The Traditional Method for Preparing Korean Vegetable Dishes - Especially about Na mul.Seng chae.Ssam - (채소의 전통 조리법 - 나물.생채.쌈을 중심으로 -)

  • Korean vegetable dishes-Na mul are indigenous and popular foods for a long time, and have been eaten by not only the common people but also the royale people in the ordinary meal and customary affairs. Grains are principal item of diet for Koreans and additions of Na mul in diet provide the nutritional minerals and vitamins. Especially vegetable oils in seasoning played the important role in nutrition balance. This manuscript historically investigate the Korean vegetable dishes-especially Na mul, Seng chae, Ssam, and the vegetables, additional ingredients and seasonings. 1. Foreign vegetable were introduced very actively. As the result of it, the more variety of vegetables are available. 2. Vegetable oils such as sesame oil, perilla oil, roasted sesame seed and pine nuts, etc were widely used for seasonings. 3. Seng chae dishes had been prepared with more than two different kinds of vegetables. Seasonings are used from the various sources, and combination of ingredients and development of condiments are expected to research further. 4. Ssam foods basically used uncooked vegetables, but steaming and boiling are also common methods.

Three-Dimensional Contact Stress Analysis for Structural Design of Bolted Joint Assembly of Pressure Vessels in Nuclear Power Plants (원자력 발전소용 압력용기의 볼트 연결 조립부 구조설계를 위한 3차원 접촉 응력 해석)

  • Bolted joint assembly for nuclear power plants consists of various components : cover plate, retainer plate, manway flange, gasket and stud bolts/nuts. To guarantee the soundness of the joint, it is important to prevent leakage through the gasket and reduce the stress concentration factor at the thread root. In this paper, Submodeling technique for the finite element method is proposed to accurately compute three dimensional contact stresses which govern the sealing performance and the maximum contact stresses at the threads root. For verification of global solutions used as boundary conditions of submodel solution, the stresses on the cover plate and the manway flange are measured by strain gages when internal pressure is applied to the bolted joint assembly. The numerical results are compared with the experimental results.

Entrapment of Ellagic Acid in Dairy Protein-Based Nanoparticles

  • Ellagic acid (EA) is a naturally occurring polyphenolic compound in vegetables, nuts, and fruits such as berries. EA has antioxidant, anticancer, anti-allergy, and anti-inflammatory activities. The objectives of this research were to investigate the physicochemical properties of nanoparticles before and after nano-encapsulation of EA in dairy protein and to develop a functional (anti-inflammatory) dairy protein-based beverage containing EA. A particle size analyzer was used to determine the physicochemical and morphological properties. High performance liquid chromatography was used to evaluate the entrapment efficiency of EA. The nanoparticles containing EA were 100 to 200 nm in diameter. The determined poly dispersity index value of 0.3 to 0.4 indicated that the nanoparticles were uniformly distributed with similar size. Zeta-potential values were also similar between the control groups. The entrapment efficiency of EA was nearly 90%. The results indicate the potential for development of nanoparticles containing EA beverage products with anti-inflammatory activity.

  • Proanthocyanidins (PACs), also named condensed tannins, are polymers of flavan-3-ols such as (+ )-(gallo)catechin and (-)-epi(gallo)catechin. A proper analysis of the PACs, with difficult challenges due to their complex structures, is crucial in studies of cancer chemoprevention. Cancer is a leading cause of mortality around the world. Many experimental studies have shown that dietary PACs are potential chemopreventive agents that block or suppress against multistage carcinogenesis in both in vitro and in vivo models. Cancer chemoprevention by dietary PACs has been shown effective through different mechanisms of action such as antioxidant, apoptosis-inducing, and enzyme inhibitory activities. Good sources of dietary PACs are nuts, fruits, beans, chocolate, fruit juice, red wine, and green tea. The chemopreventive potential of dietary PACs should be considered together with their bioavailability in humans. The safety issues regarding carcinogenesis and gastrointestinal disorder are also reviewed.

  • Turbopump is typically an assembly of rotors and casings, and there are a number of joints between them. Every joint should be leak-proof, so there is always a seal to accomplish the goal. Among various seals, metal seals are advantageous in that they are robust at high pressure, and at wide range of temperature. On the other hand, they require very high tightening forces, so that flanges, bolts and nuts should be carefully designed to ensure structural integrity and to prevent detrimental yielding of components. In this study, flange joints using conical seals made of stainless steel, solid flat metal seals made of copper and metal C-seals made of Inconel 718 were structurally designed and analyzed, considering both initial tightening and operating conditions.

Antioxidative Constituents and Activities of Acorn hull and Chestnut Hull (도토리와 밤 외피의 항산화 성분 및 활성)

  • We have carried out the antioxidative activity of nuts species for the development of antioxidant from natural products. From our previous report, EtOAc and n-BuOH extracts of acorn hull and chestnut hull were found to have a strong antioxidative activity in various antioxidant experiment. In the continuous study, we isolated several compounds from EtOAc and n-BuOH extracts of acorn hull and chestnut hull by fractionation using column chromatography. The structures of isolated compounds were identified as catechin, naringenin and ellagic acid on the basis of their spectroscopic properties and by comparison of their physical and spectra data with published value. Antioxidative activities of catechin, naringenin and ellagic acid were measured by DPPH, ferric-thiocyanate and Rancimat method.

  • FBG sensor system is applied to the concrete lining structure in Taegu subway. Near the structure, the power cable tunnel construction started. We wanted to measure the deformation of the structure due to the construction by the FBG sensor. The applied sensor has the gauge length of 1 meter to overcome the inhomogeneity of the concrete material with enough length. In order to fix tightly to the structure, the partially stripped parts of the sensor glued to the package and slip phenomenon between fiber and acrylate jacket was prevented. Prestrain of the sensor was imposed by controlling the two fixed points with bolts and nuts in order to measure compressive strain as well as tensile strain. The behavior of subway lining structure could be monitored very well.

Profit efficiency and constraints analysis of shea butter industry: northern region of Ghana

  • This study was undertaken to examine the profit efficiency and its determining factors, the investment opportunity, and the challenges of shea butter producers in the northern region of Ghana. The methods employed in this research were the Stochastic Profit Frontier (SPF) model, gain-cost and investment return analyses, as well as Kendall's W statistic using primary data collected from 120 purposively-selected respondents. Results from the analysis indicated that profit efficiency was positively influenced by sex, household size, marital status, educational level, transportation cost, store rent, and price of shea nut with a gain in profit efficiency of 58.5%. The investment analysis demonstrated a net gain per person of $8,077 equivalent to GH₵ 28,270 Ghanaian cedi (GH₵) using 2016 exchange rate (GH₵ 3.5 = $1). Among the challenges identified, the poor quality of shea nuts was the most prioritised challenge with 72.8% agreement among the respondents. Based on these findings, it was recommended that proper training and education, as well as improvement in shea nut quality, should be promoted to improve the profit efficiency of shea butter producers.

A Study on Method of Predicting Failure Rates of Fastening Parts (체결 부품 고장률 산출 방안에 관한 연구)

  • In the statement of logistics reliability prediction methodology, all components should be managed as the analysis objectives. However, in some reliability prediction of weapon systems, fastening parts, e.g., screws, bolts and nuts, have been frequently ignored because some organizations related to weapon systems have emphasized that those parts are not significant in their failures rate and functions. In this paper, failure rates, modes, and distributions were presented to prove that fastening parts should be included in reliability prediction objectives. Also, failure rate prediction methods of fastening parts are presented and compared.
