건해태(김)의 아연 및 마그네숨 함양과 품질과의 관계 (THE RELATION BETWEEN QUALITY AND CONTENT OF ZINC AND MAGNESIUM IN DRIED LAVER, PORPHYRA TENERA KJELLMAN)

  • The growth of sea weeds is greatly affected by the environmental conditions of ambient water. Especially nutrient salts in sea water function as a major factor to the growth of lavers, so that the content of inorganic substances in lavers could he a criterion for quality evaluation of lavers. In this experiment, the relation between the quality and the content of Zinc and Magnesium which are not only physiologically active and closely related with pigments such as chlorophll and phycobilins but also important in quantify is discussed if such a measurement to be an index for quality evaluation. Sixteen samples of layers were collected from three different culture farms, 7 from Jangrim-Busan, 6 from Wando-Jeon Nam, 3 from Hadong-Gyeong Nam, and classified into 3 quality grades to each farm and to whole samples by organoleptic test. Zinc and Magnesium were analyzed by atomic absorption spectrophotometry. For pigment analysis, chlorphyll was extracted with 85 percent acetone, filtered and the absorbance was measured at 660 nm and the residue was further extracted with phosphoric buffer solution to determine the optical density for phycobilins at 560 nm. The result showed that the total content of Zinc and Magnesium varied between the farms, but kept consistent with quality grades from the same farm. The Zinc content was correlated proportion- ally with the content of phycobilins, and Magnesium content in total ash could roughly represent the content of chlorophll except some examples in which the Magnesium content of chlorophyll-ext ractresiduewasexceptionallyhigher. In conclusion the contents of these metals provide an applicable index for quality judgment of lavers.

Effect of Feeding Neem (Azadirachta indica) Kernel Meal on Growth, Nutrient Utilization and Physiology of Japanese Quails (Coturnix cotrnix japonica)

  • The present study was conducted to investigate the feasibility of feeding neem kernel meal (NKM) containing diet to growing Japanese quails, which was incorporated into a standard quail diet at 0, 50, 75 or 100 g/kg in place of soyabean meal and deoiled rice bran. Each diet was offered to 30 quail chicks housed in battery cages from day one to five weeks of age. The chicks fed NKM diets gained 123.3, 122.6 and 121.6 g mean body weight, respectively, and which were significantly (p<0.05) lower than that of 129.9 g gained by those of birds fed the control diets. The feed intake and feed conversion ratio of birds in different dietary groups were not significantly altered due to dietary variations. Mean values for retention of dietary energy, N and Ca were found to insignificantly differ (p>0.05) among the treatment groups but P retention was significantly (p<0.01) lower for quails fed 100 g/kg NKM than those in other groups. Blood biochemical constituents, carcass characteristics and organoleptic test for meat also were not found to vary significantly (p>0.05) due to dietary treatments. The histopathology of liver and kidney tissues from NKM fed quails revealed mild degenerative changes. It could be concluded that inclusion of NKM in quail diet reduced the growth besides inducing mild pathological changes in liver and kidney tissues.

  • 1. 비가열 시료인 a와 b가 PE의 활성은 저장 둘째 주에 급격히 증가하다가 감소하였고, 가열 시료인 c 는 저장 넷째 주에 증가하다가 감소하였고, 병행 열처리와 trehalose 처리 시료는 저장 끝까지도 증가하였다. 2. PG의 활성은 비가열 시료인 a와 b는 저장 둘째 주부터 감소하다 저장 끝에는 증가하였고, 가열 시료인 c와 d는 저장 기간 동안 변화가 거의 없었다. 3. POD의 활성은 비가열 시료인 a와 b는 저장 둘째 주에 증가하다 감소하였고, 가열 시료인 c는 둘째 주에 약간씩 감소하였고, 병용 열처리하고 trehalose 처리군은 감소하였다. 4. 관능검사 결과 시료 a. b, d는 아작함과 기호도가 전 저장 기간동안 높았고, 시료 c는 갈색과 신맛의 증가로 기호도가 낮았다 저장기간에 따라서는 2주차에는 아작함과 형태가 좋았으나 4주 6주로 가면서 아작함과 기호도의 값이 감소하였다. 그리고 각 시료별 기호도에 가장 영향을 주는 항목은 아작함이었고 시료 c는 갈색, 맛, 조직감 등에서 음의 관계를 나타냈다.

혼성육(混成肉)을 원료(原料)로 한 중간수분식품(中間水分食品)의 시제(試製) (An Intermediate Moisture Food from a Composite Meat of Squid and Pork)

  • 혼성육(混成肉)을 원료(原料)로 한 IM식품(食品)을 제조함에 있어서 그 제조조건(製造條件)을 확립(確立)하고 제품(製品)의 효과 기호성(嗜好性) 및 저장성(貯藏性)을 검토하였다. 즉 마쇄(磨碎)한 오징어와 돈육(豚肉)의 혼성육(混成肉)(1 : 1)을 조미성형(調味成型)하여 간장에 20분간 끓이고, $80^{\circ}C$로 가온(加溫)한 glycerol에 20분 동안 담근다음, $60^{\circ}C$에서 70분간 열풍건조(熱風乾燥)함으로써 부드럽고 기호성이 좋은 제품(製品)을 얻을 수 있었다. 본(本) 시제품(試製品)을 polyethylene(0.05 mm). polypropylene(0.05 mm) 및 Al foil에 각각 포장한 후 $37^{\circ}C$, 포화습도(飽和濕度)의 incubator에 42일간 저장하는 동안에 총균수(總菌數)는 1 g당 230에서 각각 40, 20 및 10으로 감소하였고 같은 조건으로 6개월간 장기 저장한 시료도 마찬가지로 감소경향을 나타내었으며 그 내용물은 식용(食用)함에 있어서 새로 만든 제품에 비하여 손색이 없었다.

오징어 가공품의 냄새성분에 관한 연구 (Volatile Constituents of Processed Squid Product)

  • 오징어 가열향기의 전구물질부를 탐색하고, 연속증류장치로써 가열향기 성분을 추출한 후 중성, 염기성, 페놀성 및 산성구분으로 분획하여 GC 및 GC-MS로써 분석 동정하였다. 오징어 가열향기의 생성에는 80% 메탄올로서 추출되는 성분이 중요하였으며, 지질은 가열향기에 관여하지 않았다. 4가지 획분을 관능검사한 결과, 중성구분에서는 은은하면서 감미로운 냄새를, 염기성구분에 서는 탄매, 배소취 및 어취를 느낄 수 있었다. 오징어 가열향기로서 44성분이 동정 확인되었으며, 이들은 탄화수소 2종, pentanal, furfurylalcohol, hexanol, 2-phenylethanol 등 알데히드 5종, 케톤류 1종, 퓨란류 1종, dimethyl sulfide, dime-thyl-thiazole 등 함황화합물 3종. pyrazine류 7종, pyridine류 2종 및 아민류 1종 둥 10종의 함질소 화합물, 페놀류 2종, propionic acid, isopentanoic acid 및 n-hexanoic acid 등 10종의 지방산으로 구성되어 있었다.

국내산 블루베리 첨가 머핀의 품질 특성 (Quality Characteristics of Muffins Containing Domestic Blueberry (V. corymbosum))

  • As the blueberry content in batter increased, the pH of batter decreased According to the measured results about specific gravity of muffin batter, there was no significant difference among each batter including 0% 10% and 15% blueberry, while each 15% 20% and 30% dough showed significant difference (p<0.001). According to the results about general quality characteristics of muffins such as volume, weight and specific gravity, as the content of blueberry juice increased, the volume decreased. In terms of measuring specific volume, it decreased as the added amount increased According to measuring the chromaticity of muffins, as the blueberry content increased in the muffins, brightness and yellowness decreased while redness increased In terms of the measurement of texture, the hardness showed significant difference among all sample muffins (p<0.001). Significant difference was not shown in the springiness (p<0.05). As the amount of blueberry juice increased, the chewiness of the muffins was grown. The result showed a significant difference between samples in the adhesiveness (p<0.001). As the amount of blueberry juice increased, the adhesiveness of muffins also increased In the organoleptic test, a significant difference was shown in the color among all sample (p<0.001). The blueberry juice content of 20% showed highest figures with $7.12{\pm}0.67$. In terms of flavor, the content of 20% also showed highest figures among all samples with $7.16{\pm}0.62$ (p<0.001). Concerning the taste all samples showed a significant difference while 20% content did the highest figure. In the overall acceptability the content of 10% showed the lowest figure while 20% displayed the highest figure with 7.16. According to the quality characteristics of blueberry muffins, the best blueberry juice content would be 20% content group.

솔잎향미유 처리에 의한 건면의 품질개선 효과 (Quality improving effect of dries noodle according to treatment of pine needle seasoning oil)

  • Autoclaving법으로 제조한 솔잎향미유(pine needle seasoning oil, PNSO) 0~3%(w/w)와 유화제를 2:1(w/w)로 혼합하여 식염수에 용해시킨 후 이를 밀가루와 반죽하여 건면을 제조하였다. PNSO 처리량이 증가할수록 수분흡수율, 부피팽창율, 고형분 용출율은 감소하였으며, 조리시간은 연장 되는 것으로 나타나 적정 처리량은 2~3%(w/w) 수준인 것으로 판명되었다. 한편, 관능검사 결과 PNSO의 처리에 따라 조리면에서 솔잎 고유의 녹색이 나타났으며, 조리면의 표면이 매끈하였고, 쫄깃쫄깃한 rheology 및 texture가 크게 개선되었다. PNSO 2%(w/w) 이상 처리군에서는 조리 후 20~30분이 경과하여도 조리면의 쫄깃쫄깃한 특성이 그대로 유지되어 식당, 단체급식소 등의 대량 취식용으로도 적합할 것으로 판단되었다.

돼지감자분말 첨가가 쌀 스펀지케이크의 품질 특성과 항산화능에 미치는 효과 (Effects of Helianthus tuberosus Powder on the Quality Characteristics and Antioxidant Activity of Rice Sponge Cakes)

  • This study was conducted to evaluate the quality characteristics and antioxidant activities of rice flour sponge cakes containing 0, 20, 30, 40, and 50% Helianthus tuberosus powder (HTP). As HTP content of sponge cake increased, the pH of sponge cake batter significantly decreased, whereas specific gravity significantly increased (p<0.05). Meanwhile, volume and symmetry indices of sponge cake were inversely proportional to HTP amount. Further, with higher HTP content in sponge cake, L and b values of crumbs significantly decreased (p<0.05), whereas a value significantly increased (p<0.05). L, a, and b values of crust significantly increased with higher HTP content. For texture characteristics, hardness, cohesiveness, gumminess, and chewiness of sponge cake significantly increased (p<0.05),whereas cohesiveness did not significantly change. In the sensory evaluation test, rice sponge cake prepared with 10% HTP showed the highest sensory scores in terms of color, flavor, taste, softness properties, and overall preference. The levels of total polyphenol compounds and DPPH radical scavenging activities of rice sponge cakes significantly increased with higher HTP contents (p<0.05). The results of this study suggest that rice sponge cake containing 10% HTP is the most appropriate for quality characteristics and sensory evaluation. This study also provides a way to increase the quality, texture characteristics, and organoleptic properties of sponge cake while reducing HTP content to less than 10% in order to satisfy consumer tastes.

Quality traits of pork from cross-bred local pigs reared under free-range and semi-intensive systems

  • This study was conducted to evaluate meat quality traits, proximate composition, fatty acid profile and sensory attributes of pork produced under free-range and semi-intensive pig rearing systems. Longissimus dorsi muscles from pork carcasses were taken just after the slaughtering of finishing pigs reared under semi-intensive and free-range systems to test the meat quality parameters (pH, color, water holding capacity, and cooking loss), proximate composition (moisture, protein, fat, and ash) and fatty acid profile. Furthermore, the organoleptic properties were evaluated using 30 untrained panelists. The results revealed that the system of rearing did not affect (p > 0.05) the proximate composition, water holding capacity, color, pH and cooking loss of pork along with the fatty acid composition except for vaccenic acid (p < 0.05). The monounsaturated fatty acid (MUFA) content was affected (p < 0.05) by the rearing system while no effects were observed on the unsaturated fatty acid: saturated fatty acid ratio and omega-six to omega-three fatty acids ratios (p > 0.05). No difference was observed (p > 0.05) concerning the sensory attributes although pork obtained from the free-range system had the highest scores. In conclusion, the system of rearing did not show a significant effect on the meat quality parameters, composition and sensory attributes of pork obtained from cross-bred pigs.

사슴육으로 제조한 프랑크푸르터 소시지의 관능적 특성 (Organoleptic Characteristics of Frankfurter Sausage Made with Venison)

  • The purpose of this study was to investigate the quality characteristics of frankfurter sausage made with venison. The crude protein content of sausage showed a significant increase pattern in the proportion to the addition of the venison. The crude fat content showed a decrease pattern. The saturated fatty acid significantly increased in proportion to the content of the venison. The monounsaturated fatty acids and the polyunsaturated fatty acids decreased with increasing the venison content. The content of the free amino acids increased in proportion to the amount of the venison added. The amino acid content of the pork sausage was in the order of Alanine > glycine > glutamic acid, and was similar in the sausages made from venison. The essential amino acids were 36.4% in FSV, higher than 34.0% in the pork sausages. In the sensory test, it was confirmed that the texture, taste, and overall acceptability increased with the addition of the venison. Because the sausages made from the venison were superior to the pork sausages in all of the measured sensory characteristics, it is considered that industrialization is sufficiently feasible.
