Studies on the Nutritional Effects of Locally Produced Dried Formula Milk and Fermented Milk -1. Comparative Studies on the Nutrients Content of Dried Formula Milk and Fermented Milk- (국산(國産) 조제분유(調製粉乳)와 발효유(醱酵乳)의 영양효과(營養效果)에 관(關)한 연구(硏究) - 1. 유제품(乳製品)의 영양소(營養素) 함량비교(含量比較)를 위한 연구(硏究) -)

  • Chemical determination were made to analyze the concentration of nutrients including proximate composition, vitamins, minerals, amino acids and fatty acids in three kinds of locally produced infantile formula milk(DFM) and one fermented milk(FM). An attempt was also made to compare the analytical values of nutrients against guaranteed values. The results obtained are summarized as follows; 1. The analyzed value of protein and fat content in DFM-A.B.C was slightly lower than that of guaranteed values and a reverse trend was observed in the case of total carbohydrate. There were no differences in proximate composition among the three kinds of DFM. It was found that the FM contained less protein and fat than the fresh milk, but it seemed that a considerable amount of sugar was added to FM. 2. The analyzed values of vitamin $A(2{\sim}3\;times)$ and $E(4{\sim}6\;times)$ contents in DFMS were higher than those of the guaranteed values except niacin. There were a little differences in vitamin contents among DFMS analyzed. 3. In the case of minerals, the analyzed values were similar to the guaranteed values except the calcium concentration that analyzed value was much higher than guaranted value. When the DFMS were diluted to 15% by adding water to compare with the human and fresh cow milk, it was found that the diluted DFMS resembled the human milk rather than cow milk in the content of energy, carbohydrates, protein and ash. The higher contents of iron and most vitamins in the diluted DFMS than the human milk or cow milk would indicate that they were fortificated with these nutrients. When these diluted DFMS were compared with the Korean R.D.A. for infant, it was clear that they could supply sufficient amount of the nutrients required by R.D.A. except the niacin which failed to reach the recommended level. The fact that iron content of DFM-C was not sufficient while vitamin A supply was excessive by 6 fold would indicate that further studies for the improvement may be necessary. 4. There was a little difference among DFMS in amino acid composition. The similarity of the essential amino acids composition between DFMS and cow milk indicated that there was no modification of the essential amino acids. However, present data showed that the amino acid compositon of FM was similar to that of the cow milk. 5. There was no difference among DFMS in the degree of saturation of fatty acids. The similar or higher levels of essential fatty acids contents of DFMS as compared with human milk revealed that essential fatty acids were added to DFMS during the course of process. From the experimental results described above, it may be concluded that the nutritive effects of three kinds of locally produced DFMS were much alike. It was also found that macro and micro nutrient composition except amino acid composition of locally produced dried formula milk was very much similar to that of the human milk. Moreover, fortification of iron and vitamins resulted in improving their nutritive values as the single form of infantile food, but it seemed that more consideration should be given on the fortification of some nutrients.

Correlations among Life Stress, Sleep, Anthropometric Measurement and Nutrient Intakes of College Students (일부 지역 대학생의 생활 스트레스와 수면, 신체계측, 영양소섭취 상태와의 상관관계)

  • This study was performed in order to investigate the stress levels, sleep, anthropometric measurement and nutrient intakes their correlations of college students. General characteristics, stress scores using a stress test, sleep scores using a sleep test, anthropometric measurement, body composition using Inbody 3.0 and nutrient intakes using 3-day recalls were measured in 353 subjects (183 males and 170 females). Mean total stress score of the male students was 68.2${\pm}$45.0 and that of the female students was 86.5${\pm}$48.7. Stress for study, future, economic and value-related factors were higher than other factors in both male and female students. Female students were more stressed than male in friend, family, study, future and value-related factors. Mean sleeping time and sleep scores of the male students were 7.0 hrs and 40.6${\pm}$5.7, respectively and that of the female students were 7.1 hrs and 41.5${\pm}$5.3, respectively. Mean height, weight, percent body fat (PBF) and waist-hip ratio (WHR) of the male students were 174.8 cm, 73.3 kg, 19.0% and 0.84, respectively. Mean height, weight, PBF, and WHR of the female students were 161.7 cm, 55.3 kg, 28.7% and 0.81, respectively. Mean energy and protein intakes of the male students were 2026.3 kcal (77.9% EER) and 83.0 g (150.9% RI) and those of the female students were 1538.2 kcal (73.2% EER) and 60.7 g (134.9% RI), respectively. In male students, sleep duration, professor and future problem showed significantly negative correlation (p<0.05). For both male and female students, in correlations between sleep scores, life stress experience frequency and importance, the total scores showed significantly negative correlation (p<0.01). Sleep scores (sleep quality) have more significant correlation than sleep duration in life stress. In male students, correlations between economic problem and weight, waist circumference and hip circumference showed significantly negative correlation. In female students, correlations between different gender problem and body mass index (p<0.05), PBF (p<0.01), WHR (p<0.01) and obesity degree (p<0.05) showed significantly negative correlation while correlation between study problem and PBF (p<0.05), WHR (p<0.05) showed significantly positive correlation. In male students, there were significantly positive correlations between life stress experience frequency and carbohydrate calcium, iron, vitamin A; correlation between importance and calcium, iron as well as correlation between total life stress scores and iron (p<0.05). In female students, correlation between life stress experience frequency and thiamin along with correlation between importance and thiamin showed significant negative correlation (p<0.05). College students need to practice good life habits for the purpose of correctly managing life stress.

Study on the correlation between nutrition knowledge, dietary attitudes of guardians, and nutritional status of infants and toddlers - Nutrition-Plus program in Jeonju (보호자의 영양지식 및 식생활태도와 영유아의 영양상태와의 관계연구 - 전주지역 영양플러스 참여자를 중심으로)

  • Purpose: The purpose of the study was to identify the nutrition knowledge, dietary attitudes of guardians, and nutritional status of infants and toddlers as well as the relationships between these variables. Methods: The participants were selected among applicants for low-income family financing provided by the government and included 115 infants and toddlers as well as their guardians. Demographic data, nutrition knowledge, dietary attitudes, and nutrition intakes were assessed using a self-administered questionnaire, biochemical examination, and 24 Hour-Recall method. Results: The score for guardians' nutrition knowledge was 12.97 points of a possible 15, and the score for dietary attitudes was 53.38 points of a possible 75. The nutrition knowledge and dietary attitudes showed significant differences by education level (p < 0.05) and family structure (p < 0.05). Energy intakes of subjects aged 6 ~ 24 months and over 25 months were lower than the DRI for Koreans. The intakes of carbohydrates, protein, and fat of subjects aged 6 ~ 24 months and over 25 months showed no significant differences by level of nutrition knowledge or dietary attitudes. The intake of Ca of subjects aged over 12 months showed significant differences by level of nutrition knowledge (p < 0.05). The intakes of Thiamin of subjects aged 6 ~ 11 months and P of subjects aged over 12 months showed significant differences by level of dietary attitudes (p < 0.05). There was a small positive correlation between education level and nutrition knowledge as well as between dietary attitudes. Nutrition knowledge showed a positive correlation with dietary attitudes. There was a positive correlation between nutrition knowledge and Ca, Riboflavin, as well as Vit C levels. Conclusion: Therefore, it is necessary to consider an educational program for increasing the practical application of knowledge to nutrition management for improvement of nutrition intake in infants and toddlers.

Microbiological and Chemical Changes of Complete Feed during Spoilage (배합사료의 부패 동안 발생하는 미생물학적 및 영양학적 변화)

  • Commercial complete feeds contain enough nutrients to support animal growth and it is easy to be spoiled under proper temperature and humid conditions. The aim of this study was to investigate microbiological and chemical changes on complete feed for milking cow under open-air exposure with moisture 33% at 30℃ during 15 days. pH decreased 6.29 to 4.66 and water activity decreased gradually 0.99 to 0.95. Bacteria increased 6.2×106~1.6×107 to 2.1×109 CFU/g at 5 days and showed 108 CFU/g until 15 days. Fungi increased 103 CFU/g to 8.0×104 CFU/g. During the processing of spoilage, bacteria such as Acinetobacter oleivorans, Pediococcus acidilactici, Acinetobacter oleivorans, Weissella cibaria, and Methylobacterium komagatae were identified and fungi such as Fusarium sp. and Mucor sp. were also identified. Moisture content increased until 10 days (p<0.01). Crude protein was not changed so much whereas crude fat decreased 6.0% to 5.5% (p<0.01). Crude fiber and crude ash changed 2.0~ 3.0% and 4.5~ 4.8% levels with no significance, respectively. Gross energy was not almost changed at 4,400 kcal/g. During spoilage, lactate and propionate increased whereas acetate was not detected. Protease and lipase activities increased significantly during spoilage (p<0.01). Zearalenone content increased 59.2 μg/kg to 623.8 μg/kg, showing 10.5 times more production. During feed spoilage, pH decreased with microbial growth and various chemical changes were occurred.

Spatial Variation in the Reproductive Effort of Mania Clam Ruditapes philippinarum during Spawning and Effects of the Protozoan Parasite Perkinsus olseni Infection on the Reproductive Effort (여름철 산란기에 있어 바지락 번식량의 공간적 변이와 기생 원생생물 Perkinsus olseni 감염이 바지락 번식에 미치는 영향)

  • Spatial variation in the reproductive effort of Manila clam Ruditapes philippinarum is often closely associated with variation in the seawater temperature and food availability, which determines gonad maturity and the quantity of gamates produced during spawning. Previous studies also have reported that severe infection by the protozoan parasite Perkinsus olseni exerts a negative impact on clam reproduction, retarding gonad maturation or decreasing the reproductive effort. In the present study, we investigated impacts of P. olseni infection on the reproductive condition of Manila clam during a spawning season. Histology revealed that 54% of female clams in Wando off the south coast were in spawning, while only 10% of the female from Gomso and 0% of the female from Seonjaedo in Gyeonggi bay off the west coast were engaged in spawning at the end of May in 2004. Ray's fluid thioglycollate media (RFTM) assay was applied to assess P. olseni infection and indicated that the infection intensity in Wando ($3,608,000{\pm}258,000cells/g$ wet tissue) was significantly higher than the levels in Gomso ($1,305,000{\pm}106,000cells/g$ wet tissue) and Seonjaedo ($1,083,000{\pm}137,000cells/g$ wet tissue, p < 0.001). The size of the ripe female follicle determined from histology was significantly smaller in Wando ($0.032mm^2$) compared to the sizes in Gomso ($0.059mm^2$) and Seonjaedo ($0.052mm^2$, p < 0.05). Accordingly, the number of ripe eggs in the follicle was significantly fewer among clams in Wando (14) compared to the numbers determined in Gomso (23) and Seonjaedo (22). The absolute quantity of egg in ripe clams from Wando (31.01 mg) was also significantly smaller than Seonjaedo (61.79 mg) and Gomso (133.3 mg). Quantity of total protein, carbohydrate, and lipid in the tissue in the Wando samples was significantly smaller than the quantities determined in Gomso and Seonjaedo (p < 0.001). The observed poor reproductive condition and proximate tissue composition of the females in Wando were, in part, explained by the extremely high level of the parasites, sapping the ability to store energy in the host tissues, which is used in tissue growth and the egg production.
