Developments and Trends in Fisheries Processing: Value-Added Product Development and Total Resource Utilization

  • Changing concepts in fishery science increasingly are recognizing depletion of traditional stocks, utilization of alternate(non-traditional) species, demand for high quality products, and a total resource utilization approach. Innovative practices are occurring in fisheries processing wherein solid and liquid discharges are no longer treated as 'waste,' but rather as valuable feedstocks for recovery of a variety of value-added ('value enhanced') by-products. Among these are protein hydrolysates, soluble proteins and amino acids, proteolytic enzymes, flavor and flavor extracts, pigments, and biopolymers such as chitosan. Properties and applications of this deacetylated derivative of chitin are noted. Crustacean processing by-products are discussed in terms of their serving as materials for generation of natural flavors and flavor extracts, and products such as fish sauces using contemporary enzymatic techniques. Various food and feed applications of fisheries processing by-products are illustrated with increased usage seen in formulated diets for an expanding aquaculture market. Examples are given of aquaculture becoming increasingly significant in global fisheries resource projections. Critical issues in the international seafood industry Include those of seafood quality, processing quality assurance (HACCP), and recognition of the nutritional and health-related properties of fisheries products. A variety of current seafood processing research is discussed, including that of alternate fish species for surimi manufacture and formulation of value-added seafood products from crawfish and blue crab processing operations. Increasing emphasis is being placed on international aspects of global fisheries and the role of aquaculture in such considerations. Coupled with the need for the aquatic food industry to develop innovative seafood products for the 21st century is that of total resource utilization. Contemporary approaches in seafood processing recognize the need to discard the traditional concept of processing 'waste' and adapt a more realistic, and economically sound, approach of usable by-products for food and feed application. For example, in a period of declining natural fishery resources it is no longer feasible to discard fish frames following fillet removal when a significant amount of residual valuable flesh is present that can be readily recovered and properly utilized in a variety of mince-based formulated seafood products.

Perception and Need for Elderly Meal Service Program of the Korean Elderly

  • This study was performed to assess the perception and need for the elderly meal service program of the Korean elderly. The purpose of this study was to assess the dietary environment factors which are related to the perception and need for such service. Subjects of this study were 800 elderly persons of whom responses were received from 769(male: 26, female: 543) aged over 60 years. Their mean age was 7.51 $\pm$8.1 years. Seventy two point two percent of them lived with their family and 54.5% of them were supported economically by their children. Among their meal management behaviors, food purchasing was hard to perform and the most aid-needed activity. In their dietary environment, 47.1% of them were supported by their children. The percent of the subjects who were aware of the elderly meal service program was 48.4%. Men were more aware of the meal service program than women(p<0.01). Elderly who were supported by government were more aware of this service than others. Elderly who were in poor dietary environment, were less affluent or had trouble preparing meals expressed better perception this service than others (p<0.05). Those who requested meal services had poor dietary environment than those who did not (p<0.001). The elderly who were younger, with higher income, and lived with a spouse had more demand for home delivered meal service. This study showed that the poorer the greater desire for meal services. Therefore, the need for urgent improvement and expansion of meal services for elderly is suggested by this study.

Free Amino Acid Composition of Korean Spinach (Spinacia oleracea) Cultivars as Influenced by Different Harvesting Time

  • BACKGROUND: There is lack of comprehensive compositional data of the amino acid profile of spinach with regard to different cultivars. A more detailed knowledge in this aspect will be of benefit in the future selection of spinach genotypes with improved nutritional quality.METHODS AND RESULTS: The effects of cultivar type (Jeoncheonhu, Sagyejul, Namdongcho and Mustang) and harvest time (79th, 116th and 145th days after sowing or DAS) on the concentrations of free amino acids in field-grown spinach (Spinacia oleracea) were examined. About 35 different free amino acids were detected and quantified by the amino acid analyzer. Glutamic acid and proline were identified as the major amino acids, while α -aminoadipic acid and α-aminobutyric acid were present in much lower concentrations. Spinach constituted 1468.4 mg/100 g total free amino acids (TAA), of which essential amino acids, neutral/acidic amino acids and sulphur containing amino acids constituted around 15, 45 and 2% of the TAA, respectively. The most limiting amino acids among the leafy vegetables - cysteine was recorded only in Mustang harvested at 116 DAS. Free amino acid contents did not differ significantly among the spinach cultivars and also at different harvest times.CONCLUSION: The data show that, either of the spinach cultivars, preferably Mustang harvested on or after 116 DAS can serve as a significant source of nutritionally relevant amino acids to meet the demand of the growing populations.

Effects of disturbed liver growth and oxidative stress of high-fat diet-fed dams on cholesterol metabolism in offspring mice

  • BACKGROUND/OBJECTIVES: Changes in nutritional status during gestation and lactation have detrimental effects on offspring metabolism. Several animal studies have shown that maternal high-fat diet (HFD) can predispose the offspring to development of obesity and metabolic diseases, however the mechanisms underlying these transgenerational effects are poorly understood. Therefore, we examined the effect of maternal HFD consumption on metabolic phenotype and hepatic expression of involved genes in dams to determine whether any of these parameters were associated with the metabolic outcomes in the offspring. MATERIALS/METHODS: Female C57BL/6 mice were fed a low-fat diet (LFD: 10% calories from fat) or a high-fat diet (HFD: 45% calories from fat) for three weeks before mating, and during pregnancy and lactation. Dams and their male offspring were studied at weaning. RESULTS: Dams fed an HFD had significantly higher body and adipose tissue weights and higher serum triglyceride and cholesterol levels than dams fed an LFD. Hepatic lipid levels and mRNA levels of genes involved in lipid metabolism, including $LXR{\alpha}$, SREBP-2, FXR, LDLR, and ABCG8 were significantly changed by maternal HFD intake. Significantly lower total liver DNA and protein contents were observed in dams fed an HFD, implicating the disturbed liver adaptation in the pregnancy-related metabolic demand. HFD feeding also induced significant oxidative stress in serum and liver of dams. Offspring of dams fed an HFD had significantly higher serum cholesterol levels, which were negatively correlated with liver weights of dams and positively correlated with hepatic lipid peroxide levels in dams. CONCLUSIONS: Maternal HFD consumption induced metabolic dysfunction, including altered liver growth and oxidative stress in dams, which may contribute to the disturbed cholesterol homeostasis in the early life of male mice offspring.

우리나라 식생활 개선 정책의 시대적 변화에 대한 고찰 (Evaluation on Food Policy classified by period on Korean)

  • The change in the police concerning food and dietary life were analyzed in order to provide bases of establishing policy of food and dietary life properly. The last half one century was divided into six periods as follows ; The period since liberlation from Japanese rule(1945-1949) the 1950's (1950-1959) 1960's (1960-1969) 1970's (1970-1979) 1980's (1980-1989) 1990's (1990-1992). Dietary life by 1960's were a life of distress and policies coducted by government took on an relief supply of food at this period. Movement about 'intake of mixed rice with barley and foods from flour' to supress rice consumption were encouraged by government. And Korean recommended dietary allowance was made and the national nutritional survey was practived in the first place by the Ministry of Health and Social Affairs. Dietary life of the country begin to improve sharply along with rice self-sufficiency since 1975 With the growth of food and eating out industry intake of instant food processed food and fast food has increased at the 1980's To ministry of Health and Social Affairs drove campaign of 'Joo-Moon Sik Dahn Je' for dietary life improvement at 1981 The Ministry of Education made and announced a 'School Feeding Law' at 1981 The government that is the Office of Permier and the Ministry of Health and Social Affairs developed compaign for improvement of dietary life and drove 'Jo Eun Sik Dahan Je' with Association of restaurant jointly. Policy on food and dietary life conducted by government up to data were planned mainly dependent on food production supply and demand of food. Infectious diseases continue to decrease with increasing of degenerative diseases which will be required proper management of dietary life. In the future more aggressive intergrated food policy are needed to maintain the public health. Aoso dietary improvement movement should be drived actively.

Introduction to the Technology, Applications, Products, Markets, R&D, and Perspectives of Nanofoods in the Food Industry

  • Nano is a unit that designates a billionth; accordingly nanotechnology could be described as the study and applications of the unique characteristics and phenomena of nanometer size materials. Applications of nanotechnology fall into two categories (one is top-down and the other is bottom-up). Currently, most products are the results of the top-down approach. Nanofoods have distinct functional characteristics stemming from the size, mass, chemical combinations, electrolytic features, magnetic properties of food sources at the nano level and which can be applied for safe absorption and delivery into the body. The greatest advantage of nanofood is that it permits the efficient use of small quantities of nutritional elements by increasing digestive absorption ability and by delivering natural elements without any change in their original characteristics. On the other hand, there are still unsolved problems, such as questions about safety and introduction of harmful material. The demand for new commercial food products is increasing, and commercial food producers are gradually combining nanotechnology and traditional food preparation methods. Nanofoods will improve our eating habits remarkably in the future. Tomorrow we will design nanofoods by shaping molecules and atoms. It will have a big impact on the food and food-processing industries. The future belongs to new products and new processes with the goals of customizing and personalizing consumer products. Nanotechnology is expected to be applied to not only foods themselves, but also to food packaging, production, safety, processing and storage. Also, it is believed that nanotechnology will be applied tracking finished products back to production facilities and even to specific processing equipment in those facilities. The aim of this study is the introduction of technology, applications, products, markets, R&D, and perspectives of nanofoods in the food industry.

영유아의 이유실태(離乳實態) -대전지역(大田地域)- (Weaning Practice for Infants in Daejeon City)

  • For the purpose of investigating the weaning practice for infants, this study of 251 infants aged from 3 months to 2 years old was conducted in Daejeon City during the the period of August 9 through 23, 1978. The results obtained were as follows: About 60% of the infants were breast-fed, 27.6%, mixed-fed, and 12.0%, bottled-fed. The reason for bottle-feeding was either the lack of breast-milk secretion or ill-health of mothers. There was no significant difference in the feeding methods according to a level of mother's education. Sixty precent of the infants began to be weaned 6. months. The most of the infants were completely weaned within 18 months. The knowledge on weaning was mainly obtained from the publications, such as newspapers, journals for women, child care booklets, etc. The difficulties in the weaning practice were the shortage of knowledge on weaning and the unacceptability by the infants. Liquid or semi-liquid foods were firstly given to the more than 60% of the infants as introducing weaning foods, while 23.3% of the babies were given solid foods. Interestingly, the earlier the birth order was, the more babies were given liquid or semi-liquid foods, The motives for weaning was either the boby's demand for other foods than milk(41.3%) or the lack of breast-milk secretion (31.3%). In the selection of supplementary foods, the nutritional value was given the highest consideration) (54.9%). many mothers (64.2%) prepared supplementary foods for infants at home, while 23.1% used commercial body foods and 12.7% gave infants adult's meals as supplementary foods. The major materials for home-made supplementary foods were fruits and vegetables (41.5%) and cereals (37.5%). The commercial supplementary foods (mainly powdered from) were not used much (never used; 53.6%) and even in the babies, who had consumed them once, nearly half of the babies (42.9) did not eat well. Accordingly, the many mothers (68.8%) welcomed the development of the domestic supplementary foods in good quality and one-third (31.2%) responded that they would consume them regardless of the price.

Determination of the Authenticity of Dairy Products on the Basis of Fatty Acids and Triacylglycerols Content using GC Analysis

  • Milk fat is an important food component, and plays a significant role in the economics, functional nutrition, and chemical properties of dairy products. Dairy products also contain nutritional resources and essential fatty acids (FAs). Because of the increasing demand for dairy products, milk fat is a common target in economic fraud. Specifically, milk fat is often replaced with cheaper or readily available vegetable oils or animal fats. In this study, a method for the discrimination of milk fat was developed, using FAs profiles, and triacylglycerols (TGs) profiles. A total of 11 samples were evaluated: four milk fats (MK), four vegetable oils (VG), two pork lards (PL), and one beef tallow (BT). Gas chromathgraphy analysis were performed, to monitor the FAs content and TGs composition in MK, VG, PL, and BT. The result showed that qualitative determination of the MK of samples adulterated with different vegetable oils and animal fats was possible by a visual comparision of FAs, using C14:0, C16:0, C18:1n9c, C18:0, and C18:2n6c, and of TGs, using C36, C38, C40, C50, C52, and C54 profiles. Overall, the objective of this study was to evaluate the potential of the use of FAs and TGs in the detection of adulterated milk fat, and accordingly characterize the samples by the adulterant oil source, and level of adulteration. Also, based on this preliminary investigation, the usefulness of this approach could be tested for other oils in the future.

  • 본 연구에서는 유가공 업체의 국내외 시장 발전성과 향후 홍보 및 유통전략에 대해 알아보고자 한다. 국내 유가공 업체의 제품들을 차별화하여, 이를 통한 핵심역량을 개발하고 새로운 시장을 개척하여 새로운 소비를 창출하는 유통 과정의 혁신을 이루어 유가공 업체의 매출증대를 높이고 우유의 품질을 향상시키며 프리미엄 우유 시장을 새롭게 형성하여 소비 활성화를 극대화 시키고 이를 기대하며 또한, 한류를 이용한 판매촉진 활동을 활성화 시키고 해외수출 시장을 적극 개척하여 새로운 소비를 창출함과 동시에 백색시유의 품종 다양화를 노려야 한다. 그리고 저지종(Jersey)의 도입을 통하여 치즈의 제조원가를 낮추고 음용 이외에 미용과 요리 분야에서 다양하게 우유를 활용하면 유가공 업체의 수익을 증대시킬 수 있고 유제품 소비의 활성화를 기대할 수 있을 것이다. 그리고 영양학적인 가치와 풍미, 더 나아가 환경을 생각하는 방향으로 품종의 전환이 필요하며 향후 고품질의 프리미엄 우유가 새로운 트렌드로 자리매김해 나갈 것으로 판단된다. 또한 우유 효능에 대한 다양한 홍보를 통하여 인식전환을 도모하고 높은 연령대일수록 낮아지는 우유 소비율을 높이는데 기여할 것으로 보인다.

경남 일부 초등학교 중학년의 식행동, 영양지식 및 식생활교육요구도 (Eating Behavior, Nutrition knowledge, and Educational Needs of the Food and Nutrition of Elementary School Students in the Gyeungnam Province)

  • This study was conducted to provide basic data for development of a dietary education textbook and guidebook by investigating and analyzing eating behavior, nutrition knowledge and educational needs in elementary school students. Most of the subjects were eating three meals a day (71.5%) and breakfast (75.3%). The percentage of students who consumed proper amount of meals (49.2%) was low. The percentage of students consuming salty food and fatty foods was 28.6% and 42.1%, respectively. The consumption of meat, fish, egg, bean and tofu was high, while the consumption of vegetables, fruits and seaweed was low. The percentage of students consuming processed food was high, but the percentage reading nutrition labels (34.9%) and hazard analysis critical control point (HACCP) mark (26.9%) when buying processed foods was very low. Total scores of eating behavior and nutrition knowledge were significantly higher in female students than in male students (p < 0.05-p < 0.001). The desirable frequency of the education was once a week (60.5%). The most preferred educational method was 'experiment and cooking practice' (40.1%). The students wanted dietary information as 'cooking' (39.0%). As a result of this study, many problems were found in the eating behavior of students and nutritional knowledge was observed to be low as well. On the other hand, the demand for dietary education was very high. The findings of this study suggested the need for developing dietary education programs in order to encourage proper eating habits of students.
