Meat and bone meal is a valuable protein and mineral source in diets of production animals and contributes to the protein, energy and mineral component of diets. The aim of the present study was to more accurately characterise the apparent ileal amino acid digestibility of meat and bone meals produced in New Zealand and evaluate routine in vitro assays used in practise to measure meat and bone meal quality. A total of 94 commercial meat and bone meals from 25 New Zealand rendering plants over a two and a half year period were analysed for proximates, gross energy, gross amino acid content (incl. hydroxyproline, hydroxylysine and lanthionine), apparent ileal amino acid digestibility, pepsin nitrogen digestibility, protein solubility and bone content. The mean crude protein content of the 94 meat and bone meal samples was 56.8% with a range of >35% units and a coefficient of variation of 9.8%. The mean crude fat and ash content were 10.0 and 28.4% respectively. These latter components showed a large range (16 and 43%, respectively) with coefficients of variation above 22%. Amino acid digestibility between samples was highly variable with lysine and sulphur amino acids digestibility ranging between 45.8-89.0 and 38.2-85.5%, respectively. Pearson correlation coefficients are presented between crude protein content and individual gross amino acids, crude protein content and individual digestible amino acid content, and pepsin N digestibility and individual digestible amino acid content. There was a significant relationship between the digestible amino acid nitrogen content and the crude protein content while pepsin nitrogen digestibility was not correlated to ileal amino acid nitrogen digestibility (r=-0.06). Meat meals with a high protein content had relatively low hydroxyproline and hydroxylysine levels something that was attributed to the levels of collagen from bone. The data indicated that lanthionine (formed upon heat treatment of cysteine with a hydroprotein) is not a good indicator of the heat treatment employed to meat and bone meals. Step-wise multiple regression equations to predict the apparent digestible content of amino acids from rapid in vitro assays are presented. The most selected variables included ash and crude fat content. In general the equations derived for the essential amino acids had a higher degrees of fit (R2) compared to the non-essential amino acids. The R2 for the essential amino acids ranged from 0.43 for histidine and 0.68 for leucine. These equations provide a means of more rapidly estimating the apparent ileal digestible amino acid content (protein quality) of meat and bone meal using standard analyses.

Dietary proteins are the most important factors affecting growth performance of fish and feed cost. Generally, most of the formulated diets for marine fish include a large amount of fish meal as a protein source because of its high nutritive value and palatability. Quality of fish meal in diet may affect on growth and feed efficiency of fish. Therefore, this study was conducted to evaluate the effect of various fish meals as dietary protein source on growth and feed utilization of the juvenile flounder. (omitted)
Comparative studies regarding the nutritional status of 93 home-living elderly people taking free congregate lunch meals(FL) and 87 middle income class elderly people(MI) were performed in Taejon city. Data was obtained from questionaires, anthropometry and interviews for the 24-hour dietary recall of 2 nonconsecutive days during August, 1996. The average age for FL was 75.8 years. The monthly familly income for FL belonged to the low-income class. FL females had lower heights and weights than MI females. The average daily nutritional intake of both FL and MI were low, particularly in FL whose %RDA of energy was 68.5%, protein 65%, Ca 29.6%, Fe 50.8%, vitamin A 34.5%, vitamin E 30.5%, riboflavin 40.6%, vitamin C 76.9%. MI's %RDA of energy was 76.4%, protein 80.a2%, Ca 48.1%, Fe 78.6%, vitamin A 67.3%, vitamin E 117.4%, riboflavin 45.6%, vitamin C 136.5%. Comsumption of Zn, vitamin $B_6$ and folic daily average. There was no nutrient having average INQ(Index of nutritional quality) over 1 for either group. The INQs for protein, Ca, Fe and vitamin A were 0.802, 0.377, 0.625 and 0.296 in FL, and 0.900, 0.601, 0.784 and 0.602 in MI, respectively. The MAR(Mean adequacy ratio) was low with the value of 0.500-0.518 in FL and 0.630-0.723 in MI. The percentage of main nutrients from lunch was the highest among the three meals for FL males, while that from breakfast was the highest for MI. Free lunches taken by FL supported higher percentages of main nutrients than home-lunches taken by MI. Eating-out was done more frequently by MI than by FL and that eating-out brought them more nutritional intake. The above data indicated that the dietary nutritional intake status of the FL elderly was very poor in both quantity and quality and that free congregate lunch significantly contributed to the daily nutrient-intake for the FL elderly.
A feeding trial was carried out to investigate the effect of various fish meals as dietary protein source on growth, feed utilization and body composition of Juvenile flounder. Ten experimental diets were prepared to contain different fish meals: 4 kinds of white fish meal (WM-1, 2, 3, 4), 3 kinds of herring meal (HM-1, 2, 3), mackerel meal (MM), WM mixture and HM+MM mixture. Dietary energy and protein levels were designed to be isocaloric ($3.8 kcal g^{-1}diet$) and isonitrogenous ($46\%$) by adjusting the levels of fish meal, wheat flour and squid liver oil. Three replicate groups of fish (initial mean weight: 11.1 g) were hand-fed to visual satiety two times daily for 7 weeks. Survival was not significantly different among all groups. Weight gain of fish fed the HM-1 and HM-3 diets was the highest, but not significantly different from that of fish fed the either WM-2 or HM+MM diets. The lowest weight gain was found in fish fed the W-1 and WM-3 diets. Feed efficiency and protein efficiency ratio of fish fed the WM-2, HM-1, HH-3, MM and HM+MM diets were significantly higher than those of fish fed other diets. Daily feed intake of fish fed the WM-3 diet was highest, but not significantly different from that oi fish fed the either WM-4 or WMM diet. Significant differences were found in contents of moisture, crude protein, crude lipid and ash of whole body of fish. The results of this study indicated that growth of flounder can be affected by dietary fish meal source and quality, and WM-2, HM-1, HM-3 and HM+MM mixture are considered as useful dietary fish meal sources under these experimental conditions.
This study was performed to investigate the effect of sources of protein on iron bioavailability in 10 healthy young Korean women. The 18-day metabolic study consisted of a 6-day adaptation period, 6-day moderate protein(60g protein/day, 18mg Fe/day) and 6-day high protein period(90g protein/day, 18mg Fe/day). During the moderate and high protein period, 5 subjects were fed the high plant protein meals(80% plant protein). Fecal excretion of dietary iron was significantly higher(p<0.05) in high protein high plant diet group(HPP, 9.48$\pm$1.61mg/day) than in high protein high animal diet group (HPA, 14.40$\pm$0.89mg/day). Apparent absorption and bioavailability of iron was also significantly higher(p<0.10) in HPA(40.7$\pm$5.3%, 6.46$\pm$1.61mg/day) than in HPP(14.4$\pm$5.3%, 2.39$\pm$0.89mg/day). But there was no significant difference between the high animal protein group and high plant protein group in moderate protein period. Serum iron concentration and transferrin saturation increased as animal protein intake increased, from 106.0$\pm$5.1ug/이 and 30.6$\pm$1.5% for MPA to 129.1$\pm$6.7ug/이 and 37.1$\pm$1.3% for HPA. Statistically positive correlations were shown not only between the level of dietary heme iron and apparent absorption(r=0.95, p<0.05), but also between serum iron concentration and apparent absorption(r=0.64, p<0.05). Negative iron balance was shown in two subjects fed the moderate protein meals. These results suggest that recommanded dietary allowances of iron may be under the need to maintain the positive balance, and iron bioavaliability increase by only high level of animal protein intake.
The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ii ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by two different types of Korean style restaurants. A total of 27 restaurants participated in this study, 7 restaurants from the luxurious hotels in Seoul and 20 restaurants from the City of Changwon. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance (RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) Compared with 1/3 or the Korean RDA, all the nutrients were oversupplied. The average nutrient ratios were about 3.7 times higher than 113 of the Korean RDA in calories, about 9 times higher in proteins, 10 times higher in phosphorus, 7 times higher in Vitamin Bl, and 12 times higher in Vitamin E. 2) Seventy-five percent (n = 20) of the restaurants served within the range of thirty to forty dishes, whereas most of the hotel restaurants (70%) served twenty dishes or fewer. 3) The average carbohydrate: protein: fat (CPF) ratio of caloric nutrients was 40:26 : 34. This study concluded that: i) Korean style full course meals provide too much food, nutrients, and calories, resulting in an over- or unbalanced nutrient intake, and ii ) the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. Such over -or unbalanced nutrient intake could cause chronic degenerative problems such as cancer and cardiovascular disease. These findings indicate that restaurants serving Korean style full course meals should carefully plan their menus in order to provide their customers with balanced meals. They should also be strongly encouraged to play an active role in improving their customers' nutritional status, as well as reducing the restaurants wastage of food. Both consumed and unconsumed calories were closely related to the served calories. 4) The result of the research showed that mean INQ in most nutrients was higher than 1.0, especially INQ in unconsumed food is mostly higher than INQ in provided and consumed food. 5) The unconsumed food and the meal prices were closely correlated in terms of price loss. These findings indicate the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. They should also be strongly encouraged to play an active role in improving their customers’ nutritional status, as well as reducing the restaurants wastage of food. Lastly, further research should be conducted to improve the quality of the menus in Korean restaurants.
This study was conducted to determine the supplemental effects of two insect meals, mealworm (MW) and black soldier fly (BSF), with high or low lipid levels in diets, on Pacific white shrimp Litopenaeus vannamei. Sardine and tuna by-product meals were used as the fish meal source in a control (Con) diet. The fish meals were replaced with MW, defatted MW (deMW), BSF or defatted BSF (deBSF), respectively. The shrimp (body weight: 0.47 g) were stocked into 20 acryl tanks (215 L) and fed the diets six times a day. After 45 days of the feeding trial, the shrimp that were fed insect meals had significantly higher phenoloxidase and superoxide dismutase activities than the shrimp fed Con diet. The gene expressions of prophenoloxidase, crustin and penaeidine-3c in shrimp hepatopancrease were also higher in shrimp that were fed the insect diets, regardless of defatting than those in shirmp that were fed Con diet. The survival against Vibrio parahaemolyticus was higher in shrimp that were fed the diets containing defatted insect meals than in shrimp that were fed Con diet. These results indicate that MW and BSF, regardless of lipid levels, could be good protein sources for the enhancement of innate immunity and anti-oxidant capacity of the shrimp.
Studies were conducted with nine barrows, average initial body weight $44.5{\pm}2.1kg$, fitted with a T-cannula at the distal ileum, to determine the apparent ileal (and true) digestibility (AID and TID) of CP and AA in different cultivars of rapeseed meals and soybean meal. The barrows were fed either a casein diet or one of eight corn starch-based semipurified diets, formulated to contain 17.0% CP (DM basis) with one of seven different cultivars of rapeseed meal or soybean meal as the sole source of dietary protein, according to a six-period, nine-treatment, incomplete Latin Square. Chromic oxide (0.5%) was used as a digestibility marker. The pigs were fed of 4% of body weight twice daily, at 08:00 and 20:00 h. Ileal digesta were collected at 2 h intervals daily from 5 d to 7 d. The AID or TID values of CP and most AA (Cysteine excluded) were significantly lower in the rapeseed meals than in soybean meal (p<0.05). There were significant differences in the AID or TID values of CP and AA among the seven different cultivars rapeseed meals (p<0.05); the seven rapeseed meals were arranged according to the size of the AA digestibility values of the rapeseed meals from the greatest to the least, as Zayou 59, Youyan 7, Ganyou 16, Qingyou 2, Huaza 3, Ningza 1 and Lianglou 586; differences in CP, AA, NDF and ADF contents in the rapeseed meals were mainly responsible for the variation in the AID or TID values of AA among rapeseed meals. The AID value of CP can be used as an index of the AID or TID values of most AA in rapeseed meals. However, the AID value of CP was less appropriate as a direct indicator of the AID or TID values for cysteine, methionine, tryptophan, phenylalanine and proline.
In order to compare economics of soybean meals (SBMS) imported from Brazil and the U.S., a feeding trial was conducted with 480 commercial broiler chicks (Abor Acres strain) for 38 days. The Brazilian SBM was brownish in color and the protein solubility in 0.2 % KOH solution was 63. 4 %. The U.S. SBM, on the other hand, was a dehulled SBM, and uniform in color (light yellow) and particle size. The protein solubility value of the latter was 76.6 %. Two dietary protein levels (19 % and 21 %) were used for each source of SBM (2x2 factorial). Chicks fed diets containing the U.S. SBM grew significantly faster (P<0.05) and utilized feed more efficiently than chicks fed diets containing Brazilian SBM. Chicks fed diets containing 21 % CP showed better growth performance and profitability than those fed the 19 % CP diets. The price of the U.S. SBM was higher but the feed cost per unit gain was lower than the Brazilian SBM. Results suggest that there are over-cooked SBMs being traded on the Korean rnarket, and attention should be given to not only the price but also the quality of SBMs.
