A Study on the Development of Healthy Desserts Using Plums

  • The health of modern people is threatened by bad eating habits. In order to provide healthy desserts to people, we conducted a study on adding plum concentrate, which is effective for fatigue recovery, insomnia, and prevention of constipation, to scones. In order to examine the utility of scones made by adding plum concentrate, the following experiment was conducted. It was prepared by adding 0g, 3g, 5g, and 7g of plum concentrate to the scone dough, respectively. As a result of the test, the sensory characteristic value was the highest in the experimental group to which 5 g of plum concentrate was added (4.77). There was a significant difference in that the average value tended to increase as the concentration of the plum concentrate increased. As for fragrance, the experimental group with the addition of 5 g of plum concentrate showed the highest sensory characteristic value of 3.62, but there was no significant difference. The experimental group to which 3 g of plum concentrate was added showed higher preference than the control group in most items such as color, flavor, sweetness, and overall preference. This study suggests that the production of scones with plum concentrate has a high potential for commercial use.

저온저장 자두를 이용한 자두 퓨레의 품질특성과 항산화 활성 (Quality Characteristics and Antioxidant Activity of Puree Made with Plums Stored at Low Temperatures)

  • The oriental plum (Prunus salicina) is one of the most popular fruits in Korea due to its sweet taste and pleasant aroma. The objective of this study was to analyze the quality characteristics and antioxidant activities of a puree made using plums stored at low-temperatures. The quality characteristics were determined by estimating total soluble solids (TSS, °Brix), titratable acidity (TA, % citric acid), TSS/TA ratio, pH, colors, sugar content, and sensory profiles. The antioxidant effects were estimated by total polyphenol and flavonoid content and radical scavenging activity. The results showed that the plum puree containing both the flesh and the peel had markedly higher red coloration (a⁎ value) than the puree without the peel, while yellow coloration (b⁎ value) and lightness (L⁎ value) were lower in the puree without the peel than with the peel. The sensory qualities including the plum taste and flavor, texture as well as overall acceptance showed no significant variation between the samples. Meanwhile, the total polyphenol/flavonoid content and radical scavenging activities were significantly improved by the presence of fruit peel and by frozen storage. These findings suggest that frozen plums could be a suitable ingredient for making a puree and concentrate for the food manufacturing industry.

자색고구마 색소 농축액과 매실음료 Anthocyanin의 가열분해에 대한 속도론적 연구 (Degradation Kinetics of Anthocyanins in Purple-Fleshed Sweet Potato Pigment Concentrates and a Japanese Plum Juice Based Beverage)

  • 자색고구마 anthocyanin 색소 용액은 가열에 의해 1차 반응속도식에 따라 색소 함량이 감소하였으며, 이 반응은 색소용액의 농도와 가열온도에 영향을 받았다. 이 반응의 활성화 에너지 값은 색소 용액의 농도에 따라 51.29-73.02 kJ/mol이었으며, 농축하지 않은 색소 추출액을 제외하면 활성화 에너지는 색소의 농도가 증가함에 따라 직선적으로 감소하였다. 자색고구마색소를 첨가한 매실음료의 anthocyanin 색소 역시 저장 중 1차 반응에 따라 색소가 감소하였는데, 저장온도가 낮아질수록 반응속도가 낮아져 저장기간이 증가하여, $5^{\circ}C$에서 저장한 경우는 저장 8개월까지 80%이상의 색소 잔존률을 나타냈다. 매실음료에 함유된 자색고구마 anthocyanin색소 변화에 대한 활성화 에너지는 75.80 kJ/mol이었다.
