대홍의 식품학적 성분 분석 (Food Nutritional Composition of Prunus mume Siebold et Zucc: Dae Hong)

  • 본 연구는 매화나무의 새로운 품종인 대홍의 식품학적 가치평가를 분석하기 위해 일반성분, 유리당, 유기산, 아미노산, 무기질 및 비타민 함량 등을 분석하였다. 대홍의 탄수화물은 46.8±0.92%로 가장 높은 함량을 보였고, 조단백질(18.9±0.01%), 수분함량(11.8±0.13%), 조섬유·조지방·회분(5.7±0.94~6.7±0.52%)순으로 검출되었다. 유리당은 5종 검출되었고 mannitol과 fructose가 대부분을 차지하였고, 무기질은 6종이 검출되었으며, K와 P의 함량이 가장 높게 나타났다. 총 페놀함량은 615.99±0.52 mg/100g 이었고 7가지 유형의 필수 아미노산을 포함하여 대홍의 총 아미노산 함량은 121.42 mg/g이었다. 이러한 결과는 대홍이 건강을 위한 혁신적인 식품으로서 혹은 천연식품 방부와 대체재로서 새로운 제품에 포함될 수 있는 가능성을 보여준다.

Regulatory Effects of Exercise and Dietary Intervention in Mitogen Activated Protein Kinase Signaling Pathways in Rats

  • As a central component of a novel protein kinase cascade, the activation of the mitogen-activated protein (MAP) kinase cascade has attracted considerable attention. We sought to determine the effect of exercise and diet on the activation of the extracellular-signal regulated protein kinase (ERK) 1/2 and the p38 MAP kinase pathways in rat soleus muscle. Forty-eight Sprague-Dawley rats were assigned to one of two dietary conditions: high-carbohydrate (CHO) or high-fat (FAT). Animals having each dietary condition were further divided into one of three subgroups: a sedentary control group that did not exercise (NT), a group that performed 8 weeks of treadmill running and was sacrificed 48 h after their final treadmill run (CE), and a group that was sacrificed immediately after their final routine exercise training (AE). A high-fat diet did not have any significant effect on phosphorylated and total forms of ERK 1/2 or p38 MAP kinase. In chronically trained muscle that was taken 48 h after the last training, phosphorylated ERK 1/2 significantly increased only in the FAT but not in the CHO groups. In the case of total ERK 1/2, it increased significantly for both groups. In contrast, both phosphorylated and total forms of p38 MAP kinase decreased markedly compared to sedentary muscle. In muscle that was taken immediately after a last bout of exercise, phosphorylated ERK 1/2 increased in both groups but statistical significance was seen only in the CHO group. Total ERK 1/2 in acutely stimulated muscle increased only in the CHO-AE group even though the degree was much lower than the phosphorylated status. Muscle that was taken immediately after the routine training increased in phosphorylation status of p38 MAP kinase for both dietary conditions. However, statistical significance was seen only in the CHO group owing to a large variation with FAT. In conclusion, a high-fat diet per se did not have any notable effect versus a high-carbohydrate diet on MAP kinase pathways. However, when diet (either CHO or FAT) was combined with exercise and/or training, there was differentiated protein expression in MAP kinase pathways. This indicates MAP kinase pathways have diverse control mechanisms in slow-twitch fibers.

가죽나무(Ailanthus altissima)의 부위별 성분 분석 (Analysis of Components in the Different Parts of Ailanthus altissima)

  • 본 연구는 뿌리를 저근백피라는 한방생약재로 사용하는 가죽나무(Ailanthus altissima)의 뿌리와 줄기 그리고 잎을 기능성 식품을 개발하기 위한 연구의 일환으로 영양정분과 생리활성 물질의 함유량을 측정하였다. 일반성분을 분석한 결과 뿌리에는 조회분(9.20%)과 조단백질(7.86%)이 많았으며, 잎에는 조단백질(11.36%) 그리고 줄기에서는 탄수화물(81.74%)의 함유량이 비교적 높았다. 수용성 단백질은 잎에서 9,839.52 mg%로 뿌리와 줄기보다 매우 많이 함유하였으며, 환윈당과 유리당은 뿌리에서 1,813.94 mg%와 1,140.20 mg%, 잎에서는 1,670.98 mg%와 1,190.42 mg%를 함유하였다. 유리아미노산은 뿌리에서 2,018.58 mg%로 잎(1,070.88 mg%)과 줄기(427.55 mg%)보다 많이 함유하였으며, 특히 뿌리에는 arginine과aspartic acid의 함유량이 매우 높아 유리아미노산의 약 85%를 차지하였다. 아미노산 유도체 함량은 잎에서 780.70 mg%로 가장 높았으며, 뿌리는 430.95 mg%을 함유하였다. 이중 뿌리에는 항산화 및 간기능 향상에 효과가 있는 것으로 알려진 taurine을 61.68 mg% 함유하였다. 가죽나무의 부위별 무기질을 분석한 결과 모든 부위에서 Ca와 K 그리고 Mg의 함유량이 매우 높아 무기질 총량의 $83{\sim}98%$를 차지하였으며, 뿌리에는 Fe와 Al의 함량도 비교적 높았다. 가죽나무의 부위별 시료와 추출물에 대한 폴리페놀과 플라보노이드 화합물을 측정한 결과, 잎에는 821.58 mg%의 폴리페놀과 2,501.67 mg%의 플라보노이드를 함유하였으며, 추출물 또한 잎의 물 추출물에서 8,040.35 mg%의 폴리페놀과 에탄을 추출물에서 13,592.20mg%의 플라보노이드를 함유하였다. 이상의 결과 한방생약재로 사용되고 있는 가죽나무의 뿌리를 포함하여 잎에서도 영양성분과 생리활성 물질이 다량 함유된 것으로 분석되었다.

New Directions in Communicating Better Nutrition to Older Adults

  • Nutrition education should be an important component of ongoing health promotion for older adults and their caregivers. This is because prevention through sound nutrition and food hygiene practices and regular excercise is the most cost-effective way to reduce risks for and deal with their major health problems. nutritions education services should effectively promote optimum intake and successful self-care. Unfortunately, however relative to other vulnerable groups, nutrition education for older adults has not been systematically developed or evaluated. Usually oder adults care a lot about their health, so this should be a relatively easy group to teach - but their increasing numbers, longevity and great diversity with respect to health, physical, and economic status and educational level present challenges. Some older adults may not perceive they would benefit from nutrition education, so interesting and motivating them is a challenge. The food and nutrition knowledge of older people has been acquired through a lifetime of experience. For most older adults in the Asian region, their sources are restricted by their restricted education, so that their major sources of information have been informal sources, such as television, radio, friends, family, and perhaps newspapers and magazines if they are literature. Nonetheless, dietary advice for older people should build on their existing knowledge and ingrained values. It should provide information useful in daily food selection, and focus on food, not nutrients - the same foods and groups considered appropriate for younger people, with consistent messages as given throughout the population. Attention must also be paid to discovering learning styles in older people. When we teach in schools, the young students are a captive audience resigned to their learning role. Learning by an older adult, however, reflects an effort to meet his or her perceived needs. Therefore, nutrition education should be a positive experience in a non-threatening environment, relaxed and non-competitive, and perhaps even social environment. The messages also need to be practical and achievable. A needs assessment is essential, because our ability to provide the most effective nutrition education will depend on our success in matching the needs, both perceived and unperceived. of this vulnerable group. Therefore, go to the potential older learners to assess their interest and preferences. Nutrition education activities for older adults are widespread, but few have been evaluated. Evaluation is therefore also recommended, particularly when new methods are used. Tips from other countries for giving successful nutrition education will be given, including some examples of applications as attempted in Hong Kong. Research needs will also be described. In conclusion, successful nutrition education for older adults depends on positive needs-based messages. This is may be hard to do, as few good examples are available to illustrate these principles.

우렁이의 생체부위별 일반성분, 아미노산, 무기질 및 지방산 분석 (Proximate Composition, Amino acid, Fatty acid and Inorganic Matter of Apple Snail)

  • 우렁이 생체에 대하여 일반성분을 분석한 결과 수분함량은 74.8%, 조단백질 12.7% 및 조지방 0.6%의 함량을 보여 고단백 저지방의 식품재료로써 그 이용 가능성을 찾을 수 있었다. 또한 우렁이를 껍질, 내장 및 근육 3부분으로 분류하여 무기성분을 분석한 결과 우렁이에 함유되어 있는 주요 무기성분으로는 P, Ca, Mg 및 Na이었으며, 그 중 껍질 및 내장, 근육모두에서는 Ca이 가장 많이 함유되어 있어 중요한 Ca 급원으로 이용 가능하다. 우렁이 생체의 아미노산을 분석한 결과 arginine이 31.7% 로 가장 높게 나타났으며, 다음으로 alanine 21.2%, 와 glutamic acid 7.1% 순이었다. 아미노산의 경우 식용할 수 있는 근육에서 조개의 감칠맛과 풍미성분인 alanine 과 glutamic acid 조성이 많으므로 가공식품제조에 바람직하였으며, 또한 arginine 역시 매우 풍부 해 건강식품으로도 이용 가능성을 보여 주었다. 지방산의 경우 포화지방산이 생체, 내장에서 각각 5.4,2.8%로 나타났다. 이러한 결과는 우렁이의 이용성 제고 및 가공 제품화에 중요한 기초 자료로 활용될 수 있을 것으로 생각된다.

냉풍건조 멸치의 식품성분 특성 (Food Component Characteristics of Cold Air Dried Anchovies)

  • 냉풍건조 멸치의 품질가치를 검토하기 위하여 냉풍건조 멸치의 식품학적 품질 특성을 천일건조 멸치 및 열풍건조 멸치와 비교하여 살펴보았다. 냉풍건조 멸치의 경우 열풍건조 멸치나 천일건조 멸치 에 비하여 과산화물 값은 낮았고, 고도불포화지방산 잔존율은 높아 건조 중 지질산패가 가장 적게 진행되었다. 냉풍건조 멸치는 천일건조 멸치 및 열풍건조 멸치에 비하여 L값의 경우 높았고, a값 및 b값의 경우 낮아, 냉풍건조 멸치가 기타 건조법으로 제조한 멸치에 비하여 색상이 우수하다고 판단되었다 색도, 산패취 및 형상에 대한 관능검사 결과 냉풍건조 멸치가 기타 건조법으로 제조한 마른 멸치보다 품질이 우수하였다. 냉풍건조 멸치는 칼슘 및 인과 같은 무기질과 구성 아미노산 함량의 경우 천일건조 멸치 및 열풍건조에 비하여 차이 없이 풍부하면서, 고도불포화지방산의 조성비는 이들 멸치보다 오히려 약간 높아, 천일건조 멸치에 비하여 건강 기능적인 면에서 약간 우수하리라 판단되었다. 맛 및 엑스분 추출정도를 알 수 있는 열수 가용성 질소함량은 냉풍건조 멸치가 가장 많았고, 다음으로 천일건조 멸치, 열풍건조 멸치의 순이었다. 이상의 화학적(지질산패 정도, 맛 및 영양특성) 및 관능적(색도, 산패취, 형상등)검사로 미루어 냉풍건조 멸치가 기존의 천일건조 멸치 및 열풍건조 멸치에 비하여 우수하다고 판단되었다.

Lycopene Content and Fruit Morphology of Red, Pink, Orange, and Yellow Fleshed Watermelon (Citrullus lanatus) Germplasm Collections

  • High-quality and high-phytonutrient watermelon fruits have strong market opportunities besides their health related benefits. Hence, investigating quality and nutritional related traits of watermelon genetic resources could provide important baseline data in breeding for increased lycopene content thereby increasing the marketability of watermelon. To this end, we have examined some fruit morphological traits and lycopene content of 105 genetic resources. Seeds, originally obtained from 22+ countries, were obtained from the National Agrobiodiversity Center, Jeonju, South Korea, grown in an experimental field and harvested at a fully mature stage. The size of pistil scar (SPS), the width of stripes (WS), weight of fruit (WF), length of fruit (LF), width of fruit (WIF), the thickness of pericarp (TP), soluble solids content (SSC), fruit shape in longitudinal section, ground color of skin, the intensity of the green color of skin, fruit shape at the apical part, grooving distribution, conspicuousness of stripes, and main color of the flesh were recorded on the field and inside laboratory and the lycopene was measured using spectrophotometric and HPLC methods. Watermelon fruits have shown a diverse morphological characters. Red and pink fleshed fruits dominated in the entire collections. Fruits with higher thickness of rind were found to exhibit less soluble solid content (SSC). Korean origin fruits were characterized by intermediate SSC while the United States of America (USA), Russia (RUS), Tajikistan (TJK), Turkmenistan (TKM), Taiwan (TWN), and Uruguay (URY) originated fruits had the highest SSC. The lycopene content varied between 41.37 and 182.82 ㎍/g, 2.81 and 163.72 ㎍/g, and 3.54 and 255.47 ㎍/g using HPLC, UV-Vis spectrophotometer, and microplate reader spectrophotometer, respectively. Red- and pink-fleshed fruits had the highest levels of lycopene content compared to the yellow- and orange-fleshed. Lycopene content had a significant positive correlation with SSC, however, no correlations were detected between lycopene and other quantitative fruit morphological characters. Our study demonstrated high diversity exists in fruit morphological traits and lycopene content of the germplasm collections which provide beneficial baseline data for a future breeding program and utilization of watermelon germplasm collections in gene banks for the maintenance and improvement of the current levels of production, marketability, and health-related benefit of watermelon fruits.

일제하 한국인의 식품 섭취 및 생활 계층별로 본 영양소 섭취량에 관한 연구 (An Examination of Food Intake and Nutritional status of the Koreans by Walks of Life during the Period of Japanese Ruling)

  • While ruling Chosun, with a view to making Chosun the primary supplier of food, Japan made the peasantry of Chosun go to ruin by leaving land from them through land enterprises, and the projects of increasing rice production. At the same time, Japan formed the higher classes comprising pro-Japanese capitalists, landlords and intellectuals, and protected them in order to carry out her colonial policies. Naturally there came into being a great gulf between the minority of high society and the majority of the poor in Chosun. As there was a great difference in food life between the two, I'm going to examine the literature of those days to grasp exactly the condition of their food intake. As for the staple food, out of thirteen provinces in Chosun, 13% lived on only rice and 27% on other minor cereals with no rice. As for the subsidiary food, about thirty percents did not take any animal protein. The examination of intake of nutrition by classes shows that the higher and middle classes took the necessary amount of calorie and protein and that the component ratio of calorie was comparatively properly distributed. The lower classes are defined as those whose monthly income was less than 100 won and the peasantry in general. And again the peasantry are classified into three-high, middle and low-according to their farming conditions. The tenant farmers in Kyeongguido and the peasants of Darli community took enough amount of calorie and protein, but much smaller amount of animal protein. Fire-field farmers led not less miserable food intake than the extremely poor peasants. They seldom lived on rice. Potatoes, oats and millets were their staple food. Lastly, Engel's coefficient for the Tomack-min (the residents in mud huts) who were among the three extremely poor classes, was 73.3%, which was much higher than that of the lower classes in then Japan. Rationed rice and barley were their staple food but the rationed amount was not sufficient to satisfy needs of physical labor. In conclusion, during the period of Japanese ruling of Chosun, the minority of higher and middle classes in Chosun generally took sufficient amount of nutrient, while the status of food intake with poor peasants, fire-field farmers and Tomack-min was extremely miserable.

  • 우리나라의 식량공급양상(食糧供給樣相)과 그 변동(變動)을 세계적 입장(世界的 立場)에서 살펴보고저, FAO의 식품수급표(食品需給表)의 자료(資料)를 토대(土臺)로, 주성분 분석법(主成分 分析法)과 수치군(數値群)패턴해석법(解析法)을 적용(適用)하여 수량적 해석(數量的 解析)을 시도(試圖)하여 다음과 같은 결과(結果)를 얻었다. (1) 제(第) 1, 제(第) 2 주성분(主成分) 축(軸)상의 각국(各國)의 식(食)패턴은 서구형식형태(西歐型食形態)를 갖는 국가군(國家群), 라틴민족형(民族型)의 식형태(食形態)를 갖는국가(國家), 아세아(亞細亞) 근동(近東)의 곡류편중국(穀類偏重國) 및 호주등 식육편중국(食肉偏重國)으로 분류(分類)되는데, 우리나라는 곡류편중국(穀類偏重國)에 속(屬)하며이들 국가(國家)중에서도 가장 경작식품(耕作食品)애 치중(置重)되어 있다. (2) 수치군(數値群)패턴해석결과(解析結果) 세계각국(世界各國)의 패턴은 구미제국(歐美諸國)에 속(屬)하는 군(群)과 아세아국가(亞細亞國家)들이 포함(包含)되는 군(群)으로 나누어지며 한국(韓國) 패턴은 49년도(年度)의 일본(日本), 필피핀, 대만등과 패턴 유사율(類似率)이 매우 크다(3) 69년도(年度)의 한국(韓國)패턴은 $63{\sim}65$년도(年度)의 패턴에 비(比)하여 대다수 국가(大多數 國家)들과 유사율(類似率)이 증가(增加)하였다 그러나 패턴분포도(分布圖)상의 위치(位置)는 세계각국(世界各國)의 그것과 아직도 멀리 떨어진 곳에 있다. 기간(期間)중 한국(韓國)패턴의 변동(變動)은 구미국가(歐美國家)들과는 물론 아세아국가(亞綱亞國家)들과도 다른 한국(韓國特有)한 방향(方向)으로 움직이고 있는바, 이에 대한 신중(愼重)한 검토(檢討)와 적절한 대책(對策)이 요청(要請)된다.

국민건강영양조사 구강검사 개요 (Data resource profile: oral examination of the Korea National Health and Nutrition Examination Survey)

  • Objectives: The Korea National Health and Nutrition Examination Survey (KNHANES) is a national surveillance system that has been assessing the health and nutritional status of Koreans since 1998. Based on the National Health Promotion Act, the surveys have been conducted by the Korea Centers for Disease Control and Prevention (KCDC). Methods: An oral examination as part of The National Health and Nutrition Examination was proposed to calculate the sample design and survey participation. The surveying system was presented by classifying the measurement environment, screening, and survey items by year, and the merits and limitations of using the data were suggested by examining the status of survey quality management and the process of disclosing raw data. Results: This nationally representative cross-sectional survey samples approximately 10,000 individuals each year and collects information on oral examinations and oral health interviews. Data for the oral health component of KNHANES was obtained to assess the oral health status of Koreans and determine the prevalence of dental caries and periodontitis. The oral health data quality control of KNHANES was composed of three parts: "Education Program" and "Field Training Program" for quality control of oral health examiners (dentists) by the professional academy, and "Data management" by the KCDC. After completion of the three-step data check, the indicators of dental caries, periodontal disease, and oral health behavior were published in the National Health Statistics. Conclusions: To achieve the goals of oral health indicators, we will continue to monitor so that we can use it as basic data for oral policies and carry out various linkage analyses related to oral diseases.
