시판 조제 분유의 화학적 품질 평가 (Chemical Quality Evaluation of Commercial Infant Formulas)

  • In this study, three domestic and one foreign formulas for the infants up to 5 month old were examined to detect chemical changes such as pH, reactive sulfhydryl groups(RSH) content, 5-hydroxymethylfurfral(HMF) content, available lysine content, electrophoresis, and surface color caused by heat treatment for long term storage. In the SDS-polyacrylamide gel electrophoresis, A and B products showed similar pattern, while C product had a clearly distinguishable $\beta$-lacto-globulin band, but in casein, only D product showed a few strong casein band. RSH content, which indicate the extent of whey protein denaturation, ranged from 4.40 to 5.93 mmole/g protein. HMF content. which indicate the extent of Maillard reaction, ranged from 192 to 432 $\mu$mole/100g in formulas. B product showed the highest RSH and HMF content. Available lysine content ranged from 31 to 46 mg/g protein. Among them D product contain the highest available lysine content and others showed no significant difference. In conclusion, the domestic infant formulas showed higher RSH and HMF content than the foreign product and the available lysine content of the domestic products were lower than of the foreign product.

Quality Characteristics of Sponge Cake Supplemented with Soy Protein Concentrate

  • The quality parameters of sponge cake supplemented with soy protein concentrate (SPC) were evaluated. The addition of SPC to wheat flour increased the protein content and alkaline water retention value, but decreased the sedimentation value. Protein content had a positive correlation with the alkaline water retention value, and a negative correlation with the sedintentation value. The higher the concentration of SPC, the higher the RVA pasting temperature and the lower the viscosity. Increasing the level of SPC in flour led to a decrease in mixogram peak time, whereas peak height, width at peak, and width at 8 min progressively increased. As the amount of SPC increased in the formulation, the pH and specific gravity of cake batter increased, whereas the volume and specific volume of sponge cake decreased. The total isoflavones content in SPC increased after heat treatment. The hardness, gumminess, and chewiness increased progressively in accordance with increasing level of SPC.

근적외선분광분석에 의한 동아시아 지역 재래종 벼 유전자원의 아밀로스 및 단백질 함량 변이분석 (Statistical Analysis of Amylose and Protein Content in Landrace Rice Germplasm Collected from East Asian Countries Based on Near-Infrared Reflectance Spectroscopy (NIRS))

  • 본 연구는 선행연구에서 개발된 근적외선 분광분석(NIRS) 예측모델을 활용하여 측정된 국내외 재래종 메벼 유전자원의 아밀로스 및 단백질 함량 자료를 통계처리 하여 자원의 지리적 특성과 성분 함량에 대한 정확한 정보를 제공하기 위해 실시하였다. 1. 정규분포분석 결과 메벼 유전자원의 아밀로스 평균은 22.0%였고, 단백질 평균은 8.2%였으며 전체 자원의 95%를 차지하는 자원들의 함량범위는 아밀로스의 경우 15.0-28.9%, 단백질은 5.4-10.9%였다. 자원의 다양성지수는 아밀로스의 경우 0.81, 단백질은 0.50이었다. 2. ANOVA, DMRT에 사용된 자원 수는 한국 자원의 경우 1,032, 북한은 994, 일본은 800, 중국은 528자원이었다. 국가별 아밀로스 평균함량은 중국 자원의 경우 23.34%, 한국 자원은 21.55%, 일본 자원은 21.45%, 북한 자원은 20.48%였다. 단백질 평균함량은 중국 자원의 경우 9.02%, 일본 자원은 8.06%, 북한 자원은 8.04%, 한국 자원은 7.99%였다. ANOVA 결과 벼 유전자원의 아밀로스 및 단백질 함량은 국가별 차이가 있었고 1% 유의수준에서 차이가 인정되었다. 3. DMRT 결과 국가별 아밀로스 함량은 한국과 일본, 북한, 중국의 세 집단으로 나눌 수 있었으며 각 집단 간 아밀로스 함량차이는 1% 유의수준에서 차이가 인정되었다. 단백질 함량의 경우 한국, 일본, 북한과 중국의 두 집단으로 나눌 수 있었으며 각 집단 간 단백질 함량차이는 1% 유의수준에서 차이가 인정되었다. 북한 자원은 가장 낮은 아밀로스 평균함량을 나타냈고, 한국 자원은 가장 낮은 단백질 평균함량을 나타냈다. 이에 비해 중국 자원은 가장 높은 아밀로스와 단백질 평균함량을 나타냈다. 이러한 지리적 분포에 따른 벼 자원 간 함량차이는 각 지역별 자원 선호도와 품종 특성이 반영된 결과라고 할 수 있다.

편의점 도시락의 식단형태별, 가격대별, 편의점 브랜드별 영양성분 함량 평가 (Evaluation of Nutritional Content in Convenience Store Lunchboxes by Meal Type, Price, and Store Brand)

  • Objectives: This study investigated the menu and nutritional contents of convenience store lunchboxes, and evaluated the nutritional content by meal type, price, and store brand. Methods: In September 2019, 93 convenience store lunchboxes from the top five franchise stores were purchased. Relevant information on price, food weight, food ingredients, cooking methods, and nutrition labeling were subsequently collected. Nutritional content was evaluated based on the daily value (DV) and Index of Nutritional Quality (INQ), and energy contribution of carbohydrate, protein, fat, saturated fat and sugar was compared with the recommended range. Results: Most lunchboxes included the food groups; grains/starches, meats/fish/eggs/legumes, and vegetables. However, none provided fruits, and only a few lunchboxes provided milk/milk products. Stir-frying, deep-frying, and pan-frying were the most frequent methods of cooking. The average energy content of the lunchboxes was 736.6 kcal, whereas the average contents of protein, fat and saturated fat were higher than 40% of the DV, and sodium content was 66.8% of the DV. The contents of most nutrients in traditional type lunchboxes were higher, as compared to nutrients in onedish type lunchboxes. Considering pricing of lunchboxes, protein and sodium contents were higher in the higher-priced lunchboxes as compared to lower-priced lunchboxes, but there were no differences in the INQs. The contents of energy, protein, fat, saturated fat, and cholesterol significantly differed by brand. Conclusions: Our results indicate that convenience store lunchboxes contain high levels of protein, fat, saturated fat, and sodium. The nutritional contents differed by meal type, price, and store brand, and higher price did not imply higher nutritional quality. We propose the need to educate consumers to check nutrition labels and purchase appropriate lunchboxes. Manufacturers also need to make efforts to reduce the amounts of fat, saturated fat, and sodium, and not provide protein in excess.

Variation of Iron Content and Ferritin Distribution during Development Stage under Conditions of Iron Nutritional Status from Hydroponic Culture in Red Pepper ( Capsicum annuum L. )

  • Total iron content and ferritin distribution have been determined in red pepper(Capsicum annuum L.) during development stage under conditions of iron nutritional status from hydroponic culture. Color of the leaves become chlorotic on iron deficient and high concentration. The plant height on each iron concentration had retarding effect at concentration lower than $25\muM$ and greater than 125$25\muM$. In normal green leaves. Total iron content was almost constant with a mean value of $2.5\mumole$ of iron/mg of dry matter, except at 63day, for which it increases slightly to $4\mumole$. Howere, iron content of chlorotic plants grew on iron free medium was not almost detectable. Also in post chlorotic leaves(++Fe), iron content was evidently increase unitl 7days after transfer on liquid medium, but decreased from after 14days. Also, ferritin protein analysed total protein extracts prepared from leaves of different ages using antibodies raised against ferritin protein. Ferritin protein deereased progressively during the first week of germination and was not detectable in vegetative tissues. Ferritin protein in post chlorotic leaves wasevidently strongly cnhanced until 11days after transfer on liquid medium but decreased until the leves became chlorotic.

생육환경이 다른벼의 단백질 함량변이 (Variability of Protein Content in Rice Grown at Several Different Environments)

  • 쌀 단백질 함량의 품종과 환경에 따른 변이를 알고자 한국재래품종 11, 한국에서 육성된 현장려품종 12 및 일본에서 도입된 현장려품종 10, 합계 33 품종을 보통재배하고, 한편 Indica 2품종과 Japonica 2품종을 유기물과 질소시용량을 달리하여 재배하고, 이들 현미의 질소를 분석하여 이것을 단백질 함량으로 환산하여 검토한 결과를 요약하면 다음과 같다. 1. 11개 재래품종군의 단백질 함량은 평균 6.82%, 국내에서 육성된 장려품종군의 평균은 6.51%, 도입된 장려 품종균의 평균은 6.40%로 통계적으로 유의하지 않았으나 재래 품종군이 높은 편이었다. 2. 대체로 조생종일수록 단백질 함량이 높은 경향이었으며, 공시된 Indica 품종들이 단백질함량은 현저하게 높았다. 3. 질소비료의 증시는 단백질 함량을 현저하게 증가시켰지만 유기물과 석회의 시용은 거의 영향이 없었다. 4. 수확기가 늦어질수록 단백질 함량은 감소하는 경향이 있었다. 5. 재식밀도가 높아짐에 따라 단백질함량이 높아지는 경향이 있었으나 본시험의 밀도범위에서는 각 품종들은 일정한 경향을 보이지 않았다.

Relationship of Physicochemical Characteristics and Ethanol Yield of Korean Barley (Hordeum vulgare L.) Cultivars

  • The grain and agronomic characteristics of Korean barley cultivars were investigated with respect to ethanol yield. Test weight, grain yield, and starch yield showed noticeable variation among the cultivars. Grain yields were higher in covered barley and non-waxy barley. Starch yield was higher in non-waxy barley than waxy barley. Protein, ${\beta}$-glucan, and starch content of tested cultivars ranged in 10.0-12.9%, 4.4-7.5% and 49.7-65.3%, respectively. Naked barley cultivar had higher starch content than covered barley cultivar. However, covered barley had high starch yield because it has higher grain yield than naked barley. Covered barley cultivar had higher husk content, ranging 7.6-14.0%, than that of naked barley cultivar, ranging 5.3-8.0%. Starch content was positively correlated with amylose content, test weight, ethanol yield and negatively correlated with protein, husk, ${\beta}$-glucan content. Ethanol yield per ton was positively correlated with starch content, but negatively correlated with husk content. Ethanol yield per hectare was positively correlated with starch yield, grain yield, grain weight and negatively correlated with protein, test weight. From this research, the important characteristics of barley cultivar as a bioethanol producing material were starch content and grain yield. Optimum barley genotype was non-waxy naked barley that had low protein, ${\beta}$-glucan, husk content, and high starch content and grain yield.

염스트레스가 담배식물의 Protein, ATPase 및 Peroxidase 활성에 미치는 영향 (Effects of Salt Stress on Protein Content, ATPase and Peroxidase Activities in Tobacco.)

  • 본 실험은 담배에서 염스트레스에 따른 생리적 반응의 연구결과(제1보)를 기초로, NaCl를 농도별로 처리하여 생체내에서 일어나는 생화학적인 변화의 구명을 통해 염해기작의 기초자료로 얻고자 수행한 결과를 요약하면 다음과 같다. 총단백질과 가용성단백질은 염농도가 높아질수록 감소하였으며 처리간에는 120mM까지는 완만히 감소하였고, 150mM에서는 급격한 감소를 나타냈다. 전기영동 패턴은 염농도의 증가에 따라 새로운 polypeptide band의 생성과 소멸은 없었으며 약 74Kd의 polypeptide band에서 30mM과 60mM까지는 뚜렷한 양이 증가하였고 90mM부터는 감소하였다. 엽록소함량은 염농도의 증가에 따라 감소하였으며 특히 염해에 의한 반응은 엽록소b보다는 엽록소a가 민감하였다. ATPase활성과 peroxidase의 활성은 염농도가 높아질수록 120mM까지는 일정하게 증가하였으나 150mM에서 급격히 증가하여 담배의 염해의 생화학적인 제한범위는 120mM로 나타났다.

Hepatic and Renal cysteine Sulfinic Acid Decarboxylase Activities in Cats Fed Different Levels of Dietary Protein and Taurine

  • In order to evaluate the dietary regulation of cysteine sulfinic acid decarboxylase (EC 4.1.1.29) in cats, acitivity and protein content of CSAD were assessed in the liver and kidney of cats fed different levels of dietary protein, with and without taurine. Four groups of cats were fed one of the follow diets for 5 weeks ; 20% protein and taurine- free diet(LP0T) ; 20% protein and 0.15% taurine diet(LPNT) ; 60% protein and taurine-free diet(HP0T); and 60% protein and 0.15% taurine diet (HPNT). CSAD activity was determined in the liver and kidney of cats by measuring 14C2 released form [1-14C]-L cysteine sulfinic acid. CSAD protein was quantified using an immunochemical method. CSAD activity was extremely low in cat tissues, among which kidney showed the highest activity which was 0.118$\pm$0.050, and 0.377$\pm$0.056 nmol.min-1.mg soluble portein-1 iin animals fed LP0T and HP0T, respectively. Even though renal CSAD protein content was 18~55% of the hepatic CSAD protein content, renal CSAD acitivity was 1.3~6.5 times of the hepatic CSAD activity . Renal CSAD acitivities of cats fed 60% protein were about 1.6~3.2 times those of animals fed 2.% protein , and hepatic CSAD activity was not significantly affected by the dietary level of protein. Taurine depletion significantly elevated both hepatic and renal CSAD activities above the values for cats having normal taurine status most probably as an adaptive response.

식이단백질량이 성장기 흰쥐가 골밀도에 대한 칼슘효율에 미치는 영향 (Effect of Dietary Protein Level on Ca Efficiency in Bone Mineral Density in Growing Rats)

  • This study was performed to evaluate the effect of dietary protein level on Ca efficiency in bone mineral density in growing male rats. Twenty male rate were divided into two groups. The rats in one group were fed on casein 20% diet as control group and the others were fed on casein 40% diet as protein group. All rats were fed on experimental diet and deionized water ad libitum for 9 weeks. The total body, spine and femur bone mineral density and bone mineral content were measured using dual energy-x ray absorptiometry. Urinary calcium, phosphate, pyridinoline and creatinine, serum calcium, phosphate, total protein, albumin, alkaline phosphatase(ALP) and osteocalcin were measured. Urinary Ca excretion, pyridinoline and crosslinks value and serum ALP content seem to be increased in high protein group. It appears that the growing rats in high protein group had a higher bone resprption and bone formation than those in control group. Animal fad a high protein diet had a siginficantly higher Ca efficiency in BMD, BMC of total body, spine and femur. The results of this show that increasing of dietary protein level (40%) is beneficial of improvement of Ca efficiency during growing period.
