yamaguchi and Cheju populations, the move closely located populations showed the more similar growth pattern. However, the growth of Cheju population appeared to be similar to that of Aba, Mogi, Toishi rather than Kasiwazima although Cheju Island was more closely located with Kasiwazima than other localities. In addition, the population of Yamaguchi, located at the highest latitute, revealed the similar growth pattern to that of Nomozaki, located at the lowest latitute.

  • Sea urchin roe obtained from Anthocidaris crassispina and Pseudocentrotus depressus was briefly salt-fermented (5%), followed by ethanol treatment (1%) and the physicochemical properties as well as antioxidant activity were investigated. Compared to raw sea urchin roes, the salted one showed a significantly low amount of water (p<0.001) high salinity (p<0.05), ash content (p<0.001) and Na content (p<0.001). With salt-fermentation, the redness (p<0.05) and yellowness (p<0.001) of roe decreased noticeably, indicating the decomposition of endogenous carotenoids. Accordingly, the salted roe showed a lower DPPH radical scavenging activity than its unsalted counterpart. Additionally, it showed a significantly lower metal-chelating activity (p<0.05) and metal chelator content (e.g. ortho-phenolics) displayed by a negligible difference in titratable acidity. The salted roe showed significantly increased hardness (p<0.05) and total reducing capacity (p<0.001), which were attributed to the protein coagulation and the release of antioxidants bound to macromolecules after the ethanol treatment, respectively.

  • This study was performed to investigate the physicochemical properties of sea urchin ($Anthocidaris$ $crassispina$, $Pseudocentrotus$ $depressus$, $Hernicentrotus$ $pulcherrimus$) roe as a processed or canned food by steaming treatment. Proximate compositions of $A.$ $crassispina$ roe and $P.$ $depressus$ roe were similar, but water, crude ash, and carbohydrate contents of $H.$ $pulcherrimus$ roe showed little differences. Proximate compositions of sea urchin roe showed slight differences with steaming time, raw samples showed no differences. Glycine content of the three raw sea urchin roe samples showed the highest concentration among free amino acids, followed by arginine, alanine, and lysine, in order. Total free amino acid contents of raw sea urchin roe were 754.70 mg% ($A.$ $crassispina$), 567.75 mg% ($P.$ $depressus$), and 449.44 mg% ($H.$ $pulcherrimus$). Total free amino acid content of 5 min steaming sample was highest among steaming and canning conditions. ATP, ADP, and AMP contents of raw $P.$ $depressus$ roe sample was higher than those of $A.$ $crassispina$and $H.$ $pulcherrimus$ roe. Major fatty acids of the three raw sea urchin roe samples were myristic acid, palmitic acid, and EPA. S.F.A. content of raw samples of $A.$ $crassispina$and $H.$ $pulcherrimus$ roe was higher than U.F.A content, whereas U.F.A. content of $P.$ $depressus$ roe was highest among the three raw samples. For minerals K, P, Fe, and Zn contents were highest in $A.$ $crassispina$roe while Ca, Mg, Na, and Cu contents were highest in $H.$ $pulcherrimus$ roe. For heavy metals, Cd, Pb and As were detected in all samples in trace amounts under the criteria of the Korea food codex.

  • Morphological classification of echinoid species has many difficulties because of their phenotypic variations. In the present study, we analyzed morphotypes and partial mitochondrial 12S rDNA sequences of four sea urchin species classified as Pseudocentrotus depressus, Anthocidaris crassispina, Hemicentrotus pulcherrimus and Strongylocentrotus nudus, and unidentified four species collected from the coasts of the East sea. Their genomic DNAs were extracted from gonads and mitochondrial 12S rDNA sequences were amplified by the polymerase chain reaction (PCR) method. The sequence identities among the known four sea urchin species were 87.4-95.6%. The sequence identities among the unidentified four species were 99.4-99.6% and showed the highest homology to S. intermedius(99.8%). Thus, our phylogenetic tree indicates that the unidentified four species belong to S. intermedius.
