Effect of Postharvest CO2 Treatment and Packaging Materials on the Quality of 'Gonji-7ho' Oyster Mushroom (Pleurotus ostreatus) during Storage (수확후 CO2 처리 및 포장필름 종류가 '곤지-7호' 느타리버섯의 저장 중 품질에 미치는 영향)

  • 느타리버섯은 전남 장흥군에서 병재배로 재배된 '곤지 7호' 느타리버섯 품종을 $3^{\circ}C$에서 1일간 냉각시킨 후 실험에 사용하였다. 이산화탄소 처리는 10mm 두께의 아크릴로 제작한 밀폐 챔버($40{\times}70{\times}40cm$)를 이용하여 CO2가스를 주입하여 내부의 CO2 농도를 $30{\pm}1%$로 조정하여 3시간 동안 밀폐시켰으며 $3^{\circ}C$ 저온 저장고에서 수행하였다. 처리 후 포장필름은 3처리로 하여 PVC랩, 재배농가에서 이용하는 필름인 $20{\mu}m$ OPP필름, $30{\mu}m$ OPP필름을 재료로 하여 산소투과율을 $5,000cc/m2{\cdot}day{\cdot}atm$로 조정한 필름(OPP5)을 사용하였다. PVC랩 처리는 스티로폼 트레이에 옮긴 후 균일하게 한 겹으로 둘렀고, OPP와 OPP5는 봉지에 옮겨 봉지 입구 4cm 안쪽을 비닐접착기로 열접착하여 밀봉하였으며 $3^{\circ}C$에 저장하면서 필름내부의 기체조성, 경도, 색도, 이취, 종합선도 변화를 조사하였다. 포장된 느타리버섯의 포장재 내 이산화탄소 농도는 저장초기 0.03%에서 점차 증가하여 저장 3일 후 PVC랩은 3.5~3.9%, 나머지 처리는 18%이상으로 증가하였으며 OPP필름보다 OPP5필름의 경우 포장재 내 이산화탄소 농도가 더 낮게 유지되었다. 생체중 감소는 PVC랩에서 저장 26일 후 9.9% 이하로 육안으로 보이는 시들음이 관찰되었으며 나머지 처리들은 저장 26일 후까지 1.6% 이하의 중량감소율을 보였다. 느타리버섯 갓 경도는 유지되었으며 줄기표면의 황색도 $b^*$값은 PVC랩에서는 증가 경향을, OPP나 OPP5에서는 유지 경향을 보였다. 느타리버섯의 이취 및 전체적인 품질은 무처리 후 PVC랩 포장은 저장 6일 후에 이취가 상품성 한계로 발생하였고 OPP5 포장은 포장재 중 가장 이취발생이 늦게 발생하였으며 CO2 처리에 의해 지연되는 것을 알 수 있었다. 이런 결과를 종합하여 느타리버섯의 $3^{\circ}C$ 저장 중 품질유지기간은 각 PVC랩(6일) ${\rightarrow}$ 30% CO2+PVC랩(7일) ${\rightarrow}$ OPP(10일) ${\rightarrow}$ 30% CO2+OPP(17일) ${\rightarrow}$ OPP5(20일) ${\rightarrow}$ 30% CO2+OPP5(22일)로 조사되었다. CO2처리 후 산소투과율을 $5,000cc/m2{\cdot}day{\cdot}atm$으로 조정한 미세천공(OPP5)필름이 가장 높은 전체적 품질점수를 나타내었으며 상대적으로 낮은 이취발생, 갈변과 갓무름이 적어 높은 점수를 얻는데 영향을 준 것으로 보인다.

Freshness of Paprika Packed with PLA Films (개발 PLA 필름으로 포장한 파프리카의 신선도)

  • This research was conducted to compare the quality of paprika ($Capsicum$ $annuum$ L.) packed with PLA film and OPP/PE film pouches during storage at $6^{\circ}C$. Weight loss of paprika fruit was higher in OPP/PE film pouches, mold decay was shown in OPP/PE pouches after 6 days, but was not yet shown in PLA pouches. Hardness decreased in all packages. Soluble solid content was highest in PLA1 film pouch, vitamin C content was also highest in PLA2. Mold decay was not shown in PLA pouches after 9 day, but shown at calyx of paprika fruit in OPP/PE pouches. Off-flavor was strong in the OPP/PE pouches when the pouches were opened, decay was also serious in the same pouches after 15 days and thus quality was inadequate for sale in market.

Effects of quality grade, trimming, and packaging method on shelf life of king oyster mushrooms (큰느타리의 품질 등급, 손질 및 포장 방법에 따른 유통 수명)

  • To extend the shelf life of king oyster mushrooms for export, we investigated the impacts of mushroom quality grade, fruiting body trimming, and packaging method (tray container sealed packaging vs string-tied OPP bag packaging). Quality is divided into two grades: 1st grade, which is mushrooms adapted by lowering the cultivation temperature to 9~11℃, and 2nd grade, mushrooms held at 13~15℃ prior to harvest. Using selected 1st and 2nd grade mushrooms, 3 treatments were carried out to assess effects of trimming and packaging method. Test groups included 1) trimming plus string-tied OPP bag packaging (Cut & OPP), 2) no trimming plus string-tied OPP bag packaging (Uncut & OPP), and 3) trimming plus tray container sealing packaging (Cut & Tray). Gas composition inside the packaging, changes in quality factors, and sensory evaluation for fresh quality were performed over 42 days of 0℃ storage. Overall freshness was best maintained in the following order: Cut & Tray > Cut & OPP > Uncut & OPP for both 1st and 2nd grade mushrooms. The shelf-life of 1st grade mushrooms was about 30 days for Cut & Tray, 28 days for Cut & OPP, and 21 days for Uncut & OPP. The shelf-life of 2nd grade mushrooms was about 22 days for Cut & Tray, 17 ays for Cut & OPP, and 14 days for Uncut & OPP. Factors affecting fresh mushroom quality included browning of cap and stalk, and mushroom decay index. Browning of the lower part of the stalk, with related color change as noted in a* and b* values were the main factors indicating quality deterioration of king oyster mushrooms.

Effect of Packaging on Quality of Stored Gangjung (포장방법이 강정의 저장 중 품질특성에 미치는 영향)

  • This study was conducted to improve the packaging technology used for Gangjung and the product's quality characteristics during storage. Packaging materials consisting of (1) IP: OPP (oriented polypropylene)/PE (polyethylene) + Paper, (2) LP1: OPP/PE + Paper, (3) LP2: OPP/PE + Can, (4) LP3: OPP/PE + Plastic, (5) BP1: OPP/PE, (6) BP2: OPP/DL/CPP (cast polypropylene), (7) BP3: PET/PE/CPP, and (8) BP4: OPP/PVDC (polyvinylidene chloride)/PE/CPP were used. The major fatty acids including 54.2% linoleic acid, 24.1% oleic acid, 11.2% palmitic acid and 6.0% linoleic acid were assessed. The packages effective in maintaining moisture were in the order of LP2, BP4 > IP > LP3, BP1, BP2 > LP1 > BP3. There were no significant differences in water content and the products in IP, BP3, and BP showed the highest level in the increase in hardness on day 60 of storage. Acid values of IP, LP1, LP2, LP3, BP1, and BP2 were maintained at <2.0 during 40 days of storage. IP, LP1, LP2 and BP1.

  • The polyurethane foam impregnated with 5, 7-dibromo-8-hydroxyquinoline (DBHQ) has been studied to be applied to the quantitative adsorption and recovery of Hg(II) from the aqueous solutions. The adsorption of Hg(II) by DBHQ-OPP foam is due to the chelation between DBHQ-OPP foam and Hg(II) on the foam, forming each colored insoluble chelate with 1:2 mole ratio. The optimum experimental conditions for the adsorption of Hg(II) has been determined. The quantitative recovery of Hg(II) adsorption by the OPP foam and reuse of DBHQ-OPP foam were investigated. Hypothesis on the adsorption and separation mechanism of Hg(II) and DBHQ to the polyurethane foam was proposed.

Physicochemical and Antioxidant Properties of Yanggaeng Incorporated with Orange Peel Powder (진피 분말을 첨가한 양갱의 품질 및 항산화 활성)

  • The feasibility of incorporating orange peel powder (OPP) as a value-added food ingredient into convenient food products, was investigated using yanggaeng as a model system. OPP was incorporated into yanggaeng at amounts of 0, 3, 6, 9, and 12% (w/w) based on total weight of cooked white beans and OPP. pH decreased significantly with increasing levels of OPP (P<0.05), and moisture content was ranged from 46.28% to 47.87%. In terms of color, lightness, redness, and yellowness increased significantly (P<0.05) with increasing levels of OPP. Hardness increased significantly when OPP content was higher than 6% in the formulation (P<0.05). Total polyphenol content and 1,1-diphenyl-1-picrylhydrazyl radical scavenging activity were significantly increased by addition of OPP in the formulation (P<0.05). Finally, consumer acceptance test indicated that the highest levels of OPP incorporation (12%, w/w) had an adverse effect on general consumer preferences. In contrast, yanggaeng with moderate levels of OPP (3~6%, w/w) is recommended (with respect to overall preference score) to take advantage of the antioxidant properties of OPP without sacrificing consumer acceptability.

Comparisons of growth and biofilm production with Vibrio fluvialis and mutants deficient in oligopeptide permease gene (Vibrio fluvialis의 Oligopeptide Permease Gene 결손에 의한 생육과 Biofilm 생산의 비교)

  • Various ${\Delta}opp$ mutants of Vibrio fluvialis were constructed by allelic exchange method. The mutants occurred in target genes were confirmed by PCR and Southern hybridization analyses. After the exact mutants were identified, cell growth and biofilm production were examined using the respective mutants. The growth of wild strain was more rapid than mutants within 4hr incubation. Thereafter, the growth of wild strain and mutants reached to same level. When the productivities of wild strain and mutants were examined, ${\Delta}oppA$ mutant showed the highest productivity. Though ${\Delta}oppC,D$ and F mutants produced the lower production than that of ${\Delta}oppA$ mutant, the productivities of those mutants were much higher than that of wild strain.

  • Oligopeptide is known to be an essential nitrogen nutrient for bacterial growth. Oligopeptide can be transported into cytoplasm by a specific transport system, Opp system. Opp system is composed of five proteins, which are transcribed by an operon. These are responsible for oligopeptide binding protein (OppA), permease (OppB and OppC) and energy generation system (OppD and OppF), respectively. Previously, we isolated the opp operon from Vibrio fluvialis and constructed the oppA mutant by allelic exchange method. In this study, we investigated the growth pattern and biofilm production under the different growth condition. When the cells were cultivated using brain heart infusion(BHI) medium, the wild type was faster than the mutant in growth during the exponential phase. However, it showed that the growth pattern of two strains in M9 medium is very similar. The growth of wild type showed better than that of the mutant grown at pH 8. At pH 7, there was no an obvious difference in growth. After 5 mM $H_2O_2$ was treated to the cells $(OD_{600}=1.2)$, the cell survival was examined. The oppA mutation did not affect in survivability. In the presence of $10{\mu}g/ml$ polymyxin B, the biofilm production of the oppA mutant was higher than that of the wild type.

Preparation and Characterization of PET/PVA-BA/OPP Multi-layer Films for Seasoned-laver Packaging (조미김 포장을 위한 PET/PVA-BA/OPP 다층필름 제조 및 특성분석)

  • To identify applicability for packaging material of polyvinyl alcohol (PVA)/boric acid (BA) coating solution with highly-enhanced water vapor and oxygen barrier properties, the PET/PVA-BA/OPP multi-layer films were prepared through comma coating and lamination process. The oxygen and water vapor permeabilities, and tensile strength of as-prepared multi-layer films were investigated before and after pressure cooker test (PCT). Although oxygen and water vapor permeabilites, and mechanical properties of PET/PVA-BA/OPP multi-layer films was decreased after PCT, their properties were highly enhanced as increase of BA contents in PVA matrix. This is strongly related with enhanced cross-linking density in PVA-BA layer. In storage test of seasoned-laver, the PET/PVA-BA/OPP multi-layer films were comparatively effective to suppress the increase in peroxide value originating from oxidation of seasoned-laver. Comparing the commercially available PP/Al-metallized PP for seasoned-laver packaging, however, PET/PVA-BA/OPP multi-layer films did not show any advantage in water activity. This is due to higher water vapor permeation properties of as-prepared multi-layer films. Therefore, further studies are required to enhance the water vapor permeation in PET/PVA-BA/OPP multi-layer films.

Quality Characteristics of Low-Fat Plant Oil Emulsion Pork Patties (식물성유 유화물로 대체한 저지방 돈육 패티의 품질 특성)

  • This study investigated the effect of plant oil emulsion as a replacement for animal fat on the quality characteristics of low-fat pork patties. Pork patties were manufactured using a pork fat control (CON) and olive (OPP), soybean (SPP), and canola (CPP) oil emulsions. Replacing animal fat with the plant oil emulsions increased the moisture content and decreased the fat content of the patties as compared to those with pork fat. The water holding capacity and cooking yield, and the moisture and fat retention of the patties were significantly increased, and the diameter reduction and shrinkage ratio decreased with the plant oil replacements. The color parameters of the samples were affected by the addition of the plant oil emulsions, and higher L* and a* values were observed in CON. The b* value of the raw pork patty was highest in OPP, and palmitic acid was the most abundant saturated fatty acid. In terms of unsaturated fatty acids, oleic acid was highest in CON, OPP, and CPP, and linoleic acid was highest in SPP. Hardness, cohesion, and chewiness were no different among the samples, although higher springiness was observed in the pork patties with added plant oil emulsions. The taste, flavor, and palatability of the OPP and CPP patties were higher than in the CON and SPP groups. Fat replacement with plant oil emulsion therefore had a positive effect on the quality characteristics of the pork patties, and due to reduced saturated fatty acids, the end-product provides the healthy low-fat option desired by consumers.
