In the industrial production of fish snacks using frozen surimi, molding the surimi mixture requires an expensive automated machine. This study investigated the efficacy of freeze molding without machinery molding in the production of Alaska pollock Theragra chalcogramma surimi snacks. At 90 minutes after deep freezing at $-80^{\circ}C$, the cutting ease and shape retention of the surimi mixture were superior. The freezing-molded surimi snack had a higher TVB-N (total volatile basic nitrogen) level (3.59 mg/100 g) than that (1.50 mg/100 g) of the normally molded surimi snack. Freezing did not affect the microstructure of the surimi snack or its hardness, which is an important physical property of snack products. The freezing-molded and normally molded snacks did not differ significantly in terms of color or appearance, or in any other aspect of the sensory evaluation. Our findings demonstrate that freeze molding does not induce changes in the quality of surimi snacks. Therefore, molding by freezing treatment could be used to produce surimi snacks at small- and mid-sized seafood companies.
The purpose of this study was to evaluate the food functional properties and in vitro bioactivity of vacuum freeze-dried fish roe concentrates (FRCs) prepared from Alaska pollock Theragra chalcogramma (AP), bastard halibut Paralichthys olivaceus (BH) and skipjack tuna Katsuwonus pelamis (ST). All three species showed better buffering capacity on the alkaline side (pH 10-12) than on the acidic side. The water-holding capacities of the FRCs were 3.5, 8.5 and 4.2 g/g protein for AP, BH and ST, respectively, and were significantly higher than that of commercial egg white. The protein solubilities of the FRCs were 42.5% (AP), 50.0% (BH) and 13.9% (ST). The foaming capacities of the FRCs were not significantly different among the species (128.0% for AP, 128.3% for BH, and 143.3% for ST; P>0.05), and their foam stability was maintained at 53.0-74.2% for 60 minutes. The oil-in-water emulsifying activity indexes of AP and BH (19.5 and 20.2 ㎡/g protein, respectively) were significantly superior to that of ST (P<0.05). The 2,2-diphenyl-1-picrylhydrazyl and 2,2'-azino-bis-3-ethylbenzothia-zoline-6-sulfonic acid radical-scavenging activities (IC50, mg/mL) of the FRCs were in the ranges of 1.05-3.26 and 0.13-0.18 mg/mL, respectively, and the angiotensin I converting enzyme inhibitory activity was in the range of 0.97-1.89 mg/mL.
This study investigated the cosmetic effects of enzymatic hydrolytes of an aquatic by-product, fish skin. The skins of olive flounder Paralichthys olivaceus (PO) and Alaska pollock Gadus chalcogrammus (AP) were hydrolyzed using pepsin, Alcalase, and Protemax. Three enzymatic hydrolytes were obtained and the inhibitory effects of these hydrolytes on the aging-related enzymes tyrosinase, elastase, and collagenase were determined. The results indicated that the pepsin hydrolytes of PO and PA had stronger activities than the other hydrolytes. PO and PA also significantly reduced the intracellular reactive oxygen species levels in and improved the viability of H2O2-treated Vero cells; decreased nitric oxide production by and increased the cell viability of lipopolysaccharide-treated RAW 264.7 cells; and reduced intracellular reactive oxygen species levels and improved the viability of ultraviolet B irradiated HaCaT cells and human dermal fibroblasts. Furthermore, PO and PA remarkably reduced the intra- and extracellular melanin contents of alpha-melanocyte-stimulating hormone-stimulated B16F10 cells. These results demonstrate that PO and PA have potential for use in the cosmetic industry.

The purpose of our study is to design datasets for Artificial Intelligence learning for cold sea fish farming. Salmon is considered one of the most popular fish species among men and women of all ages, but most supplies depend on imports. Recently, salmon farming, which is rapidly emerging as a specialized industry in Gangwon-do, has attracted attention. Therefore, in order to successfully develop salmon farming, the need to systematically build data related to salmon and salmon farming and use it to develop aquaculture techniques is raised. Meanwhile, the catch of pollack continues to decrease. Efforts should be made to improve the major factors affecting pollack survival based on data, as well as increasing the discharge volume for resource recovery. To this end, it is necessary to systematically collect and analyze data related to pollack catch and ecology to prepare a sustainable resource management strategy. Image data was obtained using CCTV and underwater cameras to establish an intelligent aquaculture strategy for salmon and pollock, which are considered representative fish species in Gangwon-do. Using these data, we built learning data suitable for AI analysis and prediction. Such data construction can be used to develop models for predicting the growth of salmon and pollack, and to develop algorithms for AI services that can predict water temperature, one of the key variables that determine the survival rate of pollack. This in turn will enable intelligent aquaculture and resource management taking into account the ecological characteristics of fish species. These studies look forward to achievements on an important level for sustainable fisheries and fisheries resource management.
붉은 대게는 소비자의 기호도가 높으나 생산량이 적고, 감소 추세에 있으며 수율이 낮아 이의 완전 이용이 절실하다 이러한 일면에서 붉은 대게를 보다 효율적으로 이용하고자 붉은 대게 페이스트(paste)를 이용한 천연 게살 함유 게 연제품의 제조를 시도하였다. 게 페이스트 첨가비율에 따른 연제품의 일반성분, 색조(명도 및 적색도), 조직감 및 관능검사의 결과로 미루어 보아 붉은 대게 페이스트를 이용한 연제품의 제조시 게 페이스트의 최적 첨가비율은 $10\%$정도로 판단되었다. 붉은 대게 페이스트를 $10\%$ 첨가하여 제조한 게 연제품은 무첨가 연제품에 비하여 구성아미노산의 경우 총 함량 및 주요 아미노산의 종류는 차이가 없었으나, 함황 아미노산의 함량은 높아 게 특유의 향을 인지할 수 있으리라 판단되었다. 또한 붉은 대게 첨가 연제품은 무첨가 연제품에 비하여 무기질의 경우 칼슘이 훨씬 강화됨과 동시에 인과의 비율이 개선되었다. 이상의 결과로 미루어 보아 붉은 대게 페이스트로 연제품을 제조하는 경우 기존의 인공향 및 색소첨가 게맛살과는 판이하게 다르면서 칼슘 강화 건강 기능성 천연 게 가공품을 제조할 수 있으리라 판단되었다.
니트로사민은 산성이나 열을 가했을 때 2급 아민과 질소산화물이 반응해서 생성되는 발암물질이다. 일반적으로 위해 물질에 대한 안전성평가는 그 노출량을 mg/kg body weight/day로 산출하여 독성기준치와 비교하는 방법을 사용한다. 이런 방법은 정책 근거자료로는 적합하나 소비자들에게 식생활 정보로 제공하기에 미진한 부분이 있다. 따라서 주재료 및 조리법으로 분류한 음식군에 대한 NDMA(N-nitrosodimethylamine), NDBA (N-nitrosodibutylamine) 및 6종 니트로사민(NDMA, NDBA, NDEA (N-nitrosodiethylamine), NPYR (N-nitrosopyrrolidine), NPIP (N-nitrosopiperidine), NMOR (N-nitrosomorpholine) 함량 분포를 파악하여 식습관 교육에 도움을 주고자 본 연구를 실시하였다. 2014~2016년 국민건강영양조사 24시간 회상법 자료를 사용하여 만 7세 이상을 연구 대상으로 음식별 레시피와 섭취량을 추출하였고, 2013~2015년 총식이조사 원자료를 바탕으로 음식 한끼니 제공량 내 니트로사민 함량 분포를 R프로그램으로 산출하였다. 볼락, 장어, 멸치 육수, 명태 등의 기여로 어패류 및 해조류를 주재료로 한 음식군은 섭취량과 상관없이 NDMA, NDBA 및 총 6종 니트로사민 모두에 대한 노출을 높이는 것으로 나타났다. 또한 조리법에 따른 분류에서는 국 및 탕류와 찌개 및 전골류가 가장 크게 노출에 기여하는 것으로 나타났다. 곡류, 과실류 및 유제품류 주재료 음식군, 밥류 및 밥 외의 다른 재료를 부가한 음식군들의 니트로사민 노출에 대한 기여도는 매우 낮은 것으로 나타났다. 니트로사민의 경우 조리시 생성되는 여타 화합물과는 달리 국, 탕, 찌개, 전골 등 끓임을 주로 하는 음식과 어패류를 주재료로 하는 음식에서의 기여율이 매우 높은 것으로 나타났으며, 이는 기존에 가공육류를 니트로사민의 주노출원으로 생각하던 것과는 매우 큰 차이를 보인다.
