COVID-19: "영양 아젠다" (Nutrition agenda during the era of the COVID-19 pandemic)

  • This review describes the risk factors of the nutrition crisis in coronavirus disease 2019 (COVID-19) infections and suggests precision nutrition against long-term psychological and physiological stress. The mandatory quarantine and the social distancing are associated with an interruption of the lifestyle routine, resulting in psychological (i.e., boredom) and physiological stress. The stress with multiple causes and forms induces over-compensation of energy-dense food, such as sugary comfort food, and is defined as "food craving" because carbohydrates positively affect the psychological stability with serotonin secretion. The consumption of foods that promote an immune response against viral infections (vitamins & minerals; Cu, folate, Fe, Se, Zn, and Vit A, B6, B12, C, and D), reduce inflammatory cytokines (w-3 fatty acids, Vit D, fibers, and Mg), contain antioxidants (beta-carotene, Vit E, C, Se, and phenolics), and sleep-inducing proteins (serotonin, melatonin, and milk products) is essential. In addition, a reduced Vit D deficiency in winter due to less time spent outdoors under quarantine has been reported to be associated with viral infections. The case fatality rate of COVID-19 was significantly dependent on age, sex, race, and underlying health condition. To prevent malnutrition and cachexia in elderly people, weight loss and muscle wasting should be monitored and controlled. Inadequate protein intake, sedentary lifestyle, and inflammation are significant risk factors for sarcopenia. Moreover, relatively high intakes of fat or carbohydrate compared to low protein intake result in abdominal obesity, which is defined as "sarcopenic obesity." Keeping the food-safety guidelines of COVID-19, this study recommends the consumption of fresh and healthy foods and avoiding sugar, fat, salt, alcohol, and commercially frozen foods.

Endogenous Proteolytic Systems and Meat Tenderness: Influence of Post-Mortem Storage and Processing

  • Meat proteolytic systems play a crucial role in meat tenderisation. Understanding the effects of processing technologies and post-mortem storage conditions on these systems is important due to their crucial role in determining the quality characteristics of meat and meat products. It has recently been proposed that tenderisation occurs due to the synergistic action of numerous endogenous proteolytic systems. There is strong evidence suggesting the importance of μ-calpain during the initial post-mortem aging phase, while m-calpain may have a role during long-term aging. The caspase proteolytic system is also a candidate for cell degradation in the initial stages of conversion of muscle to meat. The role of cathepsins, which are found in the lysosomes, in post-mortem aging is controversial. Lysosomes need to be ruptured, through aging, or other forms of processing to release cathepsins into the cytosol for participation in proteolysis. A combination of optimum storage conditions along with suitable processing may accelerate protease activity within meat, which can potentially lead to improved meat tenderness. Processing technologies such as high pressure, ultrasound, and shockwave processing have been reported to disrupt muscle structure, which can facilitate proteolysis and potentially enhance the aging process. This paper reviews the recent literature on the impacts of processing technologies along with post-mortem storage conditions on the activities of endogenous proteases in meat. The information provided in the review may be helpful in selecting optimum post-mortem meat storage and processing conditions to achieve improved muscle tenderness within shorter aging and cooking times.

  • 안전하고 미생물 불활성화 능력이 높은 초임계 유체(이산화탄소 및 일산화이질소)는 최근 식품 및 의료 분야 등에서 비가열 살균기술로 응용 가능성이 높아 관심이 증대되고 있다. 하지만 초임계 유체를 이용한 많은 응용 연구에도 불구하고 초임계 유체 살균기술의 살균 성능 및 기작에 대한 이해 부족으로 아직 널리 활용되고 있지 못하다. 따라서 본 글에서는 기존 연구를 중심으로 초임계 유체 특성, 미생물 불활성화 특성과 기작, 주요 영향 인자, 응용 분야 등에 대해서 정리 및 검토하여 초임계 유체 살균기술의 연구 및 상용화에 도움이 되고자 한다.

미국 식품의약품안전청 식품안전 현대화법에 대한 국내 식품산업의 대처 방안 (Preparedness of food industry in korea for united states food and drug administration food safety modernization act)

  • Even though the food safety system in the United States is one of the best in the world, many millions of people become sick and thousands die from foodborne illnesses caused by any of a number of microbial pathogens and other contaminants. Large recalls of United States Department of Agriculture (USDA) and the Food Drug and Administration (US FDA)-regulated food products due to findings of E. coli O157:H7, Listeria, Salmonella, and other problems occur each year. As the US FDA Food Safety Modernization Act (FSMA) passed in 2011, FSMA will require food processing, manufacturing, shipping, and other regulated entities to conduct an analysis of the most likely safety hazards and to design and implement risk-based controls to reduce or eliminate these hazards. FSMA also mandates increased scrutiny of food imports, which account for a growing share of U.S. food consumption; food import shipments will have to be accompanied by documentation showing that they can meet safety standards that are at least equivalent to those in the U.S. On September 17, 2015, the US FDA published final rules for Preventive Controls for Human and Animal Food and, continuing into 2016, the US FDA intends to finalize the remaining five rules it has proposed to implement FSMA. Among these rules, this article will review and discuss Preventive Controls for Human Food Rule and its components, and suggest how to comply with these FSMA rules as foreign human food and ingredients suppliers to the US.

아편, 주석, 고무: 페낭 화인사회의 형성과 전개, 1786-1941 (Opium, Tin, and Rubber: The Formation of Chinese Society in Penang, 1786-1941)

  • This paper examines the formation and evolution of Chinese society in Penang over 155 years. Since it was ruled by the British in 1786, many immigrants gathered in Penang. Among them, much of the population was Chinese. It could be offered to clarify the historical process of the development of Chinese society in Penang by paying attention to the three items - opium, tin, and rubber. All the conflict and friction over these products were main causes of prosperity and decay for the Chinese society in Penang. In the early 19th century, the Chinese colossus could get their capital accumulation by taking advantage of 'opium farm'. They amassed their fortune through development of tin mines newly discovered in Perak during the late 19th century. It was the age of Chinese Colossuses deeply connected with Chinese secret societies. After the rubber plantations were developed by the Western capital in the early 20th century, the age of Chinese Colossuses was gradually fallen down. From this point of view one can be provided a new perspective on the history of Penang and the Chinese society of its own. The three scopes for history enable us to make a new interpretation about the issue of stratification within Chinese society in Penang. Especially this research focused on the economic characteristics of Chinese secret societies as 'social capital', and on the identity conflicts between traditional Strait Chinese(peranakan) elite and emerging sinkeh Chinese merchants. The identity problem between 'Laokeh' and 'Sinkeh' in the early 20th century was intentionally exaggerated by modern researchers. Their conflicts seems to be caused by different economic interests rather than identity. We need to consider again the rise and fall of Chinese society in Penang with flexible thinking.

하수 유래 미량오염물질 현황과 관리 방안 고찰 (A review on status of organic micropollutants from sewage effluent and their management strategies)

  • Due to the large-scale production and use of synthetic chemicals in industralized countries, various chemicals are found in the aquatic environment, which are often termed as micropollutants. Effluents of municipal wastewater treatment plants (WWTPs) have been identified as one of the major sources of these micropollutants. In this article, the current status of occurrence and removal of micropollutants in WWTPs and their management policies and options in domestic and foregin countries were critically reviewed. A large number of pharmaceuticals, personal care products, and industrial chemicals are found in WWTPs' influent, and are only partially removed by current biological wastewater treatment processes. As a result, some micropollutants are present in WWTPs' effluents, which can negatively affect receiving water quality or drinking water source. To better understand and assess the potential risk of micropollutants, a systematic monitoring framework including advanced analytical tools such as high resolution mass spectrometry and bioanalytical methods is needed. Some Western European countries are taking proactive approach to controlling the micropollutants by upgrading WWTP with enahnced effluent treatment processes. While this enahnced WWTP effluent treatment appears to be a viable option for controlling micropollutant, its implementation requires careful consideration of the technical, economical, political, and cultural issues of all stakeholders.

가정편의식 패키지 디자인에 대한 사용자 평가 연구 (A Study on User Evaluation about Package Design of Home Meal Replacement)

  • 이 연구는 고령화 사회 및 개인핵가족사회에 진입하는 우리나라의 현 상황에서 가정편의식 제품을 편리하게 사용할 수 있는 디자인에 대하여 알아보고자 한다. 연구방법으로 첫째, 가정편의식 이론적 고찰로서 문헌자료 및 선행연구조사를 하였다. 둘째, 디자인 조사로서 가정편의식 디자인 사례 분류를 하였다. 셋째, 실제 사용하는 이용자를 대상으로 사용자 평가 및 감성평가 조사를 실시하였다. 제품 디자인 감성평가에 의한 요인분석 결과 3개의 대표 요인으로 분류되어졌다. 1요인은 "형태적 감성", 2요인은 "기능적 감성", 3요인은 "심리적 감성"으로 연구자에 의한 대표 감성언어 명칭을 3가지로 부여하였다. 가정편의식 패키지 디자인으로 다음과 같이 제작되어져야할 것이다. 첫째, 용기를 들때 대부분 비닐용기로 되어져있어 미끄러지고 떨어뜨리기 쉽기 때문에 용기에 그립감을 주어 잘 떨어뜨리지 않게 한다. 둘째, 손목이나 손가락 힘이 약한 고령자를 위하여 쉽게 뜯을 수 있게 제작 한다. 또한, 색상과 관련하여 차가운 한색계열 색상보다는 따뜻한 난색 계열색상을 이용하여 제공한다.

Reconstruction of the Korean Asbestos Job Exposure Matrix

  • Background: A job-exposure matrix (JEM) is an important surrogate indicator to evaluate past exposure levels. Although a Korean asbestos JEM has been constructed previously, this JEM includes only a few industrial and occupational groups. This study aimed to reconstruct the JEM by integrating the latest organized data to improve its utility. Methods: We used recent Korean standard industry and occupation codes and extracted 36 articles from a systematic literature review to initiate the reconstruction of the previous Korean asbestos JEM. The resulting data consisted of 141 combinations of industrial and occupational groups. Data from the Netherlands's JEM were also reviewed and categorized into 70 industrial and 117 occupational groups by matching with the Korean data. We also utilized Germany's data, which consisted of 10 industrial and 14 occupational groups. Results: The reconstructed Korean asbestos JEM had 141 combinations of industries and occupations. The time periods are from the 1980s to the 2000s in 10-year intervals. Most of the data were distributed between the 1990s and the 2000s. Occupations with high exposure to asbestos included knitting and weaving machine operators, automobile mechanics or assemblers, ship mechanics or assemblers, mineral ore and stone products processing mechanics, and metal casting machine operators or mold makers. Conclusions: The reconstructed Korean asbestos JEM has expanded the type and duration of the occupational groups of the previous JEM and can serve as an important reference tool for evaluating asbestos exposure and designing compensation and prevention policies in Korea.

반도체·디스플레이 장비용 바닥 환경진동허용규제치의 실험적 평가방법 고찰 (A Review of Experimental Evaluation Method to Floor Environment Vibration Criteria for Semiconductor and Display Equipment)

  • The semiconductor and display equipment demands an ultra-fine precision of several nm to several ㎛, and the scale is getting smaller due to the explosive development. The manufacturing process equipment for such products with ultra-fine precision is very sensitive to ultra-small vibrations flowing from the floor, resulting in problems of production defects and yield degradation. The vibration criteria are a standard that regulates the vibration environment of the floor where such precision process equipment will be installed. The BBN vibration criteria defined the allowable vibration velocity level in the frequency domain with a flat and inclined line and presented a rating according to it. However, the actual vibration criteria have appeared with various magnitudes in the frequency domain according to the dynamic characteristics of individual equipment. In this study, the relationship between the relative motion of two major points in the equipment and the vibration magnitude of the floor is presented using the frequency response function of a simple 3-DOF model. It is describing the magnitudes according to the frequency of the floor vibration that guarantees the allowable relative motion and this can be used as the vibration criteria. In order to obtain the vibration criteria experimentally a method of extracting through a modal test was introduced and verified analytically. It provides vulnerable frequency and magnitude to floor vibration in consideration of the dynamic characteristics of individual equipment. And it is possible to know necessary to improve the dynamic characteristics of the equipment, and it can be used to check the vibration compatibility of the place where the equipment will be installed.

상품 리뷰 감성분석을 이용한 아이템 기반 협업 필터링 추천 기법 (Item-Based Collaborative Filtering Recommendation Technique Using Product Review Sentiment Analysis)

  • 협업 필터링 추천 기법은 전자상거래 기업들이 추천시스템을 도입한 이래로 가장 널리 사용되고 있다. 그러나 온라인에서 상품이나 콘텐츠의 구매가 일상화되면서 단순히 구매 고객의 평점만을 사용하는 추천 방식으로는 추천의 정확성이 낮아지는 문제점이 발생하였다. 본 논문에서는 추천의 정확성을 향상시키기 위해, 상품 리뷰를 분석하고 이를 가중치로 사용한 협업 필터링 추천 기법을 제안한다. 제안하는 기법은 상품에 대한 리뷰를 텍스트 마이닝 기법으로 정제하여 특징을 추출하고 감성 기반 분석을 통해 감성 점수를 산출한다. 사용자에게 더 나은 아이템을 추천하기 위해 산출된 점수를 아이템 예측 값 계산 시 가중치로 사용한다. 실험을 통해 전통적인 협업 필터링 기법보다 제안하는 기법의 정확성이 향상되는 것을 확인할 수 있었다.
