Impact of Fermentation Rate Changes on Potential Hydrogen Sulfide Concentrations in Wine

  • The correlation between alcoholic fermentation rate, measured as carbon dioxide ($CO_2$) evolution, and the rate of hydrogen sulfide ($H_2S$) formation during wine production was investigated. Both rates and the resulting concentration peaks in fermentor headspace $H_2S$ were directly impacted by yeast assimilable nitrogenous compounds in the grape juice. A series of model fermentations was conducted in temperature-controlled and stirred fermentors using a complex model juice with defined concentrations of ammonium ions and/or amino acids. The fermentation rate was measured indirectly by noting the weight loss of the fermentor; $H_2S$ was quantitatively trapped in realtime using a pre-calibrated $H_2S$ detection tube which was inserted into a fermentor gas relief port. Evolution rates for $CO_2$ and $H_2S$ as well as the relative ratios between them were calculated. These fermentations confirmed that total sulfide formation was strongly yeast strain-dependent, and high concentrations of yeast assimilable nitrogen did not necessarily protect against elevated $H_2S$ formation. High initial concentrations of ammonium ions via addition of diammonium phosphate (DAP) caused a higher evolution of $H_2S$ when compared with a non-supplemented but nondeficient juice. It was observed that the excess availability of a certain yeast assimilable amino acid, arginine, could result in a more sustained $CO_2$ production rate throughout the wine fermentation. The contribution of yeast assimilable amino acids from conventional commercial yeast foods to lowering of the $H_2S$ formation was marginal.

EFFECT OF DIFFERENT LEVELS OF ROASTED FULL-FAT SOYBEAN ON THE APPARENT DIGESTIBILITY OF DIETARY COMPONENTS BY CARP (Cyprinus carpio) GROWER

  • Digestibility trial was performed with carps weighing 200 g/fish. Fecal collection was made over 7 days using a settling column. The water temperature was in the range of 27 to $30{^{\circ}C}$ during whole experimental period. Fishes were fed 5 diets (Control, $F_{24}S_{13}$, $F_{16}S_{27}$, $F_8S_{40}$ and $F_0S_{56}$) containing both 32%, 24%, 16%, 8% and 0% of fish meal (F) and 0%, 13%, 27%, 40% and 56% of roasted full-fat soybean (S), respectively. Water volume in each recirculated rearing tank was maintained at 130 l with flow rate of 10-12 l/min. Apparent digestibility coefficients (ADCs) of dry matter, protein, lipid, total carbohydrates and energy in diets showed a reduction (p < 0.05) with the increase of dietary full-fat soybean level, although there was no difference in the ADCs between Control and $F_{24}S_{13}$ (p > 0.05). The ADCs of ash, Ca and P in diets significantly increased with the increase of dietary full-fat soybean level, suggesting the high availability of phosphorus in monocalcium phosphate.

  • Exogenous enzymes which, for the purpose of this paper, include phytase, $\beta$-glucanase, pentosanase and $\alpha$-galactosidase, are now extensively used throughout the world as aditives in swine diets. The chemical effects of these enzymes are well understand. However, the manner in which their benefits to the swine are brought about is still under debate. Phytase was to increase the availability of plant phytate phosphorus, which reduces phosphorus pollution and allows reductions in the amount of inorganic phosphate used. Also, enzymes have been discovered which have the potential to break down deleterious compounds commonly found in swine rations such as $\beta$-glucanase contained in barley and oats and the soluble pentosans found in rye and wheat thus increasing the digestibility of these non-starch polysaccharides. Future research in these area will allow for more efficient use of the current enzymes, development of more efficient future products and development of more thermotolerant enzymes.

Estimation of primary production of the waters around rack oyster farm at Wando, Korea

  • To establish a comprehensive management strategy, as part of the optimization of cultural practice for an oyster rack culture system, we used a numerical model to estimate the primary production in the waters on the eastern coast of Wando island, South Korea. The estimated primary production ranged from 17.12 to $1052.55mgC\;m^{-2}day^{-1}$ ($204.22{\pm}224.75mgC\;m^{-2}day^{-1}$ in average). Except for the times of peak phytoplankton blooms, the estimated primary production (PP) was consistently under $200mgC\;m^{-2}day^{-1}$, which is more similar to the value of PP measured off the western coast of South Korea than the southern coast. No clear relationship was observed between nitrogen content and rainfall with the exception of heavy rainfall events, indicating that precipitation might not be the main source of nutrients in these waters. No clear influence was observed from Doam tidal discharge, located 24 km north from these waters due to main tide comes in this area from the channel between Gunwe-myeon in Wando island and Pukpyeong-myeon in Haenam-gun. Because of the shallow water depth and strong tidal current, resuspension of sediments, which causes an input of nitrogen into the system, could be easily caused by even mild wind and the infrequent passing of ships. Microscopic examination of the phytoplankton composition showed additional contribution of benthic species such as Paralia sulcata into the waters, which increase the productivity of oyster farms in the waters. The availability of nitrate and phosphate for primary production was temporarily limited throughout most of the spring and autumn blooming season.

Effects of Soil Amendments Application on Growth of Rice Cultivated in Soils Polluted with Heavy Metal(loid) and on the As and Cd Content in Brown Rice

  • Heavy metal(loid) contamination of rice is the main issue in abandoned metal mine area with regard to food safety. A field study was conducted in mine area to see if soil amendments treatment including calcium superphosphate, sulfur, steel slag and S-containing fertilizer could reduce As and/or Cd content in rice grain and increase the growth of rice. The As content in brown rice reduced to 60% compared to the control only in $7.0Mg\;ha^{-1}$ of steel slag treatment. Cd reduction in rice was thought to be not the effect of amendments but the result from the difference in growth and development of rice plant and this could be ascribed to low soil Cd availability to rice plant. Compared with control, increased rice yield of cultivar Hwanggeumnuri was 1.3~2.2 and $1.5Mg\;ha^{-1}$ in calcium super phosphate and S-containing fertilizer treatment, respectively and the trend was also observed in cultivar Ungwang. However, steel slag treatment reduced the Ungwang yield by $0.4{\sim}0.9Mg\;ha^{-1}$. Future work will be needed to establish the agricultural measure with which secure the safety and yield of rice simultaneously.

Effects of Nitrogen Fertilizers on Growth and Nutrient Uptake of Rice Plants and Chemical Properties of Paddy Soil (질소질(窒素質) 비종(肥種)이 수도(水稻)의 생육(生育)과 양분흡수(養分吸收) 및 토양(土壤)의 화학적(化學的) 성질(性質)에 미치는 영향(影響))

  • For the purpose of investigating the effect of chemical composition of nitrogenous fertilizers such as urea, ammonium sulfate, ammonium phosphate(dibasic) and aqua-ammonia on growth, yield, efficiency and chemical properties of paddy soil this study was carried out at the same nitrogen concentration through field experiment. The results obtained was summarized as follows. 1. Nitrogenous fertilizers had an effect on plant height at heading stage, plant weight at harvest and No. of spikelet per panicle of rice plants in decreasing order: Ammonium sulfate > Diammonium phosphate > Urea > Ammonia water. But they didn't effect on culm length, spike length, dry matter weight, No. of grain per spike, ripening ratio and weight of 1000 grains of rice plants. 2. The absorbed amount of nitrogen and that of sulfur and nitrogen availability were highest in ammonium sulfate application and lowest in ammonia water application and these were positively correlated with yield. 3. The influence of nitrogenous fertilizers on nitrogen and sulfur efficiency and translocation efficiency was insignificant but that of ammonium sulfate on nitrogen efficiency was higher than that of the others. 4. The effect of nitrogenous fertilizers on a basic chemical properties of paddy soil experimented such as pH, C.E.C, exchangeable cation and organic matter was insignificant. But the sulfur content of ammonium sulfate application and phosphorous content of diammonium phosphate application were higher than that of the others.

Nutrients and Energy Digestibilities of Various Feedstuffs Fed to Israeli Strain of Growing Common Carp (Cyprinus carpio) (육성용 이스라엘 잉어에 의한 원료사료의 영양소 및 에너지 소화율)

  • This study was conducted with Israeli strain of common carp to determine apparent protein, lipid and gross energy digestibility coefficients and apparent calcium and phosphorus availabilities of the following feedstuffs : steam-dried white fish meal (WFM-S), flame-dried white fish meal (WFM-F), brown fish meal (BFM), soybean meal (SBM), corn gluten meal (CGM), sesame meal (SSM), wheat flour (WFL), brewer's yeast (BY) and monocalcium phosphate (MCP). Test diets consisting of a 70:30 mixture of refoernce diet to test ingredient were utilized with chromic oxide as an external indicator. Fecal collection was made during 10 days before the end of feeding trial lasted for 27 days. The best weight gain and feed utilization were found in fish fed MCP containing test diet. Protein digestibility was high for most ingredients, ranging from 81.2% for BY to 91.9% for SBM, with the exception of SSM which was 77.6%. Lipid digestibility coefficients ranged 74% for CGM to 85.8% for two kinds of white fish meal. Digestible energy coefficients were generally high for fish meals, ranging from 77.4% for WFM-S to 81.3% for WFM-F, whereas those for plant feedstuffs were significantly (P<0.05) lower, from 64.5% for CGM to 70.6% for BY. Phosphorus availability from fish meals was variable with a low of 6.6% for WFM-F and a high of 13.6% for WFM-S. Phosphorus availability from SBM and BY was 7.3% and 57.2%, respectively. Calcium and phosphorus availabilities from MCP were 84.6% and 80.6%, respectively. These results provide more precise information concerning nutrients and energy utilization of Israeli strain of common carp and will allow ingredient substitutions in practical diet formulations based on levels of availabile protein and phosphorus.

Studies on Calcium Availability in Various Sources by Chicken (닭에 대(對)한 칼슘 공급원별(供給源別) 효율(?率)에 관(關)한 연구(硏究))

  • The calcium balance study was carried out to determine the availability of calcium in different sources for chicks and laying hens. The sources of calcium were calcium carbonate (CC), dicalcium phosphate-dihydrate (DCPH), and dicalcium phosphate-anhydride (DCPA) for chicks and calcium carbonate (CC) and oyster shell (OS) for laying hens. The radioisotope dilution method was employed to measure the endogenous excreta calcium during the period of balance study following preliminary feeding. A. Experimental results with chicks: No significant difference was found among feed consumption of chicks fed diets containing different sources of calcium. Body weight gain of chicks was dependent upon the source of calcium. The gain decreased in the order of DCPH, DCPA and CC (P<0.01). The feed conversion efficiency in chicks fed DCPH was better than those in chicks fed CC or DCPA. The average tibia ash contents for chicks fed different sources of calcium were similar. The DCPH was superior to CC or DCPA regarding the calcium content in tibia ash. There were no significant differences among the average calcium contents in plasma trichloracetic acid filtrate in chicks irrespective of calcium sources. The mean apparent retention of calcium by chicks fed DCPH, CC and DCPA were 65.9, 64.0 and 59.9% respectively. The calcium to phosphorus ratios in tibia ash and plasma trichloracetic acid filtrate for chicks fed different sources of calcium were similar. The chicks fed DCPH showed the partition of endogenous excreta calcium in total excreta calcium as 35.6% which was higher than 31.0 or 31.4% for chicks fed CC or DCPA. The endogenous excreta calcium per day per chick in group fed DCPH, DCPA or CC were 17.2, 16.1 and 14.6mg respectively. The true retained calcium per day per chick in group fed DCPH were 109.9 mg which was higher than those observed with CC or DCPA group (P<0.01). The true retention of calcium by the birds fed diets containing DCPH, CC or DCPA were 78.1, 75.1 or 72.6% respectively. B. Experimental results with laying hens: The feed consumption, egg production and feed converion efficiency of laying hens fed diets containing different sources of calcium were similar. Calcium concentration in plasma trichloracetic acid filtrate in laying birds fed CC was equivalent to the value obtained by feeding OS. The apparent calcium retention by laying birds fed CC was 61.6% and it was significantly more than that of hens fed OS of 51.6% (P<0.05). The partition of endogenous excreta calcium in total excreta calcium of laying hens fed CC was 23.5% and this was higher than that of birds fed OS of 15.6%. The laying hens fed CC showed 310 mg of endogenous excreta calcium per day per bird while birds fed OS showed 261mg. The true retention of calcium by layers fed CC was 70.7% against 59.2% for birds fed OS (P<0.05).

Polyamine Biosynthesis in Red Pepper and Chinese Cabbage by the Application of Liquid Pig Manure (돈분뇨 액비시용에 의한 고추 및 배추의 polyamine 생합성)

  • To investigate the availability of nitrogen decomposed and released from liquid pig manure (LPM), this experiment was performed with red pepper (Capsicum annuum L., cv. Hanbando), and Chinese cabbage (Brassioa campestris L., cv. Konaenggiyeureumbaechoo) in 2001. Based on the total nitrogen of chemical fertilizer, both red pepper and chinese cabbage were treated with three and four applications of LPM, respectively. Yield of red fruits in the red pepper was increased by an enhancement of LPM application. However, that of chinese cabbage was enhanced with a reducing supply of LPM. Biosynthesis of polyamine in both crops such as red pepper and chinese cabbage was large in the early growth stage and was not increased by LPM application. The high biosynthesis of bound polyamine, monoamine and diamine, in the early growth stage was changed in an increase of conjugated polyamine and polyamine with a process of crop growth. Inorganic components in the leaf of red pepper by LPM application were equal or slightly lower than in chemical fertilizer, however, from the middle growth stage, contents of phosphate and potassium were increased. Those of chinese cabbage were slightly decreased from the early growth stage to the late. Considering this experiment, the thoughtless supply of LPM has not resulted in certain crop damages, and an application of LPM to increase a yield was different from crop species at some extent.

Arbuscular-Mycorrhizae Formation and Nutrient Status of Citrus Plants in Cheju (제주 감귤원에서 Arbuscular-Mycorrhizae 형성과 감귤 잎 중의 무기양분 조성)

  • Since volcanic ash soils in Cheju island have high capacities of adsorption and immobilization of phosphate, a relatively high rate of P application has been recommended in citrus orchards for many years and such a large amount of P application could be problematic both in agricultural and environmental point of view. The objective of this study was to test whether arbuscular-mycorrhizae can be used to improve P availability in Cheju citrus orchard soils. Soil, root and leaf samples were taken from 14 citrus orchards of different location and soil texture. Mycorrhizal spore distribution in the soils, mycorrhizal infection ratio on the citrus roots, and mineral nutrients in leaf samples were determined. Numbers of mycorrhizal spore were in the range of $9,000{\sim}40,000/100g$ soil. The population level was not correlated with any of the soil characteristics examined. Mycorrhizae were found in all of the examined orchards and root infection ratio varied between $14{\sim}60%$. The mycorrhizae infection ratio differed substantially in different soils. Although root infection was high at soils with low extractable P level, it was not significantly correlated with other soil factors measured. Since a positive correlation was observed between leaf P concentration and root infection, enhancement of P uptake seemed to be associated with mycorrhizal infection. These results indicate that mycorrhizae could be a useful method to reduce P applications in Cheju citrus orchards.
