A Study on Preferences for Ginseng in Korean III. The ginseng user's viewpoint (한국인의 인삼기호도 조사연구 제 3보. 인삼취급 전문인 중심)

  • The purpose of this survey was to understand the attitudes, consumption patterns and preferences of domestic consumers relating to ginseng products in general. This study involved 1,305 people (420 agents, 742 ginseng farmer, 143 staff of Korea Tobacco and Ginseng Co.). The results obtained are summerized as follows. 1, Preferences for ginseng were very high for the majority of the respondents. 2. Most (80%) of the respondents had experience in taking ginseng. They expected ginseng to have efficacy as remidy for the hang-over syndrome, gastronil troubles and high blood pressure, in that order. 3. The patron of ginseng were, for the most part, men in the prime of manhood and old age. The favored products and the preferences regarding the organic condition of the ginseng products differed by sex and age. 4 To sum up the results of this study, we conclude that moderate priced ginseng products, not only easy to use and carry but also attractive to age and sex, should be developed without losing the efficacious components and characteristics.

The Studies on the Production of Ginseng Extract by Amylase (Amylase를 이용한 인삼엑기스의 제조)

  • It order to extract the soluble organic substances of Korean ginseng effectively, the ginseng extract have been made by using amylase. The investigation on the optimum condition of enzyme reaction was carried out, and the amounts of gained extract and its saponin pattern were compared among the ethanol extract, water extract and enzyme extract. The results obtained are summerized as follows. 1. The gaining ratio or ginseng extract was the highest value when the raw ginseng and dried ginseng were extracted in the concentration of 7.5% and 5% with 0.3%∼0.6% enzyme for 25 hour. 2. The amounts of ethanol extract, water extract and enzyme extract were 9.14%, 17.23% and 23.73% in case of raw ginseng and 64.09%, 72.52% and 74.36% in case of dried ginseng, respectively. The amount of enzyme extract was increased as much as 6∼14% in case of raw ginseng, and 2∼10% in case of dried ginseng compared with that of ethanol and water extract. 3. The absolute content of saponin was nearly constant in spite of the different extraction method and all of the ginseng saponin pattern of thin-layer chromatograms were almost same.

  • The free phenolic fraction from Korean white ginseng (Panax ginseng C.A. Meyer) was studied by GLC/MS as trimethylsilyl and methyl derivative. Five phenolic compounds such as 2,6-ditert butyl p-crestal, phloroglucinol, protocatechuic acid, isoferulic acid, quinic acid were identified newly. And additionally 13 organic acids and hydrocarbons were also identified in the fraction.

  • Ginseng root explants and calli were cultured on modified Murashine and Skoog's media supplemented with different concentrations of organic or inorganic compounds and plant growth requlators to clarify the effects of chemical compositon and plant growth regulators in the medium on the growth of ginseng calli and the production of ginseng saponin. For optimum growth of ginseng calli, the concentrations of 2, 4-D and sucrose were in the range of 1 to 5 mg/l and 1 to 3%, respectively. And it was clarified that sucrose, nitrogen, phosphate, calcium, magnesium, plant growth regulators and their concentrations influcenced the relative biosynthesis of saponin in tissue cultures of Panax ginseng.

Environmental factors and the distribution of soil microorganisms in ginseng field (인삼포 토양의 환경요인과 미생물분포)

  • Interrelation between environmental influences on soil microorganisms and it's effect on disease development in ginseng (Panax ginseng C.A. Meyer) field were studied to obtain a preventive measures against the root rot of ginseng caused by soil-borne pathogens in soil in three major Korean ginseng producing areas such as Kumsan, Goesan and Poonggi. Populations of actinomycetes were relatively high in fall season from September to November. Their numbers were highly populated in healthy plot in field than replanted disease field of ginseng, whereas ratio of Trichoderma spp to actinomycetes increased in healthy plot of field indicating the higher numbers of Trichoderma spp pressented in healthy plot field. The numbers of propagules of Trichoderma spp generally increased in early summer through early fall season. Their numbers were also highly populated in the healthy plot of fields. The contents of organic matter and phosphate in healthy plot of field were somewhat high, and phophate/organic matter ratio and Mg content were high in diseased replanted field. All of the soil samples showed a weak acidic pH from 4.5 to 4.7. Soilmoisture content was increased during winter season and it did not show any significant changes curing the growing period, showing 24.6% in healthy plot in field and 19.5% in deseased plot in field respectively. Soil temperature was highest in July and August and lowest in January and February.

The patterns of ginsenosides, pharmacologically useful component, were different among the cell lines and contents of ginsenosides were much higher in selected cell lines than in original cell line.

  • This study was performed to develop the maufacturing processes of Makgeolli using red ginseng starch (RGS). After the fermentation of RGS with koji, nuruk, and yeast, the different temperature effects on the number of the yeast cells, the content of organic acid, free sugars, and total acid, and pH were investigated. There were no changes in the composition of the yeast cell number and content of organic acid amd during 20 days at $4^{\circ}C$. The content of free sugars (sucrose, glucose and mannose) and the pH value of red ginseng Makgeolli decreased during storage at $4^{\circ}C$. This meant that the total acid content and pH value increased after organic acid was produced from fermentation. Therefore, red ginseng Makgeolli is highly acidic and sour. Since high acidity helps improve storage conditions, so this developed red ginseng Makgeolli is considered safe for consumption. Furthermore, the total content of ginsenoside was 2.47 mg/mL, which was differentiate Makgeolli using red ginseng starch, with others. Therefore, new red ginseng Makgeolli is rich in organic acid, free sugars, and ginsenoside. As a result, its storage, taste, and flavor improved.

  • The soil management practices before transplanting the ginseng plant were studied with two organic matter sources such as a traditional organic matter (wild grass) and commercial organic fertilizer (byproducts of amino acid fermantation) during the late spring to late autumn. During the soil management practices, the soil received 40kg N/10a from five different combination treatments with above two organic matter sources, a wild grass and a commercial organic fertilizer. After the application of the treatments, the soil were ploughed regularly at the interval of 20 days and the changes of physicochemical properties during the soil management practices were investigated. The next year after soil management practices, ginseng plants were transplanted to each treatment, growth and the content of some organic components of ginseng plant were measured for comparision of the different treatments. 1. The decrease in bulk density observed during the first 40 days of management was considered to be the effect of the improved physical conditions caused by ploughing, The decrease in bulk density observed after 40 days of management was considered to be the effect of organic matter. Similar results were observed in particle density, however porosity increased with time. 2. Soil pH tended to decrease during the first 40 days of management, after which period the pH increased and was stabilized. However, CEC increased with organic matter treatment and the exchangeable $NH^+_4-N$ and $NO^-_3-N$ increased in 20 and 40 days after the management practices, respectively, and after that period it became steady. 3. The decomposition rate of treated organic matter was measured by the incubation test in laboratory conditions. The rate of decomposition was rapid during the first 20 days of management, after which period it showed slight changes. 4. The weight of ginseng root significantly increased in the treatment of 10kg N/10a organic fertilizer and 30kg N/10a wild grass. 5. The saponin content of ginseng root was highest in the 40kg N/10a wild grass treatment. The addition of organic fertilizer at the rate of more than 20kg N/10a caused the decrease in the saponin content.
