식품 및 음식의 다량영양소 구성 성분에 따른 혈당 반응 연구 (Effects of macronutrients in mixed meals on postprandial glycemic response)

  • 본 연구에서는 동일한 끼니에 섭취한 각 식품 및 음식의 영양성분 중 에너지에 기여하는 다량영양소인 탄수화물, 지방, 단백질과 식이섬유소가 혈당 반응에 어떠한 영향을 주는지를 알아보고자 하였다. 20대 성인 남녀를 대상으로 총 62가지의 단일 또는 여러 가지 단일 식품으로 구성된 혼합 식사 섭취 후 2시간 동안의 혈당을 측정하여 혈당곡 선하면적을 계산하였다. 그 결과 일반적으로 탄수화물 함량이 증가하면 혈당곡선하면적이 증가하였다. 그러나 탄수화물 이외에 식품 및 음식에 함유된 지방, 식이섬유소 등의 함량도 혈당곡선하면적에 영향을 준 것을 확인할 수 있었다. 탄수화물, 단백질, 지방, 식이섬유소의 영양성분이 혈당곡선하면적에 미치는 영향을 분석한 결과 탄수화물(${\beta}=37.18$, p < 0.0001)은 혈당곡선하면적을 유의적으로 증가시켰고, 지방 (${\beta}=-32.70$, p = 0.0054), 식이섬유소 (${\beta}=-32.01$, p = 0.0486)는 유의적으로 감소시켰으며, 단백질 (${\beta}=-12.93$, p = 0.1657)은 혈당 반응에 유의적인 영향을 미치지 않았다. 본 연구는 식품 및 음식의 영양성분 중 탄수화물 함량만이 아닌 지방, 식이섬유소가 서로 상호작용하여 혈당 반응에 영향을 미치는 것을 확인하여 의미가 크다.

  • I. Subject of the Study: Studies on the economical nutrition supplement of cereal foods for the improvement in our notional eating habits. II. Purpose and Importance of the Study: 1. Our nation is confronted with the situation that the rice, a principal food, short of some essential amino acids, lysine and threonine, leads to imbalanced meals insufficient in the nutrient of protein, to bring many difficulties in the elevation of our national physique. 2. The shortage of even the rice imperfect in the nutrient of protein makes the import of lots of foreign rice inevitable. It is considered that the protein supplement and decrease in the consumption amount, of rice, is a serious key to the solution of our food difficulty, and then a way of the proetin supplement of rice through the addition of essential amino acid is to be rarely applied in the view of the our present finance and situation. 3. In the present experiment, therefore, it aims to the suggestion of an aspect of the improvement in our national eating habits guiding in the nutrition elevation which our nation can afford economically through the development of first, a way of the protein supplement by the mixture of cereals producted plentifully in our country, and second, a way of the decrease in the consumption amount and the improvement in the nutrition of rice through the substitution of the other cereals for rice. III. Contents of Scope of the Study: 1. Objects of the study: Objects of the study are the following three items; a) The nutrition supplement of rice through the mixture of cereals. Our nation makes mainly rice as a principal food, but practically many kinds of cereal are produced in our country. They contain different levels and qualities of each nutrient and they are different from one another in the kinds of essential amino acid consisting protein. For that reason, the mutual complement efficeincy of insufficient nutrients is observed through the mixture of cereals. b) The nutrition supplement of rice through the addition of superior protein sources to rice, a principal food. The development of rice as superior foods in the sense of nutrition is conducted through the risement in protein quality by the addition of protein sources in good quality, for example, fish flour (anchovy flour), egg powder, milk powder, and so on, and through the supplement of vitamins and minerals. c) The decrease in the consumption amount of rice through the substitution of the other cereals for rice, as a principal food. The compensation for the short amount of rice is made by the reduction in the consumption of rice through the discovery of a way of substitution of the other cereals for rice, as a principal food and of the settlement of problems in nutrition and finance subsequent to this. 2. Contents of the study: a) An ideal mixture-ratio of cereals is established for rats by feeding mixed foods(rice-barely or rice-wheat) containing 5%, 15%, 25%, 35% and 45% level of either barely or wheat. b) The nutritive value is determined in the whole subsititution of other foods for rice, and then, a way of the complement of over and under nutrients is devised. c) The ideal combination is investigated for rats through feeding mixed foods of main food, rice and supplement foods of protein sources, soy bean, fish flour, egg powder and milk Powder. d) According to results from the above three experiments, the concise functional test for men and the examination of economical property are made. 3. Scope of the study: a) The observation of the effect of each diet on the growth rate for rats. The growth rate of rats was observed for 15 groups of mixed foods of a main food, rice, and wheat flour, barley powder or soy bean powder, respectively, and 12 groups of wheat flour diets supplemented with $1{\sim}3%$ milk powder, and rice or wheat flour diets supplemented with 5% of milk powder, egg powder, fish flour or soy bean powder, respectively. b) The determination of food consumption. The food consumption was determined at weekly intervals for 27 kinds of diet described in a) item. c) The determination of food efficiency rate. The food efficiency rate for each diet was determined by calculation from the gained body weight and the food consumption amount at the same intervals described in b) item. d) The determination of protein efficiency rate. The protein efficiency rate for each diet was determined by calculation form gained body weight and the protein amount of the food consumption amount at the same intervals described c) item. e) The determination of the body component. The hematocrite and hemoglobin levels in the blood, total nitrogen in the serum, blood sugar, and lipids and glycogen in the liver were determined. f) The observation of nitrogen balance. As a means of the observation of nitrogen balance, the total nitrogen in the urine was determined. g) The analysis of economical property. The economical property was analyzed as the gained body weight to the amount equivalent to one won through the conversion of the food consumption amount into money. h) The functional test for men. The concise functional test for men was made in order to establish if the best diet for experimental animals can be applied to men. IV. Results of the Study: The national food product plan, nationwide nutritive enlightment and the improvement activities in our country eating habits, especially, mixed and powder food problems are to be significantly referred, and the following results must be applied. a) In the mixed foods of cereals, the mixed food of the rice-barley containing $5{\sim}15%$ level of barley is best in terms of nutrition. b) The addition of superior protein sources, egg, Bilk, soy bean, or fish, respectively to either rice or wheat flour makes a great risement in the nutritive value. c) The animal protein is more effective in the elevation of nutritive value of cereals. d) Rice takes the most nutritive operation and has the highest preference, among rice, wheat flour and barley. e) Wheat flour is more economical than rice in evaluation of the gained body weight to the regular money, and the addition of fish or soy bean is more economical than that of any other supplement food. But the above results are true of the range of nutrition and economical property. f) The study on the nutrition composition and barley will lead to the improvement in our national eating habits as mixed food of the rice-barley containing $5{\sim}15%$ level of barley is more nutritive. g) This study on the nutrition only for the growing animal can not be considered as a perfect and entire evaluation. Consequently, the perfect data for our national nutrition can be obtained from the experiment similar to this for the much longer period examining, in details, the growth rate, change of physical strength, mental and bodily change, average life span, and resistance ability to infectious diseases.

다양한 원료의 사료첨가제가 전복의 성장, 체조성 및 패각 색채에 미치는 영향 (Effect of the Various Sources of Dietary Additives on Growth, Body Composition and Shell Color of Abalone Haliotis discus hannai)

  • 카제인과 덱스트린 및 대두유와 어유의 혼합유를 주요 단백질과 탄수화물 및 지질원으로 구성한 전복용 배합사료에 다양한 microalgae (Haeatococccus, Isochrysis galbana, Shizochytrium)와 갑각류성 기원의 첨가제(krill meal, shrimp head meal, red crab meal) 및 녹차부산물을 각각 2% 첨가한 실험사료를 준비하여 16주간 전복에게 공급하여 주었다. 그리고 다시마를 공급한 실험구를 대조구로 두었다. 실험 종료시 전복의 생존율은 유의적인 차이가 없었으나, 사료 첨가제를 첨가한 모든 실험사료에서 전복의 체중증가량은 다시마를 공급한 실험구에 비하여 유의적으로 우수하였다. 전복의 체중 증가량은 Spirulina, Shizochytrium 및 Isochrysis의 순으로 우수하였다. 전복의 체장 및 체중에 대한 가식부의 중량 비는 유의적인 차이가 없었다. 그러나 체폭은 다시마를 공급한 실험구에 비하여 첨가제를 첨가한 모든 실험구에서 유의적으로 우수한 것으로 나타났다. 전복 패각의 색채 개선효과는 Spirulina 첨가구에서 가장 뚜렷하였다. 실험사료내 다양한 microalge와 갑각류성 기원의 사료첨가제는 전복의 성장을 효율적으로 개선시켰으며, 사료내 Spirulina의 첨가는 전복 패각 색채 개선에 가장 효과적이었다.

부산지역 전통향토음식을 이용한 정식 및 별미식 식단 구성 (Constitution of Formal and Informal Meals Consisting of Traditional Local Foods in Busan, Korea)

  • 본 연구는 해산물 사용이 높아 고단백, 고섬유질 식품으로 알려진 부산지역 향토음식으로 가정에서 일상으로 이용할 수 있는 식단을 개발하고자 하였다. 부산향토음식에 관해 문헌 및 구두조사를 실시하였고, 이중 가장 많이 조사된 겨울철 부산 향토음식을 기준으로 3첩 반상형 정식 식단 5종 및 별미식 식단 5종을 구성하였다. 정식 식단 I형은 흰밥, 시래기 된장국, 배추김치, 굴깍두기, 시금치나물, 매운잡채, 돼지수육, 배추속쌈, 보리막장으로 구성하였다. 정식 식단 II형은 흰밥, 소고기무국, 배추김치, 멸치섞박지, 겨울초 겉절이, 매집찜, 생미역귀 초회로 구성하였다. 정식 식단 III형은 오곡밥, 보름지짐이, 동치미, 9가지나물, 각색산적, 김구이로 구성하였고 정식 식단 IV형은 흰밥, 가자미 미역국, 배추김치, 소라김치, 몰한치 생채, 조개찜, 각색산적으로 구성하였다. 정식 식단 V형은 흰밥, 까시리김치국, 대구아가미젓 무김치, 조기구이, 토란대 들깨나물, 계란찜, 버섯초회로 구성 하였다. 별미식 식단 I형은 홍합죽, 배추김치, 동치미, 미역 설치, 코다리 조림, 늙은 호박전으로, 별미식 식단 II형은 굴떡국, 배추김치, 마른 가자미조림, 까막발이털털이 초회, 도토리묵, 오징어 젓갈로 구성하였다. 별미식 식단 III형은 김치국밥, 연두부 계란탕, 갈치섞박지, 삼색나물, 대구찜, 다시마튀각으로 구성하였고 별미식 식단 IV형은 동지팥죽, 배추김치, 동치미, 톳나물두부무침, 각색산적, 늙은 호박전으로 구성하였다. 별미식 식단 V형은 콩칼국수, 갓김치, 멸치섞박지, 몰설치, 해물전으로 구성하였다. 식단의 영양성분을 성인 남자 30~49세 한 끼 영양섭취기준과 비교하였을 때, 정식과 별미식 모두 저열량, 고단백식, 고 식이섬유식으로 나타났다. 비타민의 함량은 정식 식단별로 차이가 있었고, 별미식 식단은 적정 수준 이었다. 정식 I형은 Vt. A를 제외하고 모든 비타민 함량이 KDRI보다 낮았으며 정식 V형은 Vt. C 함량이 KDRI의 50% 수준이었다. 칼슘, 철분, 아연, 나트륨, 칼륨 등의 무기질 함량은 정식 및 별미식 식단 모두에서 KDRI보다 높게 나타났다. 개발된 식단의 재료 사용 및 조리방법은 중복도가 낮고, 주식과 부식의 어울림, 지역적 특성, 영양균형, 식단 구성의 다양성 등이 높은 것으로 평가되었다. 본 연구에서 개발된 식단은 가정에서 전통 한식을 손쉽게 준비할 수 있는 활용성이 높은 식단으로 생각된다. 식단준비 시 해산물의 염분을 충분히 제거하는 점이 요청된다.

식염 및 지방을 함유한 분쇄돈육의 이화학적 성상 및 최종가열온도 측정을 위한 근장단백질의 이용 (Physico-chemical Properties and Utilization of Sarcoplasmic Proteins for the Determination of End-point Cooking Temperatures of Ground Pork Hams Containing Salt and Fat)

  • 본 연구는 식염과 지방 그리고 여러 가열조건에 의한 pH 및 일반성분, 가열감량 및 단백질 용해성의 변화에 따른 단백질 분획의 변화에 대해 분석하였다 처리구에 따른 가열감량 (CL, %)은 지방의 첨가에 상관없이 식염을 2%첨가한 경우 식염을 첨가하지 않은 경우에 비하여 약 1/2배 정도 낮은 가열감량을 보였다. 한편, 식염 무첨가구의 경우 지방을 첨가한 경우 가열감량은 유의적으로 낮았으나, 식염 2%첨가구는 지방 첨가에 따른 가열감량의 유의적 차이가 나타나지 않았다. 그리고 가열온도에 따른 가열감량은 $66^{\circ}C$까지는 점진적으로 증가하다가 $68^{\circ}C$ 보다 높은 가열온도에서 유의적으로 증가하는 경향을 보였다. 식염 무첨가구와 식염 2% 첨가구 사이에서는 단백질 용해성의 유의적인 차이가 없었으나 지방이 첨가된 경우 상대적인 단백질 함량의 감소로 단백질 용해성이 유의적으로 감소하였다. 가열 온도가 높아짐에 따라 용해성의 감소가 현저히 나타났으나 $68^{\circ}C$ 이상의 가열온도에서는 단백질 용해성이 유의적 차이 없이 일정한 수준을 유지하였다. 추출한 근장 단백질이 각 처리구별 가열온도에 따른 단백질 분획을 분석하기 위해 전기영동을 실시한 결과 식염, 지방 그리고 가열에 따라 특이적으로 반응한 것은 36 과 66 kDa의 분자량을 가진 근장 단백질 분획이었다. 이러한 단백질 분획은 최종가열온도가 66 ${\sim} 70^{\circ}C$에서 급격히 thtlfehladmfhTJ 돈육의 최종 가열온도 측정을 위한 지시제로 사용될 수 있을 것으로 판단된다.

재미 한인의 문화 적응도에 미치는 인구통계학적 요인과 식생활 습관과의 관련성 (Relationship of Acculturation to Demographics and Dietary Habits Among Korean Americans)

  • This study investigated how acculturation varies with demographic variables and is related to dietary habits among Korean Americans. The respondents were 162 Korea Americans aged at least 18 years old residing in the Greater New York metropolitan area. The level of acculturation was measured using a modified Suinn-Lew Asian Self-Identity Acculturation(SL-ASIA) scale. Acculturation was operationally defined to be composed of 6 factors, which are language, media use, friendship, food, pride, and ethnic self-identity. Each factor in the level of acculturation was identified by how it is related to demographics and dietary habits in the method of correlation coefficients and stepwise multiple regressions analyses. The reliability of the modified SL-ASIA scale was high as measured by Cronbach alpha of .92. The level of acculturation was related to place of birth, age, length of residence in the U.S., and education. The younger, the longer they had lived in the U.S., and the more they were educated, the more acculturated. Acculturation could be predictable for 52% of its variance with all demographic variables. Among the 6 factors in the level of acculturation, five of them, language, media use friendship, food, and ethnic self-identity were correlated with dietary habit changes after immigration and type of meals. All 6 acculturation factors could predict 21% of change in dietary habits. the information from this study can be used to describe usual describe usual dietary habits according to various aspects of acculturation to better understand the dynamics among acculturation, demographics, and dietary habits.

일부 장.중년층의 영양섭취상태와 이에 영향을 미치는 인자에 관한 연구 (Nutrient Intake and Related Factors in Middle-Aged Urban Adults)

  • Working towards the compression of morbidity, we attempted to find the way to contribute to desirable aging and/or healthy old age. By looking into the factors affecting nutrient intake in middle-aged adults, we sought to find ways to improve their health status, Two hundred and fifty middle-aged adults from 40 to 60 years of age residing in Seoul and its vicinity were recruited for the survey. Subjects were interviewed for general characteristics, dietary habits lifestyle, status and food intake by a trained interviewer. Two -day food record was included in addition to the 1 -day 24 hr recall. Date were analyzed for the relationship among nutrient intake, health status, socio-economic status dietary habits and lifestyle using a statistical program (SAS) Although the mean energy intake of the subjects did not reach the recommenced dietary allowances(RDA), mean protein intake was well above the RAD for both sex groups(111.2% and 129.1% for men and women, respectively) The caloric contribution of fat was 15 to 20 % of total energy intake among different groups. Riboflavin was the most deficient nutrient and its mean intake reached only 71.0% of RDA for mean This seemed to be due to the lower intake of milk and dairy products among middle-aged Koreans who are more accustomed to traditional meals. Income and exercise habit were the most important factors influencing the nutrient intake of middle-age adults. Also, BMI, smoking habit, level of education regularity of meal, and hours of sleeping influenced the nutrient intake, In conclusion, middle-age adults appeared to have similar problems with the elderly in terms of nutrient intake and this age group should to included when considering nutritionally vulnerable groups in addition to the elderly and young children. The improvement in the nutrition status of middle-age adults is even more important because that could lead into the better health the elderly.

저체중인 여자 청소년($15{\sim}19$세)의 영양상태와 식행동 특성 - 2001년 국민건강.영양조사를 이용하여 - (A Study on the Nutritional Status and Eating Behaviors of Underweight Adolescent Females, Aged 15 to 19 years, using Data from 2001 NHANS of Korea)

  • This study was performed to identify the nutritional status and eating behaviors of underweight adolescent females aged 15 to 19 years. The subjects were selected using data from 2001 NHANS of Korea, and included 28 underweight and 160 normal-weight subjects. We found that the underweight group had significantly lower weight (9.8 kg), waist (6.9 cm), and hip circumference (7.2 cm) values than the normal-weight group; however height and waist-hip ratio were not different. Serum indices were within normal ranges and showed no differences between the two groups. The energy and nutrient intakes of most of the subjects were considered poor. For intake levels, the proportion of subjects below the EAR, NAR and INQ of each nutrient were also not significantly different between the groups. There were no differences in frequency for skipping meals, snacking, and eating-out between the groups. When comparing food frequency data for 62 food items, the underweight group consumed significantly more often of eggs, dried anchovies, mackerel, shellfish, and mushrooms than the normal-weight group. The former also had significantly less excercise/walking, more diet-control, and more rest/sleep than the latter. Subjects in both of two groups perceived their body images as over weight, so they practiced diet-control to reduce body weight, which is considered harmful as a healthy weight. In conclusion, the underweight group showed no differences in items of biochemical indices, nutrient intakes, and many dietary behaviors, but subjects revealed significantly higher food intake frequencies for several protein foods, as well as less excercise/walking, and more rest/sleep than the normal-weight group.

COPRA MEAL AS A SUPPLEMENT TO CATTLE OFFERED A LOW QUALITY NATIVE PASTURE HAY

  • Twenty-four Hereford steers, 22 months old and a mean liveweight (${\pm}\;s.e.$) of $250\;{\pm}\;7\;kg$ were used in an experiment to evaluate over 42 days two rates of copra meal supplementation to cattle on a low N ($8.6\;{\pm}\;0.9$ g N/kg dry matter (DM)), low digestible ($45\;{\pm}\;5.2%$ DM) native pasture hay. Steers given the two rates (500, 1000 g/steer/day; i.e. 500C, 1000C) were compared to steers on a non-supplemental diet and to the effects on steers of supplemental urea (30g/steer/day; 30U) or with copra meal (500 g/steer/day; 500C.U), or of cottonseed meal (500 g/steer/day; 500S). Liveweight change was increased (P<0.01) by all of the supplements except by supplemental urea. The most effective treatment, 1000C, increased significantly (P<0.01) liveweight change (946 g/day) in steers above all supplements except those steers given 500C.U (718 g/day). Hay intake per unit liveweight was increased (P<0.05) by 7% by the 30U and 500C.U treatment, and by 9% by 500C; this group having the highest supplements, being greatest (P<0.05) for the 1000C group (6.0 g feed intake/g gain) and least for the 500S supplemented group (11.5 g/g gain). Efficiency was lowest (18.6 g/g gain) for the non-supplemented steers on the basal hay diet. Copra meal N was less degradable (i.e. 29%) in nylon bags over 15 hours in the rumen than was cottonseed meal N (37%), and rumen ammonia concentrations were lower (P<0.05) in cattle supplemented with copra meal (25, 27 mg N/L) than in cattle given urea (36 mg N/L) or cottonseed meal (39 mg N/L). It is concluded that copra meal at a daily rate of 500 g/head, and with rumen soluble nitrogen from urea, is an effective supplement for improving growth of cattle on a low quality forage.

A comparison of food and nutrient intake between instant noodle consumers and non-instant noodle consumers in Korean adults

  • Instant noodles are widely consumed in Asian countries. The Korean population consumed the largest quantity of instant noodles in the world in 2008, However, few studies have investigated the relationship between instant noodles and nutritional status in Koreans. The objective of this study was to examine the association between instant noodle consumption and food and nutrient intake in Korean adults. We used dietary data of 6,440 subjects aged 20 years and older who participated in the Korean National Health and Nutrition Examination Survey III. The average age of the instant noodle consumers (INC) was 36.2 and that of the non-instant noodle consumers (non-INC) was 44.9; men consumed more instant noodles than women (P<0.001), With the exception of cereals and grain products, legumes, seaweeds, eggs, and milk and dairy products, INC consumed significantly fewer potatoes and starches, sugars, seeds and nuts, vegetables, mushrooms, fruits, seasonings, beverages, meals, fishes, and oils and fats compared with those in the non-INC group. The INC group showed significantly higher nutrient intake of energy, fat, sodium, thiamine, and riboflavin; however, the INC group showed a significantly lower intake of protein, calcium, phosphorus, iron, potassium, vitamin A, niacin, and vitamin C compared with those in the non-INC group. This study revealed that consuming instant noodles may lead to excessive intake of energy, fats, and sodium but may also cause increased intake of thiamine and riboflavin. Therefore, nutritional education helping adults to choose a balanced meal while consuming instant noodles should be implemented, Additionally, instant noodle manufacturers should consider nutritional aspects when developing new products.
