The phenolic acids in needles of five pine species such as Pinus densiflora, P. thunbergii. P. virginiana. P. rigida. and P. koraiensis were analyzed seasionally (March, June, September and December) in order to investigate the resistant factors against pine gall-midge(Thecodiplosis japonensis Uchida et Inouye). The interrelation of resistance to pine gall-midge and the content of phenolic acids in pine needles was investigated in the artificial hybride pine species. The contents of salicylic acid in susceptible species (P. densiflora and P. thunbergii) to pine gall-midge which watered with salicylic acid solution in a pot was determined. The results can be concluded as follows, 1. There was a little change in total phenolic constituents of resistant and susceptible pines seasonally. The each content of benzoic acid, salicylic acid and p-hydroxybenzoic acid in June was the highest through four seasons. 2. In June, resistant species showed higher content of salicylic acid than susceptible species, while the content of gallic acid was the highest in December. 3. Among the 21 artificial hybrids(P. densiflora ${\times}$ P. virginiana. P. thunbergii ${\times}$ P. virginiana), the hybrides of the higher salicylic acid content showed the lower rate of pine gall formation. 4. Pine gall formation of the susceptible species which were watered with salicylic acid solution remarkably decreased.
The present study was carried out to evaluate the chemical properties of soil in relation to forest structure and composition at different altitudes (900-2,600 m asl) in a part of Western Himalaya. The composite soil samples were taken from three (viz. upper, middle and lower) depths. The soils of the whole study area were acidic in nature (pH=4.90-5.51). Contents of Nitrogen (N), Phosphorus (P), Potassium (K), Carbon (C) and soil organic matter (SOM) showed much fluctuation during different seasons of year. Nitrogen content showed significant positive correlations with altitude (r=0.924, p<0.05) and different community parameters like species diversity (r=0.892, p<0.01) and species richness (r=0.941, p<0.05). Phosphorus exhibited direct correlations with carbon (r=0.637) while weak negative correlations with different community parameters like species richness & diversity, total basal cover (TBC), density and canopy cover. Carbon content and hence SOM showed direct correlations with Nitrogen (r=0.821, p<0.01); Phosphorus (r=0.637, ns) and Potassium (r=0.540, ns). But no significant relationship was observed between K content and species richness (p=0.30, r=-0.504); between K content and species diversity (p=0.14, r=-0.672); between P content and species diversity (p=0.29, r=-0.513) and species richness (p=0.23, r=-0.575). Among the different soil nutrients, only N showed a significant positive correlation with altitude while all others exhibited negative (but non-significant) correlation with it. The study revealed that the chemical properties affect and are reciprocally affected by forest structure and composition and that N rich soils of higher altitudes are best for the growth and development of forests.
This study was carried out to find out the content of injurious heavy metals, such as mercury, lead, cadmium and arsenic of marine fish which had been captured in adjacent sea of Korea. From March, 1 to April, 30 in 1993. 60 sample of fishes were collected the adult fish and young fish. These samples were analyzed by the Mercury Analyzer and Inductively Coupled Plasma Emission Spectro Analyzer. The results of the study were summarized as follows: (1) The content of mercury in Therafra chalcograma was 0.112$\pm$0.034 ppm which was higher than other fishes, but Pseudosciaena manchurica and Pampus argenteus had lower (P<0.05). Although lead content of Trichiurus lepturus was 0.359$\pm$0.056 ppm, which was higher than other fishes. The lead content of Theragra chalcograma had lower to the almost same level. The cadmium content of the Theragra chalcograma was 0.069$\pm$0.010 ppm which was higher than other samples, but Pseudosciaena manchurica had 0.039$\pm$0.020 ppm to lower level. Though there was some fluctuation in the arsenic content which was 0.433~3.752 ppm, the arsenic content of Therafra chalcograma was 3.752$\pm$2.873 ppm which was the higher than any other fishes. But there are not statistical significances. (2) Heavy metal content by the maturity of the fishes: Mercury content of the old Pseudosciaena manchurica was 0.055$\pm$0.15 ppm comparing to the young's result of 0.030$\pm$0.009 ppm (P<0.05). Though there were some differences according to the maturity, but thee was no statistical significance. (3) In view of the correlation of the heavy metal content, for Pseudosciaena manchurica, high correlation was founded to r=0.6437 between mercury and cadmium (P<0.05). Though the content of mercury, arsenic cadmium and lead had positive correlation (r=0.2725) and negative correlation (r=-0.3958), but there was no significance at all. The other fishes were not found correlation between the heavy metal content. Positive correlation was found between age with mercury in Pseudociaena manchurica (r=0.7018, P<0.05). The negative correlation of age with lead content in the Pseudociaena Manchurica was signigicant (P<0.05). The correlation coefficient was r=-0.7623. The age with mercury content in Coloabis saira had high correlation (r=0.7201, P<0.05). Through the above analysis, it can get conclusion that injurious heavy metal content of the fishes in Korea such a mercury, lead, cadmium and arsenic were at the level of natural content. At present, guidelines of maximum residue level allowed at foreign countries about the injurious heavy metal have been used according to the kinds of fish but our government guideline for the marine fishes in only total mercury below 0.7 ppm and lead below 2 ppm. So more aggressive guidelines for the allowance level of heavy metals in marine fishes are required for the safety of foods.

This study was done to investigate effects of ${\gamma}$ irradiated beef feeding on the formation of gluta thione S transferase placental form positive(GST P+) foci, lipid peroxidation, cytochrome P450 system and microsomal glucose 6 phosphate activity in diethylnitrosamine(DEN) initiated rat hepatocarci nogenesis. Weaning Sprague Dawley male rats were fed the diet containing ${\gamma}$ irradiatied ground beef at the dose of 0, 3, 5kGy as a 20% of protein source for 8 weeks. One week after feeding, rats were intraperitoneally injected twice with a dose of DEN(50mg/kg BW). As a promoter, 0.05% phenobarbital was fed in drinking water from one week after DEN treatment until the end of experiment. At the end of 8th week, rats were sacrificed and hepatic GST P+ foci, microsomal malondialdehyde(MDA) and conjugated diene contents were determined. In addition, cytochrome P450 content and the activities of NADPH cytochrome P450 reductase and glucose 6 phosphatase were also measured. There was no significant effect by gamma irradiation on microsomal MDA content, conjugated diene, cytochrome P450 content and activities of NADPH cytochrome P450 reductase and glucose 6 phosphatase. However with DEN treatment, microsomal MDA content and conjugated diene contents were significantly changed. Cytochrome P450 content was also significantly increased while microsomal glucose 6 phophatase activity was significantly decreased with DEN treatment. However activity of NADPH cytochrome P450 reductase was not affected. An interesting finding in this study was that the number and area of hepatic GST P+ foci of the rats fed gamma irradiated beef were significantly(p<0.05) lower than those of the control. Such a lowering effect on GST P+ foci formation was highest at the dose of 3kGy than others. Overall results suggest that the consumption of low dose of gamma irradiated beef does not affect the formation of lipid peroxide, cytochrome P450 system and membrane stability.
Five kinds of red wine from three different grape varieties, such as Gerbong (G), Campbell (C), Moru (M), Gerbong+Moru (70:30, GM), and Gerbong+Campbell(70:30, GC) were prepared in the year of 2000. The total phenolic content and color changes were monitored using hunter colorimeter and spectrophotometry methods during wine processing. The total phenolic content of Gerbong (G), Campbell (C), Moru (M), Gerbong+Moru(70:30, GM), and Gerbong+Campbell(70:30, GC) were 712.6 mg/L, 3472.9 mg/L, 2209.4 mg/L, 2019.4 mg/L, and 1184.5 mg/L, respectively. Between total phenolic content and hunter colorimeter value (L, a, and b) of red wine showed no significant difference, but that of spectrophotometry color value (hue and intensity) were significantly different (p<0.001). The total phenolic content, hue, and intensity values represented significantly different between grape varieties (p<0.01, p<0.001). the hue showed a negative correlation relationship $(r^2=0.8660,\;p<0.0001)$, and that of intensity was a positive $(r^2=0.8304,\;p<0.0001)$ between total phenolic contents. To find out the effects of phosphatic fertilizer application levels on the botanical composition, mineral contents and mineral nutrient deprivation of grasses and the chemical properties of soil, this expriment was arranged as a randomized complete block design with six treatments(0, 50, 100, 150, 200 and 250kg $P_2O_5$/ha) and conducted at hilly land in Gwangju, Gyeonggi Province from September, 1989 to October, 1992. The results obtained are summarized as follows: The botanical composition of grasses without posphatic fertilizer application was poor but with 150kg $P_2O_5$/ha application, remarkably increased in legume of grasses and decreaed in weed. As the phophatic fertilizer levels increase, P, Ca and Mg content of grasses were increased but N and K content tended not to be regular, and Ca/p and K/Ca+ Mg equivalent ratio were lowered. Up to 150kg $P_2O_5$/ha application level, the mineral nutrient content deprived by dry matter yield was increased but with that over application, tend not to be increased. Most of applied mineral elements were accumulated at a subsurface of grassland and as the phosphatic fertilizer application levels increase, the available $P_2O_5$ and exchangeable Mg contents of the soil tended to be remarkably increased and exchangeable K content tended to be decreased, but pH, OM and exchangeable Ca content tended not to be regular.
This study analyzed the changes in the nutritional components, properties, physicochemical properties, general bacteria, and lactic acid bacteria of pickled cabbage depending on the cultivation area. An analysis of the nutritional composition on the first day of storage showed no significant difference in the calories, carbohydrates, protein, fat, and dietary fiber contents regardless of the cultivation region, but regional differences were observed in the vitamin C content in the order of Andong > Pyeongchang > Haenam. The total free amino acid content appeared in the order Andong > Pyeongchang > Haenam, and the GABA (γ-amino-n-butyric acid) content appeared in the order Haenam > Andong > Pyeongchang. In addition, pickled cabbage was observed on the 1st, 5th, and 10th days of storage at 4℃. No significant change in appearance was observed on the 1st and 5th days, but changes were observed on the 10th day. Regardless of the cultivation area, the salinity (p<0.05) and pH (p<0.05) decreased significantly as the storage period increased, while the sugar content (p<0.05) and acidity (p<0.05) increased significantly. The general bacteria (p<0.05) and lactic acid bacteria (p<0.05) counts increased significantly as the storage period increased, irrespective of the cultivation region.
Soil characteristics by site types (slope, topography and stand) were analyzed to provide the basic information for sustainable management of Nari basin in Ulleung Island. The content of total N of Nari basin was lowest at the north slope, this site had also significantly low soil pH and content of available P. The result of soil pH and content of total N analysis by topography, ranged from 5.13 of summit to 5.59 of plain and from 0.63% of plain to 0.87% of hill, respectively. Soil pH, content of total N and available P by stand were significantly different, which showed that stand types are more significant in explaining the soil properties. Available P content by slope, topography and stand ranged from 2.79 to 8.46 ppm, 3.99 to 8.46 ppm and 5.03 to 11.59 ppm, respectively. It was concluded that forest soil around Nari basin has relatively low available P content compared to other forest soil.
The experiment was carried out to investigate the change of pH, total lipid, neutral lipid and phospholipid of pork portions which are picnic shoulder, loin, ham, boston butt and bacon belly during storage at 4$^{\circ}C$ weeks. The results obtained were as follows, 1. pH of butt, ham, bacon, picnic and loin stored at 4$^{\circ}C$ for 2 days were 6.3, 5.9, 5.8, 5.6 and 5.2 respectively. And then pH of pork portions increased gradually during storage period. 2. Total lipid content of the pork portions were 2.13% in ham, 2.78% in loin 4.55% in picnic, 5.74% in butt and 7.11% in bacon. During storage period, total lipid content decreased slightly. 3. In case of neutral lipid, the content in bacon, butt, picnic, loin and ham were 6.68%, 5.32%, 4.22%, 2.53%, and 1.88% respectively. During storage period, neutral lipid content decreased slightly. 4. Phospholipid content showed little differences among the portions. And then phospholipid content decreased significantly during storage period.
Seasonal changes of pigment compositionin two intertidal red algae, Gloiopeltis furcata (Postels et Ruprecht) J. Agardh, and Porphyra yezoensis Ueda, were investigated. Chlorophyll α and phycoerythrin levels were high during winter, but decreased in late spring or summer, with accompanying discoloration from deep red to green or yellow. This discoloation corresponded closely to the fluctuationof phycoerythrin content. Nevertheless, photosynthesis capacity was maintained by the increasing water temperature in the field, suggesting that large amounts of phycoerythrin are not necessary for photosynthesis. Phycoerythrin conten correlated significantly with nitrogen content in both species when the nitrogen level was greater than the level of critical content (1.30% DW in G. furcata, and 2.26% DW in P. yezoensis), indicating that phycoerythrin plays a more important role in the nitrogen status as a nitrogen pool than that of nitrogen critical content. Furthermore, the dependence level of the alage on phycoerythrin as a nitrogen pool was greater in P. yezoensis than in G. furcata because of the remarkable increase of phycoerythrin content in P. yezoensis with increasing jnitrogen content.
