Objectives: The chemical composition of cactus pear seed oil (Opuntia ficus-indica [L.] Mill.) was analyzed in terms of its fatty acid composition, tocopherol content, phenolic identification, and the oil's phenolic-rich fraction antioxidant power was determined. Methods: Fatty acid profiling was performed by gas chromatography coupled to an FI detector. Tocopherols and phenolic compounds were analyzed by LC-FLD/UV, and the oil's phenolic-rich fraction antioxidant power was determined by phosphomolybdenum, DPPH assay and β-carotene bleaching test. Results: Fatty acid composition was marked by a high unsaturation level (83.22 ± 0.34%). The predominant fatty acid was linoleic acid (66.79 ± 0.78%), followed by oleic acid (15.16 ± 0.42%) and palmitic acid (12.70 ± 0.03%). The main tocopherol was γ-tocopherol (172.59 ± 7.59 mg/kg. In addition, Tyrosol, vanillic acid, vanillin, ferulic acid, pinoresinol, and cinnamic acid were identified as phenolic compounds in the analyzed seed oil. Moreover, the oil's phenolics-rich fraction showed a significant total antioxidant activity, scavenged DPPH up to 97.85%, and effectively protected β-carotene against bleaching (97.56%). Conclusion: The results support the potential use of cactus pear seed oil as a functional food.
Background and Purpose: In 2021, lung cancer in school food workers was first recognized as an occupational cancer. The classification of the carcinogenicity of cooking fumes by International Agency for Research on Cancer (IARC) was based on Chinese epidemiological data. This study aimed to determine the hazard levels of school cooking fumes in Korea. Materials and Methods: Based on public school cafeterias in one area, 25 locations were selected for the survey according to the number per school type, ventilation states, and environmental pre-assessments of cafeterias. Two inside cooking areas using a heat source and one outside cooking area were selected as control measurement points. Measurements of CO, CO2, polycyclic aromatic hydrocarbons (PAHs), and total volatile organic compounds (TVOCs), including benzene, formaldehyde, and particulate matter (PM10, PM2.5, PM1, respectively), were taken. The concentrations and patterns of each substance in the kitchens were compared with the outdoor air quality. Result: Known carcinogens, such as the concentrations of PAHs, formaldehyde, TVOC (benzene), and particulate matter in school cooking fumes, were all detected at similar or slightly higher levels than those found outside. Additionally, substances were detected at relatively low concentrations compared to the Chinese cooking fumes reported in the literature. However, the short-term exposure to high concentrations of CO (or composite exposure with CO2) and PM2.5 in this study were shown. Conclusion: The school cooking fumes in South Korea was a relatively less harmful than Chinese cooking fumes, however short-term, high exposure of toxic substances can cause a critical health effect.

Functional dyspepsia (FD) is a gastrointestinal disorder with diverse symptoms but no structural or organic manifestations. Benachio-F® (herein named 'BF-1') is an over-the-counter liquid digestive formulated with multiple herbal extracts, which has been reported to improve symptoms of FD. A total two experiments were conducted. First, we examined whether BF-1 can modulate the progression of FD through two experimental rat models. A total of three doses (0.3x, 1x, 3x of the human equivalent dose) were used. In the gastric emptying model, both 1x (standard) or 3x (3-fold-concentrated) BF-1 enhanced gastric emptying was compared with that of vehicle-treated animals. In a feeding inhibition model induced by acute restraint stress, treatment with 1x or 3x BF-1 led to a similar degree of restoration in food intake that was comparable to that of acotiamide-treated animals. Among the constituents of BF, fennel is known for its choleretic effect. Thus, we next investigated whether a novel BF-based formula (named 'BF-2') that contains an increased amount of fennel extract (3.5-fold over BF-1), has greater potency in increasing bile flow. BF-2 showed a superior choleretic effect compared to BF-1. Furthermore, the postprandial concentration of serum secretin was higher in animals pretreated with BF-2 than in those pretreated with BF-1, suggesting that the increased choleretic effect of BF-2 is related to secretin production. Our results demonstrate that BF-1 can modulate the pathophysiological mechanisms of FD by exerting prokinetic and stress-relieving effects, and that BF-2 has a better choleretic effect than BF-1.

The aim of this study was to investigate the range of influence of aquaculture activities in fish cage farms located on the southern coast of Korea (Farm A and B in Hadong, Farm C in Tongyoung, and Farm D in Geoje) by analyzing the distribution and characteristics of polychaete communities. Farm A and B showed remarkably high aquaculture intensity, and as a result, the polychaete communities near the farms were heavily polluted. However, there was a difference in the polychaete communities at a distance greater than 30 m from farm A and B, which may be due to topographical differences. The effect of the aquaculture activity of Farm C was only observed below the farm, however, the influence of aquaculture activities Farm D was maintained over a relatively long distance. According to the results of this study, the effect of the fish cage culture was mainly influenced by factors related to the production of fish, such as the stocking amount and the amount of food supply. Moreover, the distance at which the influence of aquaculture activity was observed was found to be closely related to the topographical characteristics and flow velocity around the farms.
Fermentation is an effective process for providing various beneficial effects in functional beverages. Lactic acid bacteria and yeast fermentation-based biotransformation contribute to enhancement of nutritional value and digestibility, including lactose intolerance reduction and control of infections. In this study, the probiotic fermented fruit juice (PFJ) was produced by Lactobacillus plantarum TISTR 1465, Lactobacillus salivarius TISTR 1112, and Saccharomyces boulardii CNCM I-745 while mixed fruit juice (MFJ) was used as the basic medium for microorganism growth. The potential function, the anti-salmonella activity of PFJ, was found to be effective at 250 mg/ml of MIC and 500 mg/ml of MBC. Biofilm inhibition was performed using the PFJ samples and showed at least 70% reduction in cell attachment at the MIC concentration of Salmonella Typhi DMST 22842. The antioxidant activities of PFJ were determined and the results revealed that FSB.25 exhibited 78.40 ± 0.51 mM TE/ml by FRAP assay, while FPSB.25 exhibited 3.44 ± 0.10 mM TE/ml by DPPH assay. The volatile compounds of PFJ were characterized by GC-MS, which identified alcohol, aldehyde, acid, ester, ketone, phenol, and terpene. The most abundant organic acid and alcohol detected in PFJ were acetic acid and 2-phenylethanol, and the most represented terpene was β-damascenone. The sensory attributes showed scores higher than 7 on a 9-point hedonic scale for the FPB.25, illustrating that it was well accepted by panelists. Taken together, our results showed that PFJ could meet current consumer demand regarding natural and functional, fruit-based fermented beverages.
This study was conducted to evaluate the structure and composition (i.e., pH, moisture, total-N, pathogens, and volatile fatty acids) of broiler and duck manure treated with larvae of three insect larvae, namely, Tenebrio molitor, Protaetia brevitarsis seulensis, and Ptecticus tenebrifer. Hatched Tenebrio molitor (n=300), Protaetia brevitarsis seulensis (n=60), and Ptecticus tenebrifer (n=300) were used in this study; specially, the larvae were divided into six treatments with three replicates. The treatments were as follows: T1: 110 g broiler manure + Tenebrio molitor larvae (n=50), T2: 110 g duck manure + Tenebrio molitor larvae (n=50), T3: 125 g broiler manure + Protaetia brevitarsis seulensis larvae (n=10), T4: 125 g duck manure + Protaetia brevitarsis seulensis larvae (n=10), T5: 105 g broiler manure + Ptecticus tenebrifer larvae (n=50), and T6: 105 g duck manure + Ptecticus tenebrifer larvae (n=50). For all the larval treatments, the following results were observed: The moisture content of the duck manure treat with three insect larvae was higher than that of the broiler manure (p<0.05), whereas broiler manure had a higher pH (p<0.05). In addition, the total nitrogen content of broiler manure was higher than that of duck manure (p<0.05). However, the insect larvae did not significantly affect pathogens (E.coli and Salmonella) and the volatile fatty acids (p>0.05). In conclusion, the use of the three insect larvae to create organic nitrogen compost using poultry manure is feasible.
Salmonella is a pathogenic bacterium that has long been important industrially because it has a wide host range and can be transmitted to humans through direct contact as well as indirect contact such as food contaminated with animal waste. Understanding how to reduce Salmonella contamination in pig farms is important for public health and the livestock industry from an economic perspective. In the swine industry, high concentrations of disinfectants have been applied because it is difficult to effectively control Salmonella in environments contaminated with organic substances. In order to evaluate the synergetic effect of disinfectants, the efficacy of two commercial disinfectants diluted in hard water and microbubble water (MBW) were compared under the laboratory condition. Different concentrations of both disinfectants combined with 1% detergent diluted in the two diluents were evaluated for their antibacterial effect. In the case of monopersulfate-based disinfectant groups, the growth of Salmonella was not observed at 1:200 dilution with both the hard water and MBW combined with 1% detergent. In the case of citric acid-based disinfectant, the bacterial growth was not observed at 1:800 dilution with MBW combined with 1% detergent. Our results show that the use of MBW as a diluent might improve the biological activities of acid-based disinfectant.

As the demand for environmental-friendly agricultural products continues to rise due to increased concerns regarding food safety and ecosystem conservation, it is becoming important to identify regions and spatial locations where environmental-friendly should be intensively established for production integration. This study aims to analyze the spatial distribution of environmental-friendly certified farms in Jeollanam-do, South Korea. Spatial statistical analysis based on Local Moran's I and Getis-Ord Gi* were used to identify spatial cluster characteristics and landscape indices were utilized to analyze spatial patterns of environmental-friendly certified farms. The results indicated that Haenam-gun, Gangjin-gun, Muan-gun, and Jindo-gun were identified as hotspots, while Muan-gun, Goheung-gun, and Jindo-gun exhibited high connectivity. This suggests that environmental-friendly certified farms in Muan-gun and Jindo-gun were clustered and closely connected to one another. Based on the results of the spatial distribution of environmental-friendly certified farms, areas belonging to the hotspot and with high connectivity should be managed as clustered districts to secure the foundation and system of environmental-friendly certified farms. Areas that belong to cold spots and have low connectivity should be preceded by measures to promote conversion to environmental-friendly agriculture. In addition, it is necessary to make it possible to create a large-scale cluster district through a long-term spatial planning strategy to expand the environmental-friendly certified farms. The findings of this study can provide quantitative data on policies and discussions for developing a model for rural spatial planning.
In this study, the α-amylase inhibitory activity, α-glucosidase inhibitory activity, pancreatic lipase inhibitory activity, and Xanthine Oxidase inhibitory activity of the fruiting body extracts of 5 varieties of Agaricus bisporus (AB) were confirmed. First, the α-amylase inhibitory activity of AB12, AB13, AB18, AB34, and AB40 methanol extracts was lower than that of acarbose, a positive control, in all concentration ranges. The α-glucosidase inhibitory activity of the AB40, AB13, and AB12 methanol extracts at the extract concentration of 1.0 mg/mL was 80.5%, 81.3%, and 78.5%, respectively, similar to that of acarbose, a positive control. The pancreatic lipase inhibitory activity of the methanol extract of Agaricus bisporus fruiting body was significantly lower than that of the positive control orlistat in the concentration range of 50~1.000 (mg/mL). The Xanthine Oxidase inhibitory activity was 0.5~8.0 mg/mL of each extract, which was significantly lower than that of the positive control allopurinol in the same concentration range. However, the Xanthine Oxidase inhibitory activity of AB13 and AB40 at 8.0 mg/mL was about 70%, which was higher than that of other mushrooms. In conclusion, five kinds of Agaricus bisporus fruiting bodies seem to have inhibitory effects on enzymes such as α-amylase, α-glucosidase, pancreatic lipase, and Xanthine Oxidase that degrade starch and protein. In particular, it has an inhibitory effect and a reduction effect on xanthine oxidase that causes gout, so it is expected that it can be developed and used as a food or health supplement with health functional properties through future research.
Lipases from Candida rogosa and Rhizopus arrhizus were immobilized by entrapment with photo-crosslinkable resin prepolymer for the study of fat splitting and interesterification in isooctane-two phase system. Dioctylsulfosuccinate was selected as the most suitable surfactant during the immobilization. Lipase entrapped with hydrophobic photo-crosslinkable resin prepolymer(ENTP-3000) exhibited the highest activity, whereas lipase entrapped with hydrophilic gel(ENT-4000) was more stable in organic solvent. As the degree of hydrophobicity of the immobilization matrix was increased, Vm(app) of the lipase entrapped was increased, but Km(app) was approximately constant. While the optimum pH of the lipases entrapped on hydrophilic gel (ENT-4000) were around pH 7.0 for Candida lipase and Rhizopus lipase, the reaction rate of the lipases entrapped on hydrophobic gel were less dependent on pH variations for short reaction time. However, for longer reaction time, the lipnses from C. rugosa and R. arrhizus entrapped on hydrophobic gel yielded maximum rate at pH 6.0 and 6.5, respectively, Entrapment method endowed the lipase with thermal stability.
