Adolescent nutrition: what do pediatricians do?

  • Multiple psychosocial problems and many chronic diseases of adulthood can be influenced by adolescent nutritional problems. In Korea, adolescent obesity and obesity related health risks have been increased and insufficient intakes of nutrients, such as calcium, iron and potassium, and distorted thinking about obesity are also common. However there are no comprehensive countermeasure because of the excessive burden of studies and the lack of community interest. And the nutrition guidelines that is suitable for Korean adolescent leaves something to be desired, and the pediatrician's concern is lacking yet. In the Korean dietary reference intakes 2010 that was revised according to the 2007 Korean National Growth Chart and 2007 Korean National Health and Nutrition Examination Survey, the range for adolescents is changed to the age 12-18 and dietary reference intakes of some nutrients mainly with vitamin D is changed. Recently several researches, about how school nutrition policies and media effect on eating habits and the weight concerns, and influences of public nutrition policies and fast food commercials have been actively studied to improve adolescent nutritive conditions. In this review, I summarize the dietary reference intakes for Korean adolescents that were revised in 2010, and current studies about the adolescent nutrition.

A Study on the Physiological Activity and Industrial Prospects of Plant-origin Lactic Acid Bacteria (식물 유산균의 생리활성작용과 시장현황 및 전망)

  • Lactic acid bacteria (LAB) Play an important role in the human diet and are used in the production of edible fermented products such as kimchi and yoghurt. LAB are regarded as safe food additives used to enhance the nutritive value of foods. Plant-origin lactic acid bacteria (PLAB) cultured in vegetal media are now widely used in food industries. PLAB have been found to activate intestinal immunity, modulate the balance of the intestinal bacterial from, and enhance intestinal function. They are known for their strong resistance to acid; this enables them to persist for a longer duration in the human intestine. PLAB can also survive in the intestinal environment under conditions of poor nutrition. They have stronger vitality as compared to LAB of animal origin. Due to the unique characteristics of PLAB, they are being widely used in Japan for processing foods such as yoghurt and beverages. Recently, PLAB has also been used as the culture for processing yoghurt in Korea. We expect further research on the functional effects of PLAB.

Sugestion for the Development of Forage Production in Cheju (제주도의 초지농업과 조사료 공급의 활성화 방안)

  • Cheju Island has an optimal environment for herviborous animal production. However, the infrastructure has been degraded under the pressure from the development of tourism and thus the technological development for livestock production has not been great. This is the time to re-evaluate and re-direct the system of livestock production on the island. My suggestions on the development of grassland agriculture on the island are as follows : 1. Grassland area of Cheju, 65,695 ha should be maintained and the local government should try to improve more grasslands which can hold 3 or more cattle per ha on pasture. including enterpriseowned lands. 2. For better management of co-operatives village. the local government should evaluate the conditions of the grasslands yearly after being grazed and suggest a new management method accordingly. 3. In order to strengthen grassland research. it is recommended that Cheju Experiment Station be reorganized as a Grassland Research Institute or Department of Grassland Science be added. 4. [mport of good forage varieties. especially legumes, from foreign countries and distribution to farmers after adaption studies, are required to improve nutritive values of forage produced. 5. Methods for production of good quality forage seeds at rcasonablc prices should be established.

Impact of Shading Net Color on Phytochemical Contents in Two Chili Pepper Hybrids Cultivated Under Greenhouse Conditions

  • The objective of this study was to understand the combined effect of shading treatment and harvest time on pungency, ascorbic acid content, market-quality pepper yield, and photosynthetic activity in a yellow 'Star Flame' and 'Fire Flame' F1 hybrid pepper cultivar (Capsicum annuum). Plants were cultivated in a greenhouse under white, red, and green shading nets and compared to those grown under unshaded control conditions. The ascorbic acid and pungency parameters were analyzed by high-performance liquid chromatographic methods. Ascorbic acid, a compound of high nutritive value in pepper, was highest in fruits gathered during the first summer harvest in both hybrids. The ascorbic acid content was found to be further increased in fruits from plants grown under white net shading in both 'Star Flame' and 'Fire Flame'. Total capsaicinoid contents in 'Star Flame' were influenced by the interaction of shading treatment and harvest time (p = 0.004), with the lowest amounts ($241.2-251.5mg{\cdot}kg^{-1}$ fresh weight) resulting from white and red shading treatments at the early autumn harvest. In 'Fire Flame', both shading treatment (p = 0.009) and harvest time (p < 0.001) affected total capsaicinoid contents. We observed significantly higher total capsaicinoid contents in control fruits compared to that resulting from red and green shading treatments at the second harvest, and that resulting from red shading treatment at the third harvest. Analysis of photosynthetic activity revealed a significant and negative correlation between Fv/Fm values and total capsaicinoid contents in both hybrids (p < 0.001). Based on the obtained results, the harvest of peppers during summer should be promoted to produce fruits with high pungency.

Effects of Adding Urea and Molasses on Napiergrass Silage Quality

  • To standardize proper formulation of urea and molasses, the former to increase crude protein content of tropical grass and the latter for improving its silage quality, we examined the fermentation quality of silage of fresh and wilted napiergrass (Pennisetum purpureum Schumach) with different levels of urea and molasses with or without lactic acid bacteria (LAB). Silage was made of napiergrass with conditions of fresh young (Exp. 1),young wilted for half day (Exp. 2) and fresh mature (Exp. 3). Chopped plant materials of about 1cm length were ensiled into a laboratory silo and incubated for one month at $25^{\circ}C$. The treatments were the combination of 0, 0.2 and 0.6% of urea and 0, 2 and 5% of molasses (fresh material basis) with or without LAB inoculation. After opening the silo, pH, organic acids, volatile basic nitrogen (VBN) and total nitrogen (TN) were determined. Addition of molasses significantly (p<0.01) lowered pH values in three experiments. Though molasses addition increased lactic acid production even at a higher level of urea, pH values at 0 and 2% molasses were significantly increased by urea in fresh and wilted young silages, but in fresh mature silage it occurred only when molasses was not added. VBN/TN at 0.6% urea were decreased significantly by the highest molasses in three experiments. Significant increases in TN by the increasing of urea addition were observed at all levels of molasses in wilted young and fresh mature silages. In conclusion, a combination of 5% molasses and 0.6% urea could improve the nutritive and fermentation qualities of napiergrass silage under young, wilting and mature conditions.

A Study on the Perceptions and Attitudes of Middle and High School Students towards Family Meals (중.고등학생의 가족 식사에 대한 인식과 태도 연구)

  • This study investigated the overall conditions related to family meals, including perceptions, attitudes, and behaviors, among middle and high school students. The data were collected from 773 male and female students attending middle and high schools in Seoul and Kyunggi-Do from March to May 2006, using pre-tested self-administered questionnaires. The results are as follows: 78.9% of the subjects lived with their parents and siblings, and 75.7% regarded family meals as meals eaten with all family members living together in a household. As for the frequency of family meals, 40.1% of the middle school subjects answered that they ate with their family 'more than once per day' and 20.8% answered '1 or 2 time per a week'. However 21.0% of the high school students had family meals 'more than once per day', and 31.7% had family meals '1 or 2 times per a week', showing a significant difference between the groups(p<0.001). When the degree of satisfaction with life was evaluated using a Likert scale(strongly satisfied 5 point, strongly unsatisfied 1 point), the middle school students showed a significantly higher level of satisfaction than the high school students towards daily life, health, nutritive conditions, and family care. feelings, attitudes, and behaviors toward family meals were also evaluated(strongly agree 5 point, strongly disagree 1 point), and the results showed that the subjects had positive psychological feelings, with significant differences based on the frequency of family meals. Likewise, the groups who ate frequent family meals scored higher on aspects related to having positive attitudes and behaviors toward the family meal, implying that eating family meals is associated with promoting friendship, psychological stability, and positive thinking in adolescents. These findings suggest that attention needs to he directed toward increasing the frequency of family meals and creating a positive family meal environment.

A study on the infant feeding methods (영아 수유 방법에 관한 실태 조사 연구 - 경기 일부 지역을 중심으로 -)

  • In this study, I made researches of 510 mothers who breed their infants in total (256 boys & 254 girls), among which 410 in urban area and 100 in the rural area, as an object of the investigation so as to make an intensive examination and analysis of the actual state of feeding nutritive method, grasp several related factors, and finally suggest the elementary data for both campaign encouraging breast feeding and the infant feeding education. 1. Mothers showed the meaningful local differences as in an education and income level at 1% and as in a delivery type at 5%. 2. To have decided the feeding conditions according to the residences by the Kaup index distribution (P<0.05) resulted in a meaningful difference according to regions and also made us be more thoughtful of the overnutrition in the urban area than in the rural area, and it didn't showed a meaningful difference the nutritive state according to the infant feeding method thought desirable (P<0.01). 3. The feeding methods consist of breast feeding at 21.8%, artificial feeding at 48.8%, and the mixed one at 29.4%. As for the feeding method thought desirable, breast feeding was 52%. Even though they were thinking that breast feeding is better, the breast feeding case didn't go beyond 32.5% only and as for the actual feeding methods it showed a meaningful difference according to the feeding method thought desirable (P<0.01). 4. Regarding the reasons why they chose breast milk, it was 64%, the most because mother's milk contains the immune system, 63.1% for the baby's health, 52.3% because of its most because breast milk is of little quantity, 37.8% because of the mother's occupation, 14.1% because they have fed the baby artificially from the beginning and so on. Considering the reasons why they chose the mixed feeding, it was 70.7%, the most because the amount of breast milk a little, 27.3%, the next one, because of the mother's occupation and so on. 5. The respondents who answered that how to increase the number of breast feeding population depends on the reinforcement of breast feeding education for the women were 190 (37.3%), the most among all 150 persons and those who had the opinion that they should spread and actualize the temporary childcare rest (from office) system for the women who have jobs were the secondly most, 107 (21%).

Comparative Analysis of Dietary Intake for Introduction of Meal Service in Pavilion of the Elderly living in Rural Area (농촌거주 노인정 급식도입을 위한 식생활 비교 평가 연구)

  • Aging rate of rural area in our country is relatively high compared to that of the urban area. Thus, the introduction of meal service for the elderly residing in the rural area is necessary for their better living quality. Food habit, health and the nutritive intake conditions during the busy farming season were surveyed and comparative analysis of dietary intake for the introduction of meal service in pavilion of the elderly living in Chungnam, Kangwon, Jeonnam and Kyungbuk was performed for basic reference data of meal service introduction to the pavilion of the elderly in rural area. In general subject, the male elderly had a significant difference in marital state and showed that 79.4% was married and 20% was separated by death(P<0.05). In allowance, there were no significant difference but most of them lived with less then three hundred thousand won and especially, female lived with less then one hundred thousand won. In health state, the female elderly showed significant difference on difficulty with every day activity but with small trouble although they had to prepare their own meal(P<0.05). The condition dental health conditions of the female elderly had a significant difference showing bad conditions in following order; Kangwon(48%)>Chungnam(38.1%)>Kyungbuk(22.9%)>Jeonnam(22.5%)(p<0.05). The female elderly showed a significant difference in usage of denture and number of the female elderly without using the denture were very high(p<0.05). In nutrition intake condition, amount of sodium was very high but intakes of fiber and calcium were relatively 1ow(P<0.05). Meal service introduction in the pavilion of the elderly is suggested for the improvement of the life quality of the elderly in rural area. When developing the menu for them, conditions such as shortage of the fiber and calcium in diets, the dental conditions should be considered.

Development of Protein-rich Food Mixtures for Infants and Growing Children in Korea -(4) Nutritional and Biochemical Evaluation of Formulas F-P-5, F-P-6, F-P-7 and storage stability of F-P-4- (유유아(乳幼兒) 및 성장기아동을 위한 영양식품 개발에 관한 연구 -(4) F-P-5, F-P-6 및 F-P-7의 영양학적, 생화학적 검토 및 그 저장성-)

  • From the previous studies, F-P-4 formula was found to be comparable to full fat dry milk in its nutritive value and feeding performance. However, an attempt was made in order to make sure whether or not any possibility might exist, by which further improvement of nutritive quality and simultaneous reduction of product costs may be achieved. Using F-P-4 as a control, modifications were made in new formulas, F-P-5, F-P-6 and F-P-7 by reducing FPC, eliminating yeast from the mixture, and by enriching with methionine as needed. In particular, F-P-7 is completely free of FPC, hydrogenated oil and yeast. Yet, levels of total protein and fat were kept equal to those of F-P-4 in all formulas. An animal feeding test for all formulas using 10 female rats per group for 8 weeks and an infant feeding trial for F-P-5 and F-P-6 with 5 of each female infants under age of one for one month were conducted along with F-P-4 as a control. Almost the same results were obtained with F-P-4, 5 and 6, but F-P-7 showed the lowest body weight gain. FER of F-P-5 and 6 was 0.20 as was with F-P-4, while that of F-P-7 was 0.16. Acceptability to infants was excellent; growth, appearance and biochemical data were normal. As an example F-P-4 packed in 0.04mm polyethylene bags was used for storage study at $25^{\circ}C$ and relative humidity of $65{\sim}85%$ for 8 months. Although viable bacterial counts and vitamin C contents were reduced, peroxide and TBA values were increased gradually during such storage. Since there are also significant changes in color and organoleptic quality, the expected shelf life under the given conditions is considered to be about 2 months and thus further works are needed both on the product and packaging in order to improve the storage stability. Either elimination of yeast form F-P-4, that is F-P-5, or partial replacement of FPC with methionine, that is F-P-6 may well reduce material costs about 10%. Considering blending process of ingredients, F-P-5 is thus found to be the best formula developed. While F-P-7 free of FPC is inferior in its nutritive quality than that of others, but significantly superior than of rice. Furthermore, the material cost of the product can be reduced about 20% from that of F-P-4. And thus this vegetable blend is considered to be useful as a low cost supplementary food mixture for growing children.

A Study on Nutritional Status of Iron in Korean Normal and Obese Male Elementary School Students (정상 남자 아동과 비만 남자 아동의 철 영양상태에 관한 연구)

  • The purpose of this study was to compare the food behavior and nutrient intakes, and the analysis of constituent parts of blood related to iron nutrition conditions and to investigate the correlation between iron nutrition conditions and obesity. Each subject was assigned to one of such as normal(n=55) and obese groups(n=60) according to their obesity index. Their nutritional status, serum iron status were evaluated based in 24-hr dietary recalls, questionnaire and blood analysis. The mean age of the normal group(10.76 years) and that of the obese group(10.95 years) made little difference. The height(p<0.05), weight(p<0.001), and obesity index(p<0.001) in the obese group were higher than those of the normal group in every respect. The 63.55% of the subject of this study gave an answer 'They eat breakfast daily', and the frequency of eating breakfast made little difference. The average intakes of energy were 1669.44 kcal(84.19% of EER) in the obese group and 1673.59 kcal(86.72% of EER) in the normal group respectively, which made little difference between two groups. The intake of nutrients such as calcium and folate was as insufficient as below 75% of RI. The heme iron intake of the obese group was low that of the normal group(p<0.05). Among the major 20 iron resources the iron intake through animal food intake were 1.43 mg(12.00%) in the obese group and 1.93 mg(17.72%) in the normal group respectively. The rating of iron condition in the blood showed that the number of red blood cell(p<0.01), the hemoglobin(p<0.001), and hematocrit(p<0.01) of the obese group were lower than those of the normal group. These results suggest that there should be the right choice of food according to its bioavailability and nutritive guidance to appropriate food behavior, in addition to increasing iron intake to improve iron nutrition conditions of obese male elementary school students.
