Objectively Predicting Ultimate Quality of Post-Rigor Pork Musculature: I. Initial Comparison of Techniques

  • A total of 290 pork loins were selected to include a wide variation of quality to investigate the quality categories into which most pork falls, selection criteria for these categories and methods to objectively assess ultimate pork quality. They were probed at 24 h postmortem (PM) for the following: A) light reflectance by Danish Meat Quality Marbling (MQM), Hennessy Grading Probe (HGP) and Sensoptic Invasive Probe (SIP); B) electrical properties by NWK LT-K21 conductivity (NLT) and Sensoptic Resistance Probe (SRP): and C) pH by NWK pH-K21 (NpH). Also, measurements of % drip loss (PDL) and filter paper wetness (FPW), color brightness (L*), ultimate pH (pHu), lipid content, subjective color (SC), firmness/wetness (SF) and marbling scores (SM) were assessed. Each loin was categorized as either pale, soft and exudative (PSE), reddish-pink, soft and exudative (RSE), reddish-pink, firm and non-exudative (RFN) or dark, firm and dry (DFD). Statistically comparing coefficients of determination (CD), the results indicated that overall, the HGP predicted quality groups slightly better than MQM (CD=71 and 62% respectively), NpH and SRP were less effective (CD= 56 and 44% respectively), and SIP and NLT had the lowest values (CD=36 and 5% respectively). Combining various independent variable did not greatly improve the variation accounted for. When the data was sorted into marbling groups based on lipid content, this was not accurately predicted by any of the probe measurements. The MQM probe remained the best predictor for marbling class and accounted for about 25% of the lipid content variation. This was slightly improved to 33% when pHu was combined with MQM.

Effects of Sex and Market Weight on Performance, Carcass haracteristics and Pork Quality of Market Hogs

  • An experiment was conducted to examine the effects of sex and market weight on performance, carcass characteristics and pork quality. A total of 224 crossbred pigs (initially 26.64 kg BW) were allotted in a $2{\times}4$ factorial arrangement in a randomized complete block (RCB) design. The variables were sex (gilts and barrows) and different market weights (100, 110, 120 and 130 kg). Average daily gain (ADG) and average daily feed intake (ADFI) were significantly higher (p<0.01) in barrows than gilts, ADFI and feed conversion ratio (FCR) increased as body weight increased (p<0.05). Gender differences were observed in carcass characteristics. Backfat thickness and drip loss were greater in barrows (p<0.01), while loin eye area (p<0.01), flavor score (p<0.05) and lean content (p<0.001) were higher in gilts. Carcass grade and water holding capacity were the highest in 110 kg market weight pigs. The 100 kg arket weight pigs showed lower juiciness, tenderness, shear forces and total palatability than the other market weights (p<0.01). Hunter values (L*, a* and b*) were increased as market weight increased (p<0.05). Hunter a* value was greater in gilts (p<0.01) but L* value and b* value were not affected by sex of pigs. Net profit [(carcass weight${\times}$price by carcass grade)-(total feed cost+cost of purchased pig)] was higher in gilts than barrows (p<0.01), and was higher (p<0.05) in the pigs marketed at 110 and 120 kg market weight compared with 100 kg market weight. These results demonstrated that gilts showed higher carcass characteristics, pork quality, feed cost per kg body weight gain and net profit compared with barrows. Moreover, 110 or 120 kg body weight would be the recommended market weight based on pork quality and net profit for swine producers.

  • This study was performed to determine the influence of pig breed and gender on the ultimate pH and physicochemical properties of pork. The correlations between pH and pork quality traits directly related to carcass grade, and consumer's preference were also evaluated. The pH and meat grading scores for cold carcasses of 215 purebred pigs (Duroc, Landrace, and Yorkshire) from four different farms were obtained. Meat quality parameters of the pork loin were analyzed. Duroc and female animals were more affected compared to other breeds and male pigs. Duroc animals had the highest ultimate pH, carcass back fat thickness, marbling scores, yellowness, and fat content (p<0.05). Landrace pigs had the highest color lightness and cooking loss values (p<0.05). Among all trait parameters, marbling scores showed the highest significant differences when evaluating the impact of breed and gender on meat quality characteristics (p<0.001). Ultimate pH was positively correlated with carcass weight (0.20), back fat thickness (0.19), marbling score (0.17), and color score (0.16) while negatively correlated with cooking loss (-0.24) and shear force (-0.20). Therefore, pork samples with lower ultimate pH had lower cooking loss, higher lightness, and higher shear force values irrespective of breed.

Potassium Sorbate에 침지한 냉장 돼지고기 안심의 미생물, pH 및 관능평가 (Microbiological, pH and Sensory Evaluations of Refrigerated Pork Tender-Loins Treated with Potassium Sorbate)

  • 본 연구는 $4^{\circ}C$ 냉장 동안 potassium sorbate로 침지한 돼지고기 안심의 미생물, pH 및 관능평가를 실시하였다. $0.5{\sim}2.0%(w/w)$ potassium sorbate로 10분 동안 침지한 돼지고기 안심의 호기성 미생물과 그람음성 미생물은 대조군과 비교하여 $4^{\circ}C$ 냉장 9일 동안 유의적 감소(P < 0.05)를 보였다. 본 연구의 결과 $4^{\circ}C$ 냉장 동안 potassium sorbate의 농도가 증가하므로 서 모든 처리군에서 돼지고기 안심의 호기성 미생물과 그람음성 미생물에 대한 항 미생물 효과를 보였다. $4^{\circ}C$ 냉장 6일 동안 potassium sorbate로 침지한 돼지고기 안심의 pH가는 증가함을 보였다. $0.5{\sim}1.0%(w/w)$ potassium sorbate로 침지한 돼지고기 안심의 관능평가 결과는 신선한 대조군과 비교하여 냄새와 외관의 점수가 매우 유사함을 보였다. 본 연구의 결과 1.0% (v/w) potassium sorbate로 10분 침지한 돼지고기 안심은 관능평가 저하에 영향을 미치지 않고 $4^{\circ}C$ 냉장 동안 미생물학적 저장 안정성을 확장할 수 있다는 것을 입증하였다.

Estimation of genetic parameters for pork belly traits

  • Objective: Pork belly is a cut of meat with high worldwide demand. However, although the belly is comprised of multiple muscles and fat, unlike the loin muscle, research on their genetic parameters has yet to focus on a representative cut. To use swine breeding, it is necessary to estimate heritability against pork belly traits. Moreover, estimating genetic correlations is needed to identify genetic relationship among the traditional carcass and meat quality traits. This study sought to estimate the heritability of the carcass, belly, and their component traits, as well as the genetic correlations among them, to confirm whether these traits can be improved. Methods: A total of 543 Yorkshire pigs (406 castrated males and 137 females) from 49 sires and 244 dam were used in this study. To estimate genetic parameters, a total of 12 traits such as lean meat production ability, meat quality and pork belly traits were chosen. The heritabilities were estimated by using genome-wide efficient mixed model association software. The statistical model was selected so that farm, carcass weight, sex, and slaughter season were fixed effects. In addition, its genetic parameters were calculated via MTG2 software. Results: The heritability estimates for the 7th belly slice along the whole plate and its components were low to moderate (0.07±0.07 to 0.33±0.07). Moreover, the genetic correlations among the carcass and belly traits were moderate to high (0.28±0.20 to 0.99±0.31). Particularly, the rectus abdominis muscle exhibited a high absolute genetic correlation with the belly and meat quality (0.73±52 to 0.93±0.43). Conclusion: A moderate to high correlation coefficient was obtained based on the genetic parameters. The belly could be genetically improved to contain a larger proportion of muscle regardless of lean meat production ability.

Enrichment of Pork with Omega-3 Fatty Acids by Tuna Oil Supplements: Effects on Performance as well as Sensory, Nutritional and Processing Properties of Pork

  • The effects of tuna oil supplementation (0, 1, 2 and 3%) to pig diets on growth and carcass yield as well as meat quality were determined in 40 crossbred pigs. Animals were fattened from 30 to 90 kg of live-weight. Twenty-four hours after slaughter, following various early- and late-post mortem measurements, loin, backfat and belly were prepared from the carcasses. Bacon was produced from the belly part by curing and smoking. Neither performance (feed intake, daily gains, feed conversion efficiency) nor carcass quality (slaughter weight, dressing percentage, lean percentage, nutrient composition of the loin) were significantly affected by tuna oil supplementation. Tuna oil also had no clear effects on early- and late-post mortem meat quality traits, water-holding capacity and tenderness of the M. longissiumus dorsi (LD). Colour traits of LD and backfat, and backfat firmness were not significantly affected by tuna oil, either. However, there was a certain trend to elevated fat contents of LD (and bacon), but not of backfat, with increasing levels of tuna oil in feed. Pigs receiving elevated proportions of tuna oil expressed lower VLDL cholesterol and triglyceride concentrations in blood plasma, whereas the cholesterol content of LD, backfat and bacon did not reflect this trend. Effects of tuna oil on fatty acids in LD, backfat and bacon were often small in extent, except those concerning the long-chain polyunsaturated fatty acids. With 3% tuna oil in the diet, the contents of the particularly desired omega-3 fatty acids, C20:5 and C22:6, were 0.1 and 0.2 g/kg in LD. The corresponding values for backfat and bacon were 2.6 and 12.6 g/kg, and 1.3 and 9.2 g/kg, respectively. Tuna oil supplementation was associated with significant adverse effects on flavour and overall acceptance of bacon (not significant in LD although numerically the same trend was noted), but these effects on sensory ratings were limited in extent. Also shelf life of the products, determined as TBA value after different storage periods at $4^{\circ}C$ in LD, backfat and bacon, was significantly reduced. Overall, the present study suggests that omega-3 fatty acids may be enriched in pork by feeding tuna oil with few undesired side-effects, particularly those on sensory perception and shelf life, suggesting immediate consumption of the products is advisable. Most economically important traits (performance, slaughter and physical meat quality) remained unaffected.

사일리지 급여가 돼지 품종별 돈육의 품질에 미치는 영향 (Effects of Feeding Silage on Pork Quality by Pig Breeds)

  • 연구는 사일리지 사료를 급여하였을 때 돼지 품종과 사일리지 급여 유무에 따른 등심의 품질 특성에 미치는 영향을 평가하기 위해 실시하였다. 돼지품종은 가고시마 와타나베 흑돼지 (B), 삼원교잡종[$D(Landrace{\times}Yorkshire){\times} Duroc$], 미국산 버크셔종(A) 등에 대해 각각 시험구와 대조구 20두씩 총120두를 공시하였으며, 개시체중은 평균 $69.3{\pm}3kg$, 시험기간은 평균 $66.7{\pm}9.3$일, 출하일령은 200~210일이었다. 사일리지를 급여하지 않은 대조구 (C)에 비해 급여한 처리구 (T)가 조단백질 함량은 많았고, 육색은 밝았으며, 신선육 관능평가 시 외관, 육색, 상강도 및 전체적 기호도에서 높은 점수를 보였고, stearic산과 oleic산은 낮고, linoleic산, arachidonic산, 필수지방산 및 필수지방산/불포화지방산 비율은 높게 나타났다. 사일리지 급여시 단맛 관련 아미노산 함량은 높은 장점을 지닌 반면 육색의 적색도는 낮고, 가열감량과 육즙감량은 많아 다즙성이 낮았으며, 육의 탄력성이 낮고 지방의 밝기는 어둡고 황색도가 높은 단점을 보였다.

Effect of visual marbling levels in pork loins on meat quality and Thai consumer acceptance and purchase intent

  • Objective: We investigated visual marbling level (VML) influence on pork loin physicochemical traits, consumer palatability responses, VML liking, purchase intent, and their relationships. Methods: For each of five slaughtering dates, at 24-h postmortem, nine paired Duroc castrated male boneless Longissimus dorsi (LD) muscles were categorized into low (LM, score 1 to 2, n = 3), medium (MM, score 3 to 4, n = 3), and high (HM, score 5 to 6, n = 3) VML. Meat physicochemical quality traits and consumer responses (n = 389) on palatability and VML liking, and purchase intent were evaluated. The experiment was in randomized complete block design. Analysis of variance, Duncan's multiple mean comparisons, and correlation coefficients were determined. Results: VML correspond to crude fat (r = 0.91, p<0.01), but both were reversely related to moisture content (r = -0.75 and -0.91, p<0.01, respectively). As VML increased, ash (p<0.05) and protein (p = 0.072) decreased, pH and $b^{\star}$ increased (p<0.05), but drip, cooking (p<0.05) and thawing (p = 0.088) losses decreased. Among treatments, muscle fiber diameter, sarcomere length, total and insoluble collagen contents, $L^{\star}$, and $a^{\star}$ did not differ (p>0.05). Compared to the others, HM had lower collagen solubility percentage (p<0.05), but similar (p>0.05) Warner-Bratzler shear force (WBSF). No differences (p>0.05) were found in juiciness, overall flavor, oiliness, and overall acceptability, but HM was more tender (p<0.05) than the others. Based on VML, consumers preferred MM to HM (p<0.05), while LM was similar to MM and HM (p>0.05). Corresponding to VML preference (r = 0.45, p<0.01), consumers (83%) would (p<0.01) definitely and probably buy MM, over LM (74%), and HM (68%), respectively. Conclusion: Increasing VML in pork LD altered its chemical composition, slightly increased pH, and improved water holding capacity, thereby improving its tenderness acceptability. Marbling might reduce chewing resistance, as lower collagen solubility in HM did not impact tenderness acceptability and WBSF. While HM was rated as most tender, consumers visually preferred and would purchase MM.

Pig Feeding under the Potato-green Forage Base System with or without Addition of Herbs versus a Concentrate Based System: Effect on Post-slaughter Performance and Pork Characteristics

  • This study examined carcass and meat quality parameters in growing/finishing pigs fed unconventionally versus the concentrate-based system. Ninety-six, 12 wk old pigs ($34{\pm}SD0.3kg$) were randomly divided into three groups, assigned to one of the three dietary treatments: standard complete concentrate mixture, conventional (C diet); unconventional, steamed potato-green forage-concentrate based diet (U diet), and unconventional basal diet+herbage mix (UH diet). Pigs fed U diet showed lower dressing percentage, meatiness, loin eye area, and weight of pork neck ($p{\leq}0.05$), but their carcasses were significantly ($p{\leq}0.05$) longer and had increased backfat depth ($p{\leq}0.05$). There was no impact of the diet on the meat content of dry matter, crude ash, acidity, and colour parameters of m. longissimus. Unconventional feeding significantly ($p{\leq}0.05$) elevated water the holding capacity of m. longissimus and slightly improved the sensory attributes analysis of meat. The addition of herbs resulted in increased loin eye area ($p{\leq}0.05$), decreased fat content ($p{\leq}0.05$) in m. longissimus, and tended to improve some sensory attributes of meat. There were significant gender differences in response to all diets. There were significant diet${\times}$sex interactions for some measured variables, but there were no clearly identifiable trends with regard to any specific carcass or meat parameters. Feeding unconventional diet to pigs may offer better culinary attributes of the meat, and improve some technologically important characteristics of pig carcass, but may negatively affect some carcass or meat parameters.

Effects of Bromelain and Double Emulsion on the Physicochemical Properties of Pork Loin

  • Our aim was to investigate the effects of bromelain embedded in double emulsion (DE) on physicochemical properties of pork loin. We evaluated DE characteristics such as size, zeta potential, and microscopy after fabrication. We marinated meat with distilled water (DW), 1% (w/v) bromelain solution, blank DE, and 1% (w/v) bromelain loaded in double emulsion (DE E) for 0, 24, 48, and 72 h at 4℃, and prepared raw meat for control. The marinated samples were assessed for color, water holding capacity, cooking loss, moisture content, pH, protein solubility, Warner-Bratzler shear force (WBSF) and gel electrophoresis. The droplet size of 1% (w/v) bromelain embedded in DE was increased compared with blank DE (p<0.05) and values of zeta potential decreased. The increase in lightness and color difference range of the DE-treated group was lower than that of the DW-treated group (p<0.05). Moreover, treatment by immersion in 1% (w/v) DE E resulted in the highest water holding capacity values (p<0.05) and lower cooking loss values than water base treatment (p<0.05). Results for myofibrillar protein solubility and WBSF showed a similar trend. 1% (w/v) DE E showed degradation of myosin heavy chain after 48 h in sodium dodecyl sulfate-polyacrylamide gel electrophoresis. Thus, bromelain-loaded DE is useful for controlling and handling enzyme activity in food industry.
