소비자 리뷰 텍스트마이닝을 이용한 신생 산업 시장 구조 분석: 국내 수제 맥주 시장의 경쟁 관계 및 시장 구조를 중심으로 (Analysis of New Market Structure Using Text Mining and Consumer Perceptions Map: The Case of the Korean Craft Beer Market)

  • Purpose This paper aims to effectively utilize user-generated content (UGC) and analyze the market structure of a relatively new market which lacks rich user review information. Specifically, we propose a domain-specific text mining tool for the domestic craft beer market and visualize the market structure by incorporating how individual beer products are positioned in the perceptual map of consumers. Design/methodology/approach We collect user review information from Naver blogs, and extract words that describe beers. We identify semantic relationships between beer products through text mining, and then depending on these semantic relationships, construct a graph representing the market structure of the domestic craft beer market based on the consumer's perceptual map. Findings First, beer products produced in the same brewery are perceived as very similar to consumers. Second, only two products, 'Heukdang Milky Stout' and 'Gompyo', was noticeably distinguishable from other products. Third, even though 'Gyeongbokgung' is from a different brewery, it is located very close to the products of 'Jeju Beer' brewery such as 'Jeju Baeknokdam Ale' and 'Seongsan Ilchulbong Ale', which suggests the influence of 'landmark series.' We successfully show that our methodology effectively describes the market structure of the craft beer market.

Bioactive peptides-derived from marine by-products: development, health benefits and potential application in biomedicine

  • Increased fisheries products have raised by-products that are discarded due to low economic value. In addition, marine by-products are still rich in protein and nutritional value that have biological activities and give benefits to human health. Meanwhile, there is raised pressure for sustainability practices in marine industries to reduce waste and minimize the detrimental effect on the environment. Thus, valorization by-products through bioactive peptide mining are crucial. This review focus on various ways to obtain bioactive peptides from marine by-products through protein hydrolysis, for instance chemical hydrolysis (acid and based), biochemical hydrolysis (autolysis and enzymatic hydrolysis), microbial fermentation, and subcritical water hydrolysis. Nevertheless, these processes have benefits and drawbacks which need to be considered. This review also addresses various biological activities that are favorable in pharmaceutical industries, including antioxidant, antihypertensive, anticancer, anti-obesity, and other beneficial bioactivities. In addition, some potential marine resources of Indonesia for the marine biopeptide from their by-product or undesired marine commodities would be addressed as well.

체계적 문헌 고찰을 통한 패션 제품의 친환경 CMF 디자인 프로세스 분석 (A Systematic Review of Eco-CMF Design Processes for Fashion Products)

  • An eco-CMF design process is vital to the sustainable development of fashion products concerning both emotional and physical quality factors, thus extending the use phase of the product life cycle. Life cycle assessment (LCA) is widely used in other fields to evaluate environmental impact; However, the method is rarely adopted in fashion. While cooperating with design, technology, and the users, reflecting the CMF design process is an excellent approach to the sustainable development of fashion products. Moreover, it is likely to evoke favorable reactions in users toward products. Therefore, this study aimed to review the sustainable design strategies associated with CMF in the fashion industry. Using a systematic review, 135 papers that met the inclusion criteria were examined from peer-reviewed journal articles published between 1990 and 2022. They contained specific design processes or tools relevant to eco-CMF design. The search used the Web of Science database. After a rigorous search, the final six peer-reviewed journal articles were selected and underwent thorough content reviews. Then, the CMF design tools and frameworks for eco-design featured in the articles were carefully reviewed and analyzed. Finally, we proposed practical guidelines for the sustainable development of eco-CMF design in the fashion industry. The study outcomes revealed the need for concrete eco-CMF design processes, particularly for fashion products. Furthermore, more active research involving eco-CMF design processes for the sustainable environmental impact of fashion products is required.

The Effect of Online Supporter's Review Directions on Consumers' Brand Attitude and Purchase Intention: The Role of Brand Awareness

  • Online supporters are the group of people selected by companies for the online promotion of their products or services and focus on generating messages that are conducive to stimulating hands-on experiences with companies' products and services to create advertising effects. This study examined how reviews offered by blogs operated by fashion brands' online supporters influence consumer's brand attitudes and purchase intentions. Specifically, this study examined how brand awareness and directions of review messages influences consumers' brand attitudes and purchase intentions. This study employed a 2 (brand awareness: high awareness vs. low awareness) ${\times}$ 3 (review direction: one-sided positive, two-sided positive & negative, one-sided negative) between-subject factorial design. In total, 180 respondents participated, thus garnering 30 responses for each of the six conditions. The results of two-way ANOVA revealed the significant main effect supporters' review message direction on consumers' brand attitudes and purchase intentions. Two-sided messages were rated high for brand attitude and purchase intention compared to one-sided positive or negative or positive directions. The interactions between brand reputation and message direction were significant for brand attitude, but not for purchase intention.

국내에서 보고된 한약 및 민간요법, 건강식품 관련 약인성간손상에 대한 체계적 고찰 (Hepatotoxic Events Associated with Herbal Medicinal Products, Folk Remedies and Food Supplements in Korea)

  • Background: The use of herbal preparations as remedies for various medical conditions has continuously increased in Korea Large proportions of Korean patients use herbal medicinal products, folk remedies, and food supplements. However, studies on the safety of herbal products arc conducted on a less than sufficient basis even in the countries like Korea where herbal medicine is being used extensively. Some of the reports on the safety of herbs were done by the doctors of western medicine but lack of knowledge and misclassification led to misunderstandings. Objecitves: This study aims to review the recent evidences on hepatotoxic events associated with the use of herbal medicinal products, folk remedy, and food supplements. In the process, this review will grasp trends in this field of studies and will direct further researches into the right direction. Methods: Systematic literature searches were performed on MedRic and MEDLIS in Korea. Screening and selection of the articles and the extraction of data were performed independently by two of authors. There were no restrictions regarding the published date. In order to avoid bias, the articles written by medical doctors, not by oriental doctors were selected. 43 journals were chosen for the review. Results: Analyzing the number of journals, studies on the drug-induced liver injury were increased after the year 2000. The proportion of herbal and folk remedy associated hepatotoxic injuries in all drug-induced liver injury was $21.0\%-30.0\%$. But criterion for herbal medicine is rather vague and limited objective data hindered objectiveness. Few of single medicinal herbs and combination preparations were associated with hepatotoxic injuries. But because of lack of objectivity, further researches must be conducted to yield more concrete results. Conclusions: yield more concrete results. Incidence figures are largely unknown, and in most cases a causal attribution is not established. The challenge for the future is to systematically research this area, educate all parties involved, and minimize patient risks.

앙상블 기법을 활용한 온라인 음식 상품 리뷰 감성 분석 (Sentiment analysis of online food product review using ensemble technique)

  • 온라인 마켓에서 소비자는 다양한 상품을 접하고 이에 대한 의견을 자유롭게 기술한다. 소비자의 상품 리뷰가 다른 소비자와 온라인 마켓의 성공에 큰 영향을 주는 만큼 온라인 마켓은 판매 상품에 대한 소비자의 감성을 정확하게 분석할 필요가 있다. 데이터 분석 기법 중 하나인 텍스트 마이닝은 상품에 대한 소비자 리뷰를 분석하여 상품을 효율적으로 관리할 수 있게 해준다. 선행 연구들은 데이터 도메인과 사이즈에 따라 분석 결과의 정확도가 다르게 나타남에도 불구하고 특정 도메인과 2만개 미만의 데이터를 분석해왔다. 또한, 분석의 정확도를 향상 시킬 수 있는 추가 요인에 대한 연구는 거의 수행하지 않았다. 본 연구는 앙상블 기법을 활용하여 기존 연구에서 주로 다루지 않은 음식 상품 도메인의 72,530개 리뷰 데이터를 분석하였다. 또한, 분석 정확도 향상과 관련하여 요약 리뷰의 영향력을 살펴보았다. 연구 결과, 본 연구는 기존 연구와 다르게 부스팅 앙상블 기법이 가장 높은 분석 정확도를 보인다는 사실을 발견하였다. 또한, 요약 리뷰는 분석의 정확도 향상에 기여하는 것으로 나타났다.

A Review on Processing Opportunities for the Development of Camel Dairy Products

  • Camel milk has a significant and pivotal role in the diet of people residing in semi-arid and arid regions. Ever since ancient times, marketing of camel milk has remained insignificant due to nonexistence of processing amenities in the camel nurturing areas, hence the utilization of unprocessed camel milk has continuously remained limited at family level by the nomads. Due to the superior medicinal values and health promoting effects, incredible growth in the demand of camel milk and dairy products have been noticed all over the world during last two decades. Such emergence has led dairy industry to provide diversified camel dairy products to the consumers with superior nutritional and functional qualities. In contrast to bovine, very few food products derived from camel milk are available in the present market. With the advancements in food processing interventions, a wide range of dairy and non-dairy products could be obtained from camel milk, including milk powder, cheese, yogurt, ice cream, and even chocolate. In some regions, camel milk is used for traditional dishes such as fermented milk, camel milk tea, or as a base for soups and stews. Current review highlights the processing opportunities regarding the transformation of camel milk into various dairy products via decreasing the inherent functionality that could be achieved by optimization of processing conditions and alteration of chemical composition by using fortification method. Additionally, future research directions could be devised to improve the product quality.

인터넷 쇼핑몰에서 패션제품 구매시 구매후기 이용에 대한 연구 - 서울지역 고등학생을 중심으로 - (The study on the utilization of the customer review when buying fashion products at the internet shopping malls - Focusing on the high school students in Seoul -)

  • 서울지역 고등학생을 대상으로 인터넷 쇼핑몰에서의 패션제품 구매행동, 구매후기에 대한 인식, 구매후기의 이용과 작성 및 그에 따른 인식, 의복관여도에 따른 구매후기에 대한 인식 및 구매 후 불만경험과 대응행동을 살펴보았다. 서울지역의 6개 고등학교 508명의 학생들을 대상으로 설문조사를 실시하였고 자료분석은 SPSS 17.0을 이용하여 평균, 표준편차, 빈도, t-test, 일원분산분석을 하였으며 사후검정으로는 Duncan's Multiple Test를 실시하였다. 인터넷 쇼핑몰에서 패션제품 구매이유는 저렴한 가격과 다양성 및 편리성 때문이였고 구매하지 않는 이유는 대부분 화면과 실제의 상품 차이 때문이었다. 학생들은 구매후기를 믿을만하고 유용하다고 인식하였다. 구매후가 내용의 방향과 개수에 대해서는 영향을 받았지만 최신성에 대해서는 영향 받지 않는 것으로 나타났다. 구매후기를 이용하는 학생이 이용하지 않는 학생보다 유용성, 신뢰도, 영향력 모두 높게 인식하였고, 구매후기를 작성하는 학생들이 작성하지 않는 학생들보다 구매후기의 유용성과 신뢰도, 구매후기의 개수에 따른 영향력을 높게 인식하였다. 의복관여도에 따라서는 고관여의 학생들이 중관여와 저관여의 학생들에 비해 구매후기를 유용하다고 인식하였다. 인터넷 쇼핑몰을 통해 패션제품을 구매 후 불만을 경험한 학생들은 불평행동으로 공행동과 무행동을 주로 하는 것으로 나타났다.

A Review of Technologies for Detection and Measurement of Adulterants in Cereals and Cereal Products

  • Purpose: The continued increase in the world population has triggered an increased demand for food. Cereal grains, flour, and their products constitute the staple diet for most of the world's population. This high demand for food, particularly for cereal-based products, has been exploited for commercial gain through adulteration of food materials. We provide a thorough review of the current developments and limitations of modern, nondestructive analytical techniques used for detection of adulterants in cereals and their products and compare them with conventional methods. Results: Adulterated food poses a serious health risks to humans, animals, and the ecosystem in general. Over the last few decades, the adulteration industry has developed fraudulent practices that often outsmart conventional methods of detection and quality control. Therefore, technological advancements to aid in detection and measurement of adulterants in food products and to ensure food quality and safety are critically important to consumers worldwide. Conclusion: There is a continuous demand for development of nondestructive technology to improve the accuracy and efficiency of detection, measurement, and qualification of adulterants in cereals and other food materials.
