A study was carried out to investigate the effect of palm oil supplementation on the growth, carcass composition and fatty acid distributions of the broilers fed isonitrogenous and isocaloric diets. This study showed that palm oil supplementation increased feed consumption, weight gain and nitrogen intake. Feed conversion improved at higher fat inclusions, but not significant. Male birds consumed significantly more feed than females resulting in significant increase in energy consumption and weight gain. Increaseing fat content in the ME:P constant diet did not produce significant difference in the fat content of the chicken. Fatty acids content of the diet exert varying effects of the composition and distribution of fatty acids in muscles of the chicken. The fatty acids found in larger amount in the breast and thigh muscles were palmitic, oleic and linoleic. The fatty acids of the breast and thigh muscles were found to correspond the fatty acids of the diets. There were no differences in the fatty acids distribution patterns between the sexes.
The objective of this study was to examine the effects of seven dietary oils on the serum lipid patterns of rats. Seventy weanling Wistar Kyoto rats were divided into seven groups of ten rats each. Walnut oil (rich in PUFA), wheat germ oil (rich in PUFA), corn oil (rich in PUFA), canola oil (rich in monounsaturated fatty acids), fish oil (rich in PUFA), primrose oil (rich in PUFA), and palm oil (rich in saturated fatty acids) were employed for 21 days. Serum total cholesterol concentrations for rats fed palm oil, walnut oil, and wheat germ oil were significantly higher than were concentrations for rats receiving corn oil. fish oil, and primrose oil. The mean serum LDL cholesterol values for rats fed fish oil, primrose oil, and corn oil were significantly lower than those for rats fed walnut oil, wheat germ oil, canola oil, and palm oil. HDL cholesterol concentrations were the highest when wheat germ oil was fed and the lowest when fish oil was fed. The feeding of wheat germ oil and palm oil to rats resulted in considerably higher serum triglyceride levels than did all other treatments. The feeding of wheat germ oil to rats resulted in considerably higher serum phospholipid levels. Serum phospholipid concentrations were significantly lower in rats fed the canola oil, fish oil, ,and primrose oil diets, when compared to concentrations achieved with the feeding of walnut oil, wheat germ oil, corn oil, and palm oil. Palm oil, which has a high ratio of saturated to polyunsaturated fatty acids, resulted in the highest serum total cholesterol and highest LDL cholesterol levels, while fish oil, primrose oil, and corn oil produced the lowest total cholesterol and LDL cholesterol. Wheat germ oil produced the highest values for HDL cholesterol, triglycerides, and phospholipids. In general, feeding oils rich in polyunsaturated fatty acids produced more favorable responses than feeding oils containing large amounts of monounsaturated or saturated fatty acids.

Forty three 7-month old, Barbados Black $Belly{\times}Malin$ crossbred sheep were used for the trial. They were allotted into three treatment groups fed varying levels of oil palm (Elaeis guineensis) frond pellets and commercial sheep pellets. Treatment diets were 80% commercial pellet+20 % (% w/w) oil palm frond pellet (CON group, n=15), 50% commercial pellet+50% oil palm frond pellet (% w/w) (HAF group, n=14) and 80% oil palm frond pellet+20% (% w/w) commercial pellet (OPF group, n=14). The plasma fatty acid profiles from these animals were compared before and after 14 weeks of feeding. Results showed that total unsaturated fatty acid content in the CON group had increased by 10% (p<0.01) from the pre-treatment values. All three treatment groups had significantly different plasma n-6 and n-3 polyunsaturated fatty acid contents at the end of the trial. In fact, the CON group had significantly (p<0.01) more n-6 polyunsaturated fatty acid content compared to its own initial values, and also the values from the HAF and OPF groups. However there was a significant (p<0.01) decline in plasma n-3 polyunsaturated fatty acids in all groups. The final total unsaturated to saturated fatty acid content ratio was significantly (p<0.01) highest in the CON group, demonstrating the high plasma unsaturated fatty acid content in these animals. This study shows the plasma unsaturated fatty acids in sheep can be increased by dietary manipulation.
Crude palm oil (CPO) is obtained from the fruit of oil palm tree, and is rich in palmitic acid, ${\beta}$-carotene and vitamin E. CPO containing a balanced range of saturated and unsaturated fatty acids is fractionated mainly into liquid palm olein and solid palm. Palm oil is highly stable during frying due to its fatty acid composition, and the synergistic antioxidant activity of ${\beta}$-carotene and tocotrienol. Blending and interesterification of palm oil and other oils are the main processes used to offer functional, nutritional, and technical advantages to produce oils suitable for margarine, shortening, vanaspati, and frying oils etc. The advantages of using palm oil products include cheap raw materials, good availability, and low cost of processing, since hydrogenation is not necessary. Future research should lead to the production of oils with a higher oleic acid content and a higher content of vitamins E, carotenoids, and tocotrienols.
The effects of palm oil and soybean oil as a high energy source diet on the performance of broilers under the warm humid environment were studied. Palm oil and soybean oil, either singly or mixed, were incorporated in the experimental diets to a total of 6% of the diet. The performance of the chicken improved (though not significant) with increasing unsaturated fatty acid content in the diets, but the responses to treatments were not consistent. The carcass fat content was generally higher in all the treated groups compared to the control but the differences were not statistically significant. The results also failed to show any effect of combining two sources of oils. Fatty acid composition in the body was found to be influenced greatly by dietary fat. When soybean oil was used instead of palm oil, the amount of linoleic and linolenic acids in the carcass were increased proportionately.
In order to elucidate the patterns of natural oils and fats assimilation by microorganisms, lipases properties of yeast and bacterium strain, Torulopsis candia Y-128 and Acinetobacter calcoaceticus KB-2, which could assimilate palm oil efficiently, were investigated. T candida Y-128 attached palm oil droplets directly, and assimilated unsaturated fatty acid more easily than saturated acids liberated by the action of its lipase. Lipase of A. calcoaceticus KB-2 was extracellular and appeared quickly from the beginning of log phase of growth, whereas lipase of f candida Y-128 appealed intracellular. The lipases of two strains seem to be only enough to utilize the lipid materials for their own growth, without accumulation of lipases in the culture broth. Lipases of the strains have 1 (3-)-positional specificities on triglycerides. The patterns of palm oil assimilation showed that two strains attached droplets of lipid materials directly and split off fatty acids at 1 (3-)-position of triglycerides first, and assimilated the reaction products via fatty acids metabolic pathway.
Twenty lactating crossbred cows yielding 10 to 15 litres of milk daily during mid lactation were selected and divided into four groups of five animals to assess the effect of feeding calcium soaps of palm oil fatty acids (bypass fat) on milk yield, milk composition and nutrient utilization in lactating crossbred cows. The animals in groups 1 (control), 2, 3 and 4 were fed concentrate mixture containing 0 (no bypass fat), 2, 4 and 6% bypass fat, respectively. The average daily dry matter consumption in the various groups ranged from 13.1 to 13.6 kg and showed no significant difference among treatment groups. There was no significant difference among different groups in digestibility of DM, OM, CP and CF, however, ether extract digestibility in cows of groups 2 and 4 was significantly (p<0.05) higher than the control group. The average milk yields of the cows in group 3 (4% bypass fat) showed a significantly (p<0.05) higher value than cows of groups 1 and 2. Similarly, a significant (p<0.05) increase in fat yield, 4% FCM yield and SNF yield was observed for the cows in group 3 (4% bypass fat). The milk composition in terms of total solids, fat, lactose, protein, solids-not-fat and ash percentage showed a varying response and bypass fat feeding did not have any effect on milk composition of cows in different groups. The gross and net energetic efficiency of milk production ranged from 23.6 to 27.5% and 37.1 to 44.4%, respectively, and showed no significant difference among different treatment groups. The gross and net efficiency of nitrogen utilization for milk production ranged from 24.0 to 28.7% and 37.2 to 43.5%, respectively, and no significant difference was noted among different treatment groups. The supplementation with calcium salts of palm oil fatty acid reduced the proportion of caproic, caprylic and capric acids and significantly (p<0.01) increased the concentration of palmitic, oleic, stearic, linoleic and linolenic acids in milk fat with increase in level of bypass fat supplementation. It was concluded that incorporation of calcium salts of palm oil fatty acids at a 4% level in the concentrate mixture of lactating crossbred cows improved the milk production and milk quality in terms of polyunsaturated fatty acids without affecting the digestibility of nutrients.

We hypothesized that supplementing finishing diets with palm oil would promote adipogenic gene expression but depress stearoyl-CoA desaturase (SCD) gene expression in intramuscular (i.m.) adipose tissues of Hanwoo steers during fattening period (from 16 to 32 mon of age). Fourteen Hanwoo steers were allotted randomly to 2 groups of 7 steers based on initial BW and fed either a basal diet (control) or the basal diet supplemented with 5% palm oil (BDSP). At slaughter, i.m. adipose tissue was harvested for analysis of adipogenic gene expression and fatty acid composition. There were no differences in BW or average daily gain between treatment groups. Supplemental palm oil had no effect on carcass quality traits (carcass weight, backfat thickness, loin muscle area, or marbling scores) or meat color values. Palm oil increased (p<0.05) expression of AMP-activated protein kinase-${\alpha}$ and peroxisome proliferator-activated receptor-${\gamma}$, but decreased (p<0.05) CAAT/enhancer binding protein-${\beta}$ gene expression and tended to decrease stearoyl-CoA desaturase gene expression in i.m. adipose tissue. Palm oil increased total i.m. polyunsaturated fatty acids (p<0.05) compared to the control i.m. adipose tissue, but had no effect on saturated or monounsaturated fatty acids. Although there were significant effects of supplemental palm oil on i.m. adipose tissue gene expression, the absence of negative effects on carcass and meat characteristics indicates that palm oil could be a suitable dietary supplement for the production of Hanwoo beef cattle.
In this study, degree of rancidity and trans fatty acid formation were examined in fat and oils, including soybean oil (SB), canola oil (CA), corn germ oil (CO), olive oil (OL), palm oil (PO), and beef tallow (BT), during heating for 10-130 minutes at 160-200$^{\circ}C$. In order to determine the rancidity of the fat and oils, acid values (AV), iodine values (IV), viscosity, and color were measured. Changes in the amounts of fatty acids and the formation of trans fatty acids were measured using GC and HPLC. For all groups, AV increased, IV decreased, and coefficients of viscosity and color increased as the heating temperature and heating time increased, indicating there were positive correlations between the heating temperature and time and AV. In addition, all groups had similar amounts of trans fatty acids, with the exception of the beef tallow; however, its level only slightly increased with heating. The olive oil had the lowest trans fatty acid content and the lowest amount created by heating. The order of trans fatty acid amounts generated while heating was BT>PO>CO>CA>SB>OL. According to the study results, the deep frying temperature during cooking should be 160-180$^{\circ}C$ in order to reduce AV and the amount of trans fatty acids that are formed. In addition, it is better to remove beef tallow during cooking and avoid heating at high temperatures since it results in high levels of trans fatty acids. The correlation between the amount of trans fatty acids and AV was positive, while the correlation between the amount of trans fatty acids and IV was negative, indicating that AV and trans fatty acid levels increase while IV decreases as the deep frying temperature and time increase. From the results, it was found that reducing the deep frying temperature and time can lessen increases in AV and trans fatty acids, and decrease IV. Accordingly, to reduce AV and trans fatty acid formation, the ideal deep frying conditions would be to use olive oil or soybean oil rather than beef tallow or palm oil at a temperature of 160-180$^{\circ}C$.
The objective of this study was to determine the effect of palm and/or linseed oil (LSO) supplementation on carcass quality, sensory evaluation and fatty acid profile of beef from crossbred Wagyu beef steers. Twenty four fattening Wagyu crossbred beef steers (50% Wagyu), averaging $640{\pm}18kg$ live weight (LW) and approximately 30 mo old, were stratified and randomly assigned in completely randomized design into 3 treatment groups. All steers were fed approximately 7 kg/d of 14% crude protein concentrate with ad libitum rice straw and had free access to clean water and were individually housed in a free-stall unit. The treatments were i) control concentrate plus 200 g/d of palm oil; ii) control concentrate plus 100 g/d of palm oil and 100 g/d of LSO, iii) control concentrate plus 200 g/d of LSO. This present study demonstrated that supplementation of LSO rich in C18:3n-3 did not influence feed intakes, LW changes, carcass and muscle characteristics, sensory and physical properties. LSO increased C18:3n-3, C22:6n-3, and n-3 polyunsaturated fatty acids (PUFA), however, it decreased C18:1t-11, C18:2n-6, cis-9, trans-11, and trans-10,cis-12 conjugated linoleic acids, n-6 PUFA and n-6:n-3 ratio in Longissimus dorsi and Semimembranosus muscles.
