We evaluated the nutritional status of 116 Songmyun middle school students. The means of height and weight were similar to the standards published by the Ministry of Education(1991). The height of 79% of the subjects was in the normal range, and the height for 11% was below the normal range. While 27% of the subjects were underweight, 18% and 8% were overweight and obese, respectively. The percentage of anemia was 29%, and the mean urinary urea nitrogen to creatinine ratio was 8$\pm$4. Total daily energy and nutrient intake was 48-103% of RDAs, and especially calcium and iron intake was very low. Carbohydrate, protein and fat intake was 71%, 12% and 17% of total calories, respectively. Breakfast, lunch, dinner and the between meals provided 20%, 37%, 26% and 18% of total energy intake. Energy and nutrient intake from lunch box was 52-95% of the 1/3 RDAs. Our data suggest that the nutrition education for the meal planners of the subjects is necessary to improve the nutritional status of the subjects. In addition, the school lunch program is recommended.

The objective of this study was to evaluate the effect of a healthy school tuck shop program, developed as a way of creating a healthy and nutritional school environment, on students' access to healthy foods. Five middle schools and four high schools (775 students) participated in the healthy school tuck shop program, and nine schools (1,282 students) were selected as the control group. The intervention program included restriction of unhealthy foods sold in tuck shops, provision of various fruits, and indirect nutritional education with promotion of healthy food products. The program evaluation involved the examination of students' purchase and intake patterns of healthy foods, satisfaction with the available foodstuffs, and utilization of and satisfaction with nutritional educational resources. Our results indicated that among of the students who utilized the tuck shop, about 40% purchased fruit products, showing that availability of healthy foods in the tuck shop increased the accessibility of healthy foods for students. Overall food purchase and intake patterns did not significantly change during the intervention period. However, students from the intervention schools reported higher satisfaction with the healthy food products sold in the tuck shop than did those from the control schools (all $P$ < 0.001), and they were highly satisfied with the educational resources provided to them. In conclusion, the healthy school tuck shop program had a positive effect on the accessibility of healthy food. The findings suggest that a healthy school tuck shop may be an effective environmental strategy for promoting students' access to healthy foods.
Although the NutriPlus program has shown considerable evidence of enhancing users' nutritional status, the budget does not cover all eligible mothers and children. This study aimed to conduct a cost-benefit analysis of the NutriPlus program to assess its economic efficiency. 53 families with 79 users in the NutriPlus program at Daejeon Dong-gu Health Center participated in this study with informed consent. The costs and benefits were estimated from both the administrator's and users' perspectives. We converted the time cost into Korean currency based on the minimum wage in 2014. The value of nutrition education and service (B2), estimated by contingency valuation method (CVM), was counted as an economic benefit. 6 families (11.3%) were recipients of national medical care and 22 families (41.5%) paid 10% of the food package cost by themselves. The total cost was \7,450,167 and the total benefit was \12,402,239. The budget for the health center (C1+C2+C3+C4) was \5,984,381 a month. Time and transportation cost for receiving nutrition education (C6) differed significantly according to the economic status of families. Household food consumption increase (C4-B4) was 40,379 in the poverty group, which was four times more than in the other groups. The net benefit (B-C) was \4,852,172 and the B/C ratio was 1.66. Therefore, the NutriPlus program is beneficial in the economic aspect as well as in the nutritional aspect. If the enhancement of nutritional status was also considered, the total benefit would be even higher. These results confirm the legitimacy of a secure budget for the NutriPlus program. And we suggest expanding its budget to cover more eligible individuals to improve people's health and welfare.
In Korea, the practice of nutrition education program at the worksite has not yet been implemented, especially for the workers who are at risk for health. Accordingly, the worksite nutrition program, education, and nutrition counseling are necessary. In this study, the worksite nutrition program was developed from June, 1997 to May, 1998. For this program, we surveyed the workers' age and the levels of education, income and physical activity. We developed the proper dietary intake questionnaire to evaluate the employees' nutritional status and the nutrition index which is a simple tool to assess nutrient intakes of the employees at the worksites. To demonstrate the validity of the developed nutritional assessment tools, the CAN(Computer Aided Nutritional) program and Hyunmin system developed by the Korean Nutrition Society and the Korean Dietetic Association respectively, were used as references. The result of the validity test for the dietary assessment method that we have been developed revealed that the method was valid showing no significant difference among the various methods. However, the carbohydrate intake measured by the CAN program was higher than those of others. The validity test results for the nutrient index method showed that there was no significant difference among the methods, except the carbohydrate intake measured by the Hyunmin system was lower that those of others. As a result, we concluded that the dietary assessment methods that we had been developed, were valid method to measure the nutrient intakes of the employees at the worksites.
Purpose: The purpose of this study was to compare the degree of cognitive level, nutritional status and depression in elderly according to living situations. Method: The subjects consisted of 173 elderly classifying three groups(living alone, living with spouse, living with children). Data was collected from March to June, 2003 by a structured questionnaire that included general characteristics, MMSE-K, nutritional status and depression scale. The collected data was analyzed by the SPSS program including descriptive statistics, $\chi$$^2$-test, ANCOVA, Scheffe test and Pearson Correlation Coefficient. Result: In MMSE-K, the living alone group showed suspicious dementia while the other groups were normal. The living alone group showed a high nutritional risk and all three groups showed depression. In MMSE-K, the nutritional status and depression were statistically significant by the living situation. In each group except living with spouse, MMSE-K indicated a significantly negative correlation to depression and nutritional status, while nutritional status showed a significantly positive correlation to depression. Conclusion: It is necessary to develop supportive programs for decreasing the risk of bad health in the elderly and an individual approach according to their living situation. Especially, more concern and intervention is necessary for the solitary elderly.
Purpose: The aim of this study was to explore the relationship between powerlessness, sense of belonging and nutritional status of the elderly. Method: The study sample was 100 living at home and institutions. Data were collected by interview from Oct. to Dec. in 2003. The instruments were helplessness scale developed by Jung (1998), sense of belonging scale SOBI-A and nutritional initial screening. Results: The mean score of powerlessness was $2.71{\pm}0.30$, sense of belonging was $2.87{\pm}0.19$ and nutritional status was $4.42{\pm}3.34$. There was a statistically significant differences in powerlessness according to age (F=3.185, p=0.027), health status (F=6.945, P=0.002), religion (F=5.941, P=0.001), current spouse (t=-0.384, p=0.026), in sense of belonging according to age (F=4.40, P=0.006), length of education (F=10.64, P=<.0001) and in nutritional status according to age (F=3.34, P=0.022), health status (F=2.86, P=0.027). There was a statistically significant correlation between powerlessness and nutritional status (r=0.219, p=0.029). Conclusions: Nurses are able to decrease powerlessness or increase sense of belonging and nutritional status of the elderly by developing the health promotion program, improving perceived health status and empowering social interaction of the elderly specifically living at institutions.
Purpose: The purpose of the present study was to investigate the prevalence and lifestyle factors related to the metabolic syndrome in Korean elderly. Methods: A total number of 122 elderly over 60 yr were recruited from a community elderly center. Elderly were classified into young old (60-74 yr) and old (75-84 yr). Metabolic syndrome was defined by third report of the national cholesterol education program (NCEP) expert panel on Adult Treatment Panel III (ATP III). Abdominal obesity was determined by Korean society for the study of Obesity criteria. The nutritional status was measured by mini nutritional assessment (MNA). Results: The prevalence of the metabolic syndrome was significantly higher in the old than young old elderly (p<0.05, respectively). Abdominal obesity and hypertension were the most common risk factors. The related factors to metabolic syndrome were high Body mass Index (BMI) and currently not participating in exercise. Abdominal obesity, low HDL cholesterol and hypertension were associated with specific nutrient intakes. Conclusion: A strategy to decrease the metabolic syndrome in the elderly is urgently needed particularly so for the old elderly. A nutritional and exercise program for young old elders may be helpful reducing the prevalence of metabolic syndrome in later stage.
BACKGROUND/OBJECTIVES: This research was conducted to compare lecture- and experience-based methods of nutritional education as well as provide fundamental data for developing an effective nutritional education program in elementary schools. SUBJECTS/METHODS: A total of 110 students in three elementary schools in Jeollanam-do were recruited and randomly distributed in lecture- and experience-based groups. The effects of education on students' dietary knowledge, dietary behaviors, and dietary habits were analyzed using a pre/post-test. RESULTS: Lecture- and experience-based methods did not significantly alter total scores for dietary knowledge in any group, although lecture-based method led to improvement for some detailed questions. In the experience-based group, subjects showed significant alteration of dietary behaviors, whereas lecture-based method showed alteration of dietary habits. CONCLUSIONS: These outcomes suggest that lecture- and experience-based methods led to differential improvement of students' dietary habits, behaviors, and knowledge. To obtain better nutritional education results, both lectures and experiential activities need to be considered.
The present study was conducted to investigate the effect of iron-enriched cereal supplement and nutrition education program on nutritional status and life style of children. Elementary school students(n=170) aged of 11 years old at Seoul were participated. Subjects were supplemented with iron-enriched cereal for breakfast and provided with 2 sessions of nutrition education during 3 months. Intake of carbohydrate, iron, sodium, zinc, vitamin A, vitamin $B_1$, vitamin $B_2$, vitamin C, niacin, and folic acid was significantly increased after cereal supplement. Caloric intake was similar to KDRIs during both before and after cereal supplement. There was no improvement on exercise and dietary habits after nutrition education. Male students tended to sleep later, wake up early, and ate snack less than female. Cereal supplement was effective on improving nutritional status, but short-term nutrition education had no effect on modification of life style. Thus, further studies are required to develop long-term education program effective on improving lift style and eating habits in children.
The purpose of this study was to analyze and evaluate the menu served in business & industry contract foodservice by assessing nutritional value and by using menu-engineering technique from managers' view point. CAN-Pro program and Kasavana k Smith's Menu Engineering technique were used to evaluate the nutritional value and menu analysis, respectively. The data were analyzed using the SAS package program for descriptive analysis, t-test, ANOVA, and Pearson Correlation Analysis. As the result of nutritional value of lunch menu, all nutrient contents per meal were higher than a third of Korean recommended dietary allowances(RDA), But there was no problem when 20∼30% of plate waste was considered. Carbohydrate : Protein fat ratio was 62.7 : 16.4 : 20.8. Because animal : vegetable source ratios of protein, fat, calcium, iron were 44 : 56, 42 : 58, 22 : 78, 24 : 76, respectively, animal sources of calcium and iron needed to be supplemented. Plural set menus of A site were classified as STAR, PUZZLE, PLOWHORSE, DOG by Menu engineering technique. Set menus and soups & pot-stews among cafeteria menus in C site were operated properly without DOG and PUZZLE item. Side dishes of fishes, meats 8t eggs among cafeteria menus in C site were, for the most part, classified as STAR item, and side dishes of vegetables & salads and noodles among cafeteria menus in C site were STAR, PUZZLE, and DOG items.
