Evaluation of the Quality of Canned Seafood with Added Spice-oil Extract

  • The influence of spice (cinnamon, allspice, black pepper)-oil extract on canned seafood quality was studied. During the processing of canned seafood, the substitution of spice-oil extract for vegetable oil (refined sunflower, corn, soybean and olive oil) resulted in a decrease in the heat resistance of spore microorganisms, making it possible to reduce the duration of sterilization for canned food to 5-10 min at $115^{\circ}C$. This reduction in the sterilization duration of canned seafood with spice-oil extract inhibited residual microflora in the product, thus reducing the deleterious effect of heating on the main food compounds while preserving protein digestibility.

  • Laser-induced Raman spectroscopy has been utilized to demonstrate its feasibility for studying the kinetics of imine formation in chloroform solvent. The imine formation, by the nucleophilic addition of primary amine to the carbonyl group of ketone, has been monitored at ten minute intervals for eight hours. The intensity of the C=O stretching mode at 1684 $cm^{-1}$ was measured to determine the rate constant of the reaction. In order to correct the sample-to-sample fluctuations in Raman peak area, this peak was normalized to the C-Cl bending peak at 666 $cm^{-1}$. By the peak area change during the course of reaction, the second order rates at three different temperatures have been determined. The substituent effects on the π conjugations of imine product have also been investigated. On the basis of Raman frequency shifts, the delocalization properties of the aromatic system modified by substitution of a hydrogen atom with -Cl and $-CH_3O$ groups could be clearly understood.

  • Group 6 $M(CO)_4$(2, 2'-bipyridine)[M=Cr, Mo, W] was synthesized by substituting CO ligand of $M(CO)_6$ with strong electron donating ligand, 2, 2'-blpyridine, in the presence of phase transfer catalyst. The effective of catalyst and solvent on the product yield were discussed according to concentration and kinds of catalyst, kinds of center cation and anion, type of alkyl and aryl groups attached to the center cation, and different chain length.

The Effect of Mustard Meal in Laying Hen Diets

  • A total of 252, 50 week-old Isa-brown laying hens were randomly allotted to 7 groups of 3 replicates. Mustard meal (MM) which is a by-product from mustard processing plant, was dried under the sun or in a gas heated pan. It contained on DM basis 30-32% CP, 19-22% EE and 12-13% CF. The meal from either drying method was incorporated into the diets at 0, 10, 20 and 30% which was equivalent to the substitution levels for soybean meal at 0, 31, 63 and 94%, respectively. All birds were individually kept in battery cages where feed and water were freely accessed throughout 84 days experimental period. It was found that egg production, feed intake, body weight gain and egg weight significantly decreased with the increased MM level. The inclusion of 20% MM did not show a significant difference in egg production and quality from the control, but produced 6-8% lower egg production. Feed intake was linearly decreased with the MM levels, except the 10% sun dried MM group. Fat deposition of the birds fed MM diets significantly decreased, while kidney weight increased when compared with the control group. However, the weight of thyroid glands and spleen trended to be heavier in the MM groups, but this was not significantly different among dietary treatments. It was concluded, MM from both drying methods could be incorporated in laying hen diets at the level of 10% without any adverse effect.

Quality Characteristics of Sulgidduk with Tomato Powder (토마토 분말을 대체한 설기떡의 품질 특성)

  • In this study, Sulgidduk samples were prepared with substitutions of 1, 2, 3, and 4% tomato powder, along with a control, and were then analyzed for quality characteristics such as moisture content, water activity, color, textural characteristics, and sensory qualities, in order to determine the optimal ratio of tomato powder in the formulation. According to the results, moisture content and water activity were not significantly different among the Sulgidduk samples. In terms of color, as the level of tomato powder content increased, lightness decreased, while the a-value (+redness/-greenness), and yellowness increased. For the textural characteristics, the samples showed significant differences for hardness, adhesiveness, and gumminess, while fracturability was not significantly different. In addition, the samples containing tomato powder presented significantly higher springiness, cohesiveness(except the 1% substitution level), chewiness, and resilience than the control group. In the sensory evaluation, the control group had significantly higher scores for color and flavor as compared to the tomato powder samples. Furthermore, flavor and overall acceptability decreased, while tomato flavor, sourness, and off-flavor increased with increasing tomato powder content. Sweetness and after-taste were not significantly different among the samples. In conclusion, the results indicate that substituting 2${\sim}$3% tomato powder in Sulgidduk is optimal for quality, and provides a product with reasonably high overall acceptability.

Hydrate Characteristics of Cement Mixtures with Expansion Additive According to Age and Improvement Effect on Initial Strength (팽창재를 사용한 시멘트 혼합물의 재령별 수화물의 특성과 초기강도 개선 효과)

  • CSA, a cement mineral compound that is mainly composed of $3CaO{\cdot}3Al_2O_3{\cdot}CaSO_4$, generates ettringite as a hydration product after a reaction with glass (lime), gypsum and water to speed up the hardening process and enhance the strength and degree of expansion. When used as a cement admixture, there is increased production of ettringite, which can improve the initial strength in the first three days and ameliorate the reduction in the initial strength caused by the use of fly ash in particular. In this study, a hydrate analysis was performed using XRD and SEM after substitution with fly ash (30%) and CSA (8%) with the goal of observing the effect of CSA on the initial strength of a cement mixture containing fly ash. The results of the analysis showed that an addition of CSA promoted the production of ettringite and improved the initial strength, resulting in the generation of hydrates, which can effectively enhance the long-term strength of these materials.

The Phosphorylation Status of Merlin Is Important for Regulating the Ras-ERK Pathway

  • The neurofibromatosis type2 (NF2) tumor suppressor gene product, merlin, is structurally related to the ezrin-radixin-moesin (ERM) family of proteins that anchor the actin cytoskeleton to specific membrane proteins and participate in cell signaling. However, the basis of the tumor suppressing activity of merlin is not well understood. Previously, we identified a role of merlin as an inhibitor of the Ras-ERK signaling pathway. Recent studies have suggested that phosphorylation of merlin, as of other ERM proteins, may regulate its function. To determine whether phosphorylation of merlin affects its suppression of Ras-ERK signaling, we generated plasmids expressing full-length merlin with substitutions of serine 518, a potential phosphorylation site. A substitution that mimics constitutive phosphorylation (S518D) abrogated the ability of merlin to suppress effects of the Ras-ERK signaling pathway such as Ras-induced SRE transactivation, Elk-mediated SRE transactivation, Ras-induced ERK phosphorylation and Ras-induced focus formation. On the other hand, an S518A mutant, which mimics nonphosphorylated merlin, acted like wild type merlin. These observations show that mimicking merlin phosphorylation impairs not only growth suppression by merlin but also its inhibitory action on the Ras-ERK signaling pathway.

PREPARATION OF POLYSTYRENE BEADS CONTAINING SULFONAMIDE GROUPS AND THEIR APPLICATION TO POLYMERIC BIOCIDES

  • A novel series of polystyrene (PS) beads containing various sulfonamide groups was prepared, and their chemical stabilities in an aqueous solution were tested in order to determine their ability to inactivate microbes. By reacting aminomethyl polystyrene (AM PS) beads or carboxy polystyrene beads with various benzenesulfonic acid derivatives, the sulfonamide groups were introduced on the PS beads. The characteristics of the product beads were analyzed by elementary analysis after the substitution of various sulfonamide groups. Energy Dispersive Spectroscopy (EDS), and FT-IR analysis were used to analyze the elemental functional group composition, respectively. The hydrolytic stabilities of the PS beads containing various sulfonamide groups along with the relationship between the swelling ratio and their hydrophilicity were investigated. The antibacterial activity of the beads was determined by their ability to inactivate E. coli. This study reports that PS beads containing sulfonamide groups had lasting antibacterial efficacy over a satisfactory period, whilst maintaining their chemical stabilities against hydrolysis. The 8 synthesized polymer beads exhibited antibacterial ability.

Effects of the Substitution of Mischmetal for PrNd on the Microstructures and Magnetic Properties of Rapidly Quenched (MM)PrNd-Fe-B Nanocrystalline Magnets

  • Mischmetal of Bayan Obo ore was utilized to prepare the high performance $(Pr_{7.34}Nd_{21.86})_{1-x}MM_xFe_{68.7}Al_{0.1}Cu_{0.12}Co_{0.88}B$ ribbons using melt-spinning method. Phase composition and magnetic properties were investigated at room temperature. The ribbons mainly consist of $R_2Fe_{14}B$ phase in isotropic nanostructure. Both coercivity and maximum energy product decrease with the increase of MM content. The magnetic parameters of the ribbons with MM = 20 % in mass are $B_r=7.38kGs$, $H_{cj}=13.66kOe$, $(BH)_{max}=11.81MGOe$. Henkel plots were applied to demonstrate the exchange coupling interaction between grains.

A Study on RF Communication Stabilization of Security System for Oil Tank-Lorry Truck Based on IoT (IoT 기반의 유류 수송 차량 보안 시스템을 위한 RF 통신 안정화 개선 연구)

  • Security systems for inland cargo truck transportation are mostly limited to route tracking for safe and efficient transportation. With this route tracking system, the status of cargo trucks can be monitored easily within inland boundaries. In case of oil transportation by land, however, security systems ensuring transportation of a designated quantity of products have been subject to extensive research since thefts and substitution by a similar product in the transportation process have emerged as a social problem. Security devices installed in an oil tank truck must meet the explosion-proof performance standards and be applicable to varying types of trucks. Accordingly, a wireless electronic seal with RF communication functions is considered to be the most appropriate method, but e-seals on moving vehicles require such levels of performance and reliability that can overcome certain challenges including changing radio waves and topographical impediments. Considering these characteristics of oil tank trucks, this study proposes an stabilization method to enhance the RF communication performance of e-seals, based on radio simulation and experiment findings.
