The aim of this study was to identify sushi choices underlying food-related lifestyle and to study the sushi attribute. The Food Choice Questionnaire (FCQ), the most popular tool for lifestyle research, which measures the relative importance of nine factors important in food choice, and food-related lifestyle was administered to 200 Americans (over 20 years of age) residing in Korea. From an analysis of food-related lifestyle through factor analysis, four factors emerged: health, taste, economy, and convenience. The Food Choice Questionnaire (FCQ) structure was verified using factor analysis, and eight factors were found: mood, natural content, health, sensory appeal, convenience, weight control, familiarity and price. These data are important in demonstrating the different motives underlying sushi choice. Moreover, the results suggest that an American's food-related lifestyle is considerably different in consumer behavior and sushi choice. Further research is needed to test our hypotheses.

Rabbit meat has high nutritional and dietetic characteristics, but its consumption rate is comparatively lower than other meat types. The nutritional profile of rabbit meat, by comparison with beef, pork, and poultry, is attributed to relatively higher proportions of n-3 fatty acids and low amounts of intramuscular fat, cholesterol, and sodium, indicating its consumption may provide health benefits to consumers. But, the quality attributes of rabbit meat can be originated from different factors such as genetics, environment, diet, rearing system, pre-, peri-, and post-slaughter conditions, and others. Different rabbit breeds and the anatomical location of muscles may also affect the nutritional profile and physicochemical properties of rabbit meat. However, adequate information about the effect of those two factors on rabbit meat is limited. Therefore, cumulative information on nutritional composition and carcass and meat quality attributes of rabbit meat in terms of different breeds and muscle types and associated factors is more important for the production and processing of rabbits. Moreover, some studies reported that rabbit meat proteins exhibited angiotensin-converting enzyme inhibitory characteristics and antioxidant properties. The aim of this review is to elucidate the determinants of rabbit meat quality of different breeds and its influencing factors. In addition, the proven biological activities of rabbit meat are introduced to ensure consumer satisfaction.
The purpose of this study was to investigate the dietary related factors and blood parameters of moderately or severely obese children residing in Samcheok. Anthropometric measurement, 24-hour recall for dietary intake, blood analysis and questionnaire response including nutritional knowledge, nutritional attitude, body image recognition and eating habits were conducted in 23 obese children(16 boys and 7 girls) and their mother. The mean age of subjects are 10.0 years. The average body weight, BMI, obesity index and percent body fat were 57.5㎏, 27.0㎏/$m^2$, 47.3 and 38.1% in boys and 51.0㎏, 24.8㎏/$m^2$, 40.3 and 43.9% in girls. The average nutritional attitude, the self-satisfaction and the nutritional knowledge scores in subjects were 29.9/40, 32.7/50 and 7.3/10, respectively. 34.8% of the subjects were unsatisfied with their body image, whereas, 81.8% of their mothers were unsatisfied with children’s body image. 60.9% of subjects had one or both obese parents. Average intake of energy were 90.6% of RDA in boys and 84.3% of RDA in girls. The ratio of energy from carbohydrate/protein/fat were 66/16/18 in boys and 66/17/17 in girls. The mean serum cholesterol concentration of the subjects was 191.8mg/dl and 78.3% of the subjects were above the normal serum cholesterol rage of children. In the results of correlation analysis, obesity index was negatively correlated with self and mother’s nutritional attitude scores. Body weight and BMI were positively correlated with vitamin C(p<0.05) and fruits(p<0.05) intakes. And there was a positive correlation between obesity index and BMI, and serum cholesterol(p<0.05).
Purpose: The purposes of this study were to investigate factors related to the depression of the elderly dwelling in a big city, and to explore the influence of physical health, cognitive symptom and nutritional status on the elders' depression. Methods: After the approval of the Institutional Review Board (IRB) and obtaining the participants' consent form, a face to face and private interview was conducted with each participant from Mar, 2007 to Aug, 2007 by trained graduate level students. A total of 201 elders aged over 65 years participated in the study. The questionnaire consisted of K GDS, PHQ 15 and Nutritional Screening Initiative (NSI). Collected data were analyzed with the SPSS 13.0 program, which was used for frequency, percentage, mean, standard deviation, Pearson correlation coefficients, and multiple regression. Results: The major findings of this study were as follows. 1) 28.4% of the subjects belonged to the depression group, 78.1% had one or more diseases, 85.6% had experienced somatic symptoms, and 49.7% belonged to the nutritional risk group. 2) Older age, lower educational level, more pocket money a larger number of diseases, more severe cognitive symptoms and poorer nutritional status were significantly related to a higher depression score. 3) Significant factors influencing depression were nutritional status, cognitive symptoms and the number of diseases, which explained 38.1% of the variance of elderly depression, and nutritional status was the most influencing factor. Conclusion: The finding of this study gives useful information for developing assessment tools and interventions for elders' depression.
This study is designed to assess the prevalence at risk of malnutrition according to the Mini Nutritional Assessment (MNA) and evaluate the factors influencing on the nutritional risk of the elderly. Three hundred and nine elderly (110 men and 199 women: mean age =74.1) who participated in meal service in the Chung-buk province were investigated. Mean MNA total score was 21.9 and women had significantly lower MNA scores than men (respectively, 21.5 and 22.8). In the mean time mean MNA-SF (Short Form) score was 10.7, respectively 10.6 for the women and 11.0 for the men, with the difference being statistically significant. The MNA classified 33% of the elderly as well-nourished, 61.7% as at risk of malnutrition and 5.3% as overt malnourished. However, MNA-SF categorized the examinees 40.2% as good and 59.8% at nutritional risk. Those who identified as malnourished elderly had significantly lower mean BMI, mid-arm and calf circumference, poorer functional abilities (ADL, IADL) , lower MAR and food habits scores, and higher number of nutrient $\leq$ 75% of RDA than those with at risk of malnutrition and well nourished. Also socioeconomic status such as educational level, self-rated economic status, poverty level, and marital status significantly influenced nutritional status. Similar effect was observed in self-rated nutritional status and health status, dental status, appetite change according to MNA score. Stepwise multiple regression analysis indicated that weight loss was the most predictive item in the total MNA and MNA-SF score. It was found that items such as mobility, living status (home vs institution) , mode of feeding, and pressure sores were inappropriate for assessment of the elderly who are able to participate meal service program. Also, some modifications of items in MNA are needed in order to apply to Korean elderly. Even though the MNA seems to be an useful tool to screen those old people at risk of malnourished, a lot of work is still to be done with this assessment tool to secure its reliability.
This study was conducted to investigate housewives' perception, interest and consumption of health drinks made in a health food stores, and to assess the relationsh- ip between nutritionally-related-variables and the consumption of health drinks. Data was collected from 518 housewives in Chonnam province. Among many items which housewives perceived about health drinks, three factors of 'preference·health-care', ' quality·convenience' and 'price' were found to be represented. Housewives' perception of 'preference·health-care' was negatively correlated with nutritional knowledge. However, a positive correlation between the 'quality·convenience' and eating habits was found. Consumption of health drinks was positively correlated with the diet management score, the perception and interest in health drinks. However, the inverse relationship between consumption of health drinks and nutritional knowledge was observed. Multiple regression analysis showed that the interest and factors of perception of health drinks. Consumption of health drinks was not based upon accurate knowledge concerning nutrition, but was based upon the consumers' perception of taste preference and healthful quality. Therefore, there is a need to educate consumers about the nutritional value of health drinks and how to use nutritional supplements.
This study was carried out to examine Koreans preference in mushrooms, their nutritional knowledge of mushrooms as a source of Vitamin D, and five characteristics of six dishes consisting of common dishes and mushroom dishes. The data were collected from 2,777 subjects in various age ranges by means of a survey questionnaire. Variables, such as age, gender, diet quality and the degree of interest in diet were significant factors considered in relation to preference of mushrooms. Adults ate mushrooms because of their healthfulness, but this attibute was not a factor among adolescent students. The level of nutritional knowledge was relatively low and the ratio of "do not know" responses was higher than the ratio of "yes" or "no" . Generally, housewives, elementary school children and those who were healthy, ate floods because of health consciousness, and those who preferred mushrooms had better dietary habits. The characteristics of mushroom dishes, both as main and side dishes, had much more correlation with the factors considered for the subjects than the common dishes and one dish meals, respectively. Dietary altitudes, such as mushroom preference, frequency of mushroom intake and level of nutritional knowledge, were strongly correlated with the characteristics of the six dishes. It has been shown that mushroom dishes were recognized as nutritional, rather than delicious.
Purpose: This study investigated the nutritional status of ethnic (belonging to minority groups) preschool children in Northern Thailand. Methods: In this cross-sectional descriptive study, the sample group included 147 parents and 147 preschool children (2-6 years old). Participants volunteered to complete a questionnaire on the personal information of children and parents, as well as family- and school-related factors. Data were analyzed using descriptive statistics, a nutritional status calculator, and logistic regression analysis. Results: A birth weight of less than 2,500 g was related to weight-for-age and weight-for-height. Not having been breastfed and having been breastfed for less than 6 months were related to weight-for-height. An elementary school education level among parents was related to children's height-for-age. Familial unhealthy food consumption for 1-2 days per week was related to weight-for-age and height-for-age. Conclusion: This study reflects the importance of nutritional care for children at the beginning of pregnancy and continuing to the preschool age, as well as the importance of breastfeeding. Families were found to be a key factor in supporting good nutrition among children.
Malnutrition is a common problem in patients undergoing maintenance hemodialysis(HD) and compromised food intake is an important cause. Malnutrition is one of the important factors influencing mortality in chronic HD patients. We investigated the nutritional parameters of 50 Korean HD patients(mean age: 46.9 $\pm$ 10.3y, men : 23, women : 27) by measuring anthropometric and biochemical blood indices and assessing food intake using 24-h recall method. Also we administered two questionnaires, one for assessing nutritional knowledge about renal disease and dietary therapy, the other for measuring dietary habits related to dietary therapy. According to the distribution of BMI, 21.3% of HD patients were underweight. The hematological values of HD patients, such as plasma hemoglobin, hematocrit, and total lymphocyte count were below the normal range. The serum cholesterol levels were 133.2 $\pm$ 30.5mg/dl. HD patients took energy and protein only 77.5% and 83.1%, respectively, of their RDA. There were significantly positive correlations between nutritional knowledge and intake of nutrients, such as energy, fat, cholesterol, iron, potassium, vitamin B$_1$, vitamin B$_2$, and niacin. Also, there was a significantly positive correlation between nutritional knowledge and dietary habits(r = 0.317, p < 0.05). In conclusion, Korean HD patients showed mild malnutrition and suboptimal nutrition intake. It can be postulated that the dietary intake can be increased by nutrition education improving nutritional knowledge and correcting the dietary habits of HD patients.
Nutritional and health status was assessed in the 86 healthy elderly women who aged 65 through 96 and resided in nursing home in chonbuk area. Nutritional status was determined by dietary intake, anthropometric and hematological indices and hair elements. Correlation analysis among nutritional indices were performed to identify the factors which related specifically to nutritional status of the elderly. Nutrients intake below two-thirds of the RDA were Ca, riboflavin and niacin. Especially mean Ca intake was only 51.9% of RDA and most of nutrients intake were decreased as theri age increased. Height, body weight and mid upper arm circumference were decreased with age but W/H ratio did not differ among age groups. These data suggested that body fat accumulation did not change with age but lean body mass was decreased with age in the elderly. Waist circumference was positively correlated to dietary fat intake, and body weight, BMI, waist and hip circumferences and total body fat were positively correlated with serum LDC/HDL ratio. It could be concluded anthropometric indices were good indicator that reflect the lipid nutritional status in elderly women. Hematological indices, Hb, RBC, MCH, albumin, globulin, transferrin levels, belonged to normal ranges of aged women. However, the lowest Hb level showed in the oldest-old group(aged 85 and over years group). The avalilavilty of hair analysis to measure nutritional status was tested. There were not found any significant correlations between many kinds of nutritional indices and hair elements except hair Zn content which was positively correlated with BMI.
