Optimization of Blanching Process of Cirsium setidens by Response Surface Methodology and Influence of Blanching on Antioxidant Capacity (표면 반응 분석법에 의한 곤드레 블랜칭 최적 공정 확립 및 항산화 능에 미치는 영향)

  • The purpose of this research was the optimization of Cirsium setidens blanched at various conditions by response surface methodology. Conducted to investigate the change of Cirsium setidens DPPH radical scavenging activity, total phenolic compounds and flavonoids during the blanching processes. With two parameters such as blanching time and temperature, response surface methodology and central composite design was used to study the combined effect of blanching time (70 to 170 seconds) and blanching temperature (70 to $99^{\circ}C$). The changes of DPPH radical scavenging activity, phenolic compounds, and flavonoids on blanching process conditions such as temperature and time were evaluated. After blanching, total phenolic compound was determined from 13.00 to 35.48 mg/ml. total flavonoids was determined from 2.31 to 8.38 mg/ml. DPPH radical scavenging activity was determined from 42.10 to 67.14 %. The optimum conditions were determined to be blanching temperature of $85^{\circ}C$ and blanching time of 150 sec.

Kinetics Determination of Quality Changes for the Optimization of Food Dehydration (식품건조공정 최적화에의 적용을 위한 품질 변화 Kinetics 결정)

  • Kinetics of ascorbic acid destruction and browning were evaluated by the dynamic test using actual drying data in order to apply in the optimization of food dehydration. Radish was chosen as a test material because it has many typical quality characteristics during drying. Radish was dried in the cabinet dryer with being measured in moisture, food temperature, ascorbic acid and browning. Using moisture and temperature history, proposed kinetic model was integrated and parameters of the model were searched by the iteration scheme to show minimum discrepancy between predicted and experimental data. Ascorbic acid destruction and browning were represented by first and zero order reaction respectively. Arrhenius equation was used to describe temperature dependence. Several mathematical functions of moisture dependence were compared in the model simplicity and residual sum of square. Attained kinetic models were analyzed as functions of temperature and moisture. Rate of ascorbic acid destruction was low at high moisture content, increased with moisture decrease to show a maximum at the moisture of $9{\sim}12g/g$ dry solid, and then decreased up to full dryness. Browning rate increased with moisture decrease to show a sharp maximum at $4{\sim}6g/g$ dry solid and decreased with further moisture decrease.

Identification of Japanese Black Cattle by the Faces for Precision Livestock Farming (흑소의 얼굴을 이용한 개체인식)

  • Recent livestock people concern not only increase of production, but also superior quality of animal-breeding environment. So far, the optimization of the breeding and air environment has been focused on the production increase. In the very near future, the optimization will be emphasized on the environment for the animal welfare and health. Especially, cattle farming demands the precision livestock farming and special attention has to be given to the management of feeding, animal health and fertility. The management of individual animal is the first step for precision livestock farming and animal welfare, and recognizing each individual is important for that. Though electronic identification of a cattle such as RFID(Radio Frequency Identification) has many advantages, RFID implementations practically involve several problems such as the reading speed and distance. In that sense, computer vision might be more effective than RFID for the identification of an individual animal. The researches on the identification of cattle via image processing were mostly performed with the cows having black-white patterns of the Holstein. But, the native Korean and Japanese cattle do not have any definite pattern on the body. The purpose of this research is to identify the Japanese black cattle that does not have a body pattern using computer vision technology and neural network algorithm. Twelve heads of Japanese black cattle have been tested to verify the proposed scheme. The values of input parameters were specified and then computed using the face images of cattle. The images of cattle faces were trained using associate neural network algorithm, and the algorithm was verified by the face images that were transformed using brightness, distortion, and noise factors. As a result, there was difference due to transform ratio of the brightness, distortion, and noise. And, the proposed algorithm could identify 100% in the range from -3 to +3 degrees of the brightness, from -2 to +4 degrees of the distortion, and from 0% to 60% of the noise transformed images. It is concluded that our system can not be applied in real time recognition of the moving cows, but can be used for the cattle being at a standstill.

Optimization of Ingredient Mixing Ratio for Preparation of Steamed Foam Cake with Added Saltwort (Salicornia herbacea L.) (함초 첨가 거품형 찜케이크의 재료 혼합비율의 최적화)

  • To obtain basic data for the utilization of saltwort (Salicornia herbacea L.) as a functional ingredient in steamed foam cake, the optimum component ratios for major raw ingredients (saltwort, salt, and wheat flour) as independent variables that affect the product quality were scientifically determined using RSM (response surface methodology) technique. A three-factor and five-level rotational central composite design was used for treatment arrangement. The complete design consisted of 16 experimental points. The three independent variables selected for the RSM experiment were amounts of saltwort (X$_1$, 5${\sim}$25 g), salt (X$_2$, 0${\sim}$10 g), and wheat flour (X$_3$, 470${\sim}$530 g). The optimum responses in specific gravity of the batter and volume, color, texture, and sensory evaluation result of the cake were obtained. The specific gravity and viscosity of the batter at p<0.01 was verified from the regression curve. The characteristic of the batter was influenced by all independent variables, but was extremely dependent on the amount of saltwort ordinary points of the surface responses from the batter formed the minimum points for specific gravities of the batter while viscosities of the batter appeared with the saddle points. Analysis of the response indicated that the amount of saltwort was the most influential factor over the physical properties of the cake, among the dependent variables. Ordinary points of the surface responses from the cake formed the maximum points for loaf volume, hardness gumminess, and chewiness, while Hunter colorimetric parameters appeared with the saddle points. The result indicated that level of the saltwort deviating more or less from the optimal amount decreased the volume and increased the specific gravity with less tender product. Ordinary points of the surface responses of the sensory evaluation scores from the cake formed the maximum points for appearance, flavor, softness, and overall acceptability, while color values appeared with the saddle points. The result also indicated that the level of the saltwort deviating more or less from the optimal amount reduced the preference for the product. Integration of the optimum responses common to all dependent variables that overlapped all the contour maps finally indicated that the combination of 8.3${\sim}$13.8 g saltwort, 2.5${\sim}$6.6 g salt, and 486.5${\sim}$511.5 g wheat flour under the selected preparation recipe optimized the physical and sensory properties in the teamed foam cakes. Practical preparation of the product with median amounts of the ingredients, i.e., 11.0 g saltwort, 4.6 g salt, and 499.0 g wheat flour resulted in similar qualities to the predicted responses. In conclusion, these study results indicated that preparation of steamed foam cake with added saltwort ingredient could potentially produce a more nutritious product with less salt. Further research is required to acquire the optimum levels for sub-ingredients to improve the product quality.

A Quantative Evaluation Method of the Quality of Natural Language Sentences based on Genetic Algorithm (유전자 알고리즘에 기반한 자연언어 문장의 정량적 질 평가 방법)

  • 본 논문에서는 자연언어 문장의 객관적 정량적인 질 측정 방법의 구축에 대해 설명하고, 이를 문장 퇴고 시스템의 사례에 적용해 본다. 문장의 질을 평가한다는 것은 본질적으로 주관적이고 정량화가 어려운 작업이기 때문에, 이 과정에서 질의 객관적 계량화가 가능한지 여부가 가장 중요한 문제가 된다. 이 논문에서는 이러한 문제를 해결하기 위해 유전자 알고리즘을 이용한 진화적 접근 방법을 통해 객관적이고 정량적인 질의 측정 공식을 유도하는 방법론을 제시하였다. 이 논문에서 제시한 방법론의 핵심은 간단히 말해서 사람이 행하는 정성적인 판단을, 이에 가장 근접하는 정량적 측정 체계로 전환시키는 것이라고 보면 된다. 이것을 위해 정량화 문제를 문장의 단순 언어 특징들의 변화값을 이용한 최적화 문제로 환원시키고, 다시 이 최적화 문제를 유전자 알고리즘을 이용해 해결함으로써 문제를 효과적으로 해결할 수 있었다. 실험 결과를 보면, 본 논문에서 제시한 최적화 방법은 주어진 훈련용 예제와 검증용 예제 중 각각 99.84%, 99.88%를 만족시키는 해를 찾아내었으므로 정량적 질 평가 공식의 유도에 매우 효과적임을 알 수 있었다. 또한 도출된 측정 공식을 이용해서 실제 퇴고 시스템 평가에 적용한 결과 문장 질의 측정에 매우 유용하게 이용될 수 있음을 알 수 있었다. 이와 같이 질의 정량적 평가가 가능하다는 사실이 갖는 또 한가지 중요한 의미는 최종 사용자의 구매 의사나 개발자의 공학적 의사 결정을 위한 객관적 성능 평가 자료의 제공에 이 방법이 유용하게 사용될 수 있다는 점이다.Abstract This paper describes a method of building a quantitative measure of the quality of natural language sentences, particularly produced by document revision systems. Evaluating the quality of natural language sentences is intrinsically subjective, so what is most important as to the evaluation is whether the quality can be measured objectively. To solve such problem of objective measurability, genetic algorithm, an evolutionary learning method, is employed in this paper. The underlying standpoint of this approach is that building the quality measures is a task of constructing a formulae that produces as close results as can to the qualitative decisions made by humans. For doing this, the problem of measurability has been simply reduced to an optimization problem using the change of the values of simple linguistic parameters found in sentences, and the reduced problem has been solved effectively by the genetic algorithm. Experimental result shows that the optimization task satisfied 99.84% and 99.88% of the given objectives for training and validation samples, respectively, which means the method is quite effective in constructing the quantitative measure of the quality of natural language sentences. The actual evaluation result of a revision system shows that the measure is useful to quantize the quality of sentences. Another important contribution of this measure would be to provide an objective performance evaluation data of natural language systems on a basis of which end-users and developers can make their decision to fit their own needs.

Emulsification of O/W Emulsion Using Non-ionic Mixed Surfactant: Optimization Using CCD-RSM (비이온성 혼합계면활성제를 이용한 O/W 유화액의 제조 : CCD-RSM을 이용한 최적화)

  • A mixing ratio of the oil in water (O/W) emulsion of palm oil and the non-ionic surfactant (Tween-Span type) possessing different hydrophile-lipophilie balance (HLB) values was evaluated in this work. An optimum condition was determined through analysis of main and interaction effects of each quantitative factor using central composite design model-response surface methodology (CCD-RSM). Quantitative factors used by CCD-RSM were an emulsification time, emulsification speed, HLB value and amount of surfactant. On the other hand, the reaction parameters were the viscosity and mean droplet size of O/W emersion. Optimized conditions obtained from CCD-RSM were the emulsification time of 12.7 min, emulsification speed of 5,551 rpm, HLB value of 8.0 and amount of surfactant of 5.7 wt.%. Ideal experimental results under the optimized experimental condition were the viscosity of 1,551 cP and mean droplet size of 432 nm which satisfy the targeted values. The average error value from our actual experiment for verifying the conclusions was below to 2.5%. Therefore, a high favorable level could be obtained when the CCD-RSM was applied to the optimized palm oil to water emulsification.

Curvature Linear Equation of a Two-Mirror System with a Finite Object Distance (유한 물체 거리를 갖는 2 반사경계의 곡률 선형 방정식)

  • In this paper, we propose easily tooling method for Seidel third order aberration, which are not well utilized in actual design process due to the complication of mathematical operation and the difficulty of understanding Seidel third order aberration theory, even though most insightful and systematic means in pre-designing for the initial data of optimization. First, using paraxial ray tracing and Seidel third order aberration theory, spherical aberration coefficient is derived for a two-mirror system with a finite object distance. The coefficient, which is expressed as a higher-order nonlinear equation, consists of design parameters(object distance, two curvatures, and inter-mirror distance) and effective focal length(EFL). Then, the expressed analytical equation is solved by using a computer with numerical analysis method. From the obtained numerical solutions satisfying the nearly zero coefficient condition($<10^{-6}$), linear fitting process offers a linear relationship called the curvature linear equation between two mirrors. Consequently, this linear equation has two worthy meanings: the equation gives a possibility to obtain initial design data for optimization easily. And the equation shows linear relationship to a two-mirror system with a finite object distance under the condition of corrected third order spherical aberration.

Emulsification and Stability of Wheat Germ Oil in Water Emulsions: Optimization using CCD-RSM (밀배아유 원료 O/W 유화액의 제조 및 안정성평가: CCD-RSM을 이용한 최적화)

  • An O/W (oil in water) emulsion, wheat germ oil raw material, was produced by using natural wheat germ oil and composite sugar-ester. The effects of variables such as the hydrophile-lipophile balance (HLB) value, added emulsifier amount, and emulsification time on the average particle size, emulsification viscosity and ESI of O/W wheat germ oil emulsion were investigated. The parameters of the emulsification process produced by the central composite design model of the response surface methodology (CCD-RSM), which is a reaction surface analysis method, were simulated and optimized. The optimum process conditions obtained from this paper for the production of O/W wheat germ oil emulsion were 8.4, 6.4 wt%, 25.4 min for the HLB value, amount of emulsifier, and emulsion time, respectively. The predicted reaction values by CCD-RSM model under the optimum conditions were 206 nm, 8125 cP, and 98.2% for mean droplet size (MDS), viscosity, and ESI, respectively, based on the emulsion after 7 days. The MDS, viscosity and ESI of the emulsion obtained from actual experiments were 209 nm, 7974 cP and 98.7%, respectively. Therefore, it was possible to design an optimization process for evaluating the stability of the emulsion of wheat germ oil raw material by CCD-RSM.

Discharging Performance in Length of Hard Labyrinth and Pressure of Cylinder Type Drip Irrigation Hose (원통형 점적기의 압력과 경질미로의 길이에 따른 토출 특성)

  • The performance of drip irrigation devices depends on flow uniformity related to the function of pressure compensation. The flow uniformity can be secured when the internal fluid pressures at the positions of the flow holes are maintained uniformly. The pressure compensation effect of the drip irrigation devices can be optimized with the combination of soft silicon and labyrinth structures. However, for a drip irrigation devices composed of only hard labyrinth structures, the flow rate is changed largely with the length and the internal geometry of the labyrinth structure. Although a drip irrigation devices with only hard labyrinth structures can be fabricated simply, the changes of flow rates with internal fluid pressures are much larger than those of the drip irrigation devices with soft silicon. Because the drip irrigation devices with only labyrinth structures can be utilized widely through the optimization of the fluid pressure, the length of the structures, and the cross-sectional area of them, the study on the optimization can play an important role for enhancing the performance of the drip irrigation devices. In this study, experimental and numerical studies for investigating the performance of the drip irrigation devices had been conducted. In the experiments and numerical calculations(CFD), the variable parameters were the lengths of the labyrinth structures(#1~#8) and the fluid pressures(0.5~3.0 bar).

The Study of Statistical Optimization of 1,4-dioxane Treatment Using E-beam Process (전자빔 공정을 이용한 1,4-Dioxane 처리의 통계적 최적화 연구)

  • In this study, the experimental design methodology was applied to optimize 1,4-dioxane treatment in E-beam process. Main factor was mathematically described as a function of parameters 1,4-dioxane removal efficiencies(%), TOC removal efficiencies(%) modeled by the use of the central composite design(CCD) method among the response surface methodology(RSM). Concentration of 1,4-dioxane is designated as "$x_1$" and Irradiation intensity is designated as "$x_2$". The regression equation in coded unit between the 1,4-dioxane concentration and removal efficiencies(%) was $y=71.00-10.85x_1+20.67x_2+{1.53x_1}^2-{7.92x_2}^2-1.23x_1x_2$. The regression equation in coded unit between the 1,4-dioxane concentration and TOC removal efficiencies(%) was $y=44.48-13.25x_1+9.54x_2+{5.43x_1}^2-{1.35x_2}^2+4.45x_1x_2$. The model predictions agreed well with the experimentally observed results $R^2$(Adj) over 90%. Toxicity test using algae Pseudokirchneriella Subcapitata showed that the inhibition was reduced according to increasing an E-beam irradiation.
