정어리 개량고기풀의 제조와 품질 안정성 및 이용성 (Processing, Quality Stability and Utilization of Approved Sardine Surimi for Surimi-based Products)

  • This study was conducted to investigate chemical properties, quality stability and utilization of approved sardine surimi(ASS) which is developed our laboratory. The product yield of the ASS was about 3 times higher than that of usual sardine surimi(SS). The proper addition concentration of sodium bicarbonate was 0.1% for the neutralization of the ASS. The content of salt soluble protein nitrogen in the ASS was about the half of that in the SS, while the content of water soluble protein nitrogen was 2.4 times higher in ASS. The total amount of free amino acids in the ASS was about 11 times higher than that of the SS. Predominant free amino acids in the ASS were histidine, taurine, glutamic acid and alanine, and those four amino acids occupied 94% of total amount of free amino acids. During cold storage at 21oC for 6 months, the quality of ASS was more stable than that of SS in judging from changes of water soluble and salt soluble protein nitrogen, AV and POV. Quality of fish burger, fish sausage and fried fish paste processed in accordance with commercial processing preparation using the ASS or SS exclusively and mixtures which other white meat fish surimi(alaska pollack, hair tail and sole) were proportionallly added to each of two types of sardine meat were evaluated. In case of fish burger, the product processed from the ASS only were superior.

  • This study was attempted to see more clear relationships among the enterobacteria, especially between the intestinal normal flora and pathogenic bacteria. It has been known that some intestinal normal flora produce the bactrial metabolites that are harmful to other enteric bacteria. One of the metabolites is known as colicin, the protein fraction, which possesses certain degree of inhibitory effect against other bacterial growth fraction, whih possesses certain degree of inhibitory effect against other bacterial growth. As a preliminary study for a colicin purification, the antagonistic effect of E, coli to groups of Salmonella and Shigella has been studied by means of in vitro quantitative culture method. 1. E.coli showed definite inhibitory effects aganist both Salmonella and Shigella groups in the mixture of two organisms. 2. The inhibitory effects of E.coli in the E.coli-Salmonella and the E.coli-Shigella mixture occurred from 4 hours incubation following the inoculation. 3. Even the complete inhibition of pathogenic enteric bacterial growth was noticed in the E.coli-Salmonella mixture at overnight incubation. 4. Among the diluted mixtures, 1:100, 1:1,000, and 1:10,000, survival rate of pathogenic enteric bacteria in the mixtures with E.coli showed least affected at the 1:1,000 dilution. 5. It was found that the antagonistic effect aganist groups of Salmonella-shigella was depending upon the groups of the genera.

A Study on the Optimal Amino Acid Pattern at the Proximal Duodenum in Growing Sheep

  • Nine crossbred castrated lambs fitted with rumen and duodenum cannula and fed a diet of hay and concentrate formulated with ground corn and soybean meal as main ingredients were used to assess the duodenal ideal amino acid pattern. Three synthetic amino acid mixtures with different profile of essential amino acids were duodenally infused in order to get three different amino acid patterns flowing into the duodenum. The mixtures were designed to have similar amino acid profile as rumen microbial protein (Pm), casein (Pc) and modified muscle amino acid (Pmm). Results showed a lower urine nitrogen excretion (p=0.05), a higher nitrogen retention (p=0.04) and bodyweight gain with treatment Pmm. The modified muscle amino acid pattern also promoted a lower ratio of Gly to other amino acids in plasma (Gly/OAA) and a higher RNA and RNA/DNA concentration in the liver of the sheep. Meanwhile, the urea concentration in plasma was reduced and the insulin concentration was increased with Pmm treatment. No differences in glucose and growth hormone concentration in plasma were found among three treatments. All results obtained indicate that the modified muscle amino acid pattern (Lys 100%, Met+Cys 39%, Thr 76%, His 41%, Arg 72%, Leu 158%, Ile 81%, Val 105%, Phe 81% and Trp 13%) was the best for growing sheep.

카제인-알긴산 혼합물의 비혼합성 (Incompatibility of Casein-Alginate Mixtures)

  • 수용액상에서 단백질과 다당류 사이의 비혼합성은 일반적인 현상이므로 다양한 조성과 형태의 수용성 거대분자를 포함하는 식품에서 상분리는 매우 전형적인 현상이다. 본 연구에서는 식품원료로 자주 쓰이는 카제인과 알긴산을 이용하여, pH (6, 8, 10), NaCl 농도(0, 0.25, 0.5 M), 알긴산의 분자량$(1.64{\times}10^5,\;1.95{\times}10^5)$에 따른 상분리현상에 대하여 연구하였다. 식품에서 카제인이 유화제로 작용할 때 알긴산의 첨가에 따른 혼합성의 변화는 카제인의 유화안정성에 영향을 끼치게 된다. 알긴산의 분자량에 따른 혼합성의 차이는 크게 나타나지 않았다. pH가 높을수록, 염농도가 낮을수록 카제인-알긴산 혼합물의 비혼합성은 감소하였다. 이 결과로 보아 카제인과 알긴산 사이의 정전기적 작용이 혼합성에 관련되어 있는 것으로 생각된다.

Effects on Performance of Sulla and/or Maize Silages Supplements for Grazing Dairy Cows

  • The objective of this study was to investigate the effects of either maize or sulla silage supplementation to grazing dairy cows in summer. Forage mixtures used in the four week trial were based on previous experimental results but inclusion of rumen fistulated cows in five treatments enabled rumen sampling and use of in sacco incubations to determine the diet effects on digestion kinetics. Sulla and maize silages were used to supplement pasture and to meet minimum requirements for dietary protein concentration. Five groups of ten cows were grazed on a restricted daily allowance of 18 kg dry matter (DM) pasture/cow to simulate a summer pasture deficit, and four of these five groups received an additional 6 kg DM $cow^{-1}d^{-1}$ of silage (sulla, maize, or sulla and maize silages). A sixth group was given a relatively unrestricted (38 kg DM $cow^{-1}d^{-1}$) pasture allowance. The silage mixtures and pasture were incubated in sacco during the final week of the trial. The pasture was of high nutritive value and not typical of usual summer conditions, which favoured a response to quantity rather than quality of silage supplements. There was no difference in cow performance with the four silage supplements and the low milk solids (MS) production (about 1.0 kg $MS\;d^{-1}$) relative to full pasture (1.3 kg $MS\;d^{-1}$) showed the principal limitation to performance was dry matter intake. Milk composition was not affected by silage type and the low level of pasture substitution (0.29) suggested metabolizable energy (ME) was the principal limitation to performance. Samples of rumen liquor and in sacco data demonstrated significant effects of supplement; DM degradation rates (k) was highest ($0.084h^{-1}$) when cows were fed 6 kg sulla silage whereas diets with a high proportion of maize silage were slowly degraded (p<0.01).

  • The objective of this experiment was to suggest the optimum nitrogen fertilization level for orchardgrass(0G)- red clover(RC) mixtures. The field trials were conducted from 1993 to 1994 in order to evaluate the dry matter yield, botanical composition, chemical composition, dry matter digestibility(DMD), crude protein dry matter (CPDM) and digestible dry matter(DDM) yields on the nitrogen levels( 0, 50, 100, 150 and 300kgha). The results obtained were summarized as follows : 1. With increasing nitrogen levels, the DM yield of OG-RC mixttures significantly increased(P<0.05). The maximum total DM yield (7,964kgha) was obtained at N 300kgha level, However, there was no significant difference between N 150 and 300kgha. 2. With increasing the nitrogen levels, the botanical composition of OG in OG-RC mixttures was significantly increased(P< 0.05), whereas that of RC was remarkably decreased(P< 0.05). 3. 반응표면분석을 이용한 쌀-대두단백-쥐치어 혼합물의 압출성형 최적화 (Optimization for Extrusion-Cooking of Rice-ISP-File Fish Mixture by Response Surface Methodology)

  • 쥐치어의 이용을 다양화하기 위하여 분리대두단백과 쌀가루를 첨가하여 원료 혼합물의 수분함량을 20∼30%로 조절한 후 단축스크류 압출성형기를 이용하여 압출성형으로 조직화 단백질을 제조하기 위한 실험을 하였으며 쌀가루함량, 토출구온도 및 원료 혼합물의 수분함량이 압출성형물의 물리화학적 및 관능적특성에 미치는 영향을 반응표면분석을 이용하여 최적화하였다. 쌀가루함량이 증가하면 팽화율이 증가하므로 재흡수율은 높아지는 반면 밀도는 낮아지는 현상을 보였다. 재흡수율과 밀도는 서로 유의성 있게 반비례하는 상관관계 (p<0.01, R=-0.742)를 보였다. 육안적인 관능검사방법은 조직잔사지수와 유의성 있는 상관관계(p<0.01, R=0.489)를 보였으므로 비교적 조직화의 정도를 평가하는 방법으로 적절한 것으로 간주되었다. 그리고 관능검사와 재흡수율의 상관관계(p<0.01, R=0.507)와 밀도와의 상관관계(p<0.001, R=-0.596)가 각각 비교적 높게 나타났으며 압출공정에서 토출구의 온도가 13$0^{\circ}C$ 이상에서 최적의 조직화가 형성되었다.

Effects Of Grass/Legume Pasture on Forage Production, Forage Nutritive Values and Live Weight Gain of the Grazing Heifer

  • A grazing trial was carried out to determine the effects of different grass/legume pastures on forage production, legume proportion, nutritive value, and animal performance. The pasture mixtures were mainly orchardgrass (OG) + ladino clover (T1), OG + alfalfa (T2), perennial ryegrass + alfalfa (T3), and grass alone mainly OG (T4). The pastures were rotationally grazed 7 times with heifers which had an initial liveweight of about 243 kg in 1991 and 1992. The average plant height at each grazing was 32.4 cm. The annual dry matter yield ranged from 9.19 MT in T4 to 9.61 MT/ha in T3, but no significant difference among different mixture combinations was found. The proportion of ladino clover in T1 mixtures rapidly increased from 21% to 68% during the grazing season. However, the proportion of alfalfa in T2 and T3 ranged from 12% to 23%. The contents of crude protein and calcium, respectively, in the forages were highest in T1 (23.2%, 0.68%) and lowest in T4 (18.5%, 0.13%), while crude fiber content showed the opposite trends. Liveweight gain was greatest on T1 (1.073 kg) and lowest on T4 (643 kg). It was concluded that pasture mixtures containing legume (ladino clover) can increase forage nutritive value and animal performance.

맥아근 첨가와 가공처리방법이 육계분 발효물의 반추동물 사료영양적 특성에 미치는 영향 (Effects of Barley Malt Sprouts Addition and Processing Methods on Ruminant Feed and Nutritional Properties of Broiler Litter)

  • 본 연구는 육계분의 혐기 또는 퇴적 발효시 발효에 따른 물리화학적 성분 변화를 추적하여 맥아근의 첨가 효과 및 적정 첨가 수준을 구명하고, 아울러 효과적인 발효 방법을 제시하고자 실시되었다. 육계분의 혐기 또는 퇴적 발효 시 맥아근을 최고 10%까지 첨가함에 따라 발효물의 영양적 성상(건물, 유기물, 조단백질, 조지방, ADF-CP 등)은 바람직하게 향상되었다. 특히 조단백질 성분은 양적, 질적으로 향상되었다. 그러나 혐기발효 후 여전히 매우 높은 pH는 혐기발효가 효과적으로 일어나지 못하였으며, 발효 촉진 방안의 고려가 필수적임을 시사하였다. 육계분의 퇴적 발효 시 5∼10%의 맥아근 첨가는 발효물의 영양적 성상을 향상시켰고, 이는 아마도 발효미생물의 분해 활동을 촉진시킴으로서 퇴적발효 온도를 상승시키는 효과를 초래하였다. 이는 맥아근 첨가는 육계분의 퇴적발효를 더욱 촉진시키는 것으로 사료되었다. 또한 육계분에 맥아근을 첨가하여 위생적인 발효사료를 제조하고자 할 때 퇴적발효법은 혐기발효법 보다도 더 효과적인 것으로 권장되었다.

사과주스에서 카제인-펙틴 혼합물의 안정성 (Stability of Casein-Pectin Mixtures in Apple Juice)

  • 본 연구에서는 펙틴의 첨가가 카제인의 용해도에 미치는 영향과 산성의 사과주스에서 카제인-펙틴 혼합물의 적용성을 검토하였다. 0.1% 카제인 용액은 $pH\;3{\sim}5$에서 20% 이하의 낮은 용해도를 나타내었다. 카제인과 펙틴을 각각 0.1%로 혼합한 용액은 $pH\;2{\sim}10$에서도 70% 이상의 우수한 용해도를 가지며, 혼합액의 전체농도가 낮을수록 더 큰 용해도를 나타내었다. 카제인-펙틴 혼합용액을 사과주스에 최종농도가 $0.1{\sim}0.5%$가 되도록 첨가한 결과 모든 농도에서 사과주스가 안정하였으며, $100^{\circ}C$에서 10분간 가열하거나 일주일 동안 냉장보관 한 경우에도 안정성이 유지되었다. 이러한 결과는 산성식품에 펙틴과 카제인을 혼합하여 첨가할 경우 안정성이 유지되어 단백질이 강화된 제품의 제조 가능성을 제시하였다.
