Characteristics of the Gigolphy(Lycii cortex Radicis) Wine (지골피 발효주(地骨皮 醱酵酒)의 특성(特性))

  • Gigolphy(Lycii cortex Radicis) wine and its chemical components and physical properties were prepared and analyzed for development of Boxthorn product and utilization of Boxthorn. Chemical components and physical properties of this wine was analyzed. When this wine were evaluated by Amerine test and by concerning physico-chemical properties, the recipy including 20 % of sugar, and 2.0 % of Gigolphy powder were the most highly recommended for development of Gigolphy wine.

  • In comparison of contents of the components related to the quality of kiwifruit depended on the cultivars, the obtained results were as follows; Abbott showed the highest values in soluble solid, crude fat, firmness and specific gravity. Potassium, phosphorus, calcium and magnesium were estimated as the major minerals in kiwifruit and Bruno contained the highest amounts of potassium and magnesium. Bruno also had high concentrations of ascorbic, maleic, citric and fumaric acid when compared with the other cultivars. The changes in chemical components of kiwifruit (Hayward) by ripening stage were as follows; During ripening, the glucose and fructose contents were increased with decrease of sucrose content. Ascorbic, maleic, fumaric and succinic acid contents were considerably increased during ripening From the investigation of changes in protein pattern by electrophoresis! the new bands with about 17,000-23,50kd were shown during ripening.

The Physico-Chemical Characteristics of Modified Starch Made by Chemical Treatment (화학적 처리방법에 의한 변성전분의 이화학적 특성)

  • Developing carbohydrate fat replacer as materials for low-calorie and low-fat food made of Korean potato, it is expected that the new demand of fat replacer will be created. Potato starch was modified by chemical modification. Observing modified starch(treated in different method) by SEM, EZ(treated by enzyme) showed shape of deformed round oval, AC(treated by acetylation,), HPR(treated by hydropropylation) showed shape similar to that of NL(N-Lite), the commercial fat replacer. In the modified starch such as AC, peak in B and C type similar to those of general starch was found, but EZ showed non-crystalline shape. Compared to other modified starch, HPR, the chemically produced denatured starch showed very peculiar peak and structure in V-form. While the order of contents of amylopectin was in the order HPR > EZ > AC showed extremely high contents. Measuring the degree of gelatinization per the modified method, the degree of gelatinization of HPR as much higher than others. The water binding activity of modified starch was 240% in HPR. Measuring viscosity by producing general starch and modified starch as gel of 10% concentration, the CPS showed very high viscosity of 30.30 ${\times}$ 10$^3$ cp. Showing viscosity of 38.60, 31.60 10$^3$ ${\times}$ cp, the modified starch was in the order of HPR. While the calorie of starch of GPS was measured to be 3.0 Kcal/g, very low calorie those of chemically modified starch, HPR showed 2.5 Kcal/g respectively, suggesting that calorie is decreased by modified treatment. The appropriateness of processing food was experimented by substituting the existing oil and fat containing food with saturated gel of starch and modified starch in constant rate through utilization of modified starch. Therefore, research and development for materials and related products which maintain the existing quality and reduce fat contents will be constantly performed in the future.

  • The sensory and instrumental characteristics of warm and cool cooked rices with pressure and electric cookers were examined. The types of rice varieties tested were Choucheong (traditional rice variety) Samgang and Seogwang (high-yielding rice varietis) The result of sensor evaluation revealed more significant differences in most of appearance, texture characteristics than flavour. The difference of sensory characteristics according to the types of cookers and the warm or cool cooked rices was greatest in Seogwang among three varieties. The instrumental measurement of cooked rices using instron showed that the difference between types of varieties and cookers was more clearly in cool cooked rices than warm ones. Especially hardness in instrumental characteristics revealed highly signficant difference. With regard to the correlation between instrumental and sensory characteristics, hardness had a significantly high correlation with texture while others had low ones.

Effect of Dry Surface Treatment with Ozone and Ammonia on Physico-chemical Characteristics of Dried Low Rank Coal (건조된 저등급 석탄에 대한 건식 표면처리가 물리화학적 특성에 미치는 영향)

  • The physical and chemical properties of the dried low rank coals (LRCs) before and after the surface treatment using ozone and ammonia were characterized in this study. The contents of moisture, volatiles, fixed carbon and ash consisting of dried LRCs before the surface treatment were about 2.0, 44.8, 44.9 and 8.9%, respectively. Also, it was composed of carbon of 62.66%, hydrogen of 4.33%, nitrogen of 0.94%, oxygen of 27.01% and sulfur of 0.09%. The dried LRCs was surface-treated with the various dry methods using gases such as ozone at room temperature, ammonia at $200^{\circ}C$ and then the dried LRCs before and after the surface treatment were characterized by the various analysis methods such as FT-IR, TGA, proximate and elemental analysis, caloric value, ignition test, adsorption of $H_2O$ and $NH_3-TPD$. As a result, the oxygen content increased and the calorific value, ignition temperature and the contents of carbon and hydrogen relatively decreased because the oxygen-contained functional groups were additionally generated by the surface oxidation with ozone which plays a role as an oxidant. Also, its $H_2O$ adsorption ability got higher because the hydrophilic oxygen-contained functional groups were additionally generated by the surface oxidation with ozone. On the other hand, it was confirmed that the dried LRCs after the surface treatment with $NH_3$ at $200^{\circ}C$ have the decreased oxygen content, but the increased calorific value, ignition temperature and contents of carbon and hydrogen because of the decomposition of oxygen-contained functional groups the on the surface. In addition, the $H_2O$ adsorption ability was lowered bucause the surface of the dried LRCs might be hydrophobicized by the loss of the hydrophilic oxygen-contained functional groups. It was concluded that the various physico-chemical properties of the dried LRCs can be changed by the surface treatment.

  • To investigate the variations of physico-chemical factors and microbial population, in ten stations at water region of coastal area of Chagwi-Do, Nutritive salts, water temperature, transparency, suspended solid, salinity, COD, DO, pH, heterotrophic bacteria, coliform group and Vibrio spp. were analysed three times in September, November in 2004 and February in 2005. Heterotrophic bacteria in surface water was $3.5X10^1{\sim}1.16X10^3cfu/ml,\;1.0X10^2{\sim}5.2X10^1cfu/ml\;2.0X10^1{\sim}7.6X10^1cfu/ml$ and bottom water counted $7.0X10^2{\sim}1.0X10^3cfu/ml,\;1.4X10^1{\sim}2.5X10^2cfu/ml\;2.0X10^2{\sim}4.2X10^1cfu/ml$ in September, November in 2004 and February in 2005, respectively. The cell number of total coliform bacteria in the surface water amounted to $0{\sim}4.3X10^2cfu/ml,\;0{\sim}6.0X10^1cfu/ml,\;0{\sim}1.0X10^1cfu/ml$ and bottom water amounted $0{\sim}2.2X10^2cfu/ml,\;0{\sim}5.4X0^2cfu/ml,\;0{\sim}2.0X10^1cfu/ml$ in September, November in 2004 and February in 2005, respectively. As for Vibrio spp., the cell number in the surface water was $1.0X10^1{\sim}2.5X10^2cfu/ml,\;1.0X10^1{\sim}2.0X10^1cfu/ml,\;0cfu/ml$ and bottom water counted $1.0X10^1{\sim}5.2X10^2cfu/ml,\;0cfu/ml,\;2.0X10^1cfu/ml$ in September, November in 2004 and February in 2005, respectively.

Behavior and Geochemical Characteristics of Au and Heavy Metals in the Water System at the Abandoned Bonjeong Gold Mine (본정 함금 폐광산 주변수계 내 Au와 중금속의 거동 및 지화학적 특성)

  • This study investigates the dispersion and behavior of Au and heavy metals in the water system (soil, AMD and stream sediment) at the abandoned Bonjeong gold mine, based on XRD, aqua regia, sequential extraction, and physico-chemical analyses. The XRD analyses targeted quartz and kaolinite in the mine waste soil and quartz and goethite in stream sediment. The physico-chemical analyses of AMD with increasing distance from water system showed that pH increased from 3.00 to 3.19 and Eh decreased from 450 to 396 mV. The Au content in AMD ranged from 0.68 to 0.97 mg/L upstream, but was not detected downstream. The Au content of stream sediment was 13.76 to 22.85 mg/kg. Sequential extraction from stream sediment revealed 10.84% exchangeable (STEP I), 11.09% carbonates (STEP II), 25.53% Fe-Mn oxides (STEP III), 26.62% organic matter (STEP IV), and 24.61% residual (STEP V).

Changes in Physicochemical Characteristics of Black Raspberry Wines from Different Regions During Fermentation (국내 복분자 주요 산지별 복분자주 제조 및 발효특성 분석)

  • In this study, four Korean black raspberry wines were developed using raspberries from different regions in Korea; Gochang (G), Hoengseong (H), Jeongeup (J), Sunchang (S). Sample wines were monitored for titratable acidity, ethanol, pH, reducing sugar content, color intensity, hue, total phenolic content, and organic acids during alcoholic fermentation and aging. After fermentation was complete, the pH levels in the four wines were in a similar range (3.43-3.52), while total acidity levels ranged from 9.98 to 16.2 g/L, which were significantly different among the four wines. During 120 days of aging, the ethanol content ranged from 15.8 to 16.40% which corresponds to a good conversion rate of sugars. Among the four samples tested, the wine made with Jeongeup raspberries showed the highest levels of total phenolic content, and other color values such as hue and intensity. The predominant organic acids were citric acids (3.30-4.89 mg/mL) and succinic acids (1.92-3.48 mg/mL). Overall the wine made with Jeongeup raspberries showed differences in physico-chemical compositions compared to the other wines made with Gochang, Hoengseong, and Sunchang raspberries, respectively.

Physico-chemical and Sensory Characteristics of Pork Cutlet Containing Ginseng Saponin (인삼사포닌이 첨가된 돈가스 제품의 이화학적 및 관능적 특성)

  • The pork cutlets containing different concentrations of dried ginseng powder (1%, 2% and 3%) were manufactured and compared the physico-chemical and sensorial properties with control containing no dried ginseng powder. The color(CIE, L, a, b) values were not significantly different between the treatments and control. The TBA values were lower for pork cutlet containing dried ginseng powder than those for control at the beginning stage (5 days) when they were vacuum packaged and stored at 4$^{\circ}C$ or 15days, however, there were not significantly different after 5 days of storage. The TBA values were remained low level (<0.5mg malonaldehyde/kg sample) when the pork cutlets were vacuum packaged and stored at -20$^{\circ}C$ for 90 days. In fatty acid composition, pork cutlet containing dried ginseng powder contained higher ratios of PUFA/SFA and lower ratios of MUFA/SFA when compared to those of control. Sensory panels evaluated that pork cutlet containing 1% of dried ginseng powder had the highest preference scores in flavor and overall palatability.

Current Status of Ginseng Cultivation and Soil Characteristics of Northeastern Three Provinces in China

  • This study was conducted to improve the continuous techniques for international competitiveness of ginseng industry to Korea-China FTA negotiation and conclusion, and provide the basic information for ginseng industry development of Korea. It was carried out the visiting of the northeastern three provinces (Jilin, Liaoling and Heilongjang) in China for 3-year from 2014 to 2016 and observed the farmers' fields of ginseng cultivation with soil environmental status. The types of ginseng cultivation could be observed in small scales of 0.5~3.0 ha, in middle scales of 4.0~10.0 ha and in large scales of 30~700 ha with the kinds of imhasam, Chinese ginseng, Korean ginseng and western ginseng. Also ginseng was cultivated in newly reclaimed land of forest in two types of direct seeding and transplanting of ginseng seedlings. The field beds of ginseng growing were covered with vinyl films in arch design of 100~130 cm height and vinyl was painted in spraying with blue, green and yellow colours for shading. It was investigated in status of the physico-chemical properties of soils. The physical information on the field soils were silt loam, loam and sandy loam in soil textures, and some plain in low slope, some alluvial fan or local valley in forest of land topography. Soil pH ranged within 5.0~5.2, soil EC was $0.93{\sim}3.78dS\;m^{-1}$, organic matter was $37{\sim}35g\;kg^{-1}$, nitrate nitrogen $63{\sim}490mg\;kg^{-1}$, available $P_2O_5$ $55{\sim}163mg\;kg^{-1}$, and in exchangeable cations, K was 0.30~0.98, Ca was 6.5~14.0, Mg was $1.1{\sim}5.3cmol_c\;kg^{-1}$ in ranges. Farmers used the fertilizer for ginseng cultivation in 10~11 t of compost, $200{\sim}400kg\;ha^{-1}$ of complex fertilizer and $750kg\;ha^{-1}$ of oil cakes. The northeastern three provinces of China can use the newly lands with large areas of ginseng cultivation in soil sickness by continuous cropping. and the soil basic fertility is batter than that of Korean in standard guide of ginseng cultivation soil.
