Effect of Postharvest Treatments on Storage Quality of Buckwheat Sprouts (메밀 새싹채소의 저장품질에 대한 수확 후 처리공정 효과)

  • The storage quality of fresh buckwheat sprouts, as influenced by pretreatment and packaging within processing steps, was investigated to establish appropriate postharvest handling treatment for the commodity. After harvest, the sprouts were dipped in chlorine water (100 ppm), rinsed twice with clean water, pre-cooled with iced water, de-watered, and packed in plastic trays. Sprout samples taken from each processing step were stored at $5^{\circ}C$ for 6 days to measure quality attributes. Viable cell counts of mesophilic aerobes and coliform bacteria were lower by about 1 log scale in the postharvest treated samples compared to an untreated control, although the initial microbial reduction due to the postharvest treatments was offset by cell growth during storage. All sprout samples showed a decrease of fresh weight by approximately 4% after 6 days of storage. However, moisture and soluble solid contents were maintained at the initial levels of the sprouts. No significant difference in surface color was observed among sample treatments. For sensory properties including discoloration, wilting, decay, and visual quality, there were no significant differences among sample treatments. The present results suggest that proper postharvest processing treatments can exert positive effects on extending the shelf-life of fresh buckwheat sprout.

Current Research Status of Postharvest and Packaging Technology of Oriental Melon (Cucumis melo var. makuwa) in Korea (국내 참외의 수확 후 관리 및 포장기술 연구)

  • Oriental melon ($Cucumis$ $melo$ var. $makuwa$) is a popular and high-value market fruit cultivated in Korea. Consumers are becoming increasingly interested in oriental melon as a healthy diet over the past few years. However, the melons have relatively high quality loss because the fruit are mainly produced for a limited period of time in the summer season. Lack of the proper postharvest treatments and high temperature exposure at harvest or during distribution are the most critical environmental factors limiting postharvest life of fruit. This review focuses on the overview of current research studies for postharvest treatment and functional packaging technology of oriental melon in Korea. Major physiological problems of the harvest fruit include the ripening process in quality changes of the produce such as loss of weight, firmness, flavor, and decay during the storage periods. Low temperature at 7 to $10^{\circ}C$ with high relative humidity of 90 to 95% is the suitable environmental condition used to maintain the quality of fresh oriental melon. Controlled atmosphere (CA) storage or modified atmosphere (MA) packaging can be used as supplemental treatments to extend postharvest-life. For oriental melon, an optimum CA is currently recommended to be 2-3% oxygen and 5-10% carbon dioxide atmosphere. Precooling, pretreatments of ethylene action and functional packaging system can be applied to oriental melon after harvest in order to extend storage life. Major active packaging technologies are concerned with a selectively gas permeable film related to respiration of produce and the packaging applications of ethylene removal, antimicrobial, and antifogging substances to keep the effective freshness of fruit.

Changes in the Quality and Physiological Activity of Angelica acutiloba Leaves in Various Packaging Materials during Storage (일당귀 잎의 포장방법이 저장 중 품질 및 생리활성에 미치는 영향)

  • The effect of packaging materials on the quality and physiological activity of Angelica acutiloba leaves during storage at $4^{\circ}C$ for 20 days and after being transferred to room temperature for 2 days was studied. The experiment was conducted using three packaging materials: the corrugated box (control); corrugated box with $20{\mu}m$ HDPE perforated film liner; and corrugated box with paraffin wax coated paper $+20{\mu}m$ HDPE perforated film liner. Changes in weight, color, aroma, overall visual quality, antioxidant activity, and total flavonoids were investigated. Based on the result, the treatments using corrugated box with $20{\mu}m$ HDPE perforated film liner and the corrugated box with paraffin wax coated paper $+20{\mu}m$ HDPE perforated film liner, were effective in minimizing weight loss, and maintaining external color and overall quality as compared to corrugated box only (control). The corrugated box with paraffin wax coated paper $+20{\mu}m$ HDPE perforated film liner was more effective in maintaining antioxidant activity and total flavonoids than other treatments. Prolonging the freshness using corrugated box with paraffin wax coated paper $+20{\mu}m$ HDPE perforated film liner could increase the marketability of Angelica acutiloba leaves in the domestic market.

Recent Research Status of Postharvest Management of Broccoli (브로콜리 수확후 관리의 최근 연구 동향)

  • Broccoli is considered as one of the functional foods to offer a hearty supply of the nutrient-rich vegetable in the world. Broccoli contains high level of phytochemicals, and that is selected as one of the top 10 vegetables for human health promotion. Especially, glucosinolates and flavonoids are well known as anti free oxygen radicals in vegetables and fruits. In Korea, broccoli consumption has increased to well known on the health-beneficial vegetables since 2000. However, broccoli has many problems of postharvest management since the quality of harvested heads quickly declines. Major problems are the floret yellowing, wilting, off-odor, and decay. The multiple postharvest applications improve broccoli quality and cold treatment including pre-cooling extends on the shelf-life with circumstance of optimum storage which is 0℃ temperature and a range of 95-100% relative humidity. Controlled atmosphere or modified atmosphere packaging can be used as supplemental treatments to extend postharvest life. 1-2% O2 + 5-10% CO2 is currently recommended for broccoli. Postharvest management is important for broccoli because price fluctuations depend on harvest time and quality. In this study, we tried to review physiological change of broccoli after the harvest, storage method, and various techniques to optimize quality during distribution.

  • Purpose: Fruit and vegetable production is a fast-growing sector in East Africa, and it bears considerable local and international market potential. In an effort to analyze the challenges within this sector and suggest possible solutions, this study reviews the postharvest handling technologies commonly used with fruits and vegetables in East Africa. Methods: During the course of this study, small-scale farmers were identified as the most prominent producers of fruit and vegetable crops in the region. Results: We found that many of these small-scale farmers employed relative simple and inexpensive techniques in handling their limited volumes of produce. Several factors could be addressed to reduce postharvest losses, including weak policies, inferior infrastructure, and poor market strategies. However, the lack of basic knowledge (including demographic, scientific, and economic knowledge) among the stakeholders (e.g., researchers, farmers, governments, nongovernment organizations, and merchants) on how to develop, implement, use, and sustain the recommended handling technologies is probably the most problematic. Conclusions: We recommend that high priority be placed on closing the knowledge gap, which could enhance the efforts of all the stakeholders to address and reduce postharvest losses.

The Effects of 1-Methylcyclopropene on the Quality of 'Ooishiwase' Plums (Prunus salicina L.) with Different Ripening Stage ('대석조생' 자두(Prunus salicina L.)의 숙기에 따른 1-Methylcyclopropene 처리효과)

  • 'Ooishiwase' plum (Prunus salicina L.) fruits were harvested at three pre-climacteric stages of ripeness (stages 1, 2, and 3) and treated with 1-methylcyclopropene (1-MCP, $1\;{\mu}L/L$) for 24 hours at $10^{\circ}C$ before storage to evaluate the effectiveness of 1-MCP in extending shelf-life at $10^{\circ}C$. Ethylene production and respiration rates were significantly lower after 1-MCP treatment compared to those of control fruit, throughout the entire storage period. Also 1-MCP delayed plum softening and color changes. However the chemical 1-MCP had no effect on fruit soluble solid content changes, the preservative 1-MCP is an effective tool for quality improvement in plums, and extension of shelf life of the fruit and plums can safely be harvested at stage 3 of ripening, at which time the most desirable organoleptic attributes have been developed.

Quality Change of Packaged Pears in PLA Tray for Export due to Vibration Stress by Simulated Transport Environment (PLA 트레이 포장 수출용 배의 수송 모의환경 진동 스트레스에 의한 품질변화)

  • The characteristics of vibrational stress (shock and vibration) during transport and the possibility of damage to the packaged pears by functional PLA tray were investigated. And this study was conducted to analyze how environmental conditions by simulated transport environment affect quality factors such as weight loss (%) and soluble solid content (SSC, %), and firmness (bioyield strength, kPa) of packaged pears by PLA tray and Expanded PET foam pad (Group 1), EPE cushion cup pad and net (Group 2) for exporting. Pears with or without vibration stress were stored for 30 days at low temperatures (5 ± 0.8℃, 80 ± 5% relative humidity). There was the statistically significant difference (p ≤ 0.05) between pears with and without vibration stress for weight loss, soluble solid content, and firmness (bioyield strength) after 30 days storage. Vibration stress accelerated pear quality deterioration during storage, resulting in increased weight loss, soluble solids content, and reduced hardness. The firmness (bioyield strength) and weight changes of pears with PLA trays were smaller than those of conventional packaging box systems. It was determined that the firmness of agricultural products was a quality factor closely related to the storage period and that PLA could be applied.

Developed Vacuum Film Packaging Method Maintains Quality of Enoki Mushrooms (Flammulina velutipes) during Simulated Vessel Export to Vietnam (팽이버섯의 베트남 모의수출 중 진공포장방법 개선을 통한 품질 유지 효과)

  • Korean enoki mushrooms are exported to Southeast Asia and the United States, where there are complaints due to quality deterioration during the distribution process. In this study, we evaluated the efficacy of vacuum film packaging on quality maintenance in Korean enoki mushrooms during simulated vessel export to Vietnam using selected film, which was developed with vacuum packaging machine and oxygen absorber. We selected two MA film, one was 2-layerd 30 ㎛ CPP film (control) and the other was 3-layered 30 ㎛ CPP film (treatment) which is optimized film of higher gas and moisture permeability. The Korean enoki mushrooms were packaged with these two films using PAC-2000 or PAC-3000 vacuum packaging machine which was improved vacuuming of higher speed. Packed mushrooms were stored at 1℃ for 2 weeks and distributed at 20℃ for 2 days or 8℃ for 6 days. The efficiency of the film packaging was analyzed by vacuum maintaining index, and overall the quality characteristics such as off odor, color, cap cleavage, stem elongations and sensory evaluation were evaluated during storage and distribution. Results suggest that postharvest loss of fresh enoki mushroom could be reduced by packaging mushroom with 3-layered 30 ㎛ CPP films packaged using PAC-3000 machine during simulated vessel export to Vietnam due to vacuum maintaining. Oxygen absorber promoted off-odor at 20℃ distribution temperature, and did not affect storability at 1℃ storage compared to treated group without oxygen absorber treatment.

Effects of Electromagnetic Heating on Quick Freezing

  • Purpose: Quick freezing is widely used in commercial food storage. Well-known freezing techniques such as individual quick freezing require a low-temperature coolant and small cuts for the heat-transfer efficiency. However, the freezing method for bulk food resembles techniques used in the 1970s. In this study, electromagnetic (EM) heating was applied to improve the quick freezing of bulk food. Methods: During freezing, the surface of food can be rapidly cooled by an outside coolant, but the inner parts of the food cool slowly owing to the latent heat from the phase change. EM waves can directly heat the inner parts of food to prevent it from freezing until the outer parts finish their phase change and are cooled rapidly. The center temperature of garlic cloves was probed with optical thermo sensors while liquid nitrogen (LN) was sprayed. Results: When EM heating was applied, the center cooling time of the garlic cloves from freezing until $-10^{\circ}C$ was 48 s, which was approximately half the value of 85 s obtained without EM heating. For the white radish cubes, the center cooling time was also improved, from 288 to 132 s. The samples frozen by LN spray with EM heating had a closer hardness to the unfrozen samples than the samples frozen by LN only. Conclusions: The EM heating during quick freezing functions to maintain the hardness of fresh food by reducing the freezing time from 0 to $-10^{\circ}C$.

Systematic Postharvest Quality Management Technology to Improve Marketability of Fresh Ginseng for Export (수출용 수삼 수확후 품질관리기술 체계화)

  • 인삼(수삼)은 장기 유통할 때 품질관리에 어려움을 겪고 있고 이는 잘못된 저장, 세척 등의 기술에서 비롯되는 것으로 포장 기술만으로는 고품질 수삼 유통을 실현하기 어렵다. 따라서 연구결과를 토대로 수출용 인삼 수확후 품질관리 과정을 정리하여 매뉴얼화 하였다. 인삼의 수확후 생리적 특성과 품질저하 요인은 물론 수확에서 저장, 세척·건조, 상품성 향상 포장 방법, 냉장컨테이너 적재, 저온 수송 및 판매 시 주의사항 등을 기술하였다. 수삼의 유통 중 손실율에 가장 크게 영향을 미치는 요인은 물러짐과 곰팡이 발생에 의한 부패, 뇌두부위 출아에 의한 상품가치 하락으로 나타났다. 출아는 수확 시기에 따라 다르게 나타나 가을수확 수삼에서는 저장기간 뇌두부위 출아는 전혀 발생하지 않았고, 봄수확 수삼의 경우 수확시기가 늦으면 뇌두 출아가 증가하는 경향을 보였다. 부패 병원균은 25℃ 운송 시 Fusarium spp.가 15, 5, 1℃ 운송 시 Botrytis spp.가 주를 이루었다. 포장단위를 5kg 대포장과 500g 소포장으로 하였을 때 소포장의 물러짐 현상이 대포장보다 훨씬 높게 나타나는 반면 곰팡이 발생에 의한 부패는 대포장보다 낮게 나타났다. 수삼 저장온도에 따라 유통 중 품질이 크게 달라져 온도 -2℃ 이하에 저장한 수삼은 유통 중 손실률이 높고 특품의 비율이 낮아지는 등 품질이 저하되며 저장기간이 길수록 더욱 심화되는 반면 0℃ 저장 수삼은 저장 3개월 후에도 유통 중 품질의 변화가 적었다. 이러한 결과를 종합적으로 정리하여 인삼의 전통적인 수확후 관리 방법이 아니라 수출용 인삼의 품질 향상을 위해 개선된 수확후 관리 방법을 적용할 수 있도록 흐름도로 정리하였다.
