Changes in Isothiocyanate Levels in Korean Chinese Cabbage Leaves during Kimchi Storage

  • Glucosinolates are hydrolyzed by the enzyme myrosinase and are mainly found in cruciferous vegetables such as Chinese cabbage (Brassica campestris L. ssp. pekinensis). lsothiocyanates (ITCs) are glucosinolate degradation products with reported anticarcinogenic properties. Korean Chinese cabbage in the form of 'kimchi' is a staple part of the Korean diet. In this study, we examined the effects of storage temperature and duration on glucosinolate, ITC, soluble sugar, and organic acid levels in kimchi. Changes in pH and the impact of various parts of the Korean Chinese cabbage being used during the preparation of the dish were also assessed. Extracted ITC levels, analyzed via gas chromatography (GC) and GC/mass spectrometry (GC/MS), were higher in the midrib parts than in the cabbage leaves after storage at both 4 and $20^{\circ}C$. During storage, organic acid levels increased while soluble sugars were depleted. The pH initially increased (after 1 day at $20^{\circ}C$, and 1 week at $4^{\circ}C$), but subsequently decreased over time at both temperatures. Glucosinolate and ITC levels increased in the beginning of storage but then generally fell during further storage. Our data suggest that acidity-related reduction in myrosinase activity during storage may decrease glucosinolate and ITC levels. The changes in these levels depended on the storage conditions and the Korean Chinese cabbage parts used for the kimchi preparation.

Mulching Materials as Yield Booster for Sustainable Mungbean Production

  • The effect of different mulching materials on mungbean production was studied. The general objective was to assess the ecological effects of mulching materials in sustainable mungbean production. Specifically, the study aimed to determine the effects of different mulching materials on the chemical, physical and biological soil properties, on weed control and yield, and to identify mulching materials that are environmentally friendly in mungbean production. The experiment was conducted at the Fruit and Vegetables Seeds Center, Science City of $Mu/tilde{n}oz$, Nueva Ecija, Philippines from May to July 2004. The initial soil chemical properties were: pH of 6.4, 2.0 percent organic matter content, 0.10 percent total nitrogen, 22 ppm phosphorus, and 370 ppm available potassium. The soil microbial loads were $8\times10^4\;CFU\;g^{-1}$ for bacteria and $14\times10^4\;CFU\;g^{-1}$ for fungi. Mushroom spent mulch increased soil organic matter with an average of 3.13 percent, nitrogen with an average of 0.16 percent and the highest number of bacterial count with $3.4\times10^8\;CFU\;g^{-1}$. Use of mulch, except rice straw mulch, generally increased mungbean yield. The best mulching material for high yield production of mungbean was black polyethylene plastic film, although environmentally unfriendly.

  • Foci of this thesis arc an estimation of willingness to pay and an establishment of green marketing strategics for environment-friendly agricultural products(EFAR). Estimations of willingness to pay for grain, vegetables, fruit and processed food-stuffs arc respectively 20.6%, 20.2%, 19.3% and 17.2% higher than agricultural products produced by conventional farming method. And a green mark6ting mix for EFAP is as follows; Erst, a product strategy focuses on producing safe and high-quality foods by environment-friendly agriculture(EFA) to point to consumer’s health and desire for environmental preservation. Second, in a price strategy, the balance of three factors should be kept, namely the environmental value the true quality as food materials and the price of EFAP. Third, a place strategy is to reduce waste matters, resource and energy uses in marketing chain, and to simplify marketing channels. Also, it is necessary to choose the marketing channel for price discrimination. Fourth, a promotion strategy make use of programs that emphasize the multi-function of EFA.

Analyses of the Awareness of Students' Parents on School Meals and their Intention to increase Consumption of Environment-friendly Agri-products (친환경농산물 학교급식에 대한 학부모의 반응 및 친환경농산물 소비확대 의향 분석)

  • As a result of analysis on situations of environment-friendly school meals, it was obtained that student's parents were interested in food safety and the importance of sanitary supervision. Many parents responded that environment-friendly school meals increased the health and eating habits of their children. The higher and higher educated parents responded that environment-friendly school meals effected on the children's health positively. Also, the higher educated parents responded that environment-friendly school meals effected on the children's eating habits positively. After the environment-friendly school meals, the item increase to purchase was vegetables by 25% of the consumers who purchase environment-friendly agri-products. The second and third increasing items were respectively fruits and rice. When environment-friendly agri-products were consumpted and influenced positively through school meals, the consumption of environment-friendly agricultural products will be increased. The expansion of environment-friendly school lunch program cannot bring the consumption expansion of environment-friendly agri-products immediately. However, when the persistent promotion and student's parents confidence on environment-friendly agri-products were accumulated and experienced positive effects through school meals, it will give a positive effect on the consumption of environment-friendly agr-products.

Antigenotoxicity of Vegetable or Fruit Extract against Cigarette Smoke Condensate (담배연기응축물의 DNA 손상작용과 야채 및 과일추출물의 보호효과)

  • Cigarette smoke condensate (CSC) is known to be carcinogenic compound. CSC contains many organic compounds such as polycyclic aromatic hydrocarbons (PAHs), and heterocyclic amine compounds (HCAs). Reactive oxygen species (ROS) are also generated and induce oxidative DNA damage during the metabolism of CSC. The rat microsome mediated and DNA repair enzyme treated comet assays together with conventional comet assay were performed to evaluate the mechanisms of CSC genotoxicity. The organic extract of CSC induced oxidative and microsome mediated DNA damage. Vitamin C as a model antioxidant reduced DNA damage in endonuclease III treated comet assay. One of flavonoid, galangin as a CYP1A1 inhibitor, reduced DNA damage in the presence of S-9 mixture. The ethanol extracts of the mixed vegetables (BV) or the mixed fruits (BF) showed potent inhibitory effects against CSC induced DNA damage with oxidative DNA lesions and in the prescence of S-9 mixture. These results indicate that BV and BF could prevent CSC-induced cellular DNA damage by inhibiting oxidative stress and suppressing cytochrome P450 in mammalian cells.

A Study on the Thai Consumers' Perception and Willingness to Pay for Korean Paprika and Tomatoes (태국 소비자의 한국산 파프리카 및 토마토에 대한 인식과 지불의사에 관한 연구)

  • This study investigated Thai consumers' perception and willingness to pay for Korean paprika and tomatoes to establish effective export strategies, To this end, an online survey was conducted on 300 consumers living in Bangkok, Thailand, and the factors affecting the purchase intent and willingness to pay price premium for Korean paprika and tomatoes were analyzed. The results are as follows. First, Thai consumers usually buy fruit and vegetables offline, such as supermarkets and large discount stores, but not a few respondents obtained purchase information online. Second, the price competitiveness of Korean paprika and tomatoes is low to Thai products, and the quality, safety, freshness, and cost-effectiveness are similar or low to other exporting countries. Therefore it is important to improve non-price competitiveness using positive perceptions of Korean products and Korean Wave. Third, the most important reason why Thai consumers not buying Korean paprika and tomatoes is the lack of stores and high prices. Fourth, as a result of analyzing the factors affecting the purchase intent for Korean paprika and tomatoes, the strategy of selling paprika and tomatoes through supermarkets to consumers with high income is effective. Fifth, considering the factors of willingness to pay premium prices for Korean paprika and tomatoes, a high pricing strategy targeted consumers with high income and many family members is appropriate.

Effects of green manures in organic vegetable production (유기농 채소생산을 위한 녹비작물 도입효과)

  • Organic farming in Korea has mainly focused on producing vegetables in plastic film house and cereals in paddy field. For high productivity of vegetables and cereals, most Korean farmers have not applied crop rotation in the cropping system. Thus, this study was carried out to evaluate the effects of crop rotation on the yield of red pepper and green onion, the changes in soil fertility and the potential as green manure of rye and hairy vetch. Rye and hairy vetch were cultivated for winter season every year, and directly incorporated into the soil. The yield of red pepper fruits in organic farming using crop rotation (OFCR) decreased 23 to 36% compared with conventional farming system (CFS). Whereas, green onion showed the increased yield of about 13%. In OFCR, total carbon content of soil was higher, however available phosphate content lower than conventional farming. As a result of measuring the bulk density of soil, OFCR and CFS were 1.26 to $1.35Mg/m^3$ and 1.37 to $1.42Mg/m^3$, respectively. Carbon and nitrogen contents of microbial biomass in OFCR were obviously higher compared with the CFS. In the plot cultivated rye for winter season, the weed germination was strongly reduced (about 52 %). Balance of macro nutrient elements, nitrogen and phosphate, in the application of rye and hairy vetch had a minus value. For potassium, the output value was higher than the input one, therefore organic farming under red pepper-rye or hairy vetch systems requires applying additional potassium input. Also, we selected two hairy vetch varieties of cv. Hungvillosa and Ostsaat which can be adapt at Korea climate. In order to estimate a yield of green manures, the weight of shoot and root was measured. The ratio of shoot and root between rye and hairy vetch showed 0.88 and 1.91, respectively. The potential levels of nitrogen, phosphate and potassium which could be supplied from rye were 7.7, 7.8 and 21.9 kg/10a and from hairy vetch were 17.0, 8.6 and 22.9 kg/10a, respectively. So we recommend that cultivating hairy vetch, as a nutrient supplier, and rye, as an amendment to enhance the soil physical property, for winter season be practical method in Korea organic farming system.

Growth Effect of Mixed Organic Fertilizer Blending Poultry Manure Compost in Leaf Vegetables (가공계분 함유 혼합유기질비료의 시비효과)

  • Poultry manure compost (PMC) as the organic fertilizer sources has a high nutrient content such as nitrogen, phosphate and potassium, and its properties been affected by bulking agent. This study was conducted to evaluate properties of mixed organic fertilizer (MOF) containing PMC composting with sawdust and peat moss as bulking agent, and to measure a characteristics of plant growth by their application. The MOF containing 10~30 % PMC had a coincidency with its guideline in Korea. As applied with MOF containing PMC composting with sawdust (PMCS) or MOF containing PMC composting with peat moss (PMCP), dry weight of plant was increased in MOF treatments blending with 10~30 % PMCS or 10~30 % PMCP. In correlation coefficient between blending ratio of PMC in MOFs and plant growth indexes, PMCS was not significantly different, but its PMCP a positive effect (P<0.05). These results indicated that PMC was able to blend about 10~30 % as mixed organic fertilizer source, and its application increased in plant growth.

Control of Slug by Using Beer and Cigarette Mixture (맥주와 담배 혼합액을 이용한 민달팽이 방제)

  • Among various food base baiting materials, beer and macerated cucumber were the most effective to induce slug that is a troublesome pest on leafy vegetables, especially on lettuce. However, the baits attracted only but did not kill the pest. When the baits were combined with various insecticidal organic materials, a few combinations such as beer and cigarette mixture successfully induced and killed the slug in the field test. The most effective combination of beer 50ml and a cigarette contained in a small plastic box killed 25 slugs per night. While macerated cucumber 50ml and a cigarette mixture killed only 4.3 slugs. The bait of beer and cigarette mixture revealed 68.4% control value against slug damage when treated for 3 consecutive days in a lettuce cultivation greenhouse. The bait also effectively reduced the slug damage in a lettuce nursery showing 58.3% control value. The method seemed highly useful for the control of slug in the organic farming system in which application of pesticides are strictly prohibited.

Chemopreventive Effect of Quercetin, Vitamin C and Trolox Against the Organic Extract of Airborne Particulate Matter Induced Genotoxicity in A549 Human Lung Carcinoma Cells (대기부유분진추출물로 야기된 DNA 손상에 대한 Quercetin, Vitamin C 및 Trolox 의 보호효과)

  • In order to evaluate the genotoxicity of airborne particulate matter extracted with dichloromethane (APE), the rat microsome mediated (S-9) or DNA repair enzyme treated Comet assays were performed using the single cell gel electrophoresis in A549 human lung carcinoma cells. It was found that the cells interacting with APE showed more DNA single-strand breaks relative to untreated cells. The genotoxicity of APE was increased with the treatment of S-9 mixture. Microsome mediated DNA damage was inhibited by CYP1Al inhibitor, quercetin. The APE also showed oxidative DNA damage evaluated by endonuclease III treatment. Oxidative DNA damage of APE was inhibited by antioxidants such as vita- min C and Trolox. We also found that the vegetables or fruits extract may reduce APE-induced genotoxicity by their anti- oxidant activity and CYP1A1 inhibition.
