Relationship between Obesity, Threshold of Salty Taste, Optimal Saltiness and Blood Pressure in Middle School Students in Fishing Village (어촌지역 중학생들의 비만, 짠맛의 역치, 최적염미도와 혈압과의 관련성)

  • The purpose of this research was to evaluate the correlation between obesity, threshold of salty taste, optimal saltiness and blood pressure in middle school students in a fishing village. The subjects were 115 boys and 103 girls in middle school in a fishing village. The BMI index and systolic and diastolic blood pressures of subjects were measured, and the subjects were divided into a normal and obese group according to their BMI. The threshold of salty taste and salt preference for a semisolid dish (steamed egg dish), liquid dish (bean sprout soup), and a solid dish (raw radish salad), were estimated by sensory evaluation. Calorie intake was measured using the weighing plate method. The boys in the obese group showed significantly higher systolic and diastolic blood pressures than those in the normal, but girls did not. Furthermore, calorie intakes of the boys in the obese group were significantly higher than those in the normal group, but this was not shown in girls. On the threshold of salty taste, both boys and girls in the obese group needed higher concentration of salt than those in the normal group. The threshold of salty taste were significantly positively correlated with systolic pressure and diastolic pressure in boys. Regarding the salt preference in the steamed egg dish, bean-sprout soup, and raw radish salad, both boys and girls in the obese group preferred higher concentrations. The higher concentration they preferred, the higher the systolic and diastolic pressures were in boys, but only systolic blood pressure was higher in girls. From these results, it is evident that a nutritional education program is needed in school to help restricting middle school students salt consumption and decreasing obesity to prevent hypertension.

Current Status of Meal Box Service Management for Children from Low-income Families During Summer Vacation (여름방학 중 결식아동 도시락 제공 기관의 운영관리 실태)

  • The purpose of this study was to investigate the current status of foodservice management in organizations delivering meal boxes for low-income children during summer vacation. A survey was conducted with persons in charge of meal box production and service of these organizations via mail. Out of 114 questionnaires distributed nationwide, 100 were analyzed(87.8% analysis rate). Over half(53%) of the organizations delivered meal boxes consisting of rice and side dishes while the rest delivered side dishes only. About 81% of the organizations received KRW 3,000 per meal from their local governments and the rest received KRW 3,500. Only 28% of organizations had employed a dietitian. Over one-third(38%) of the respondents were unaware of the official nutritional standard of the foodservice program for low-income children during vacation. Most of the organizations(94%) had menu planned in advance. The average percentage of food cost was 84.1%. Over 40% of the organizations did not keep food samples for sanitation test(43%) and did not take any measures for keeping food temperature during delivery(45%). The organizations delivering rice and side dishes were more likely to be located in cities rather than rural areas and received higher reimbursement rate. The organizations receiving reimbursement of KRW 3,500 or hiring a dietitian were more likely to use standardized recipes, keep food samples for sanitation test, or take measures for keeping food temperature during delivery compared to the counterparts. Respondents reported that increasing reimbursement rate was the most necessary for improving the quality of meal box. This study results showed that the meal box delivery service for low-income children was not properly managed during the vacation, with regards to menu planning and food production. It is recommended that reimbursement rate for meal boxes should be adjusted depending on meal box types and local conditions.

Assessment of Menu Plan Prepared by Middle School Students According to Ordinary Meal Pattern and Single Serving Size (일상식 상차림 패턴과 1인 1회 분량에 근거한 중학생의 식단계획 평가)

  • It is important to prepare and execute the menu plan for proper and balanced intake of nutrients in the adolescence. This study investigated the new approach for planning menu by ordinary meal pattern based on cooked foods groups. The amounts of cooked foods in the menu plan assumed to be single serving size. The middle school second graders participated for the study. A total of 313 questionnaires were analyzed using CAN-pro 3.0 and SPSS WIN 12.0 program. The average content of energy in the menu plan was 2,453 kcal, the average ratios of energy contribution by carbohydrate, protein and fat were 54.3%, 17.9%, 27.8%, respectively. A total of 56.9% menu plans (94.9% of male and 8.7% of female students') were below the lowest limit of optimum carbohydrate energy ratio of 55%. A total of 29.1% menu plans (33.1% of male and 23.9% of female students') were exceed the highest limit of optimum fat energy ratio of 30%. The NAR of minerals and vitamins were all 1.0 except for calcium (0.92) and folate (0.88). When INQ of the individual cooked food groups were calculated, kimch was the highest in all minerals and vitamins examined, suggesting that kimch may be the best source for all minerals and vitamins, including calcium and folate with the minimum change in energy content. In conclusion, the menu plan by ordinary meal pattern in this study was low in carbohydrate, high in fat, and contained enough minerals and vitamins except for calcium and folate for middle school students.

  • The objective of this study is to collect basic data which can lead effective direction in performing nutritional education, by investigating 273 homemakers' knowledge and attitudes about nutrition. This study was performed using questionnaire about the knowledge and the attitudes of nutrition according to the age, education level, occupation, food cost, and total income. Results were summarized as follows; 1) sources in the knowledge of nutrition appeared by order of T.V., cookbooks, magazines newspapers, mothers, friends, lecturers in cooking school, and nutritionist. 2) A level in the knowledge of nutrition which scord an average marks 154.7(the highest marks 210) was higher compared to other studies. Informations about food composition scord lower marks than other studies. 3) Attitudes about nutrition showed high score in the aspects that nutrition has an important role in health, and desirable eating habits were formed in childhood. 4) The knowledge of nutrition had no significant differences with age, occupation, and food cost whereas it had significant correlation with education level and total income. The higher the level in education and total income, the higher the level in the knowledge of nutrition. 5) The attitudes about nutrition had no correlation with age, occupation, but it had a significant correlation with education level, food cost and total income. 6) There was an significant correlation between the knowledge and attitudes about nutrition. In order to promote children's nutrition status, nutrition education for mothers must be accomplished in the first place. Development of T.V. program for children's nutrition education is desirable.

Studies of Nutrent Intake and Serum Lipids Level in Adult Women in Taegu (대구지역 성인여성의 영양섭취 상태와 혈청지질에 관한 연구)

  • The purpose of this study to investigate the relationship between nutrient intake and serum lipid levels in 165 healthy women in Taegu. A convenient method was to assess nutritional intake. Anthropometric measurement of body weight and height were measured and average energy expenditure calculated . The mean body mass index (BMI) was 23.4$\pm$3.1 and it was higher than the mean BMI of Korean women. Obesity rates for the study subjects were 15.7% by RBW (relative body weight : >120%) and 28.5% by BMI(body mass index) ; >25). Daily energy intake was sufficient at 106% of recommended dietary allowances and the energy percentage ration of carbohydrate , fat and protein was 68 : 18 : 14. Mean intake of vitamin A, B1 , niacin , and Ca were higher than RDA. The incidence of hypertension(>140mmHg) and hypercholoesterolemia(>240mg/dl) as 18.2% and 23.6% of the subjects, respectively . Postmenopasusal women showed significantly higher blood pressure, RBW, and ALP (alkaline phosphatase) than premenopausal women. The concentration of cholesterol and average blood pressure in the irregular meal eater group were significantly higher than in the regular meal eater group. Skipping meals and unenvendurnal distribution(no breakfast, or no lunch , and large evening meals) are associated with high total cholesterol level in this population . Especially, the atherogenic index was significantly lower in the regular meal eater group than that in irregular meal eaters. The values for serum cholesterol, triglyceride, blood pressure, BMI, and atherogenic index increased with age in middle-aged women. There was a highly significant correlation between body weight and plasma lipids. HDL -cholesterol was inversely correlated with BMI. The above dta provides valuable information for community program planning and health providers who work with individual female and adults to meet their nutrietional needs to control blood lipids.

Impact of Menopausal Status, Metabolic Syndrome and its Risk Factors on Impaired Quality of Life above Middle-aged Women (중년 이후 여성에서 삶의 질 저하에 영향을 미치는 요인: 폐경 형태와 대사증후군 위험요인을 중심으로)

  • Purpose: This study explored influencing factors on quality of life (QoL) above middle-aged women in relation to demographic factors, health-related factors, menopausal status, metabolic syndrome (MS) and its risk factors. Methods: This study was secondary data analysis from the Sixth Korea National Health and Nutrition Examination Survey 2013~2015 that utilized a complex, multi-stage probability sample design. Study sample of 2,310 was inclusive of (28.8%) of women who were over 40. To evaluate the factors that would influence an impaired quality of life, $x^2$ test, GLM, and logistic regression analysis were done. Results: Level of quality of life was lower in women with late post-menopause(over 10 years since menopause) than women with pre-menopause. Factors influencing impaired QoL were as follows: graduated middle school and elementary school or less (OR=2.43, 4.42, respectively, p<.05), no job (OR=1.92, p<.001), stress (OR=1.92, p=.001), depression (OR=1.93, p=.001), insufficient sleep (OR=1.64, p=.003), late post-menopause (OR=2.61, p=.044) and over 85cm of waist circumference (OR=1.76, p=.01). Conclusion: These results suggest that late post-menopause may be an independent factor influencing an impaired QoL. To promote post-menopausal womens' health, a nursing strategy is required to teach women how to manage levels of stress, depression, insufficient sleep, and abdominal obesity through health education, nutritional counselling, and physical activity program.

Impact on the Health Behaviors of Children by High Risk Alcohol Drink Behavior of Parent (부모의 고위험 음주 행동이 자녀의 건강행동에 미치는 영향)

  • This study was performed to examine the impact on the health behaviors of the children by their parents' drinking behaviors. We used the data from a community health survey in 2009. The subjects were selected the household that had a child older than 19, and then among them, chose those 916 parents of highly risky drinking exposition among 16,383 control parents. The collected data was analyzed by frequency, chi-square test, and logistic regression analysis, using SPSS 18.0k program. Parent's high risk drinking behavior was independently associated with children's high risk drinking behavior after adjusting covariates(p<0.01). According to the result of the study, high risk drinking behavior of parents impact highly on the children's high risk alcohol drinking, nutritional behaviors, influenza vaccination, and tooth brushing, so it's necessary to consider a systematic family health education to the high risk drinkers.

Consumers' Recognition, Knowledge and Purchase Attitude on Genetically Modified Foods in Daejeon (대전지역 소비자들의 유전자재조합식품에 대한 인식, 지식 및 구매태도)

  • This study was to investigate consumers' recognition, knowledge and purchase attitude on genetically modified(GM) foods in Daejeon area. Data of 283 questionnaires were analyzed by using the SPSS(Ver. 17.0)program. Most of the subjects were women (91.9%), distributed 30's(41.7%) or 40's(31.8%), and graduated from university(41.3%). The kinds of GM foods that many subjects had known were soybean, corn, tomatoes and potatoes. The subjects answered that there were GM foods in supermarket items were 71%. Consumers' recognition on the safety of GM foods was 'somewhat anxious'(65.4%). After confirming which their purchasing item is GM foods, 'they will buy it case by case'(60.1%) or 'they will never buy it'(27.9%). The most reason of never buying GM foods was 'harmful to health'(82.3%). The first reliable information sources on GM foods were medical institutes and professionals. The knowledges about GM foods were significantly higher in 20's and 'less than 1year' of marriage duration than the other groups(p<0.05). On the purchase attitude of GM foods, the 20's responded favorably compared to other groups (p<0.01). Subjects' opinion on the necessity of development on GM foods tended to higher in 40's and 'less than 2 million won' of monthly income than the other groups. For the reason about necessity of it's development, 'nutritional, functionality and quality improvement' was 53.7%. In conclusion, many consumers regard that GM foods is not yet safe for health. Accordingly, government and research institutes should examine thoroughly and research continuously for the safety of GM foods. They must announce to consumers accurate information about GM foods.

The effects of Internet addiction on the lifestyle and dietary behavior of Korean adolescents

  • We performed this study to examine lifestyle patterns and dietary behavior based on the level of Internet addiction of Korean adolescents. Data were collected from 853 Korean junior high school students. The level of Internet addiction was determined based on the Korean Internet addiction self-scale short form for youth, and students were classified as high-risk Internet users, potential-risk Internet users, and no risk Internet users. The associations between the students' levels of Internet addiction and lifestyle patterns and dietary behavior were analyzed using a chi-square test. Irregular bedtimes and the use of alcohol and tobacco were higher in high-risk Internet users than no risk Internet users. Moreover, in high-risk Internet users, irregular dietary behavior due to the loss of appetite, a high frequency of skipping meals, and snacking might cause imbalances in nutritional intake. Diet quality in high-risk Internet users was also worse than in potential-risk Internet users and no risk Internet users. We demonstrated in this study that high-risk Internet users have inappropriate dietary behavior and poor diet quality, which could result in stunted growth and development. Therefore, nutrition education targeting high-risk Internet users should be conducted to ensure proper growth and development.

The Nutritional Intakes of the Colorectal Cancer Patients in Daegu, Kyungpook Area Korea (대구$\cdot$경북지역 대장직장암 환자의 식품 및 영양섭취상태)

  • The present study was conducted to analyze the status of food and nutrients intakes of the colorectal cancer patients in the Daegu$\cdot$Kyungpook area and to find dietary risk factors related to the occurrence of colorectal cancer in this community. The case subjects (123) were selected from the patients recently diagnosed as colorectal cancer at Kyunrpook National University Hospital, the control subjects (182) were selected from the patients of the Department of Orthopedic Surgery at the same hospital and from the healthy volunteers who did not have any gastrointestinal diseases. The food consumption survey was done by individual interviews using semi-quantitative food kequency questionnaire and nutrients intakes were analysed by CAN program. The results of the study suggested that dietary factors which are speculated as the risk factors of colorectal cancer in Daegu$\cdot$Kyungpook area were high consumption of cereals and oils low consumption of fruits and mushrooms, high consumption of energy and fat, especially animal fat, low consumption of dietary fiber, high percentage of energy intake from cereals and potatoes, high intakes of protein, fat, vitamin A and cholesterol from egg, low intake of calcium from vegetables, and high intake of iron from meats and eggs. These findings might be useful for the nuation education to prevent colorectal cancer in the community. However it is recommended to conduct more extensive and systematic survey to reconfirm these dietary risk factors under taking into consideration of the dietary characteristics in this region.
