Sunflower Seed Sprout의 성분조성에 관한 연구 (A Study on the Composition of Sunflower Seed Sprout)

  • The proximate composition, pH, vitamins and minerals in sunflower seed sprout were investigated to furnish basic data for utilization in health food or processed food. The pH of sunflower seed sprout was 5.70. The contents of moisture, crude protein, crude fat, crude ash and crude fiber of sunflower seed sprout were 94.7%, 1.3%, 0.3%, 1.3% and 1.6%, respectively. The vitamin A, vitamin B$_1$, vitamin B$_2$, vitamin C and niacin contents in sunflower seed sprout were 114.411. U%, 0.06mg%, 0.05mg%. 5.90mg% and 0.80mg%, respectively. The contents of Ca, P, Fe, Na, K, Mn, Cu, Zn and Mg in sunflower seed sprout per 100g were 80.00mg, 4.85mg, 3.63mg, 8.25mg, 180.90mg, 1.35mg, 0.43mg, 1.85mgand 66.35mg, respectively. The crude ash and crude fiber content of sunflower seed sprout were 3 or 4 times higher than those in the sprout of radish seed, mung bean, soybean or alfalfa, respectively.

한국 남해안에 서식하는 백합과 5종의 근육 및 내장의 일반성분 조성 (Proximate Composition in the Muscle and Viscera of Five Veneridae Clams (Bivalvia) from Southern Coast of Korea)

  • 백합과 5종에 속하는 유용패류인 살조개, 바지락, 백합, 개조개 및 가무락조개의 체성분에 따른 유사 종간의 근육과 내장에 따른 일반성분 조성을 분석하였다. 분석 결과 근육과 내장의 일반성분의 경우 수분, 조단백질 및 탄수화물은 근육부위에서 내장부에 비해 전체적으로 높은 값을 나타났다. 이러한 결과는 조지방과 탄수화물을 제외한 다른 항목에서는 유의한 차이를 나타내지 않았다. 조지방의 경우 백합 내장에서 $3.67{\pm}0.57%$로 높게 나타났으며, 바지락 근육에서 가장 낮은 $2.50{\pm}1.40%$를 나타내었다. 탄수화물의 경우 백합의 내장에서 $3.61{\pm}0.45%$ 나타났으며, 바지락과 살조개 내장에서 $3.45{\pm}1.4%$$3.39{\pm}0.07%$로 높게 함유하고 있었다.

Quality traits of pork from cross-bred local pigs reared under free-range and semi-intensive systems

  • This study was conducted to evaluate meat quality traits, proximate composition, fatty acid profile and sensory attributes of pork produced under free-range and semi-intensive pig rearing systems. Longissimus dorsi muscles from pork carcasses were taken just after the slaughtering of finishing pigs reared under semi-intensive and free-range systems to test the meat quality parameters (pH, color, water holding capacity, and cooking loss), proximate composition (moisture, protein, fat, and ash) and fatty acid profile. Furthermore, the organoleptic properties were evaluated using 30 untrained panelists. The results revealed that the system of rearing did not affect (p > 0.05) the proximate composition, water holding capacity, color, pH and cooking loss of pork along with the fatty acid composition except for vaccenic acid (p < 0.05). The monounsaturated fatty acid (MUFA) content was affected (p < 0.05) by the rearing system while no effects were observed on the unsaturated fatty acid: saturated fatty acid ratio and omega-six to omega-three fatty acids ratios (p > 0.05). No difference was observed (p > 0.05) concerning the sensory attributes although pork obtained from the free-range system had the highest scores. In conclusion, the system of rearing did not show a significant effect on the meat quality parameters, composition and sensory attributes of pork obtained from cross-bred pigs.

Proximate Content Monitoring of Black Soldier Fly Larval (Hermetia illucens) Dry Matter for Feed Material using Short-Wave Infrared Hyperspectral Imaging

  • Edible insects are gaining popularity as a potential future food source because of their high protein content and efficient use of space. Black soldier fly larvae (BSFL) are noteworthy because they can be used as feed for various animals including reptiles, dogs, fish, chickens, and pigs. However, if the edible insect industry is to advance, we should use automation to reduce labor and increase production. Consequently, there is a growing demand for sensing technologies that can automate the evaluation of insect quality. This study used short-wave infrared (SWIR) hyperspectral imaging to predict the proximate composition of dried BSFL, including moisture, crude protein, crude fat, crude fiber, and crude ash content. The larvae were dried at various temperatures and times, and images were captured using an SWIR camera. A partial least-squares regression (PLSR) model was developed to predict the proximate content. The SWIR-based hyperspectral camera accurately predicted the proximate composition of BSFL from the best preprocessing model; moisture, crude protein, crude fat, crude fiber, and crude ash content were predicted with high accuracy, with R2 values of 0.89 or more, and root mean square error of prediction values were within 2%. Among preprocessing methods, mean normalization and max normalization methods were effective in proximate prediction models. Therefore, SWIR-based hyperspectral cameras can be used to create automated quality management systems for BSFL.

옥수수 색소 2호 품종의 일반성분, 유리당, 지방산 및 안토시아닌 색소의 함량 (Proximate, Free Sugar, Fatty acids Composition and Anthocyanins of Saekso 2 Corn Kernels)

  • 본 연구는 흑자색 알곡 품종으로 등록된 색소 2호 옥수수 알곡의 일반성분 및 색소 함량을 분석하여 기초자료로 제공하고자 수행되었다. 색소 2호 알곡의 일반성분 분석결과, 수분, 조회분, 조지방, 조단백질은 각각 8.84%, 1.44%, 5.46%, 10.31%이었다. 색소 2호 알곡의 유리당 성분으로 fructose, glucose, maltose 및 sucrose가 검출되었으며, 함량은 sucrose (1.00%) > glucose (0.63%) > maltose (0.52%) > fructose (0.44%) 순이었다. 색소 2호 알곡의 지방산 분석결과 총 11종의 지방산이 검출되었으며 포화 지방산과 불포화 지방산의 비율은 16.09 : 83.91로 linoleic acid가 50.86%로 가장 높게 나타났다. 색소 2호 알곡 추출물의 총 안토시아닌 함량은 0.24%였고, 알곡 추출물을 HPLC-MS/MS로 분석한 결과 색소 2호 알곡에 함유된 안토시아닌 색소는 C-3-G, Pg-3-G, Pn-3-G인 것으로 확인되었다.

인삼(Panax)속 식물의 일반성분, 무기성분, 아미노산 및 유리당 함량조성 (Comparison of Proximate Composition, Mineral Nutrient, Amino Acid and Free Sugar Contents of Several Panax Species)

  • Chemical components of Panax (P) species were compared. p. species used were Korean white ginseng, Korean, Chinese and Japanese red ginseng (P ginseng), American and Canadian ginseng (P. quinquefolium) , and sanchl ginseng (P. notoginseng). No significant difference in the proximate contents was observed among P. species. Ash, crude lipld and total sugar contents in root of P. notoginseng were found to be relatively lower than those of P. ginseng and P. quinquefolium, but the contents of crude protein and crude fiber were similar among those ginsengs. Mineral nutrient con tents showed a little difference among ginseng species. Total nitrogen contents were slightly higher in P. ginseng than P. quinquefolium and P. notoginseng and Fe and Cu were lower in Chinese and Japanese red ginsengs. Kinds and compositions of amino acids were similar but contents of amino acids were different among ginseng species. Total amino acid contents were 76.3∼83.9 mg/g in P. ginseng 53.8∼60.4 mg/g in p. quinquefolium and 54.9 mg/g in P notoginseng. Free sugar contents were lower in P. notoginseng than P. ginseng or P. quinquefolium. Sucrose accounted for 90∼92% of total free sugar contents with relatively high content in white ginsengs, while sucrose and maltose were 32-36% and 55∼60%, respectively, in red ginseng.

돗돔(Stereolepis doederleini)의 식품성분 (Food Components of Striped Jewfish Stereolepis doederleini)

  • The proximate, fatty acid and total amino acid compositions of striped jewfish Stereolepis doederleini muscle were studied. The proximate composition was: 76.4% moisture, 19.4% protein, 2.92% lipid, and 1.19% ash. The predominant total lipid fatty acids were 16:0 (18.7%), 18:1n-9 (16.5%), 22:6n-3 (16.0%), 16:1n-7 (8.53%), 20:5n-3 (7.97%) and 18:0 (5.34%). Glutamic acid (17.4%), lysine (10.6%), aspartic acid (10.4%) and leucine (8.27%) were the predominant amino acids in striped jewfish muscle. These food components of striped jewfish were similar to those of costal and reef dwelling fishes such as black rockfish, black sea bream and rock trout, which are common sliced raw fish in Korea. Therefore, these results suggest that striped jewfish may represent a new aquaculture fish species.

The effects of traditional frying method on proximate composition and energetic values of fish species from Karachi coast of Pakistan

  • The effect of pan frying method was evaluated for proximate composition of selected fish species Pampus argenteus, Lethrinus nebulosus and Acanthopagarus arabicus which were determined by standard procedures. Proximate compositions found in the frying fillets were different to the raw fish samples. The moisture content seems to decrease in all fried samples. The reason of moisture loss at the time of frying produced is excessive protein amount in fried fish as compare to raw fish. Protein content seemed to increase in Pampus argentus > Lethrinus nebulosus and >Acanthopagrus arabicus in their particular fried form. The outcomes shown that protein content was in the ranges of 14.83-25.07 g/100g in fried samples, while the fat content was between 3.76-9.77 g/100 g. The energy content was the highest in the fried fish Lethrinus nebulosus (236 kcal/100 g), Pampus argentus (161 kcal/100 g) and Acanthopagrus arabicus (135 kcal/100 g). The information achieved in this study would be very important to fish consumers, processors and nutritionists to academically increase their awareness regarding the nutrients contents in selected fish species.

수유부의 식품 및 영양소 섭취와 유즙 생성량 및 조성 (Composition and Yield of Korean Breast Milk and Maternal Intakes of Foods and Nutrients)

  • This study was conducted to investigate the relationship between lactational capacity and intakes of energy and energy-yielding nutrients. Food consumption, intakes of carbohydrate, protein, fat and energy and quantity and proximate composition of milk of 11 lactating Korean mothers were determined at 1, 2 and 3 months postpartum longitudinally. Food consumption was estimated using a 24-hour recall method ; intakes of energy and energy-yielding nutrients were calculated according to the Food Composition Table. Daily milk production was estimated using a 72-hour test-weighing method ; protein, fat, lactose and energy concentrations were analyzed. Average intakes of energy and protein were 1974$\pm$386㎉/day and 67.0$\pm$12.3㎉/day, these were 73% and 74% of the Korean Recommended Allowances, respectively. Average milk yield was 720.1$\pm$123.3ml/day containing energy 59.6$\pm$9.5㎉/dl, protein 1.1$\pm$0.1g/dl, fat 2.7$\pm$0.8g/dl, and lactose 6.3$\pm$0.3g/dl. No relationship existed between the intakes of carbohydrate, protein, fat and energy and the quantity and proximate composition of the milk. However, the intakes of energy, carbohydrate and vegetable protein were inversely related to the concentrations of energy and lactose in the milk. This result indicates that lactational capacity may be affected by the other factors excluding intakes of energy and energy-yielding nutrients and a high intake of energy may not guarantee optimal lactational capacity.

냉장중 사슴육 증탕액의 이화학적 특성의 변화 (Changes of the Physico-chemical Characteristics of Venison Extracts during Chilling Storage)

  • This experiment was carried out to investigate the changes in pH, proximate composition, pH, VBN, TBA, minerals, and fatty acid of venison extracts, from three slaughtered deers with 180~210 kg live weight (♀, Elk deer, 28~30 months of age) at 4$^{\circ}C$. Proximate composition was not affected by storage periods. The pH, VBN, and TBA ranged from 4.60~4.62, 13.52~15.75 mg%, and 0.20~0/81mg/kg. respectively. The pH, VBN, and TBA gradually increased during storage period (p<0.050. Among minerals, K, P, Na, Mg, and Ca were major mineral contents and the Ca, mg, Na contents significantly decreased (p<0.05) according to the storage period. The major fatty acid found in venison extracts were oleic acid, palmitic acid, stearic acid, linoleic acid. Oleic acid, linolenic acid, and arachidonic acid decreased during storage, but palmitic acid, heptadeanonic acid, and stearic acid increased during the storage. U/S (unsalturated fatty acid/saturated fatty acid) ratio tended to decrease during the storage.
