Palatability-Enhancing Effect of the Alcohol Precipitate of Sargassum confusum C. Agardh Extracts Using an Alginate-degrading Crude Enzyme (알쏭이 모자반(Sargassum confusum C. Agardh) 알긴산 분해 조효소 분해물의 알코올 침전에 의한 기호성 증진 효과)

  • This study investigated the physicochemical properties and palatability-enhancing effects of the alcohol precipitate, in the enzymatic extracts of Sargassum confusum C. Agardh (SC), obsained using the crude enzyme of Shewanella oneidensis PKA 1008. We analyzed the oligosaccharides recovered from the alcohol precipitate using a thin-layer chromatography for SC-degrading extracts, pH, color, reducing sugar, and viscosity. Thin-layer chromatography showed that after treating with the crude enzyme for 60 h, the polysaccharides were degraded into tetramers, dimers, and trimers and pH increased in the alcohol precipitate (EtOH Sedi). In terms of color, the redness and yellowness of alcohol precipitate/supernatant (EtOH Sedi+Super) and the brightness of EtOH Sedi were the highest among enzyme treated for 0 h and 60 h, EtOH Sedi, and EtOH Sedi+Super. In the reducing sugar analysis, EtOH Sedi showed the lowest value of 13.63 ㎍/mL, and the lowest viscosity of 1.13. In terms of the sensory evaluation, EtOH Sedi+Super showed the highest value with respect to the overall preference. These results suggest that the crude enzyme of S. oneidensis PKA 1008 is effective at degrading polysaccharides, and its recovery increases the palatability of the alcohol precipitate.

  • This is the second catalog listing unrecorded invertebrates discovered during the research project 'Discovery of Korean Indigenous Species'. The data to compile the catalog were primarily gathered from the final reports of the project, between 2013 and 2021. We present 38 previously undocumented species, belonging to four phyla (Platyhelminthes, Annelida, Rotifera and Arthropoda). Samples were collected from intertidal coastal waters, soil, freshwater ponds, reservoirs and hosts in South Korea. In this study, we provide brief taxonomic information, including collection site (GPS), diagnosis, specimen vouchers, figures of representative individuals and the Korean name newly assigned, for each species. All data were reviewed and updated by experts working on the respective taxonomic group. The aim of the present study is to publish species that have been previously reported through the project. Upon publication, these species will be added to the 'National Species List of Korea', curated by the National Institute of Biological Resources(NIBR).

The Impact of Leisure Flow by the Baby Boomers in their Psychological Well-being: Focusing on the Mediating Effect of Social Support (베이붐세대의 여가몰입이 심리적 안녕감에 미치는 영향 : 사회적 지지에 대한 매개효과를 중심으로)

  • The purpose of this study is to understand the impact of the leisure flow among the Baby Boomers upon their psychological well-being and verify the mediating effect of social support. For this study, the New Aging who were Baby Boomers(born between 1955 and 1963) living in Seoul or Gyeonggi-do. And a total of 470 questionnaires were put to analysis. The findings of this study are as follows; First, the leisure flow of the Baby Boomers turned out to have a significant impact on psychological well-being. Second, the leisure flow of the Baby Boomers turned out to have a significant impact on social support. Third, the recognition of the social support of the Baby Boomers turned out to have a significant impact on psychological well-being. Fourth, the researcher verified the mediating effect of social support in the relationship between leisure flow and psychological well-being of the Baby Boomers. This study implies that, as the Baby Boomers is leading the culture of the aged, the study provided the basic data for a healthy society in addition to the enhancement of the quality of life of the New Aging by leading the changing culture of the aged to a positive direction.

  • Over the past years, complex project which has the object to accomplish housing complex, commercial complex etc, recently is changing to multi-complex projects because of development in IT sector. Improvement in the quality of life, life pattern has been and is being changed, these modernized and improved version of life brings the concept of U-city. Department of urban planning and engineering, civil engineering and architecture engineering in every university educate students according to the changing world in order to handle these complex projects in real world. In most cases department of urban planning and engineering teach project planning and department of civil and architecture engineering teach project design and construction. In most of the projects planning followed by design and construction need to be accomplished, but current observation in the present curriculum shows that it is difficult to expect the continuity. The present curriculum of civil engineering has to change as complex projects deal with various different structures during the design and construction phase of these projects. This study examined curriculums from the department of urban and civil engineering related to structural design and construction and survey importance of design works which overlap urban and civil engineering targeted on design engineers. After understanding design works and results obtained from survey we propose for an advanced efficiency method.

Contents of Mercury, Methylmercury, and Selenium in Deep-Sea Fishes (심해성 어류의 수은, 메틸수은 및 셀레늄 함량)

  • This study aimed to determine mercury (Hg), methylmercury (MeHg), and selenium (Se) levels in deep-sea fishes distributed in Gyeonggi-do, South Korea. Concentrations of Hg, MeHg, and Se were measured by using a mercury analyzer and Inductively Coupled Plasma - Mass Spectrometry (ICP-MS). The average content (mg/kg) in the seafood samples was as follows: Hg, 0.7647 (0.0182-5.3620), MeHg, 0.0764 (0.0096-0.8750), and Se, 0.4728 (0.1075-3.5100). All the levels of MeHg were below the recommended standards of the Ministry of Food and Drug Safety i.e., <1.0 mg/kg. Recent studies have shown that Se prevents Hg toxicity. The average daily intake in humans was 3.3 ㎍/kg, which was lower than the recommended amount (50-200 ㎍/person/day). The weekly intake of Hg and MeHg was calculated to be 6.07% and 1.90%, respectively, of the provisional tolerable weekly intake (PTWI). This study showed that the weekly intake of Hg and MeHg from abyssal fish was less than the PTWI recommended by the Joint FAO/WHO expert committee on food additives. Therefore, the levels reported in this study are presumed to be adequately safe.

Bioconversion of Isoflavone and Soyasaponin in the Fermentation of Soy Embryo Using Lactic Acid Bacteria (콩배아의 Lactobacillus plantarum 발효에 의한 이소플라본과 소야사포닌 변화)

  • The effects of fermentation on soy embryo have been investigated using lactic acid bacteria, Lactobacillus acidophilus (LA), Lactobacillus bulgaricus (LB), Streptococcus thermophilussei (ST), and Lactobacillus plantarum (LP). As a result of the fermentation test of the isoflavone conversion by strain type, inoculation content, and fermentation time, the optimum conditions were LP bacterium, an inoculum amount of 5%, and a fermentation time of 24 hours. The composition of the isoflavone glycosides in the control was the highest in the order of glycitin> daidzin> genistin. When fermented with lactic acid bacteria, glycoside content decreased, and aglycone content increased. The order of composition was daidzein>glycitein>genistein. In the fermentation with LP bacterium, soyasaponin Ab content decreased and Ba and Bb content increased. Upon assessing the result of the experiment, it was found that the pH of the fermentation broth had a great influence in the bioconversion of isoflavone and soyasaponin. In the case of fermentation by pH 6 broth, aglycone and Bb content was the highest. The increase of aglycone content by fermentation reaction with the LP bacterium can increase the physiological activity and functionalization of soy embryo, which is a byproduct of processing.

Comparison of Milling and Flour Quality Characteristics of Foreign Wheat and Korean Wheat

  • This study was investigated to compare the milling and physicochemical characteristics of six Korean wheat cultivars (Keumkang, KK; Jokyung, JK; Goso, GS; Joongmo2008, JM; Baekkang, BK; Saekeumkang, SKK) and five foreign wheat classes (Australian standard white wheat, ASW; Australian hard, AH; US northern spring, NS; US hard red winter, HRW; Soft wheat, SW). Korea and foreign wheat grains were milled using a Buhler MLU-202. Flour moisture, ash, protein, gluten, sedimentation, particle size, solvent retention capacity (SRC) and dough properties of flour were analyzed. Results showed that the hard wheats had a greater total flour yield and reduction fraction yield than the soft wheats regardless of the country. However, there were in the milling characteristics between the US and Korean soft wheats. GS, a soft wheat in Korea, had the lowest flour yield (59.6%) and the highest bran fraction yield (21.4%). The particle sizes of flour by milling fraction were B1>B2>B3 for the largest, and the R1〈R2〈R3 for the smallest. Particle size, ash, protein contents and the values of lactic acid SRC showed highly correlated with flour yield. The gluten-performance-index (GPI) is the ratio of the lactic acid SRC value to the sum of sodium carbonate and sucrose SRC values, and it has been used as a quality indicator for overall performance potential of flour. GPI values differed depending on the wheat variety or class, JM (0.82) was the highest value, and SKK (0.56) and SW (0.59) were low. The curve pattern of the Mixolab result also gives a quality indication of the flour sample. JM and NS flour had similar pattern at water absorption and gluten strength parameters and BK and HRW had similar viscosity patterns. These results will enable further study for blending Korean wheat cultivar to improve the flour quality.

The Relationship between Hardness and Vitreousity of Korean Wheat Cultivars

  • Milling is an important process that determines the quality of flour and is affected by milling machine type, scale, and tempering conditions. In addition, seed hardness is an important factor in determining the amount of tempering water and has been reported to affects flour yield and flour quality. There are reports that vitreousity is used as a measure to distinguish between soft and hard seeds, and the higher the vitreousity, the higher the protein contents. However, there is no established system for measuring viterousity of seeds and studies on the vitreousity and quality characteristics of flour are insufficient. Therefore, in this study, vitreousity, hardness, and milling characteristics were evaluated for 46 major domestic varieties, and their relationship was confirmed. After cutting the seeds using a seed cutter, vitreousity was measured, and seed hardness and flour particle size was measured using SKCS and PSI, respectively. As for the seed hardness index, 'Joa' was the lowest with 11.6, 'Yeonbaek' was the highest with 78.7. As for the milling yield, 'Saeol' had the lowest at 58.1%, and 'Hcjoong' had the highest at 88.6%. Seed hardness index and wheat flour production showed a high positively correlation, showing a similar to that of previous studies. Also, in flour particle size, 'Gobun' was the largest at 75.5 pm, and 'Joa' was the smallest at 43.1 um. Flour yield and flour particle size showed a high positively correlation. As a result of vitreousity, 'Hwangeumal' (55.2%), 'Saekeumkang' (59.1%), 'Baekkang' (52.3%), 'Goso' (44.6%), and 'Joa' (19.2%) were showed. Seed hardness and vitreousity showed a high positively correlation. Also as the vitreousity increased, the flour yield also showed a tendency to increase. In addition, as the seed hardness increased, particle size of the flour yield also showed a tendency to increase. It is thought that this result can be used as a measure to determine the quality of flour with vitreousity. However, further analysis of wheat varieties and methods of analyzing vitreousity are needed.

Modeling of Damage Effects Caused by Ammonia Leakage Accidents in Combined Cycle Power Plant (복합화력발전소 내 암모니아 누출 사고에 의한 피해영향 모델링)

  • This study focuses on modeling the impact of ammonia leakage from the storage tank in a combined cycle power plant's flue gas denitrification facility. It employs accident impact assessments and diffusion models to determine the optimal scenarios for ammonia storage tank leakage accidents. The study considers the operating conditions of variables as standard conditions for predicting the extent of damage. The Taean combined cycle power plant is chosen as the target area, taking into account seasonal factors such as temperature, humidity, wind speed, atmospheric stability, and wind direction. By utilizing a Gaussian diffusion model, the concentration of ammonia gas at various locations is estimated to assess the potential extent of external damage resulting from a leak. The study reveals that in conditions of high temperature and stable atmosphere within the specified range, lower wind speeds contribute to increased damage to the human body due to ammonia diffusion.

Comparison of Antioxidant, Antidiabetic, and Antithrombotic Activities of Native Korean and Improved Pepper Varieties (국내 재래종 고추 및 개량종 고추의 항산화, 항당뇨 및 항혈전 활성의 비교)

  • Hot pepper (Capsicum annuum L.) is a valuable plant that is widely used worldwide for food and medicinal purposes. This study compared ethanol extracts of five native Korean varieties (Yuwol-cho, Subi-cho, Sumihyang, Gounbit, and Chilseong-cho) and five improved varieties (Dabok, Cheongyang, Chungseong, Olbokhap, and Shin-honggildong) of peppers cultured in Korea. The extracts were analyzed for color difference, polyphenol content, and their antioxidant, antidiabetic, and antithrombotic activities. The extracts of the improved varieties exhibited higher levels of redness and lower levels of yellowness compared to the native varieties. Polyphenol and flavonoid content analysis revealed significantly higher levels in the Yuwol-cho and Sumihyang varieties, which also exhibited scavenging activities in 1,1-diphenyl-2-picryl hydrazyl anion-, 2,2-azobis(3-ethylbenzothiazoline-6-sulfonate) cation-radical scavenging, and reducing power assay. The Chilseong-cho, Yuwol-cho, and Dabok varieties showed significantly higher nitrite scavenging activity. Antidiabetic activity based on α-glucosidase inhibition was observed in the Subi-cho, Sumihyang, and Gounbit extracts. Evaluation of antithrombotic activity showed that the Yuwol-cho extract prolonged thrombin time by 1.61 times compared to the solvent control at a concentration of 5 mg/ml, while the Dabok extract prolonged prothrombin time and activated partial thromboplastin time by 1.33 times and 2.21 times, respectively. All pepper extracts showed no erythrocyte hemolysis activity up to a concentration of 5 mg/ml. Our results suggest that native Korean peppers have the potential to serve as valuable sources of antioxidant, antidiabetic, and antithrombotic agents. This research also indicates the possibility of replacing improved pepper varieties, which incur significant seed usage fees, with native Korean pepper varieties.
