The purpose of this study was to develop the dietary enhancement program for rural elderly. The subjects consisted of 71 normal healthy elderly aged over 60 living in rural and senior citizen center. Daily supplementation of 20g soybean powder of 3 months revealed no statistically significant elevation in serum parameters of the elderly, but resulted in the increment in the number of the subject with normal range of serum parameters and the improvement in perceptions of health status by CMI score, even though the nutrients intake had constantly lowered. The nutrients intake of rural elderly was very low: energy intake was 59-68% of RDA, that of protein 47~59%, and clacium 21~60% only. Supplementation of 20 g soybean powder per day for 3 months, did not enhance nutrients intake of rural elderly. We can recommended that constant nutrients supplementation program as well as dietary enhancement program are needed to improve the quality of life of rural elderly.
The purpose of this study was to investigate the relations of breakfast skipping and dietary habits according to breakfast intake frequency. Subjects were 5th and 6th graders of elementary school(n=423) in Gyeonggi area. As a result of analyzing the breakfast intake frequency, 'Having everyday' showed the highest 63.4%, followed by '4~6 times' 16.5%, '2~3 times' 13.5% and '0~1 times' 6.6%. As a result of analyzing the relations between mother and child in the breakfast intake frequency, it showed that the more mothers skipped breakfast, the more their children skipped it. For the reason of skipping breakfast, 'To be in time for school' showed the highest percentage. As a result of analyzing the perception of awareness for the importance of nutrition and dietary habit according to the breakfast intake frequency, there was a statistically significant difference in breakfast intake, dietary habits, selection and intake of proper food, disease and health problem according to the breakfast intake frequency. As a result of study, it is necessary that nutrition education should not be limited to children but expanded to their parents in order to increase the efficiency and effectiveness of nutrition education between school and home.

n accordance with the National Health Promotion Act of 1995, newly designed National Health and Nutrition Survey was carried out in winter of 1998. Although this survey amended most of the problems noted in previous Nutrition Surveys, it still had a limitation in reflecting seasonal variation in food intake due to the survey period which was confined to November and December. In order to counterbalance this limitation and estimate the yearly food intake of Korean population, three seasonal nutrition surveys were taken place in spring, summer, and fall of 1999. Seasonal Nutritional survey targeted 15 households each in 60 nationwide primary sampling units(PSUS) which were part of 200 PSUS of 1998 National Health and Nutrition Survey. Therefore, total of 2,700 households were surveyed in 3 seasons. The interviewers visited each household members and carried out face to face interview on household. Daily food intake was monitored using 24 hour recall method. According to the survey results, fruits, beverage and alcohol intake showed large variation with season while processed foods showed almost no variation. And intake of vegetables and fruits were influenced by their own harvesting time and had impact on the list of foods consumed most. With the result of the 1998 NHNS, this study made it possible to estimate the yearly average food intake of Korean population. The result of this survey is expected to be used in planning food supply and setting tolerance level of contaminants of each foods at the government level.

There is little information on dietary vitamin K intake and nutritional status of daily requirements of vitamin K in Korea. The objective of this study was to investigate the vitamin K intake and major food sources of Vitamin K in Koreans. The survey data from the 2010-2011 Korean National Health and Nutrition Examination Survey of 7,792 subjects (aged 19-64 years) were examined. Total vitamin K intake was calculated from 24-hour dietary recall using a vitamin K food database, Computer Aided Nutritional analysis Program and the United States Department of Agriculture database. The geometric mean of vitamin K was estimated as $322.40{\pm}6.33ug/day$ for men and $271.20{\pm}4.92ug/day$ for women. Daily vitamin K intake increased significantly with age (p for trend < 0.001). The main food source of vitamin K was vegetables (72.84%), including cabbage kimchi (19.26%), spinach (17.38%), sesame leaves (7.11%), radish leaves (6.65%), spring onions (6.28%), and laver (4.82%), followed by seaweed, seasonings, and fat and oils. We observed that the vitamin K intake of Koreans was relatively higher than that reported by other studies in Western countries and differed depending on age.
Objectives: The present study aimed to investigate high school students' sugar intake behaviors, the status of consuming sugary processed foods, the awareness of sugar, and the experience and interest in sugar-related education based on the level of sugar-related nutrition knowledge. Methods: In this study, five high schools were selected in Seoul, Korea, and a survey was conducted in 400 students on the level of sugar-related nutrition knowledge and sugar intake status. A total of 349 questionnaires were used for the final analysis. For statistical analysis, descriptive statistics was performed; a t-test, ${\chi}^2$ test, and Friedman test were used for comparative analysis. Results: The study results showed a positive association between the knowledge level of sugar and the appropriate sugar intake behavior and sugary food choices. The group with more nutrition knowledge on sugar was found to have good eating habits and to eat less sugary food. The main sources of sugar were beverages, confectionary, and bakery goods in the corresponding order, irrespective of the level of nutrition knowledge related to sugar. A significant difference was found in the groups' awareness of the sugar content of the drinks with 89.4% for the higher-knowledge group, and only 81.5% for the lower-knowledge group (p < 0.05). Results also showed that 43.9% of the higher-knowledge group and 36.4% of the lower knowledge group were interested in participating in education on sugar. Conclusions: This study result indicated the need to help adolescents to avoid excessive sugar intake from only certain favorite foods. Therefore, it is necessary to seek a systematic foundation for participatory education in order for them to maintain a low sugar intake in daily life and lead healthy eating habits by increasing their level of sugar-related information and knowledge.
BACKGROUND/OBJECTIVES: Women's bone health status is closely related with environmental factors and lifestyle factors. The purpose of this study is to evaluate the dietary risks of osteoporosis and osteopenia for Korean postmenopausal women. SUBJECTS/METHODS: The data from 1,433 subjects from the 2010 KNHANES were used and divided into three groups: normal, osteopenia, and osteoporosis group using bone mineral density (BMD). Nutrient intakes and food intake frequency were evaluated. Logistic regression analysis was applied to determine the odds ratios for osteoporosis and osteopenia. RESULTS: The RNI percentage of each nutrient and food intake frequency from 12 food groups decreased as bone mineral density status deteriorated. Risk for osteoporosis of low calcium (Ca) intake, under the EAR, showed an odds ratio of 2.13(95% CI; 1.26-3.61, P < 0.05). Higher intake frequency showed preventive effect from osteoporosis compared to lower intake frequency in such food group as dairy products (ORs 0.40, CI 0.21-0.75), beans (ORs 0.49, CI 0.29-0.83), seaweeds (ORs 0.55, CI 0.32-0.94), fish (ORs 0.56, CI 0.32-0.98), and fruits (ORs 0.42, CI 0.23-0.79) after adjusting for age. CONCLUSION: To prevent osteoporosis in later life, sufficient Ca intake and more frequent intakes of foods containing Ca such as dairy products, beans, fish, seaweeds, and fruits, which help in Ca absorption, should be stressed for Korean postmenopausal women.
BACKGROUND/OBJECTIVES: The effects of fish consumption by subjects with prediabetes on the metabolic risk factors were examined based on the data from the $6^{th}$ Korea National Health and Nutrition Examination Surveys in 2015. SUBJECTS/METHODS: A total of 1,520 subjects who agreed to participate in a blood test and dietary intake survey were divided into a prediabetes group and normal blood glucose group, and the level of the subjects' fish consumption was divided into ${\leq}17.0g/day$, 18.0-93.0 g/day, and ${\geq}94g/day$. The correlation between the level of fish intake and the metabolic risk factors was evaluated by multinomial logistic regression analysis. RESULTS: A significant difference in the gender distribution was observed in the prediabetes group, which is a group with a high risk of non-communicable diseases, according to the fish intake, and there were significant differences in the total energy intake, protein intake, n-3 fatty acids intake, and the intakes of sodium and micro-nutrients according to the intake group (P < 0.05). In addition, the blood total cholesterol (TC) decreased 0.422 fold in model 1 (unadjusted) [95% confidence interval (CI): 0.211-0.845] and 0.422 fold in model 2 (adjusted for sex) (95% CI: 0.210-0.846) in those with a fish intake of 18.0-93.0 g/day (P < 0.05) compared to those with a fish intake of ${\leq}17.0g/day$. The blood TC decreased 0.555 fold (95% CI: 0.311-0.989) in model 1 and 0.549 fold (95% CI: 0.302-0.997) in model 2 in those with a fish intake of ${\geq}94g/day$ compared to those with a fish intake of ${\leq}17.0g/day$ (P < 0.05). CONCLUSION: Subjects with prediabetes or the metabolic risk factors can maintain their blood low density lipoprotein cholesterol (LDL-C) and blood TC concentrations at the optimal level by consuming fish (18.0-93.0 g/day).
This study conducted to assess the effectiveness of nutrition education program for elderly females with various diseases. Forty subjects(hypertension ; 20, diabetes ; 12, hyperlipidemia ; 8) out of 56 completed the 7 weeks nutrition education program. The nutrition education program was based for healthy food habits and dietary guidelines for each specific disease. It also included practicing individualized menu planning and exercising program. Energy, calcium, iron, vitamin A and ash intakes significantly increased in the hypertension group. total sodium intake did not decrease, however sodium intake per kcal decreased significantly(p〈0.05). Elderly with diabetes did not show any changes in dietary intakes. Dietary protein, plant fat, ash, and sodium intakes were significantly elevated(p〈0.05), but cholesterol intakes significantly decreased(p〈0.05) in the hyperlipidemic group. Elderly with hypertension agreed strongly with changes of food habits such as increasing milk intake, and decreasing Kimchi, soup, pickles and salty food, and table salt intakes after nutrition education. Diabetic elderly showed significantly improved food habit scores in decreasing white rice intake, sugar intake and increasing sea-weed consumption, vegetable consumption and exercise. Hyperlipidemic elderly did not show much improvement in food habit scores except in biochemical indices. However, mean serum glucose and atherogenic index decreased in the diabetic and hyperlipidemic groups after education, respectively.
This study was conducted to examine contribution of specific foods to absolute intake and between-person variation in nutrients consumed by 2037 adults living in Korean rural area using one day 24-hour recall method. To measure contribution of food to absolute nutrient intake, all foods consumed were ranked by percentages calculated as the sum of the nutrient intake contributed by a given food divided by the total nutrient intake from al categories. To assess between-person variability in nutrient intake, stepwise multiple regression analysis was used with total nutrient intake from al foods as the dependent variable and the nutrient amount from each of all foods as independent variables. The kind and the number of foods necessary to account for the variation in nutrient intake among persons varied significantly depending on the nutrient. The nutrients contributing more than 80% of total intake with a few number of food items were ${\beta}$-carotene(ll), vitamin C(15) and vitamin A(16). Foods sometimes overlooked as important sources were found in some instances to be quantitatively important to population intake. Even though rice and Korean cabbage kimchi do not contain much nutrients in quantity, they made a major contribution to most nutrient intake of subjects because of large serving size and high frequency of intake. The food items and contributing order for between person variance was different from those of absolute intake. A large fraction of the variability of nutrient intake in this population was explained by a small number of foods. Fewer foods were required to explain a given proportion of the between-person variance in intake than to account for the same proportion of the popylation\`s total intake. This study was conducted to assess the nutrient intake and diet quality of college students in Seoul. Dietary survery data were obtained by 24-hour recall method from 774 students, 553 males and 191 females. Mean daily intake of energy was 2,480kcal with 56.4% of energy intake from carbohydrate, 14.6% from protein, and 25.5% from fat. Percentage of fat was higher than mean values of National Nutrition Survey(NNS), adults in rural area or younger students in previous studies. Mean daily intakes of calcium and vitamin A did not meet RDA levels in both sexes and intake of iron in females was insufficient to meet RDA level. The percentage of animal food to total food intake was 25% and consumption of meat, beverage and milk group was higher than those of National Nutrition Survey(NNS). When the consumption of 5 major food groups(grain, meat, milk, fruit, vegetable) were evaluated, 22% of students consumed all 5 groups and 47% consumed 4 groups, which show more balanced food group intake than adults in rural area. Food groups which were omitted frequently were milk and fruit. These results show that college students in Seoul consume better diet than subjects of National Nutrition Survey(NNS) or adults in rural area. However, high fat intake, low calcium and vitamin A intake and low iron level in women were observed. Majority(78%) of students had at least one food group omitted in their diet. Appropriate nutrition education may help to improve the quality of diet in these students.
