양배추 분말 첨가가 제빵 적성에 미치는 영향 (Effect of Cabbage Powder on Baking Properties of White Breads)

  • 양배추 분말을 첨가한 건강 기능성 식빵을 제조하기 위해 밀가루에 양배추 분말을 2.5%~10% 첨가하여 반죽에 대한 물성, 제빵적성 및 관능적 특성을 조사하였다. 첨가한 양배추 분말의 양이 증가할수록 식빵의 색도는 L값은 유의적으로 저하하였고, a값과 b값은 양배추의 첨가량에 따라 증가하는 경향을 나타내었다(p<0.05). 양배추 분말의 첨가에 의해 반죽의 pH값과 제조한 빵의 무게는 증가하였고, 빵의 부피와 비용적 및 굽기 손실률은 감소하였다. 양배추 분말을 첨가하는 양을 증가시킬수록 경도는 유의적으로 증가하였으며, 관능검사 결과 전체적인 기호도에서는 대조구와 2.5%, 5.0% 첨가구 간에는 유의적 차이는 없었으나 맛에서 대조구의 기호도가 다소 높은 것으로 나타났다(p<0.05) 이상의 결과에서 양배추 분말을 제빵공정에 첨가하는 것은 빵의 색, 부피 등 식빵의 물리화학적 특성의 변화를 가져오는 문제점이 있었다. 그러나 대조구와 비교했을 때 식빵 제조시 양배추를 5%까지 첨가하는 것은 관능적 특성에는 의미 있는 영향을 주지 않았다.

오령산에 대한 임상연구 분석 (An analysis of Clinical Studies on Oryeong-San)

  • Objective : This study's purpose was to review the clinical studies of Oryeong-San. Method : We searched papers about Oryeong-San using KISS, KTKP, PUBMED, Embase, Science Direct, and the key words "Goreisan", "Goreito", "Wu Ling San", "Oryeongsan", "Poria Five Powder" were used. Papers not matched with inclusion criteria were excluded. Results : Until today, there have been 133 studies on the effects of head diseases, urinary system diseases, edema, and other various effects of Oryeong-San. Of these, 23 studies were classified as clinical research papers. There were 8 cases of head diseases, 5 cases of urinary system diseases, 3 cases of edema, 2 cases of adjuvant, 1 case of Dysmenorrhea, 1 case of Primary Hypertension, 1 case of Primary Insomnia, 1 case of hydrocele, 1 case of side effects causing TINU syndrome. Conclusion : It can be seen that Oryeong-San has established the basis for application to the purpose of head disease(chronic subdural hematoma, hydrocephalus, hearing loss), urinary system disease(stone, urinary tract infection), edema, adjuvant, other hypertension and insomnia. On the other hand, considering one case that causes side effect of TINU syndrome, caution should be exercised when observing the progress of the patient taking the Oryeong-San.

리튬이온전지용 양극활물질 LiNi0.83 Co0.11Mn0.06O2의 전기화학적 특성에 미치는 Ce와 Nd 희토류 금속의 단독 혹은 이중 도핑효과 (Effect of Single and Dual Doping of Rare Earth Metal Ce and Nd Elements on Electrochemical Properties of LiNi0.83 Co0.11Mn0.06O2Cathode Lithium-ion Battery Material)

  • Layered $LiNi_{0.83}Co_{0.11}Mn_{0.06}O_2$ cathode materials single- and dual-doped by the rare-earth elements Ce and Nd are successfully fabricated by using a coprecipitation-assisted solid-phase method. For comparison purposes, non-doping pristine $LiNi_{0.83}Co_{0.11}Mn_{0.06}O_2$ cathode material is also prepared using the same method. The crystal structure, morphology, and electrochemical performances are characterized using X-ray diffraction (XRD), scanning electron microscopy (SEM), energy dispersive spectrometer (EDS) mapping, and electrochemical techniques. The XRD data demonstrates that all prepared samples maintain a typical ${\alpha}-NaFeO_2$-layered structure with the R-3m space group, and that the doped samples with Ce and/or Nd have lower cation mixing than that of pristine samples without doping. The results of SEM and EDS show that doped elements are uniformly distributed in all samples. The electrochemical performances of all doped samples are better than those of pristine samples without doping. In addition, the Ce/Nd dual-doped cathode material shows the best cycling performance and the least capacity loss. At a 10 C-rate, the electrodes of Ce/Nd dual-doped cathode material exhibit good capacity retention of 72.7, 58.5, and 45.2% after 100, 200, and 300 cycles, respectively, compared to those of pristine samples without doping (24.4, 11.1, and 8.0%).

Anti-obesity effects of Tenebrio molitor larvae powder in high-fat diet-induced obese mice

  • Purpose: Obesity is a serious public health issue for the modern society and is considered a chronic health hazard. There are many surgical and pharmacological approaches to treat obesity. However, various potentially hazardous side effects remain the biggest challenge. Therefore, diets based on foods derived from natural products have gained increasing attention compared to anti-obesity drugs. Recently, research on edible insects as a food source has been a topic of considerable interest in the scientific communities. This study examined the anti-obesity effects of ingesting an edible insect by feeding a high-fat diet (HFD)-induced obese mouse models with a diet containing Tenebrio molitor larvae powder (TMLP). Methods: Six-week-old female C57BL/6J mice were divided into 4 groups according to treatment: 100% normal diet (ND), 100% HFD (HFD), HFD 99% + TMLP 1% (TMLP), and HFD 97% + TMLP 3% (TMLP 3%). TMLP was added to the HFD for 6 weeks for the latter two groups. Results: Compared to the HFD group, mice in the TMLP group showed weight loss, and micro-computed tomographic imaging revealed that the volume of the adipose tissue in the abdominal area also showed significant reduction. After an autopsy, the fat weight was found to be significantly reduced in the TMLP group compared to the HFD group. In addition, the degree of fat cell deposition in the liver tissue and the size of the adipocytes significantly decreased in the TMLP group. Reverse transcription polymerase chain reaction analysis for the mRNA expression of adipogenesis-related genes namely CCAAT-enhancer-binding proteins (C/EBP-β, C/EBP-δ), and fatty acid-binding protein 4 (FABP4) showed that the expression levels of these genes were significantly reduced in the TMLP group compared to the HFD group. Serum leptin level also decreased significantly in the TMLP group in the comparison with the HFD group. In addition, total cholesterol, triglyceride, and glucose levels in mouse serum also decreased in the TMLP group. Conclusion: Taken together, our results showed that TMLP effectively inhibited adipocyte growth and reduced body weight in obese mice.

새싹보리와 녹차 스펀지케이크의 이화학적 및 항산화적 품질 특성 (Physicochemical and Antioxidant Properties of Sponge Cake made using Barley Sprout and Green Tea)

  • This study investigated the physicochemical and antioxidant properties of sponge cakes made using different amounts (2 and 4%) of barley sprout powder (BSP) and green tea powder (GTP), respectively. The results showed that the baking loss rate of GS2 (2% green tea) and GS4 (4% green tea) was 12.39% and 11.96%, respectively in the green tea addition group, which was higher than that of the barley sprout group, but significantly lower than that of the control group at 13.34% (p<0.05). The specific volumes of the sponge cake containing barley sprout and green tea 2% and 4% were between 2.84-2.95 mL/g, which was significantly higher compared to the control group at 2.69 mL/g (p<0.05). The sugar content was significantly higher in the control group and the barley sprout addition group at 2.30°Brix (p<0.05). As for the volume index, the control group with the lowest value at 13.43 showed a significant difference compared to the addition groups. The volume index significantly decreased as the addition amount increased, measuring 14.07 in BS4 (4% BSP) compared to 14.87 of BS2 (2% BSP) in the barley sprout group (p<0.05). In cross-sectional photography, the color became darker than that of the control group as the quantum of additives increased. In terms of the DPPH and ABTS radical scavenging activity, the total phenol content, and total flavonoid content, the groups with the addition of barley sprout and green tea showed higher antioxidant activity than the control group (p<0.05).

3D프린팅 제조기반 골절합용 금속판의 열처리 조건에 따른 기계적 성능 특성 (Mechanical Properties Characteristics according to Heat Treatment Conditions of Medical Bone Plates by 3D Printing)

  • This study analyzes the Mechanical properties of a medical bone plate by 3D printing. With the recent development of 3D printing technology, it is being applied in various fields. In particular, in the medical field, the use of 3D printing technology, which was limited to the existing orthosis and surgical simulation, has recently been used to replacement bones lost due to orthopedic implants using metal 3D printing. The field of application is increasing, such as replacement. However, due to the manufacturing characteristics of 3D printing, micro pores are generated inside the metal printing output, and it is necessary to reduce the pores and the loss of mechanical properties through post-processing such as heat treatment. Accordingly, the purpose of this study is to analyze the change in mechanical performance characteristics of medical metal plates manufactured by metal 3D printing under various conditions and to find efficient metal printing results. The specimen to be used in the experiment is a metal plate for trauma fixation applied to the human phalanx, and it was manufactured using the 'DMP Flex 100(3D Systems, USA), a metal 3D printer of DMLS (Direct Metal Laser Sintering) method. It was manufactured using the PBF(Powder Bed Fusion) method using Ti6Al4V ELI powder material.

Zirconia 입자의 첨가가 페놀 수지의 경화거동에 미치는 영향 (Effect of Zirconia Particle Addition on Curing Behavior of Phenolic Resins)

  • 본 연구는 Zirconia(zirconium oxide) 입자가 페놀수지 경화거동에 미치는 영향을 조사하였다. Zirconia 입자의 함량에 따른 페놀수지의 승온 및 등온 경화 거동을 분석하였다. Zirconia 함량을 달리한 페놀수지의 점도 및 열분해 특성을 조사하였다. DSC 분석으로부터 경화도와 경화율을 구하였다. 마지막으로 Zirconia 입자가 첨가된 페놀수지의 DSC 데이터로부터 경화 반응에 대한 활성화 에너지를 계산하였다. 그 결과 zirconia 함량이 높을수록 경화가 지연되고 경화에 필요한 활성화에너지가 더 커지는 경향이 나타났다. 또한 TGA를 이용한 열분해 분석 결과 Zirconia의 함량이 증가할수록 더 적은 중량감소가 관찰됐다. Carbon/Phenol 프리프레그의 표면 점착성은 Zirconia 함량에 따라 부분적으로 변화하였으나 유의한 영향은 없었다.

Mechanism of improving quality of dry-aged pork loins in scoria-containing onggi, Korean earthenware as a storage container

  • Objective: Many scientists have investigated solutions to reduce microbiological risks in dry-aged meat after the dry-aging technology was revived for high quality and value-added premium meat product in the market. This study aimed to investigate the effect of scoria powder in onggi (Korean earthenware) on the meat quality of pork loins during 21 days of dry aging and to elucidate its mechanism of action. Methods: The pork loins were randomly divided into three groups: aged in vacuum-packaging, onggi containing red clay only (OR), and onggi containing 30% red clay and 70% scoria powder (OS). Microbial analyses (total plate count and Lactobacillus spp.) and physicochemical analyses (pH, shear force, volatile basic nitrogen [VBN], water activity, 2-thiobarbituric acid reactive substances, water content, water holding capacity, cooking loss, and color analysis) of aged meat were conducted. Far-infrared ray emission, quantification of immobilized L. sakei and microstructure of onggi were investigated to understand the mechanism. Results: On day 21, the meat aged in OS exhibited lower pH, shear force, VBN, and water activity than those aged in OR, along with an increase in the number of Lactobacillus spp. OS had a smaller pore diameter than OR, implying lower gas permeability, which could promote the growth of L. sakei. Conclusion: OS improved the microbiological safety and storage stability of pork loin during dry aging by increasing number of Lactobacillus spp. possibly due to low permeability of OS.

Effects of Cissus quadrangularis L. Powder on Proximate Composition, Physicochemical and Textural Properties of Tteokgalbi

  • We investigated Cissus quadrangularis L. powder (C) use as a natural additive to Tteokgalbi, a traditional Korean meat-based dish. Five distinct Tteokgalbi samples were treated: one without any additives (negative control, NC), one with 1.00% C (C1), 2.00% C (C2), 4.00% C (C3), and 0.10% ascorbic acid (positive control, PC). C addition resulted in changes in composition, quality, and sensory attributes. Moisture content decreased with higher C levels; crude protein varied among the groups, with C1 having the highest crude protein levels and C3 the lowest. Crude fat decreased with increasing C concentration, whereas the carbohydrate content increased. The water-holding capacity notably decreased in the C3 group, resulting in increased cooking loss with higher C concentrations. C treatment altered color and texture, reducing CIE L* and increasing CIE a* before cooking and increasing CIE L* and CIE a* after cooking. CIE b* decreased before cooking but increased thereafter. C-treated Tteokgalbi was less cohesive, chewy, and brittle compared to the NC. The C treatment increased the total phenolic and flavonoid contents and enhanced radical scavenging capacities. It also affects storage characteristics, lowers pH, and increases 2-thiobarbituric acid reactive substances values. The microbial counts were lower in C2 and C3 after 11 days. These findings suggest the potential use of C as a natural meat additive.

인삼(人蔘) 추출액(抽出液)이 SO2 Gas에 폭로(暴露)된 새앙쥐 호흡기상피(呼吸器上皮)의 섬모(纖毛)변화에 미치는 영향(影響)에 관한 연구(硏究) (Studies on the Effects of Ginseng Extract for Mucociliary Change in Mice Nasal Septum Epithelia Exposured to Sulfur Dioxide gas)

  • In order to investigate the effect of Panax ginseng extract and it's degree in mucociliary change of mice nasal septum epithelia exposured to sulfur dioxide, 96 ICR male mice were used. They were at first divided the 4th week, the 8th week or the 16th week groups according to the age after birth and 6 hour or 12 hour groups according to the $SO_2$ gas exposured hour in a day, and at control, 50mg, 100mg and 200mg injection groups according to the dosage of the freeze-drying powder of the ginseng extract which was injected into the mouse peritoneal cavities in the condition of the solution solved with physiological saline solution. Each subgroups which were divided finaly included 4 male mice. The histological tissue sections for observation were made from nasal septum, posterior nasal orfice and trachea. The results obtained by experiments were summarized as followings. 1. The loss of the nasal mucosa epithelial cilia of the mouse exponsure to the $SO_2$ gas after ginseng extract injection was apparently diminish eompare to those exposured only $SO_2$ gas without pretreatment of ginseng extract (p<0.01). 2. The inhibition effect for the loss of nasal mucocilia according to the ginseng extract dosages not found in this research (p>0.05). 3. There were differences in the loss of nasal mucosa cilia according to the $SO_2$ gas exposure time between the control group and ginseng extract pretreatment group (p<0.01). 4. According to the increase of the postnatal time, there were remarkable differences between the control group and the ginseng extract pretreatment groups in the loss of nasal mucosa cilia (p<0.01). 5. Ciliary changes of the posterior nasal orifice and trachea according to the $SO_2$ gas exposure time, mice age and ginseng dosages, were not dearly observed in this light microscopical observation.
