미이용(未利用) 식물자원(植物資源)의 연구(硏究)(I) -식용(食用) 야초(野草)의 성분(成分)에 관하여- (Studies on Unutilized Plant Resources(I) -Components of Wild Edible Plants-)

  • To evaluate nutritional values and to detect pharmacologically active and antibacterial components of wild edible plants in Korea, 20 species were examined. 1) The essential free amino acid compositions of these plants were determined by TLC. The plants contained threonine, leucine, valine and methionine. 2) In antibacterial tests of 17 species the plants Hemerocallis sp. and Plantago asiatica showed an antibacterial activity against Staphylococcus, Bacillus, Eschericia, and Salmonella species. 4) Rutin. quercitrin, $k\ddot{a}mpferol$, chlorogenic acid and caffeic acid were also identified.

버들송이(Agrocybe aegerita) 영양성분 및 생리활성 분석 (Analysis of nutritional compositions and biological activity of Agrocybe aegerita)

  • 식용버섯으로서 버들송이버섯의 우수성을 검증하고 재배면적과 소비의 확대보급을 위하여 일반성분, 무기성분, 총 폴리페놀 함량 그리고 전자공여능 등 몇가지 생리활성을 측정하였다. 일반성분은 조단백질이 38.3%로 높게 나타났으며, 무기성분은 K, P, Mg, Mn 및 Na 순으로 높게 나타났다. 총 폴리페놀 함량은 열수추출물은 $65.2{\mu}g/m{\ell}$, 에탄올 추출물은 $46.0{\mu}g/m{\ell}$ 이었으며, 플라보노이드 함량은 열수추출물에서 $12.5{\mu}g/m{\ell}$, 에탄올 추출물에서 $7.1{\mu}g/m{\ell}$ 이었다. DPPH radical 제거 활성은 열수추출물에서 58.2%, 에탄올 추출물에서 79.2%의 free radical 제거활성을 보여 열수 추출물보다는 에탄올 추출물에서 항산화활성이 높았다. 버들송이버섯 추출물의 총 폴리페놀함량, 플라보노이드 함량 그리고 DPPH radical 제거 활성은 큰느타리버섯 또는 느타리버섯보다 함량이 많고 항산화활성이 높은 것으로 조사되었다. Tyrosinase 저해활성은 열수 추출물은 63.2%, 에탄올 추출물에서는 65.0%의 저해활성을 나타내어 추출용매에 따른 큰 차이는 보이지 않았다. ACE 저해활성은 열수 추출물은 78.7%, 에탄올 추출물은 75.0%의 저해활성을 나타내어 열수 추출물에서 다소 높은 경향이었다. 이러한 결과로 볼 때 버들송이 버섯은 큰느타리버섯이나 느타리버섯 보다 폴리페놀 물질과 같은 항산화성분이 많고, 생리활성이 우수하여 식용버섯으로의 가치가 충분한 것으로 나타났다.

구실잣밤나무 열매의 영양성분 (Nutritional Compositions in Edible Portion of Castanopsis cuspidata Seeds)

  • 잣밤의 소재를 널리 알리고 새로운 식품 원으로 개발하는 목적의 일환으로 잣밤 가식부의 성분을 분석하였다. 습물기준으로 일반성분 중 수탄수화물은 63.10, 수분 29.64, 조단백질 5.03, 회분 1.25 및 조지방 함량은 1.00%이었다. 주요아미노산은 glutamic acid, aspartic acid, arginine과 histidine이었고, 유리당은 3.74%로 sucrose의 함량이 가장 높았다. 잣밤 총 지질의 지방산 중 linolenic acid(18:3), palmitic acid(16:0) 및 oleic acid(18:1)가 주요 지방산으로 분석되었다. 또한, 주요 무기성분은 P, K, Mg, Zn 및 Ca이었고, 이들의 함량은 각각 88.31, 26.00, 13.20, 10.90 및 3.93 mg/100g이었다. 상기의 결과를 종합하여 풍부한 영양성분을 포함한 구실잣밤의 열매를 새로운 식품 소재의 개발에 사용하여도 효과적일 것으로 예측된다.

국내산 두 품종 블루베리의 영양성분 및 항산화 활성 비교 (Nutritional compositions and antioxidative activities of two blueberry varieties cultivated in South Korea)

  • 국내 김천산 lowbush 블루베리와 평택산 highbush 블루베리의 영양성분 및 항산화 활성을 분석하였다. 일반성분조성 분석결과 산지에 따른 유의적인 차이는 없었다. pH는 김천산이 4.35로 평택산의 4.57보다 낮았고 가용성고형분 함량은 평택산 $9.71^{\circ}Brix$ 및 김천산 $8.35^{\circ}Brix$로 차이가 있었다. 주요 5종의 대량무기질 함량 분석결과 김천산과 평택산에서 각각 P(11.60, 12,27%)>Ca(5.33, 9.06%)>Mg(4.70, 6.05%)>Na(0.24, 0.20%)>Zn(0.06, 0.07%) 순으로 함유되어 있었다. 주요 유리당은 김천산 및 평택산 각각 fructose 2.99, 2.89%와 glucose 2.81, 2.61%로 나타났고 sucrose, maltose 및 lactose 등의 이당류는 검출되지 않았다. 불포화지방산은 김천산이 81.7%로 평택산의 79.9%보다 다소 높았다. 두 품종 모두 16종(필수 아미노산 7종, 비필수아미노산 9종)의 유리아미노산을 함유하였고 총 유리아미노산 함량대비 필수아미노산은 김천산이 31.8%로 평택산의 28.9%보다 높았다. 준필수아미노산인 arginine은 평택산에 많이 함유되어 있는 것이 매우 특징적이었다. 생리활성 성분인 anthocyanin, trans-resveratrol 및 total polyphenol을 정량하여 김천산과 평택산에서 각각 anthocyanin 22.0, 18.1 mg/100 g, trans-resveratrol 0.12, 0.11 mg/100 g 및 total polyphenol 141.3, 138.4 mg/100 g의 결과를 얻었다. 전자공여능으로 분석한 두 블루베리의 항산화 활성은 농도의존적이었으며 $1,000{\mu}g/mL$의 농도에서 각각 79.7% 및 74.1%으로 김천산이 평택산보다 높게 나타났다. 항산화활성은 total polyphenol, anthocyanin 및 trans-resveratrol과 같은 기능성 성분의 함량이 김천산에서 더 높았던 결과와도 밀접한 상관관계가 있는 것으로 보여진다. 이상과 같은 기초적 연구결과는 향후 수입산 블루베리를 대체하기 위한 국내의 블루베리 재배면적 확대뿐만 아니라 기능성 식품소재로서의 이용에 있어 유용한 자료로 활용될 수 있을 것으로 기대된다.

생식 제품의 섭취가 건강한 성인여성의 영양섭취상태, 식행동, 혈청지질농도 및 건강지표에 미치는 영향 (The Effects of Uncooked Powdered Food on Nutrient Intake, Serum Lipid Level, Dietary Behavior and Health Index in Healthy Women)

  • The purpose of this study was to obtain the nutritional values and objective data of uncooked powdered food (UPF) in korea. We interviewed 27 healthy female subjects aged over 25 years living in the lksan area. We just replaced common breakfast and dinner of the subjects with UPF. Their dietary intake status was evaluated by 24-hour recall method. Their body compositions were measured using body fat analyzer. Also we conducted hematological and clinical analysis of blood. The intake of energy, lipid and protein has decreased as people started to take UPF, but the intake of vitamins and minerals has increased. The quality of meals has improved after taking UPF. Due to the energy loss by taking UPF, weight and body fat gradually lessened. Among the lost weight the percentage of the body fat was high and we judged that the process of losing weight was successful. It is hard to predict whether weight loss will occur to people who are already in shape or not, but if overweight and obesity people regularly take UPF instead of other food products, we assume that UPF will help lessening body fat. The most positive change among biochemical changes by taking UPF was decreasing of serum lipid contents. The concentrations of total cholesterol and LDL-cholesterol gradually decreased and decreased intently after 12weeks. Serum HDL-cholesterol gradually increased and serum triglyceride showed gradual decrement. When healthy adult women replaced two of three meals with UPF for 3months, we were able to see some useful changes like decrement of body fat and serum lipid control and during this 3month period, no significant nutritional problems occurred. Complete judgement on UPF may be difficult with these conclusions but if people take a nomal meal once and replenish iron from taking UPF twice a day, we assume that replacing UPF with regular meal not be a problem in nutritional status. If other experiments on the effects of UPF proceed, we believe that those experiments will be very helpful in judging the nutritional value of UPF. (Korean J Nutrition 36(1) : 49-63, 2003)

표고버섯의 채취 시기 및 부위별 영양성분 함량 비교 (Component Comparions of the Nutrient Composition of Lentinus Edodes based of Harvest Period)

  • Many studies have showen that Letinus edodes have a reducing effects on blood pressure and lipid levels in animals with high blood pressure and hyperlipidemia. But the only cap has been on the market as goods and the stipe has been wasted. The price is very variable and is based on harvest time and the part of the plant currenty, there is not much information about the nutritional composition and bio-fuctional effects of Letinus edodes based on harvest time and part. Some farmers have been selling the powder seasoning by drying and pulverizing Letinus edodes including stipe to develop value added, late harvested Letinus edodes and its stipe these days. This study was conducted to investigate and compare the nutritional composition of Letinus edodes harvested at different times (early: E, late: L) and separated by part (cap: C, stipe: S). The 4 kinds of materials were named as early harvested cap (EC) and stipe (ES), and late harvested cap (LC) and stipe (LS) samples were obtained from Mungyeong City Agricultural Technology & Extension Center. The composition analysis of the nutrients in the 4 materials was conducted by using the AOAC method. The proximate components (moisture, protein, fat, fiber, ash, and carbohydrates), minerals and vitamin content were measured. Nutritional composition of Lentinus edodes did not show any significant difference between early and late harvested mushrooms. Nutritional compositions were different according to part. The results demonstrate that the late harvested stipe can also be used as a quality food material.

Assessment of Anthropometry, Nutritional Compositions and Contribution of School Meals to the Daily Nutrient Requirements of Primary School Children from Rural Communities

  • The study aims to evaluate the nutritional status and influence of school meal intakes on RDA of primary school children in Akure community, Ondo State, Nigeria. A cross-sectional study was conducted among 728 primary school children aged between 6 and 15 years. Data were collected using interviewer-administered semi-structured questionnaires. The questionnaires collect information on demographic characteristics and home dietary intake of the subjects. The heights and weights of the children were measured using a standard procedure and height-far-age and weight-far-height z-score were determined. The children's school meal intakes were weighed for 4 days and samples were collected for chemical analysis. The results showed that 37.8% of the children were not wasted, 35.7% mildly wasted, 18.7% moderately wasted and 7.8% severely wasted. Also, 57.8% were not stunted, 29.3% mildly stunted, 11.0% moderately stunted and 1.9% were severely stunted. The subjects' home dietary intakes showed that 73.6% ate starchy food only, 19.9% ate protein based food, while 11.6% and 11.5% consumed fruits/vegetables and snacks to complement home meals respectively. The chemical composition of school meal was energy 379 - 413kcal, moisture content 5.9 -7.3g, carbohydrate 56.5 - 69.4g, fat 4.6 - 12.7g, crude fiber 0.1 - 2.4g, ash content 3.6 - 8.5g and protein 14.9 - 22.3g. The mineral contents were calcium 45.9 - 59.2mg, sodium 5004 - 59.6mg, zinc 2.3 - 3.1mg, magnesium 55.0 - 61.6mg, potassium 55.3 - 69.3mg, copper 0.2 - 0.3 mg, while others 1.3 - 1.9mg, 243 - 659mg and 831 - 9,510mg were iron, phosphorous and vitamin-A respectively. The contribution of school meals to subjects' RDA was within 2.9% and 1540%. In summary, school meal intake contributed positively to the RDA and nutritional status of the school children.

기능성식품 인체적용시험 제도 비교 (Human Studies on Functional Foods: How They Are Regulated)

  • Along with the steady growth of health functional food (HFF) markets, research evaluating the human effects of HFF has been expanding. In this study, we investigated the regulatory and management system of human study on HFF in the USA, Japan and UK, and the Korean domestic regulations on HHF, medicines, medical devices, cosmetics and biotechnology in order to improve the domestic management system. In these four countries, institutional review board (IRB) or research ethics committee (REC) approvals are required for on human study of HHF, but regulatory and management systems differ from country to country. In the USA, human studies on HFF for structure/function claims do not require the FDA's prior approval but clinical trials of the disease treatment effects of HHF require prior approval from the FDA. In the USA, IRBs are managed by the Department of Health and Human Services (DHHS) rather than the FDA, and IRBs in those institutions which would execute the clinical trials requiring prior approval from the FDA or human studies funded by the USA federal government are required to be registered on the DHHS. In the UK, although the government does not require prior approval of human study, authorized RECs managed by the National Research Ethics Service (NRES) and other independent RECs review the human study. In Japan, human study for HFF must conform with "Ethical guidelines for epidemiological research" and IRB registration has not been required. In Korean domestic regulations, the responsibilities, compositions, functions and operations of IRBs on medicines, medical devices and biotechnology are legally specified, but not those of IRB on HHF. These foreign statuses for the management of human study on HFF and comparisons with Korean regulations are expected to be used as basic data to improve the domestic legal system.

규칙적인 생식섭취가 고지혈증 환자의 영양소 섭취상태, 체지방 및 혈청의 지질조성에 미치는 영향 (The Effects of Uncooked Powdered Food on Nutrient Intake, Body Fat and Serum Lipid Compositions in Hyperlipidemic Patients)

  • This study was designed to investigate the effects of weight reduction and changes in serum lipid composition using a commercial uncooked powdered food (UPF) diet on 27 obese hyperlipidemic women over a period of 12 weeks. We replaced the standard breakfast and dinner of each of the subjects with UPF. Their dietary intake status was evaluated by 24-hour recall method. Their body compositions were measured using a body fat analyzer. Also, we conducted hematological, clinical and lipid profile analyses of their blood. Their intake of energy, lipid and protein significantly decreased as the subjects started to take UPF, but their intake of vitamins and minerals, other than iron, increased. Due to the energy intake decrease, the subjects' weight, body fat and waist circumference significantly decreased. Among the lost weight the percentage of the body fat was high. We judged that this process of losing weight was successful in obese hyperlipidemic women. Serum HDL-cholesterol gradually increased and serum total-cholesterol, LDL-cholesterol, triglyceride levels showed gradual decreases. When obese hyperlipidemic women replaced two of three meals with UPF for 3 months, we were able to see useful changes like decreased body fat and serum lipid. Complete judgment on the usefulness of UPF may be difficult but if people take a standard meal once a day and replenish their iron by taking UPF twice a day, we assume that replacing UPF with balanced regular meal not be a problem in nutritional status. Our results show that UPF is effective in the diet therapy of obese hyperlipidemic women.

전북지역 일부 중년남성의 비만도에 따른 체성분 분석과 식행동에 관한 연구 (A Study on Body Compositions and Food Behaviors of Middle Aged Men Living in Jeonbuk Province by Percentage of Body Fat)

  • The purpose of this study was to compare the body compositions and food behaviors of middle aged men with different obesity indices. The subjects were 62 middle aged men who lived Gunsan city. Heights, body weights, soft/lean masses, fat masses, percentages of body fat, and fat distributions were measured. Food habits and health-related lifestyle habits were evaluated based on questionnaires. The subjects were assigned to one of the following groups based on their percentage of body fat ($\%$Fat) ; normal, overweight and obesity. The results were as follows: their heights, fat masses, percentages of body fat, WHR, RBW, BMI and fitness scores were significantly higher in the obese subjects when compared to the normal and overweight subjects. Self-perceptions of weight and desires of weight control were significantly related with their percents of Fat. The overweight and the obese groups skipped meals, ate supper out, ate snacks, smoked tobacco, and exercised less frequently than the normal group. There were no significant differences in the scores of the dietary habits and drinking of alcohol among the three groups. Therefore, proper nutritional education on regular meals and intervention is required if middle aged men want to be of normal weight and have healthy lifestyles.
