Sprays containing chitosan, grain amino acids, or wood vinegar, were applied to vine leaves of the Campbell Early grape variety, and effects on the quality and storability of grapes were investigated. Weights of grape clusters and individual bemies did not differ significantly from the values seen when traditional agnicultural chemical treatment was used. The percentage of clusters over 300g in weight was, however, higher after spraying with chitosan, grain amino acids, or wood vinegar, than after agricultural chemical treatment, Grape moisture contents, levels of soluble solids, and reducing sugar concentrations, did not differ when the traditional treatment and the newer sparys were compared. Among minerals, the levels of potassium, iron and zinc measured in fresh grapes were increased by the clitosan, grain amino acids, and wood vinegar spray. After 8 weeks of MA storage, reducing sugar levels decreased, and titratable acidities increased, compared to levels measured at the beginning of storage. This was true regardless of the method of vine treatment the hardness of berries decreased slightly over 4-6 weeks of storage, and increased thereafter. The weight losses of grapes were relatively low(0.28-0.35%) on storage after any vine treatment tested. Grapes from vines sprayed with chitosan or grain amino acids showed a lower decay rate than did fruit from vines that had received a traditional agricultural chemical treatment. Sensory evaluation results indicated that the marketability of grapes from vines treated with traditional agricultural chemicals was better than that of grapes from vines sprayed with chitosan, grain amino acids, or wood vinegar.
The aims of this research were to determine the proximate composition of various salts and to compare two digestion methods (direct digestion without heating, and microwave digestion) for the determination of the main mineral contents of various salts. Twelve salt samples were divided into three groups of four samples each (imported, Korean gray, and Korean white salts). As a result, the NaCl contents of the Korean white, Korean gray, and imported salts were 85.1, 89.3, and 91.3%, respectively. The salts in the three groups were analyzed for their main mineral contents via AAS. The sodium (Na) content of the Korean white salt was found to be slightly lower than that of the imported salt while the magnesium (Mg) and potassium (K) contents of the Korean white salt were found to be higher than those of the imported salt. The mineral composition (% Na:Mg) obtained using microwave-assisted digestion procedures, and the other dissolutions for the subsequent sample analysis, were 89:1 (for both the imported and Korean gray salts) and 82:3 vs. 81:3 (Korean white salt), respectively. The data regarding the mineral contents and composition of the sun-dried salts obtained through the analysis method of wet digestion and the dissolution procedure were compared, and no significant difference was found between the two datasets. Consequently, in this paper, a direct dissolution procedure is suggested for the analysis of the mineral composition of salt.
In this study, the effects of the use of a starter on radish soaked at $4^{\circ}C$ for 28 days using two kinds of domestic sun-dried salt (white and gray salt) were determined. As a result, the moisture contents of the radish soaked with white and gray salt were 7.93 and 4.50%, respectively. The salinity levels were found to be equal (90%). No significant difference was found between the two groups in terms of the mineral contents of the salts therein ($37812.41{\pm}1922.95$ and $39755.13{\pm}1205.70$ mg/100 g, respectively). However, iron and zinc contents of gray salt were higher than those of white salt while the calcium, potassium, and magnesium contents were lower than those of white salt. After the addition of the starter, the sugar content increased, the pH decreased, and the total acidity rapidly decreased compared with the non-starter group during fermentation. The total microorganism count of the two groups increased during the fermentation period of 28 days. From the initial fermentation for 7 days, the lactic acid bacteria in the non-starter group increased while those in the leuconostoc starter group steadily increased within the whole fermentation period. The Leuconostoc spp. in non-starter group increased, but that in the starter group decreased to pH 4.0 on day 14.
This study aimed to provide basic evidence regarding the development of materials by analyzing the physicochemical properties and antioxidant activities of Streptococcus thermophilus KCCM 3782 strain-fermented Cordyceps militaris grown on Tenebrio molitor. Among the solvents tested, DPPH radical scavenging activity was the highest in the hot water-extracted sample after 30 min of extraction. Moisture content decreased, whereas crude protein and fat content increased, after lactic acid bacteria-mediated fermentation. Sodium, magnesium, calcium, and zinc contents increased, with potassium levels attaining the maximum value, whereas free amino acid content decreased after the fermentation. Among Hunter's color values, a value increased to $66.7{\rightarrow}149.92$ after fermentation, whereas the L and b values decreased to $15.79{\rightarrow}-15.75$ and $54.45{\rightarrow}0.01$, respectively. Cordycepin content assay increased from 7.02 mg% to 8.66 mg%. The DPPH free radical scavenging activity of the fermented product was 91.92 EDA%, which was higher than that of the extract (84.69 EDA%). The ABTS free radical scavenging and superoxide dismutase (SOD) activities were also higher in the fermented products.
As a basic studies for increasing food production utilizing sandy barren lands and sandy farmlands of low productivity which distributed widely in Korea, an experiment of growing rice-plant on sandy barren land was undertaken as follows. 1. Variety, IR-667 was adopted and the growing method was a nutrient-irrigation culture which aimed to minimize percolation loss in sand with an automatic contineous supplying nutrient solution for supplmenting the sand characteristics. 2. The growth type price-plant after heading was a typical higher yield plant, that is, numerous, small, narrow, and thickend leaves, straight attitute, dense fasciculated etc. though the rooting of plant after planting was delayed because of using paddy-field grown seedling. 3. The adaptability of rice-plants on sandy land seemed to be different by varieties and IR-667 was more adaptable than ordinary Japonica varieties. 4. Even at the period of heading and maturing, the root system of rice-plant grown on sand showed vigorous growth having more activated apical portions. while, even the lower leaves showed flourished state. 5. The suppling of calcium and magnecium in addition to nitrogen, phosphorus and potassium on sand made notable increase of stem number per plant, grain number per stem and yields.

The effects of soil properties and N, P and K application rates on the contents of inorganic constituents in the rhizomas of Ji-whang were investigated to know the condition for producing the better quality rhizoma of Ji-whang. Most of soil texture for Ji-whang cultivating belongs to sandy clay loam and sandy loam soils. The nitrogen contents in the rhizomas of Ji-whang was negatively correlated with the contents of organic matter and total nitrogen in surface soils, whereas positively correlated with the sand contents in subsoils. The calcium contents in the rhizomas of Ji-whang were negatively correlated with the sand contents, however, positively correlated with the contents of clay and organic matter in soils. The iron contents was positively correlated with the contents of clay, available phosphorus and exchangeable potassium in surface soils. Much more contents of the inorganic constituents in the leaf of Ji-whang was generally detected than that in the rhizoma of Ji-whang. The contents of iron and copper in the leaf was determined to be more than that in the rhizomas by ten times. In the results of field experiments, it is apparent that the nitrogen contents in the rhizoma and leaf increased with increasing N application rate more than 20kg/10a and 10kg/10a, respectively.
This field experiment was undertaken to assess the effects of three levels of inclination ($10^{\circ}$, $20^{\circ}$ and $30^{\circ}$) and four rates of $N-P_2O_5-K_2O$ (0-0-0, 14-10-10, 28-25-25, and 42-40-40 kg/10a) on the hilly pasture concerning to establishment, forage yield and quality, and botanical composition in the mixed grass-clover sward set up on a new reclaimed woodland by an oversowing method. This part was concerned with the concentration and mutual balance of mineral nutrients in relation to grass tetany hazard. The results obtained were summarized as follows: 1. Concentration of exchangeable Mg, relative proportions of Mg to CEC, K, and Ca in soil were considerably below the critical level for good forage growth and prevention of grass tetany. These properties were rather worsened by increasing the inclination grade and the NPK rate. 2. Compared with the critical level for the likelihood of tetany (Mg < 0.2%, K > 2.5%, and K/(Ca+Mg) equivalent ratio > 2.2 in forages in DM basis), mean concentration of Mg in mixed forages turned out to range from 0.09 to 0.14%. 2.6% of K concentration and 2.5 of K/(Ca+Mg) equivalent ratio were shown to be at a normal NPK rate. The likelihood of grass tetany was generally enhanced by increasing the inclination grade and the NPK rate. 3. The increasing of the inclination grade and NPK rate rather aggravated the low Mg concentration and unbalanced mutual ratios of mineral nutrients, from which resulted the grass tetany hazard and the depression of forage growth. To prevent these two resulted factors, Mg fertilization on grassland and/or extra Mg supplement to dairy cattle needed to be carried out. 4. The Ca/P ratios in the mixed forages ranging from 1.0 to 2.0 were reduced by the increased rate of NPK, whereas the difference due to inclination grade was yet to be recognized.

In order to establish the method of improving ill drained paddy soil where the accumulation of absorption inhibitor is worried in the earlier stages of rice growth, proper soil is selected and an field experiment is designed having treatments such as lime materials, none sulfate fertilizers, boron and straw etc. The data of yield and plant analysis in different stages of rice growth is eveluated and discussed to obtain following summaries. (1) Significant yield increase was made by the treatment of lime materials such as slacked lime or wollastonite powder, materials inhibiting the activity of microorganisms such as boron and of none sulfate fertilizers lacking inhibitor producing sources. (2) The crop scientifice causes of decreasing yield are the decreasing the number of panicles per hill, grains per panicle and the weight of grains. (3) The plant nutritional causes of decreasing yield are the lowering of nitrogen content throughout the life, phosphate content since young premodia formation stage of plant and the decreased content of magnesium, calcium and silicate in straw at harvesting stage. (4) The causes of lowering the content of various elements in rice plant grown in ill drained paddy soil are suggested as root damage by producing and accumulating absorption inhibitors such as organic acids and hydrogen sulfide etc, from the following observed facts; (a) In young premodia formation stage, attaining to the maximum production and accumulation of absorption inhibitor, the phosphate accumulation in plant was smaller in the phosphate plots than without phosphate plots and much higher in the neutralized plots by adding lime materials. (b) In the plots of straw addition, the potassium content in plant at the young premodia formation stage is very low probabley due to root damage by absorption inhibitor produced from the process of straw decomposition but higher at the stage of harvesting probably due to the immetabolic negative absorption of damaged roots. (c) The effect of boron, known as the inhibitor of microorganism activity to decompose organic matter, is apparent. (d) The effect of nonsulfate fertilizer treatment, having no source of producing inhibitor such as hydrogen sulfide, was significant. (e) All the yield components, decided around the young premodia formation stage attaining to the maximum inhibitor concentration in soil and minimum root activity, are significantly decreased.

Barley, garlic, and soybean were cultivated in the silt loam, sandy loam, and loam, respectively, and the absorbing patterns of N, P, and K during growing of the crops were determined. While, the leaching of N, P, and K applied in the above soils in four levels of topsoil depths and in four leachate levels of excess precipitation was measured through the column. The depths of the soil were devised to 20, 35, 50, and 65cm, and the levels of excess water were classified to each leachate of 20, 40, 60, and 80mm precipitation, and nitrogen, phosphorous, and potassium in each fraction of the leachate were analyzed. By the analyses of the chemical components during growth of the crops, their absorbing patterns of N, P, and K were investigated. The order of N-leachings in the soils was sandy loam > loam > silt loam, and the leaching of $K_2O$ was very similar to N. The leaching of $P_2O_5$ was slight in all kinds of the soils. By the combination of the absorbing patterns of the crops in three kinds of soils and the leaching of the nitrogen in four levels of soil depth and four levels of excess precipitation, the method to replace the nitrogen lost by leaching was presented.
For the agricultural utilization of Korean forest land resources, which constitutes most of country, the distribution of environment and soil physico-chemical properties of establishable grass lands were clarified. The surveyed data were analized for the reasonable utilization and management of establishable grass land. The results were as follows ; 1. About 50.2% of the grass lands to be established were located under the 200m in altitude. The higher the altitude was, the more the organic matter content. 2. Tall type grass species such as Miscanthus purpurascens, Purple eulalia, and Themeda Japonica covered 71.3% of the natural vegetation in the soils of grass land to be established. 3. The extent of sandy and clayey soils which might be limited in the establishment of grassland was only 3.3%, meanwhile majority of the soils were in the favourable condition for grassland that is about 94% have more than 20cm in available soil depth and about 60.5% of the soils have less than 10% of gravels and stones in the soil profiles. 4. The chemical properties of the prearranged grassland soils were worse than the established grasslands, especially in the content of available $P_2O_5$. 5. The amount of fertilizer recommended for meadow were 286kg of nitrogen per hectare, 271kg of phosphorus, 224kg of potassium and 2040kg of calcium per hectare, but for grazing land were 201, 204, 136 and 1920kg/ha respectively.
