Effect of Irradiation on Physicochemical Characteristics of Dry-Cured Ham During Storage (감마선 조사가 건조발효햄의 저장기간 중 이화학적 특성에 미치는 영향)

  • This study was carried out to investigate effect of irradiation doses on quality of vacuum-packed dry-cured ham during storage. Dry-cured pork slices were vacuum-packaged in nylon/ polyethylene bags. Vacuum-packed dry curd pork was stored at $10{^{\circ}C}$ for 12 weeks after irradiation (0 kGy, 2.5 kGy, 5 kGy, 7.5 kGy and 10 kGy) and physicochemical properties of dry curd porks, such as meat color surface, thiobarbituric aicd reactive substances, volatile basic nitrogen, pH, microbial (total plate count, Lactobacillus) and sensory properties (color, flavor, overall acceptability) were investigated. Irradiation treatment decreased a*-value, TPC and Lactobacillus. Irradiation dose significantly (p<0.05) increased irradiation flavor and TBA value. However, irradiation dose decreased redness and sensory color in dry-cured ham. The quality of dry-cured ham was affected by the irradiation dose. The results suggested that dry-cured ham irradiated at 5 kGy dose may show optimum quality characteristics of the products as well as microbial safety.

Effects of feeding starch sugar by-products on in situ rumen disappearance rate, growth performance, and carcass characteristics of late finishing Hanwoo steers

  • Objective: The aim of this study was to determine the effects of feeding starch sugar byproducts (SSBs) on in situ disappearance rate, performance, and carcass characteristics of Hanwoo steers in the late finishing stage. Methods: To determine the in situ disappearance rate, nylon bags filled with 5 g of SSB were inserted into the ventral sac of two cannulated Holsteins cows and incubated for 0, 2, 4, 8, 16, 24, and 48 h. A total of 30 Hanwoo steers were fed the experimental diets, which were basal diet (control) and 7% SSB on an as-fed basis (4.35% dry matter [DM]), formulated according to requirements of the Korean Feeding Standard for Hanwoo. The experiment was conducted over 80 days using a completely randomized block design. Results: Soluble fraction a of DM and organic matter (OM) was 44.20% and 64.60% DM, fraction b was 23.00% and 19.40% DM, and c values (the rate of degradation of fraction b) were 0.04 and 0.04/h, respectively. The effective degradability of DM at rumen solid outflow rates of 0.02, 0.05, and 0.08/h was 59.83, 54.75, and 52.16, respectively, and for OM was 77.78, 73.52, and 71.34, respectively. Initial and final body weight, average daily gain, DM intake, and gain:feed did not differ significantly between control and SSB groups during the entire experimental period. Carcass traits of Hanwoo steers with SSB supplementation were not significantly different between treatments except for dressing percentage, which was greater with SSB treatment. The content of saturated fatty acid (SFA) was greater and that of unsaturated fatty acids (UFA) was lower in the SSB group than in the control group. The ratio of UFA to SFA was significantly lower in the SSB group than in the control group. Conclusion: A total mixed ration containing less than 4.0% DM of SSBs can be used in Hanwoo steers without a decrease in productivity and carcass traits.

Nitrogen Release from Hairy Vetch(Vicia villosa Roth) Residue in Relation to Different Tillages and Plant Growth Stage (생육단계 및 경운방법에 따른 헤어리베치 녹비의 질소방출 패턴의 변화)

  • Assessment of N release pattern from hairy vetch (Vicia villosa Roth) residue is an important step for the efficient use of the residue as a green manure and the specific management strategy development. Objective of this research was to determine the changes of chemical composition, especially in light of the N release, when the residues of hairy vetch were applied in the soil. hairy vetch was harvested at different growth stages (April 23, May 9, and May 28) and the residues were encapsulated in the nylon mesh (1 mm) bag. The bags were placed on the surface of no-tillage plots and buried at 15cm in depth in conventional tillage plots of the corn field in early June. The bags were removed for measurements of dry matter and N content at 1, 2, 3. 5, 8 and 12 weeks after placement. Dry matter and N content of hairy vetch were higher when harvested closer to maturity, as also found in C/N ratio, cellulose and hemicellulose contents. The rate of N releases from hairy vetch residue under conventional tillage condition was greater than that under no-tillage condition. Percentages of N remaining in residue over the initial N contents under conventional tillage condition were in average 40, 23, and 15% for 1, 2, and 3 weeks after placement of mesh bag, respectively, compared with respective values of 71, 31, and 21% under no-tillage condition. The rate of N release was slower as the harvest time was closer to maturity of hairy vetch under both tillage conditions. Most of N in residue was released within 3 and 5 weeks, under conventional and no-tillage conditions, respectively. Results indicated that amounts of N released from hairy vetch residue were more closely related to the variability of N contents in residue due to the harvest time than changes of chemical composition of plant or soil management.

Study on Correlation Between Feed Protein Fractions and In situ Protein Degradation Rate (사료 단백질의 Fraction과 In situ 단백질 분해율의 상관관계에 관한 연구)

  • This experiment was conducted to determine correlation between in vitro protein fractions and in situ protein degradation rate with major dairy protein sources(soybean meal, corn gluten meal, cotton seed meal, kapok seed meal and perilla meal). Five protein fractions were obtained according to the Cornell Net Carbohydate and Protein System(CNCPS), and in situ protein degradation rates were determined by technique using nylon bags incubated for 0, 4, 8, 12 and 24hrs in the rumen of three Holstein steers. Fraction A was highest in kapok seed meal(14.6%) and lowest in corn gluten meal(0.6%) (P<0.05). The highest B1, B2 and B3 fractions were contained in soybean meal(8.27%), cotton seed meal(74%), and perilla meal(40%), respectively. Corn gluten meal was very high in fraction C. In situ protein degradation rate of soybean meal was 98%, highest among five protein sources, and corn gluten meal had the lowest rate at 28%. Correlation analysis showed that easily soluble fractions of both methods, in situ protein degradation rate and digestible protein fractions, and in situ protein degradation rate minus “a” and fraction B2+B3 were highly correlated. These results indicate that in vitro protein fractionation can be used in the estimation of in situ protein degradation.

Effects of Active Modified Atmosphere Packaging on the Storability of Fresh-cut Paprika (Active MAP가 파프리카 신선편이 저장성에 미치는 영향)

  • The processing techniques are need to use the non-marketable paprika fruit because paprika that is difficult crop for cultivation and produced easily non-marketable fruits, such as physiological disorder fruit, malformed fruit, and small size fruit. This study was carried out to investigate the proper active modified atmosphere packaging (MAP) condition for enhancing the storability of fresh-cut paprika fruit. The fresh-cut paprika (cv 'Score', seminis) put into $7cm{\times}0.7cm$ size and packed them in 20 g bags. The active MAP and vacuum treated paprika fruits were packaged with LLDPE/Nylon, EVOH, Tie film, and injected partial pressures of $CO_2$ and $O_2$, and $N_2$ in the packages immediately after sealing to treat active MAP. The ratio of $CO_2$, $O_2$, and $N_2$ of active MAP conditions were 0 : 20 : 80 (air), 5 : 5 : 90, 30 : 10 : 60, 10 : 70 : 20 and vacuum treatment did not contain any gas. The passive packaging treated paprika packaged with $40{\mu}m$ ceramic film. After 7 days of storage at $9^{\circ}C$, the fresh weight decreased less than 2% in all treatments, and showed lower in 5 : 5 : 90 ($CO_2:O_2:N_2$) active-MAP treatment and higher in vacuum treatment than other treatments. The $CO_2$ and $O_2$ concentration in packages did not change remarkably in active-MA treatments except 30 : 10 : 60 active-MAP treatment that showed sharply decreased $O_2$, concentration and increased $CO_2$ concentration at $1^{st}$ day of storage at $9^{\circ}C$. The ethylene concentration in package was the highest in 30 : 10 : 60 active-MAP treatment and the lowest in the passive MAP treatment that packaged with gas permeable film during $9^{\circ}C$ storage for 7 days. The 30 : 10 : 60 active-MAP treatments were not proper condition to storage fresh-cut paprika. The visual quality was maintained higher in 0 : 20 : 80 (air), 5 : 5 : 90, and 10 : 70 : 20 active MAP treatments and passive MAP treatment than others and the firmness, off-odor, and electrolyte leakage was investigated at 7th day of storage at $9^{\circ}C$. The 5 : 5 : 90 and 10 : 70 : 20 active-MAP treatment showed higher firmness and lower off-odor than other treatments after $7^{th}$ day of storage at $9^{\circ}C$. In addition, the electrolyte leakage was reduced less than 20% at 0 : 20 : 80 (air), 5 : 5 : 90, 10 : 70 : 20, and passive MA treatments. Therefore, 10 : 70 : 20 ($CO_2:O_2:N_2$) and 0 : 20 : 80 (air) might be recommended for proper active MAP conditions.

Effect of Pine Silage Feeding on Nutrient Digestibility, Feed Conversion and Carcass Traits of Korean Native Cattle (잣나무 生枝葉사일리지 급여가 한우의 영양소 소화율, 사료요구율 및 도체성적에 미치는 영향)

  • The wastes (the needle leaves and branches) produced from thinning the forest were fermented under an anaerobic condition (pine silage) to utilize as a forage source of ruminants. An in situ trial was conducted with two ruminally fistulated Korean native cows by 4 replicates (2 bags per cow), and in vivo digestibility of pine silage was estimated with five Korean native steers by 5 replicates in incomplete double turn-over design. In order to investigate feed efficiency and carcass traits, forty eight Korean native bulls were assigned to four treatments (0%, 25%, 50%, 75% of pine silage) with a completely randomized design in 12 pens accommodating 4 animals per pen. The amounts of concentrate and roughage allowed to experimental animals were in the range of 2.5% and 0.6% of body weight, respectively. Animals had freely accessed to mineral block and water in stanchion barn.An in situ crude protein digestibility of the roughage sources when suspended for 48 hrs in the rumen was higher for feeding the pine silage than the rice straw, whereas NDF digestibility was vice versa. No differences between the treatments were observed in in vivo digestibilities of dry matter, crude protein and NDF. Daily body weight gain was significantly (P<0.01) higher for the pine silage substitutions compared with the rice straw feeding except for the 25% silage feeding. The pine silage feeding did not affect feed efficiency.In carcass traits, marbling score tended to be higher for the 50% pine silage treatment than the other treatments while back fat thickness tended to be the thinnest for the rice straw feeding. From these results, it may be recommended to substitute pine silage, as a forage source, for rice straw by 50 percent.

The Storage Stability of Semi-Salted and Dried Mackerel by Free-Oxygen Absorber (탈산소제에 의한 반염건고등어 저장중의 품질안정성)

  • The preservative effect of modified-atmosphere storage on the shelf-life of packed semi-salted and dried mackerel, Scomber japonicus, was examined. The semi-salted and dried mackerel fillets were packed in laminated plastic film bags (polyester/nylon/casted polypropylene: $12{\mu}m/15{\mu}m/60{\mu}m,\;15{\times}16cm$) filled with air (control, C), nitrogen gas (N), deoxygenized air (O) prepared by using free-oxygen absorber enclosed in the bag, in vacuum(V), and stored at $5^{\circ}C$. The quality of packed sample during the storage were examined in terms of viable cell counts of bacteria, thiobarbituric acid(TBA) value, perozide value(POV), volatile basic nitrogen(VBN), trimethylamine(TMA), adenosine triphosphate(ATP) and its related compounds and sensory evaluation. The results obtained are as follows: The pH of all the samples was in the range of $6.1{\pm}0.2$, and the contents of VBN and amino nitrogen of them increased during storage. In color values, L value(lightness) decreased while a and b values (red and yellow) revealed a tendency to increase during storage. The viable cell counts of the control sample(C) increased to $3.0{\times}10^6/g$ after 15 days storage but those of the other samples(V, N and O)were in the range of $2{\sim}6{\times}10^5/g$ after 20 days storage. The content of TMA increased during storage, but the histamine content showed a little change during storage and its content of all samples were less than 16 mg/100g. The inosinic acid(IMP) was rapidly degraded while inosine and hypoxanthine increased during storage. The TBA value of the control(C) reached a peak in 9 days and then decreased gradually while that of the sample(O) showed a little change during storage. The changes in POV of all the samples during storage showed a similar tendency to the TBA value. Fatty acid composition of raw mackerel consists of $35.6\%$ of saturated acid, $30.3\%$ of monoenoic acid and $34.2\%$ of polyenoic acid. The major fatty acid of the sample products were oleic acid($C_{18:1}$), palmitic acid($C_{16:0}$), docosahexaenoic acid($C_{22:6}$). The contents of polyenoic acid such as $C_{22:6},\;C_{20:5}$ decreased during storage while the other fatty acids showed a little change. From the results of sensory evaluation, the shelf-life of the control sample(C) was about 7 days and that of sample(V), (N) and (O) was about 15 days. It was concluded that deoxygenized atmosphere(free-oxygen absorber enclosed in the bag) was a good condition for preserving the quality of semi-salted and dried mackerel.
