This study was attempted to investigate antioxidant activities of water and ethanol extract from Rosa multiflora (RM) by in vitro assays measuring 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, 2,2'-azino-di-2-ethyl-benzthiazoline sulphonate (ABTS) radical scavenging activity, reducing power activity, nitric oxide (NO) radical scavenging activity, total phenol and total flavonoid content. The water and ethanol extracts from RM scavenged the DPPH radical and ABTS radical in a dose-dependent manner at the concentration range from 10 to $500{\mu}g/ml$. The DPPH radical scavenging activity of water extract was higher than that of ethanol extract. $IC_{50}$ of DPPH radical scavenging activity of water and ethanol extract were $79.73{\mu}g/ml$ and $145.85{\mu}g/ml$. The reducing power activity of water extract was higher than that of ethanol extract. The nitric oxide (NO) radical scavenging activity of the RM extract was similar to their DPPH radical scavenging activity. $IC_{50}$ of ABTs radical scavenging activity of water and ethanol extract was $79.82{\mu}g/ml$ and $159.03{\mu}g/ml$. The reducing power activity of water extract (0.775) was higher than that of ethanol extract (0.568). Total phenolic content of water extract (140.74 mg/g) was higher than that of the ethanol extracts (37.83 mg/g). Total flavonoid content of water extract (45.31 mg/g) was higher than that of the ethanol extracts (42.68 mg/g). This results suggest that water extract of RM may be useful as potential antioxidant sources.
A series of growing and digestion trials was conducted using Sprague- Dawley weanling male rats in order to determine the effects of two protein sources (casein and ISP (isolated soyprotein) ), three protein levels (10, 20 and 30%), and two feeding patterns (ad libitum and meal feeding) on the growth, protein and energy metabolism, and body composition of rats. The total energy level of experimental diets was kept constant in 3,600 kcal ME /kg diet. The results were as follows : 1) The amount of food intake and the weight gain of meal-fed group were lower than those of ad libitum group. Though the intake of meal-fed group on 20 and 30% casein diet was only 85% of ad libitum group, it was able to gain as much as ad libitum group. 2) There were no significant differences in the food efficiency ratio (FER) and the energy efficiency (weight gain per 100 kcal GE intake) between ad libitum and meal feeding group. The FER and the energy efficiency of 20 and 30% casein diets of meal-fed group were greater than those of ad libitum group. 3) Though the gross energy intake (GE ), the digestible energy (DE) and the metabolizable energy (ME) tended to be lower at meal-fed group, the DE/GE and the ME/GE ratios for meal-fed group were the same as those for ad libitum. 4) Though meal- fed group fed less amount of nitrogen than ad libitum group, there were no differences in nitrogen balance and the retention of rats among the treatments. Actually meal-fed group retained more nitrogen than ad libitum group at the levels of 20 and 30% dietary protein. 5) After growing and digestion trials, the body composition of rats was constant among all treatments. Significantly high negative correlation coefficient (r = -0.77) was found between the body fat content and the body moisture content. Consequently, this study suggests that meal- fed group on 20 and 30% casein diets has shown more effective utilization of the ingested food and energy than ad libitum group, and increasing tendency of weight gain and the body fat deposition. Those influences of meal feeding pattern in rats were more effective on the casein diet than on the ISP diet.

Two byproducts, brewer's spent grain (BSG; germinated rice and malt) and brewer's spent material (BSM; Achyranthes japonica Nakai), were collected during the manufacture of pilsner beer using A. japonica Nakai and germinated rice. Water extracts of BSG and BSM were prepared at different temperatures ($25^{\circ}C$, $60^{\circ}C$, and $100^{\circ}C$) for 5 h, and their nutritional and functional properties were investigated. ${\gamma}-Aminobutyric$ acid (GABA), saponin, and niacin contents were higher in extracts prepared at $60^{\circ}C$ for more than 3 h than the other extracts, whereas total polyphenol content, DPPH radical scavenging activity, and reducing power were higher in samples extracted at $100^{\circ}C$ for 1 h compared to the other ones. Overall, water extraction at $60^{\circ}C$ for 3 h was desirable to effectively collect both nutritional and functional components from BSG and BSM. Under these conditions, BSM extracts showed 4~18 times high niacin and folate contents, 1.4 times high total phenolic content, and 11~60 times high antioxidant activities compared to BSG extracts. This study shows that pilsner beer byproducts would be good sources of health beneficial components, especially GABA, saponin, water soluble vitamins, and polyphenolics.

This study was conducted to investigate changes in the proximate composition, antioxidant activities, and ${\alpha}$-glucosidase inhibitory activity of Opuntia ficus-indica (OFI) cladodes cultivated in Jeju (JJ1, JJ2, JJ3) and Jeonnam (JN1, JN2). The difference in the proximate composition (crude protein, lipid and ash content) of OFI between the two regions was not significant. Ca, Mg and Na were the major mineral components of OFI. The ascorbic acid content of OFI ranged from 57.87 to 143.72 mg/100 g. A 70% ethanol extract was used to investigate the antioxidant content and activity as well as the ${\alpha}$-glucosidase inhibitory activity. The total polyphenol and flavonoid contents of OFI were 38.69~55.29 and 3.33~4.03 mg/g, respectively. The antioxidant activities based on the DPPH and ABTS free radical scavenging assays were 45.19~61.52% and 39.15~51.96%, respectively, at a concentration of 1 mg/mL. The inhibitory activity of OFI extracts against rat intestinal ${\alpha}$-glucosidase was 29.72~45.73% at 1 mg/mL concentration, and JN1 showed the highest ${\alpha}$-glucosidase inhibitory activity. This information could be very useful for authentication of Opuntia species with the highest potential as sources of nutritional and therapeutic elements.
Sporulation in the fission yeast Schizosaccharomyces pombe has been regarded as an important model of cellular development and differentiation. S. pombe cells proliferate by mitosis and binary fission on growth medium. Deprivation of nutrients especially nitrogen sources, causes the cessation of mitosis and initiates sexual reproduction by matting between two sexually compatible cell types. Meiosis is then followed in a diploid cell in the absence of nitrogen source. DNA fragment complemented with the mutations of sporulation gene was isolated from the S. pombe gene library constructed in the vector, pDB 248' and designated as pDB(spo5)1. We futher analyzed six recombinant plasmids, pDB(spo5)2, pDB(spo5)3, pDB(spo5)4, pDB(spo5)5, pDB (spo5)6, pDB(spo5)7 and found each of these plasmids is able to rescue the spo5-2, spo5-3, spo5-4, spo5-5, spo5-6, spo5-7 mutations, respectively. Mapping of the integrated plasmid into the homologous site of the S. pombe chromosomes demonstrated that pDB(spo5)1, and pDB(spu5)Rl contained the spo5 gene. Transcripts of spo5 gene were analyzed by Northern hybridization. Two transcripts of 3.2 kb and 2.5kb were detected with 5kb Hind Ⅲ fragment containing a part of the spo5 gene as a probe. The small mRNA(2.5kb) appeared only when a wild-type strain was cultured in the absence of nitrogen source in which condition the large mRNA (3.2kb) was produced constitutively. Appearance of a 2.5kb spo5-mRNA depends upon the function of the meil, mei2 and mei3 genes.
This study investigated associations between calcium intake, exercise behaviors, lumbar bona mineral density (BMD), and bone mineral content (BMC) among 79 premenopausal women (mean age = 41yr). The BMD and BMC of the lumbar spine (L$_2$-L$_4$) were measured by dual energy x-ray absorptiometry. Nutrient intake was estimated by the convenient method and a quantitative food frequency questionnaire was designed for this study that included the most commonly consumed floods sources of Ca. Participants were asked to identify all activities of exercise they had participated in including estimation of number of years of participation, number of weeks per year, number of times per week, and the number of hours per session. Participants were then categorized into the exercise group or nonexercise group (control). To meet the criteria for inclusion in the exercise group, the subjects participated more than 3 sessions per week and more than 30 minutes per session and the length of the exercise participation was at least more then 6 months. The participants were also grouped by calcium intake. The total calcium intake of all participants was estimated by dietary calcium intake and then the subjects were divided into quartiles to assess the lumbar BMD and BMC of the upper 25% (average calcium intake = 910 mg) and the lower 25% (average calcium intake = 414 mg). Results indicated that there were no significant differences in energy and calcium intake, and that there were no significant differences in lumbar BMD and BMC between participants in exercise group and the nonexercising control group. However, the exercise group had significantly lower ALP concentration than the nonexercise group. The upper 25% calcium intake group had significantly greater lumbar bone mineral density and bone mineral content than the lower 25% calcium intake group. Also the upper 25% calcium intake group had significantly lower ALP concentration than the lower 25% calcium intake group. Correlation analysis revealed that the spinal BMB was positively associated with body weight, while calcium intake was negatively associated with ALP concentration in nonexercising women. However, neither body weight nor dietary calcium intake were associated with both spinal BMD or ALP concentration in exercising women. These results suggest that calcium intake positively influence bone mineral density and bone mineral content in nonexercisulg premenopausal women. Exercise group did not affected by body weight and dietary calcium, but decreased ALP concentration than nonexercising group. Both exercise and calcium intake positively influence bone mineral density and bone mineral content in premenopausal women.
This study was performed to investigate socioeconomic factors relating to obesity and inadequate nutrient intake in women in low income families residing in Seoul. The subjects were 125 women (aged 41-87 y) recruited from the local health center for free health examination for low income families. The socioeconomic status such as educational level, income level, and housing condition were poor. For subjects aged less than 65 years, the prevalence of obesity was 44% based on BMI (${\geq}\;25\;kg/m^2$), 48% based on WHR (${\geq}\;0.85$), and 50% based on waist circumference (${\geq}\;80\;cm$) and for those more than 65 years, these were greater and 57%, 81%, and 79%, respectively. The main food sources of daily diet were vegetables, grains, and fruits. Energy and other nutrient intake was not adequate for all subjects and the inadequacy was more profound in the elderly, showing percentages of subjects whose intake was less than EAR were greater than 50% for all nutrients except for iron and below RI were also greater than 50% for all nutrients. The prevalence of obesity and nutrient inadequacy were not associated with socioeconomic status in subjects aged less than 65 years, however, obesity was associated with household income and nutrient inadequacy was related to education (vitamin A) and housing status (protein, phosphate, and iron) in the elderly. After adjustment for ages, in the elderly, OR for obesity (BMI ${\geq}$ 25, OR = 12.601; 95% CI = 2.338-67.911) and central obesity (WC ${\geq}$ 80 cm, OR = 4.778; 95% CI = 1.103-20.696) were greater in subjects who earned less than 500 thousand Won per month than who earned more. For inadequate nutrient intake, the OR for inadequate intake of Vitamin A (OR = 4.555; 95% CI = 1.491-13.914) was greater in subjects with no education than those educated. Subjects without her own house had greater risk for inadequate intake for protein (OR = 3.660; 95% CI = 1.118-11.981), phosphate (OR = 3.428; 95% CI = 1.157-10.158), and iron (OR = 3.765; 95% CI = 1.205-11.766) than subjects possessing her house. In elderly females in low income families, the socioeconomic status was associated with the risk for obesity (income level) and inadequate nutrient intake (education level and housing status). More attention on these groups should be given for prevention of obesity and inadequate nutrient intake.

To assess trans fatty acids (tFAs) intake of middle school students in Busan, behavior of having meals and 3 day's food record were surveyed in 800 subjects. 35.3% of subjects responded to twice a day in frequency of snack intake. Preferred snack items were ice cream (68.6%) and milk (57.0%). Subjects of dining out preferred jajangmyon (54.6%), seasoned chicken (50.5%), fried chicken (35-3%) in order when dined out. Mean daily tFAs intake of subjects was 1.68$\pm$0.04 g. Mean daily intake level of girls was 1.89$\pm$0.06 g which was significantly higher than that of boys, 1.40 $\pm$ 0.05 g (p<0.001). Naturally derived tFAs intake was 1.04$\pm$0.03 g which corresponded to 62.1% of total tFAs intake per day and industrially derived tFAs intake was 0.64 $\pm$ 0.02 g, 37.9% of total tFAs intake per day. Calorie percentage of tFAs was 0.8% and fat percentage of tFAs was 3.16%. The level of tFAs intake showed a significant difference with monthly allowance (p<0.05) and frequency of snack intake (p<0.001) in girls, which was not the case in boys. The main sources of tFAs were milk and dairy products (34.3%), bakeries (18.3%), and fish and meat products (16.2%), in order. From above results, we can conclude that tFAs intake of middle school student is not as much as that of Western teenagers. However, exact estimation of tFAs intake requires database of tFAs in broad range of processed foods commonly consumed in Korea.

We report that the gamma linolenic acid content of pork is higher in finishing pigs fed diets containing hemp seed oil, evening primrose oil or borage oil as the sources of gamma linolenic acid. Thirty-six three crossing swines ($Landrace{\times}Yorkshire{\times}Duroc$), 80 kg in body weight, were randomly separated into four treatment groups with three pens per treatment and three animals per pen. The finishing swines were fed the experimental diets for 35 days until they reached the market weight of 110 kg. The animals were assigned to the four experimental diets: control diet containing 5.00% tallow, T1 containing 5.00% hemp seed oil (hemp seed oil 40:soybean oil 60), T2 containing 5.00% evening primrose oil (primrose oil 40:soybean oil 60) and T3 containing 5.00% borage oil (borage oil 40:soybean oil 60). The plasma triacylglycerol and total cholesterol content of the swine in the gamma fatty acids-fed groups were significantly (p<0.05) lower than those in the control group. No gamma linolenic acid was detected in the plasma of the control group, while tile level of gamma linolenic acid treatment groups was significantly (p<0.05) higher than the control in the order of T3, T2 and T1. Moreover, the level of gamma linolenic acid increased with increasing number of feeding days. There was a significant difference between the treatment groups (p<0.05). There was a difference in the amount of saturated fatty acid and polyunsaturated fatty acid accumulated in the pork according to the treatment groups or the parts of the pork meat. The level of n-3 fatty acid of pork was highest in T1, which had been fed the hemp seed oil, followed in order by T3 and T2 (p<0.05). The content of gamma linolenic acid in pork was highest in T3, which had been fed the borage oil, followed in order by T2 and T1 (p<0.05). In particular, the level of gamma linolenic acid in pork increased in the order of the back fat, pork belly, ham and loin.

The objective of this study was to determine the effects of various kinds of composts on the change of nutrition loss in upland soils. Field experiments were conducted in the loam and sandy loam soils, while the clay loam and sandy loam soils were used for laboratory experiments. Various kinds of composts such as poultry manure compost(PMC), cow manure compost(CMC), human excrement sludge(HES), and food industrial sludge compost(FISC) were applied annually at rates of 0, 40, and $80mg\;ha^{-1}$ to soils grown with soybean and maize plants for 4 years during 1994 to 1997. The results of this study were as follows : The loss of nutrients in the form of cation and anion by run-off water increased with the increase of compost application rate. Compared with bare soils, maize cultivation decreased the nutrient loss by run-off from soils by 43% in anionic form and 32% in cationic form. Amount of cation loss were ordered $K^+$ > $Ca^{2+}$ > $Na^+$ > $Mg^{2+}$ > $NH_4{^+} $ and that of anion loss were ordered $SO_4{^{2-}}$ > $NO_3{^-}$ > $Cl^-$ > $PO_4{^{3-}}$. Nutrient loss of sand loam soil in the cation and anion by percolation water increased 1.7 times compared with loam soil. $NO_3{^-}-N$ contents in percolated water were high at the initial stage after compost application, and the amounts were higher in sandy loam soil than loam soil. The maize cultivation also decreased the $NO_3{^-}-N$ contents in percolated water by 82% in loam soil, and 58% in sand loam soil. Soil pH of composts determined by laboratory incubation test increased pH 6.1~6.8 application with poultry and cow manure compost but application with human excrement sludge decreased pH 4.5~4.7. Soil EC were increased initially composts application and decreased up to 2 weeks, thereafter kept a certain level. Nitrogen mineralization rates of composts determined by laboratory incubation test at $25^{\circ}C$ were 39~76% in sandy loam soil, and 16~48% in clay loam soil.
