Relationship between health behaviors and nutrient supplement intake (건강행태와 영양제 복용 유무의 관련성)

  • Purpose: The present study investigated nutrient supplement intake to examine the relationship between the health behaviors of nutrient supplement users and nonusers and nutrient supplement users and other drug users. The results provide baseline data to understand whether nutrient supplements actually perform as expected in view of the fact that healthy people that take nutritional supplements may become healthier, but may also develop nutritional supplement abuse problems. Among 7,006 household heads of 24,614 household members from the Korea Health Panel data in 2008, a total of 6,009 household heads were the respondents of the Korea Health Panel Survey (appendix) in 2009. Method: The subjects of the present study were targeted household heads. The respondents who reported that they had taken (planned to take) life/health promotion-related drugs (01. vitamins/nutritional supplements) for more than three months that were purchased at pharmacies during the past one year at the time of the survey were defined as nutritional supplement users. Those who took other drugs (05. hair-loss treatments, 06. obesity treatments, 10. others) were regarded as other drug users. A chi-squared test was performed to analyze the sociodemographic characteristics of the subjects and differences between groups. Multiple regression analyses were conducted to analyze health behaviors according to nutrient supplement intake. Result: Comparison of (A) nutritional supplement users and nonusers revealed that those who were women, 50 years or older, and spent more than average living expenses were more likely to take nutritional supplements, which was not significant in health behavior variables. Analysis of nutritional supplement users and other drug users (B) revealed that those who were high school graduates or above, had a spouse, were non-smokers, took drugs, ate regular meals, and were not stressed by economic or family conflicts were more likely to take nutritional supplements. Conclusion: The results of the present study indicated that people take nutritional supplements because of their psychological desire to be healthy, not because they are not healthy, have problems, or believe supplements will make them healthier.

A Pilot Study of the Effects of an 8-week School-Based Weight Loss Program on Obesity, Shape Satisfaction, and Shape Esteem in Obese Children (비만 아동에서 8주간의 학교 체중 조절 프로그램 실시 후 비만도, 체형 만족도 및 체형 존중감 변화에 대한 예비연구)

  • This study was conducted to examine the effects of an 8-week weight loss program, on body composition, body shape satisfaction, body shape esteem in 15 obese children. This program included nutritional education and regular physical fitness. After completion of this program, height and body weight increased slightly but body compositions changed. BMI, degree of obesity, and body fat levels dropped slightly, however these differences were not significant. After the 8-week program body weight increased from $63.61{\pm}8.80\;kg$ to $64.07{\pm}9.11\;kg$, degree of obesity and BMI decreased from $151.73{\pm}13.62%$, and $29.08{\pm}2.35$ to $146.60{\pm}12.92%$, and $28.57{\pm}2.26$, respectively, and the percentage of body fat decreased slightly from $42.70{\pm}4.87%$ to $41.46{\pm}4.88%$. There were slight changes in weight of body muscle and lean body mass from $19.62{\pm}3.48\;kg$ and $36.17{\pm}5.78\;kg$ to $20.30{\pm}3.64\;kg$ and $37.16{\pm}6.18\;kg$, respectively. LBM and amount of muscle were higher after this weight loss program. The body shape esteem score increased from $7.60{\pm}4.01$ to $9.00{\pm}6.20$. There was no significant difference in body shape satisfaction before and after the program, and the participants also wanted to be leaner. Finally, body weight, BMI, and body fat showed negative correlations to body shape esteem.

Meat Quality and Physicochemical Trait Assessments of Berkshire and Commercial 3-way Crossbred Pigs

  • In this study, we compared qualities and physiochemical traits of meat from Berkshire (black color) pigs with those of meat from 3-way Landrace (white color) × Yorkshire (white color) × Duroc (red color) crossbred pigs (LYD). Meat quality characteristics, including pH, color, drip loss, cooking loss, and free amino acid, fatty acid, vitamin, and mineral contents of longissimus dorsi muscles, were compared. Meat from Berkshire pigs had deeper meat color (redness), higher pH, and lower drip loss and cooking loss than meat from LYD pigs. Moreover, meat from Berkshire pigs had higher levels of phosphoserine, aspartic acid, threonine, serine, asparagine, α-aminoadipic acid, valine, methionine, isoleucine, leucine, tyrosine, histidine, tryptophan, and carnosine and lower levels of glutamic acid, glycine, alanine, and ammonia than did meat from LYD pigs. The fatty acids oleic acid, docosahexaenoic acid (DHA), and monounsaturated fatty acids (MUFA) were present in significantly higher concentrations in Berkshire muscles than they were in LYD muscles. Additionally, Berkshire muscles were significantly enriched with nucleotide components (inosine), minerals (Mg and K), and antioxidant vitamins such as ascorbic acid (C) in comparison with LYD muscles. In conclusion, our results show that in comparison with LYD meat, Berkshire meat has better meat quality traits and is a superior nutritional source of all essential amino acids, monounsaturated fatty acids, vitamin C, and minerals (Mg and K).

Development of Nutritional Counseling Internet Program for Weight Reduction Using Expert System (전문가 시스템을 이용한 인터넷 체중 감량 상담 프로그램 개발)

  • The purpose of the study was to develop a nutritional counseling program using expert system to assist obese people to lose weight through behavior modification in the internet. The counseling internet program for weight loss was developed by the accumulation of knowledge for dealing with eating habits and exercising behaviors into expert system tool, Knowledge Engineering Agent (KEA) by a dietitian without any help of computer expert. KEA was built based on the theory of Multiple Classification Ripple Down Rules. To accumulate knowledge into KEA, survey was performed in 150 obese people, the dietitian reviewed and consulted each survey case, and the consulted contents were learned and accumulated into KEA. Survey questionnaires were the same as those of the internet consulting program, and they included general characteristics, dietary habits, lifestyle, and exercise patterns related to obesity. KEA was used for nutritional counseling of obese people after KEA had enough knowledge for weight loss based on behavior modification by the dietitian. To accumulate knowledge to KEA, the dietitian selected proper factors inferred from the survey questionnaire of each case, and added the conclusions for them. Conclusions were made for helping clients to correct bad eating behaviors and accumulate good behaviors for losing weight. When clients answered survey questionnaires in a counseling internet program, KEA gave the recommendation how to eat, to exercise and the deal with stress in a real time for each case. If KEA did not have enough knowledge for a specific case, the conclusion window wrote no conclusion and the dietitian needed to add conclusions for the case. The conclusions for the new case added to the KEA knowledge base. In conclusions, a counseling internet program for weight reduction can be used for give advices how to deal with obesity in a man-to-man way in a real time using KEA where nutritional knowledge based on behavior modification for weight loss was accumulated.

Trace Elements Deficiency and the Diagnostic Usefulness of Hair Mineral Analysis in Children with Chronic Gastrointestinal Disease (만성 소화기 질환 환아에서 미량원소 결핍과 모발 검사의 유용성)

  • Purpose: Patients with chronic gastrointestinal disease are at risk for trace element deficiency due to impaired absorption and gastrointestinal loss. The aim of this study was to evaluate the trace element status of patients with gastrointestinal disease by blood and hair analysis, and to determine the usefulness of hair mineral analysis for diagnosing trace element deficiency not detected by a blood test. Methods: An analysis of hair minerals was performed and compared with blood mineral analysis in 13 patients with chronic gastrointestinal disease. The concentration of each element in the hair and blood was compared in the subgroups based on parenteral nutritional support or clinical symptoms. Results: Almost all patients had trace element deficiency. The trace elements deficient in the blood or hair analysis included zinc, selenium and copper. The hair zinc concentration was significantly lower in the group receiving parenteral nutritional support. The hair selenium concentration was statistically associated with the clinical symptoms of hair loss, brittle hair and loss of hair pigmentation. Conclusion: The results of this study suggest that patients with chronic gastrointestinal disease should receive adequate zinc and selenium replacement to avoid trace element deficiency especially when treated with long-term parenteral nutrition. Hair mineral analysis is useful as a complementary tool for the detection of a trace element deficiency.

Comparison on Physico-Chemical and Affective Properties in Mackerel Cooked by Electric Pan and under Superheated Steam (구이용 전기팬과 과열증기로 열처리한 고등어구이의 이화학적인 품질특성 및 기호도 비교평가)

  • Purpose: This study analyzed and compared the physico-chemical and affective properties between mackerels cooked by an electric pan and under superheated steam. Methods: Mackerel were cooked by an electric pan ($95^{\circ}C$) for 10 min and mackerel cooked under superheated steam ($250^{\circ}C$) for 5 min to be internal temperatures of $75{\pm}5^{\circ}C$ and tests to measure proximate composition, color values, texture profiles, microorganism counts and sensory acceptance were performed. Results: The moisture contents were 60.30% and 73.81% in mackerels cooked by electric pan and under superheated steam, respectively. The rate of weight loss in mackerel cooked by electric pan was 39%, whereas it was 29% in mackerel cooked under superheated steam. Mackerel cooked under superheated steam exhibited more yellowness, higher springiness, cohesiveness, gumminess, chewiness, and resilience with more acceptable preferences (appearance, odor, taste, and texture) compared to the mackerel cooked by electric pan. Conclusion: The application of superheated steam technology to fish products could reduce the cooking time and nutritional loss. Also, it could produce highly preferred fish products compared to that prepared by conventional electric pan.

The Effect of Nutrition Education on Visceral Fat Reduction and Diet Quality in Postmenopausal Women (폐경 여성의 내장지방 및 식사의 질에 미치는 영양 교육의 효과)

  • This study investigated the effects of the nutrition education on body weight, visceral fat and diet quality in the postmenopausal women. The subjects (n = 101) were randomly divided into two groups: Nutrition education + Exercise (NEE) group (n = 51) and Exercise only (EO) group (n = 50). Nutrition education was consisted of counseling in portion control, food selection for low carbohydrate, high fiber food items and for the improvement in micronutrient intakes and diet quality. After 6 months, the reduction in the body weight and visceral fat area was significantly greater in the NEE than in the EO group. The NEE subjects were further divided into two groups according to the amount of visceral fat area reduction; high visceral fat area loss (HVL) group with a visceral fat area reduction 2.35% or greater and low visceral fat area loss (LVL) group with a reduction less than 2.35%. In the HVL group, the reduction in body weight, BMI, percent body fat, waist to hip ratio and visceral fat area was significantly greater than that in the LVL group. We observed a significant increase in the serum HDL-cholesterol level and a decrease in systolic blood pressure, fasting blood sucrose, total and LDL-cholesterol levels in the HVL group compared to the LVL group. The energyadjusted protein, fiber, calcium, vitamin $B_6$, vitamin C, vitamin E intakes were significantly increased in the HVL compared to LVL group. The index of nutritional quality (INQ) and mean adequacy ratio (MAR) were also increased in the HVL group compared to the LVL group. These results show that our nutrition education program was an effective intervention measure for the reduction of body weight and visceral fat, blood pressure, glucose and lipid levels in the blood and also for the improvement of nutrient intake and diet quality in postmenopausal women who are overweight.

Initial nutritional status of stomach cancer patients (위암환자의 입원시 영양상태)

  • The purpose of this study is to investigate initial nutritional status of stomach cancer patients. The study subjects were 88 patients with stomach cancer admitted at Kosin University Gospel Hospital in Busan. We assessed the initial nutritional status by anthropometric, biochemical and dietary intake data along with subjective global assessment(SGA). The results are as follows. 1. The mean age, weight, height, triceps skinfold thickness, mid arm circumference, and mid arm muscle circumference of the subjects were 55.9$\pm$11.0years, 60.0$\pm$9.8kg, 162.4$\pm$8.5cm, 10.9$\pm$5.7mm, 26.8$\pm$3.8cm, and 23.4$\pm$3.5cm respectively. The mean body mass index was within the normal range, with 22.7$\pm$2.8kg/m2, while 15.4% of the patients was underweight. The result shows that body fat mass and body protein mass of the patients with stomach cancer were decreased. 2. The mean biochemical data of the subjects were 4.0$\pm$0.5g/dl for albumin, 174.7$\pm$41.9mg/dl for cholesterol, 107.6$\pm$57.2mg/dl for triglyceride, 92.1μg/dl for Zn,  297.0$\pm$103.1mg/dl for transferrin, 1980.0$\pm$0.8$mm^3$ for total lymphocyte count. 3. Daily energy intake was 1997.8$\pm$579.3kcal. And the ratio of carbohydrate, protein, and lipid to energy intake was 72:14:14. 4. The patients were divided into three groups according to SGA performed by an observer. Group A(well nourished) was 55.7% with 49 patients, Group B(moderately malnourished) was 22.7 % with 20 patients, and Group C(severely malnourished) was 21.6 % with 19 patients. The three groups showed a significant difference in body weight(p<0.01), 1 month weight loss %(p<0.001), 6 months weight loss %(p<0.001), body mass index(p<0.01), and mid arm circumference(p<0.05), albumin(p<0.01), energy intake(p<0.05) as well as carbohydrate intake(p<0.05). From these results, it may be concluded that SGA can be used as a nutrition screening tool, and comprehensive nutrition assessment is desirable for those malnourished.

The Effect of (-)-Hydroxycitrate on Weight Control Program in Obese Women -I : Effect on Anthropometric Parameters- ((-)-Hydroxycitrate를 이용한 비만 여성의 체중 조절 프로그램 실시 및 효과 평가에 관한 연구(I))

  • This study investigated the effect of weight control by using the commercial appetite suppressant ((-)-hydroxycitric acid(HCA) formula) and nutrition education on 72 obese women over a period of 8 weeks. During the study it conducted nutritional education for women to control their weight, thus analyzed their changes in anthropometric variables. All obese women were randomized in a double-blind method to consume either HCA(HCA group : experimental group) or placebo(placebo group : control group). Two groups were also divided randomly into 2 groups combined with commercial formula diet in 1 meal a day(HD group and PD group : HCA + gormula diet and placebo + formula diet) or not(HO group and conducted with 4 groups(HD, HO, PD, and PO group). All subjects were assigned to consume 800-1500kcal/d balanced diet which is 500kcal less than their usual energy requirement. To evaluate the effect of the weight control program, weight, percent of body fat, waist and hip circumferences, and 5 skinfold thickness were measured up to 5 times in all obese women. The mean weight of the subjects at the onset of the study was 76.5$\pm$10.6kg. The mean body mass index(BMI) wa 30.1$\pm$3.8 and it was in the upper 5 percentile of mean BMI of Korean women. At the end of the program, mean weight loss was 3.5kg after 2 weeks(p<0.001), and 5.8kg after 4 weeks(p<0.001). The waist, hip ratio(WHR) and skinfold thickness measurements of biceps, triceps, subscapular, suprailiac and abdominum showed significant reduction over the entire study period(p<0.05). These outcome were evaluated by effect of nutritional education and counselling. The reduction of % of body fat was significantly different among the 4 groups. Women who administrated HCA demonstrated more change in weight, BMI than the placebo group. There was also significant reduction in body composition (% of body fat, WHR, and skinfold thickness) than the other groups. The HD group which was administrated HCA combined with formula diet was more decreased than other groups. It showed that this program using commercial HCA and formula diet induced not only a change in weight but also a change in body composition. The outcome of this study suggests that HCA has a more effctive change on weight control which is carried out with nutritional education and counselling.

Changes of Nutritional Compounds and Texture Characteristics of Peaches (Prunus persica L. Batsch) during Post-irradiation Storage at Different Temperature (감마선 조사와 저장온도에 따른 복숭아의 품질특성 변화)

  • The gamma irradiation process was performed to prolong a shelf-life of peaches and the effects of a gamma irradiation on the nutritional, physiochemical and sensory characteristics of peaches were evaluated during a post-irradiation storage at $4^{\circ}C$ and $25^{\circ}C$. Nutritional, physiochemical and sensory characteristics of peaches were stable at 1 kGy of an irradiation, a recommended dose for fruits and vegetables by CODEX, and the viable cell counts of contaminated microorganisms were reduced by 2 decimal reduction, at this dose. After a 1-week storage at ambient condition, the microbiological quality of the 1 kGy irradiated peach was stable, while all the non-irradiated peaches were deteriorated Furthermore, cold storage enhanced the shelf-life of the gamma irradiated peach and the nutritional and physiochemical characteristics of the peaches were comparatively stable up to 6 weeks. Right after gamma irradiation, the sensory evaluation results were not different in any of the samples, and the sensory quality of the irradiated peaches was adequate for a 4-week storage at $4^{\circ}C$. Our results suggested that gamma irradiation at 1 kGy can be used to enhance the shelf-life of peach without a significant loss in the quality attributes, especially upon cold storage after radiation treatment.
