Sodium content changes between 2015 and 2019 in restaurant menu items selected for sodium reduction in Daegu

  • BACKGROUND/OBJECTIVES: South Korea has been conducting the Sodium Reduction Restaurant Project since 2015 to reduce sodium contents in restaurant menus. The purpose of this study was to analyze changes in the sodium content of menus as determined by the Daegu Sodium Reduction Restaurant Project between 2015 and 2019. MATERIALS/METHODS: Intervention was aimed at reducing the sodium contents of over 10% of menu items in participating restaurants. On-site inspections and evaluations were conducted using a checklist, and reductions in sodium contents were determined by analyzing the salinities and sodium contents of menus after intervention. RESULTS: Post-intervention salinities and sodium contents were significantly lower than baseline values in 2016 (P < 0.001), 2017 (P < 0.001), 2018 (P < 0.001), and 2019 (P < 0.001). However, sodium contents and salinities differences before and after intervention were not significant in 2015. Sodium contents of more than 20% of menu items offered by restaurants that participated in the Sodium Reduction Restaurant Project for 2 yrs starting in 2016 declined by 28.9%. On the other hand, the sodium reduction rate achieved by restaurants that participated for 4 yrs from 2015 reached 55.4%. The percentage of restaurants that participated in the project increased annually, though some failed to be designated as Sodium Reduction Restaurants because they did not meet sodium reduction rate requirements. CONCLUSIONS: Positive correlations were found between duration of participation in the project and sodium reduction and designation rates. Sustainable long-term support at the national level is required to expand the project to other regions.

어린이의 나트륨 섭취 저감화를 위한 교육 콘텐츠 및 교재 개발 (Development of Contents and Textbooks for the Education to Reduce Elementary Students' Natrium Intake)

  • This study was conducted to reduce sodium (Na) intake and to establish healthy dietary lifestyles of children. To achieve these goals, we searched, collected, and analyzed the materials related to the Na education, based on which the research personnel-professors and graduate students in nutrition and child education and elementary school teachers discussed to figure out major topics, objectives, and detailed contents and activities appropriate for Na intake reduction. Also a survey was done on the sodium intake and nutrition knowledge of the elementary students. We also organized an advisory committee composed of 15 professionals in related fields to discuss the adequacy and validity of the specific contents. Finally, we systematically organized the contents and developed children's textbooks and teacher's guidebooks. Considering the different cognitive development stages of junior and senior elementary students, we developed two different textbooks for each of them which are easy to read and understand, fun to play with lots of activities, and designed to practice into daily life. The contents cover three major topics-the concept of Na, Na in food, Na in life and are composed of 6 units in total. To help teachers understand and instruct, teacher's guidebook contains an overview of the education, specific information and practical guidelines for each class. We developed these education materials with the aim of lowering children's Na consumption and eventually promoting their health welfare; hopefully we expect these materials would be useful for children's nutritional education in the field.

Antioxidant and Antimicrobial Activities of Quinoa (Chenopodium quinoa Willd.) Seeds Cultivated in Korea

  • The objective of this study was to investigate the antioxidant and antimicrobial properties of quinoa cultivated in Korea and to compare it with imported quinoa from the USA and Peru. The highest amount of total flavonoid contents (TFC) with 20.91 mg quercetin equivalents/100 g was measured in quinoa seed extract cultivated in Korea, while the total phenolic contents (TPC) were significantly higher in quinoa from the USA (16.28 mg gallic acid equivalents/100 g). In addition, quinoa extracts cultivated in Korea displayed a superior antioxidant ability in both, ferric reducing antioxidant power and 1,1-diphenyl-2-picrylhydrazyl values. There was a high correlation between TFC and antioxidant activity and a low correlation between TPC and antioxidant activity. The antimicrobial activity of the quinoa extracts was determined using a disc diffusion assay and optical density method. In both assays, the quinoa seed extracts did not have strong antimicrobial activity against foodborne bacteria, including Staphylococcus aureus, Listeria monocytogenes, Bacillus cereus, Escherichia coli, Salmonella Typhimurium, and Campylobacter jejuni.

The Effect of Long-term Administration of Green Juice of Angelica Keiskei Koidz on the Contents of Several Selected Elements of the Mouse Organs

  • In order to study the content of selected elements in the organs of the mice, mice were fed with green juice of Angelica keiskei Koidz for 16 weeks. The results obtained from the experiments are summarized as follows : 1) The element contents(cr, Mn, Ni, Cu, Zn, Cd, Ba, Pb, and Fe) in the whole plant are generally the same as those the previous reports. 2) The element contents(Cr , Mn, Ni, Cu, Zn, Cd, Ba, Pb and Fe) in the green juice did not exceed those of the edible water standard. 3) The element contents (Cr, Mn, Ni, Cu, Zn, Cd, Ba, Pb and Fe) in the brain is slightly higher than those in the whole plants. 4) The element contents(Cr, Ni, Pb and Fe) in the organs of the mice fed green juice for 16 weeks are the same as those of the previous reports.

영양교사의 전문성 증진을 위한 직무연수에 관한 연구 - 경북지역 중심으로 - (Study on Job Training for Specialty Enhancement of School Nutrition Teachers - In Gyeongbuk Area -)

  • The present study was performed to evaluate the job training needs of school nutrition teachers in order to enhance their specialty. Three hundred and forty questionnaires were distributed to school nutrition teachers working at primary and high schools in the Gyeongbuk area while 45 were distributed to professors during 2010~2011. Three hundred and two questionnaires from school nutrition teachers and 33 from professors were returned and analyzed. The rate of teachers practicing nutrition education was 54%, and the educational content was obtained mainly from the internet. The top three problems the teachers encountered were 'lack of standardized educational materials', 'inexperience of teaching', and 'insufficiency of expert knowledge'. The teachers recognized 'training program' as the best solution. However, the job training program operated immediately after teachers were appointed scored only 3.03 out of 5.00. Important contents of the training program ranked highly by the teachers were 'development of education materials', 'nutrition counseling', and 'teaching method'. The professors included 'expert knowledge' in their top three contents. Both the teachers and professors agreed to increase the frequency of 'practice' in training methods. Other factors the teachers considered to be important were high quality, diversity, ability of the instructor, training cycle, and the institution in charge. From these results, it can be concluded that efficient job training programs are needed for school nutrition teachers according to the importance of the education contents and training methods. It is therefore suggested that a cooperation committee be composed of an educator, educatee, and related personal in a local education office in order to operate the program.

Effect of Fat Contents on Thermal Resistance, Antibiotic Sensitivity, and Caco-2 Cell Invasion of Listeria monocytogenes

  • This study evaluates the effects of fat contents on the thermal resistance, antibiotic sensitivity, and Caco-2 cell invasion of Listeria monocytogenes. Ten strain mixture of L. monocytogenes in milk (0, 1, and 4% fat) and pork sausage patties (10, 20, and 30% fat) were exposed to $63^{\circ}C$. To evaluate effects of fat on the antibiotic sensitivity of L. monocytogenes, the L. monocytogenes strains NCCP10811 (most antibiotic resistant to streptomycin) and NCCP10943 (most antibiotic sensitive to streptomycin) were exposed to different fat contents in milk and pork sausage patties, and L. monocytogenes from the foods were used for antibiotic sensitivity assays. The most invasive L. monocytogenes strains (NCCP10943) was exposed to different fat contents in milk or pork sausage patties, and L. monocytogenes from the foods were used for the Caco-2 cell invasion assays. The reductions of L. monocytogenes populations were not generally influenced by fat contents. The L. monocytogenes subjected to milk fat had increased sensitivities (p<0.05) due to some antibiotics. In addition, Caco-2 cell invasion efficiency of L. monocytogenes NCCP10943 increased (p<0.05) as fat contents increased. These results indicated that higher fat contents may be related to L. monocytogenes invasions and heat resistances in pork sausage patties, but the relationship between fat and antibiotic sensitivity varied according to antibiotics, strains, and fat contents.

모유의 셀레늄과 아연 함량에 관한 연구 (A Study on the Contents of Selenium and Zine in Human Milk)

  • The changes of selenium and zine contents of transitional milk and mature milk at 7 and 60 days postpartum were comparatively studied on 20 Korean lactating women. the selenium and zinc contents of transitional milk and mature milk were analyzed by atomic absorption spectrophotometer after wet-digestion. The mean selenium contents wer 12.2$\mu\textrm{g}$ /ι and 11.5$\mu\textrm{g}$/ι at 7 and 60 days postpartum, respectively. The mean zinc contents decreased significantly from 4.23mg/ι at 7 days to 1.62mg/ι at 60 days postpartum (p<0.05).

낙상홍 추출물의 효능에 관한 연구 (A Study of Effects of Ilex serrata Thunb Extracts)

  • In this study, Ilex serrata Thunb was extracted with 70% methanol and concentrated under reduced pressure to measure its total polyphenol contents; furthermore, we examined the effect of electron donating ability of the various extracts. The extract was fractionated using different solvents such as methylene chloride, ethyl acetate, and methanol to investigate total polyphenol contents and electron donating abilities. The total polyphenol contents were $1,058.59{\pm}85.85{\mu}g\;GAE/mL$ in 70% methanol, $297.29{\pm}29.43{\mu}g\;GAE/mL$ in methylene chloride, $313.28{\pm}9.22{\mu}g\;GAE/mL$ in ethyl acetate, and $837.82{\pm}31.16{\mu}g\;GAE/mL$ in methanol. The total polyphenol contents showed significant differences (p<0.05) between the solvents. The electron donating abilities were $72.93{\pm}0.29%$ for 70% methanol extract, $14.02{\pm}2.01%$ for methylene chloride, $24.05{\pm}1.75%$ for ethyl acetate, and $84.08{\pm}1.95%$ for methanol. The electron donating abilities were significantly different (p<0.05) between the solvents. The two portions of Ilex serrata Thunb extracts obtained from methanol showed significantly relevant results in the total polyphenol contents and electron donating ability, which was higher than the original extract.

Changes in Isoflavone Contents during Maturation of Soybean Seed

  • Isoflavones are associated with prevention of chronic diseases such as cancer, osteoporosis, and hypercholesterolemia. The isoflavone contents at different development stages of soybean were anayzed to examine the period of their formation and reaching maximum level. Soybean sedds have been collected from 13th to 21st week after sowing. Total daidzein and genistein contents increased from 115 and 37mg/kg at 13th week, to 795 and 699mg/kg at 21st week, respectively. Total glycitein content showed less remarkable change during seed development than other isoflavones. Thus mature soybean may have maximum preventive effect from chronic diseases since it contains the highest level of isoflavones.

유아영양교육 내용에 대한 유아교사의 개념도 분석 (Analysis of Early Childhood Teacher's Concept Maps on the Contents of Early Childhood Nutrition Education)

  • 본 연구는 개념도 분석을 통해 유아교사의 유아영양교육 내용에 대한 지식과 지식수준이 어떠한지를 파악하기 위해 실시되었다. 대구 경북지역 유아교사 105명을 대상으로 유아영양교육 내용에 대한 개념도를 작성하도록 한 후 개념도 분석을 하였다. 연구결과 첫째, 유아교사의 유아영양교육 내용에 대한 지식을 살펴본 결과, 상위개념 빈도가 가장 높은 것은 식습관이었고, 유아영양교육 내용요소별 재분류한 결과 빈도가 가장 높은 것은 청결과 위생이었다. 둘째, 유아교사의 유아영양교육 내용에 대한 지식수준을 살펴본 결과, 상위개념에 포함된 종속개념 수와 위계의 평균이 가장 높은 것은 식문화였고, 특성점수에서는 음식이 가장 높았다. 밀도는 비슷한 수준으로 분포되어 있었다. 본 연구결과를 통해 교사가 유아영양교육 내용에 대해 보다 위계적, 조직적, 통합적 지식을 갖고 교육현장에서 활용할 수 있도록 돕는 교사교육이 필요함을 시사 받을 수 있다.
