인천지역 일부 남녀 중학생의 급식비지원에 따른 급식만족도, 식습관 및 영양 섭취상태 비교 (Comparison of Meal Satisfaction, Dietary Habits, and Nutrient Intakes according to School Lunch Support among Middle School Boys and Girls in Incheon)

  • The purpose of this study was to provide fundamental data for health promotion and improvement of the dietary life in students who receive school lunch support (SLS) by comparative analysis of food service satisfaction, dietary habits, and nutrition intakes according to SLS. The subjects of this study consisted of 258 boys and 233 girls at a middle school in Incheon. The students' average age was 14.9 years, average height was 161.3 cm, and average weight was 52.0 kg. The breakfast eating frequency of the No-SLS (NSLS) group was significantly greater than that of the SLS group (P<0.05). The time spent for eating breakfast in the SLS group was significantly shorter than that of the NSLS group for boys. There was no significant difference in dietary attitudes according to SLS. For satisfaction of the quantity and diversity of the school lunch menu in girls, the SLS group had higher satisfaction than the NSLS group. The daily energy intake of the SLS group was significantly lower than that of the NSLS group in both boys and girls. The majority of daily nutrients intakes in the SLS group were also significantly lower than those in the NSLS group. In summary, the female students in the SLS group were more satisfied with school lunch service than general students. However, SLS students less frequently ate breakfast and showed lower energy and nutrient intakes. Therefore, in order to improve the nutritional status and dietary life of students who receive school lunch support, consistent nutrition management and support in schools are required.

농경지 양분수지 개선에 대한 소비자 지불의사 분석 (An Analysis of Consumer's Willingness to Pay for the Improvement of Agricultural Land's Nutrition Balance)

  • Korea has become the highest nitrogen balance (228 kg/ha) among 34 OECD member countries, and has the stigma of being a 'Nutrient overload country' as of 2019. Accordingly, research on the derivation and utilization of nutrient balance indicators and the 'regional nutrient management system' are being promoted to improve Korea's nutrient balance. It is necessary to support these policies and studies, form a public consensus on improving the nutrient balance, and evaluate the function of the public benefit. This paper aims to estimate the public benefit value of improving the nutrient balance based on an analysis of consumers' willingness to pay and recognition of Korea's nutrient excess for 600 consumers nationwide. As results, 21.2% of the respondents said they were aware of excessive nutrients in Korea, and 76.7% of the respondents said they were aware of the need for nutrient management. The average amount of intention to pay for the improvement of three pollution (soil, water quality, and air) that can occur due to a nutrient overload was ₩2,321.1 for soil pollution improvement, ₩2,391.2 for water pollution improvement, and ₩2,377.9 for air pollution improvement. The average willingness to pay for the three pollution reduction was ₩6,002.3. These results are expected to be used to form a public consensus on the balance of payments and to establish measures to enhance public interest values in the future.

고령자 심리 및 신체장애와 영양소 섭취와의 관계 -제 8기 국민건강영양조사 자료 이용- (Relationship between Psychological and Physical Disability and Nutrient Intake in the Elderly -The 8th Korea National Health and Nutrition Examination Survey-)

  • This study provides basic data when planning nutrition support for healthy aging by revealing the relationship between various symptoms in the elderly and nutrient intake. From the 8th National Health and Nutrition Examination Survey, data from senior citizens aged 65 years or older in 2021 were used, and answers on the depression prevalence, activity restrictions, complaints of discomfort when chewing, and nutrient intake were analyzed through SPSS multiple logistic regression analysis. In the case of depression, there was a significant effect on the intake of four of the 20 nutrients (water, protein, cholesterol, and vitamin E). When experiencing activity restrictions, the intake of eight of the 20 nutrients (phosphorus, magnesium, vitamin A, vitamin D, beta-carotene, retinol, thiamine, and niacin) was affected. When experiencing chewing discomfort, the intake of three of the 20 nutrients (fat, magnesium, and vitamin E) was affected. Elderly people who suffer from depression, activity restrictions, and discomfort with chewing are at risk of various nutrient deficiencies, and related studies need to be conducted.

Effect of saccharin (sweetener) supplementation on growth performance, nutrient digestibility, fecal microbial, and fecal score in weaning piglets

  • Sweeteners are beneficial for weaning pigs as they contribute to improved palatability, increased feed intake, energy provision, gut health support, and alleviation of post-weaning stress. This study was conducted to evaluate the effects of saccharin on growth performance, nutrient digestibility, fecal microbial, and fecal score of weaning pigs. A total of 80 (21 days old) crossbred ([Yorkshire × Duroc] × Landrace) healthy weaned piglets with an initial body weight (BW) of 6.85 ± 1.36 kg were randomly allotted to one of two nutritive treatments with 8 repetitions and five pigs (2 female and 3 male) per pen. The dietary treatments consisted of control (CON): basal diet; treatment (TRT): basal diet + 0.03% saccharin. The result showed that average daily gain (ADG) and average daily feed intake (ADFI) were increased (p < 0.05) in weaning fed saccharin supplemented diets compared with control diet. However, there was no significant difference in nutrient digestibility, fecal microbial, and fecal score among dietary treatments (p > 0.05). In summary, the sweetener supplementation with diet had a significant effect on ADG and ADFI without compromising nutrient digestibility, fecal microbial, and fecal score in the weaning pigs.

국내 시판 이유식류의 영양성분규격 설정 방안 (Study on the Establishment of Nutrient Requirements for Commercial Supplementary Foods for Infants and Young Children)

  • This study was conducted to evaluated the nutrition quality of the commercial supplementary foods for infants and young children and to seek a solution to the establishment of standards of nutrient requirements for supplementary foods in Korea. Information on food ingredients, nutrient contents, claims about usefulness of food components and instructions for feeding preparation were obtained from the labels of 33 commercial supplementary foods manufactured by 4 different domestic companies. According to the standard of supplementary foods for infants and young children described in the Korean Food Code, the commercial supplementary foods were categorized into two different types, weaning food and baby food. All the commercial weaning foods were in powder form and mainly composed of cereals, whereas all the baby foods were mainly composed of fruits in the form of canned juice. The weaning foods contained more nutrients than the baby foods did, and the nutrient levels of the weaning foods expressed as nutrient density on energy basis were higher than the RDA for infants aged 5 to 11 months, suggesting that the commercial weaning foods provide adequate amounts of nutrients. If one followed the instructions for feeding preparation appearing on the label, however, recommended amounts of intake of the weaning foods would provide too much energy as well as nutrients. There were many differences in nutrient standards of weaning foods between the Korean Food Code and Codex international food standard. In conclusion, the establishment of standards for nutrient requirements for the supplementary foods requires significant scientific studies on what nutrients are the most inadequate in Korean infants and young children feeds and what levels of nutrients should be added to the foods in order to supplement their nutrition. In addition, it is very important to have a strong scientific basis to support our standard when discrepancies exist between our standard and the international standard. 한국인 가임기 여성의 영양소 섭취량 및 식사 다양성 평가 (The Evaluation of the Dietary Diversity and Nutrient Intakes of Korean Child-bearing Women)

  • This study was performed to assess the extent of dietary diversity and nutrient intakes of Korean child-bearing women and to investigate the relationships between dietary diversity indices and nutrient intakes. A total of 91 women aged 18 to 48 years old participated. They were divided into four groups by age 15 subjects in teens, 20 in twenties. 32 in thirties and 24 in forties. Mean energy intake was 1638${\pm}$471㎉/day and it was low as 81.4% of the Korean RDA for energy. Mean intakes of folate, calcium and iron were also low as 81.7%. 72.6% and 57.2% of the RDAs. On the other hand, protein, vitamin A, thiamin, riboflavin and vitamin C were consumed close to or above the RDAs. It was obvious that the subjects in teens and twenties took less all of the nutrients as well as energy than those In thirties and forties. Mean nutrient adequacy ratio( MNAR) was 0.77 and showed a trend to raise with increasing age. Thus MNAR of the teens was the lowest and that of the forties was the highest among the age groups. The results in this study support the previous findings that nutrient intakes of women in teens and twenties were poorer compared to those in thirties and forties. Mean dietary diversity score( DDS) . dietary variety score(DVS) and dietary frequency score( DFS) were 4.1. 11.6 and 14.7. respectively. DVS and DFS of the teens and twenties were lower than those in thirties and forties. DDS significantly correlated to the intakes of energy and calcium only, however, DVS and DFS had significant relationships to the intakes of all nutrients. The MNAR significantly related to DVS and DFS. but not DDS. In conclusion, the intakes of energy, folate. calcium and iron of child-bearing women were not sufficient and their nutrient adequacy highly correlated with dietary diversity. It indicates that to consume various foods helps to enhance the nutritional status.

밤을 이용한 가공식품 개발 연구 (The Study on Development of Processed Foods with Chestnut)

  • This study aims to develop the processed foods with chestnut and support their commercialization. Interview was performed with owner of Gongju chestnut food processing company and sensory evaluation was carried out by 103 male and female adults aged 20-70 using Likert 5 point scale-scoring test for chestnut processed food items developed. Nutrient contents of processed foods with chestnut were analyzed by Korea Food Research Institute. Commercialization support contents were high calorie low nutrition distinction, nutrition facts production and expiration date determination. We suggested 27 kinds of feasible chestnut processed foods. Among these, 10 items, chestnut pudding, chestnut glutinous rice cake bread, chestnut poundcake, chestnut burrito, chestnut millet pancake, chestnut soup, Yulpyeon, chestnut yakgwa, chestnut yeot, and chestnut yanggaeng were selected after consultants' assessment. Considering sensory evaluation, consultants' opinions, and company owners' opinion and status, chestnut poundcake and chestnut yakgwa were ultimately selected for commercialization support. Nutrient contents showed that chestnut pound cake and chestnut yakgwa were not high calorie low nutrition food. Expiration date was 10 days for chestnut pound cake and 6 months for chestnut yakgwa. By developing chestnut processed foods with high marketability, and supporting immediate commercialization, it is expected to increase high added value of chestnut.

충남지역 일부 초등학생과 중학생 중 아침결식군과 아침식사군의 식행동과 열량 및 영양소 섭취 상태 평가 (Evaluation of Energy and Nutrient Intake as well as Dietary Behaviors in Elementary School and Middle School Students Residing in Chungnam according to Breakfast Eating Status)

  • The purpose of this study was to evaluate the dietary behaviors as well as energy and nutrient intake in elementary and middle school students according to breakfast eating status. The survey was conducted using questionnaires and dietary records among 191 elementary school students and 280 middle school students residing in Chungnam. The subjects were divided into two groups according to frequency of eating breakfast: breakfast skipping (frequency of eating breakfast under 4 times/week) and breakfast eating (frequency of eating breakfast over 5 times/week). The rate of breakfast skipping was 27.2% for the elementary school students and 31.1% for the middle school students. The breakfast skipping group had a significantly lower frequency of having dinner, a lower proportion of eating at regular meal times, and a significantly higher frequency of leaving food after meals than the breakfast eating group for both elementary and middle school students. In the case of the elementary students, there was a significant difference in carbohydrate intake between the two groups. In the case of the middle school students, the intakes of energy, protein, carbohydrate, dietary fiber, vitamin A, vitamin B2, niacin, vitamin B6, folate, vitamin C, Ca, and Fe in the breakfast skipping group were significantly lower than those in the breakfast eating group. These results show that nutrient deficiencies among breakfast skipping individuals cannot be compensated for at the other meals during the day in middle school-aged adolescents whose nutrient requirements are high for growth. Therefore, in support of proper dietary management, it is necessary to promote and support breakfast eating in adolescents.

Comparisons of food security, dietary behaviors and nutrient intakes between adult North Korean Refugees in South Korea and South Koreans

  • BACKGROUND/OBJECTIVES: North Korean refugees (NKRs) in South Korea are a unique population as they must adapt in a new country with similar cultural traits but different social, political, and economic systems, but little research has been conducted on diet and nutrition in this population. This study examined food security, dietary behaviors, and nutrient intakes among adult NKRs living in South Korea and compared them to those of South Koreans. SUBJECTS/METHODS: The subjects were 139 adult NKRs (25 men, 114 women) living in the Seoul metropolitan area, and 417 age- and sex- matched South Korean controls (SKCs; 75 men, 342 women) selected from the Korea National Health and Nutrition Examination Survey (KNHANES). Food security and dietary behaviors (meal skipping, eating-out, meals with family, nutrition education and counseling, and nutrition label knowledge and utilization) were obtained using self-administered questionnaires. Nutrient intakes were assessed by 24-hr recall. The statistical analysis was performed using IBM SPSS ver. 23.0. RESULTS: In South Korea, food security had improved over the previous 12 months, but remained significantly poorer for NKR women than SKC women. Meal skipping was three times more frequent than for SKCs and eating-out was rare. Average energy intake was 1,509 kcal for NKR men and 1,344 kcal for NKR women, which was lower than those of SKCs (2,412 kcal and 1,789 kcal, respectively). Significantly more NKRs (men 24.0%, women 21.9%) showed simultaneously deficient intake in energy, calcium, iron, vitamin A, and riboflavin than SKCs (men 2.7% (P = 0.003), women 7.0% (P < 0.001)). NKR women had a significantly higher index of nutrient quality (INQ) for some nutrients than SK women. CONCLUSIONS: This study reports significant differences in food security, dietary behaviors, and nutrient intakes between NKRs and SKCs. Generally, NKRs reported lower intakes despite improved food security, but relatively good INQs across nutrients. Further research is needed to understand processes of food choice and consumption among NKRs to provide appropriate support aimed at improving diets.

도시 저소득층 지역의 모자 영양 및 섭식에 관한 생태학적 연구 -III. 영유아의 섭식과 성장발육- (Ecological Studies of Maternal-Infant Nutrition and Feeding in Urban Low Income Areas -III. Infant's Nutrient Intakes and Growth pattern-)

  • The purpose of this study was to evaluate the nutritional status and growth of Korean infants, who were atending peripheral community clinics in low income areas, by anthropometric measurements and estimating dietary intakes. Dietary intakes and growth were compared among different feeding patterns of 143 infants until age 9 months. The overall mean nutrient intakes of infants in this study were below the recommended allowances except the calcium intake from significant difference in each groups; however, calcium, zinc and iron intake of the formula fed infant(FF) was higher than the breast fed infant(BF) or the mixed fed infant(MF). Form ages 4-6 months, the nutrient intakes were shown to be higher in groups that were given supplementary foods than groups that were not. From ages 7-9 months, all nutrient intakes were higher in or the formula and supplementary foods fed(ESF) infants than in the breast and supplementary food(BSF) or the formula and supplementary food(FSF) groups, All subjets in this study showed a large Z-score. The growth of infants up to 6 months of age showed no significant difference in the feeding pattern, however, after 7 months of age the BSF group had significantly lower weight than the FSF or the ESF groups, There were significant positive relationships between infants weight gain at age 7-9 months from birth and the current protein or zinc intakes. As a result the average status of nutrient intakes of infants in this area was loser than the RDA, however, the growth pattern was fairly good. Although the breast milk is beneficial for infants, mothers should be educated for the importance of supplemental food and its practice to support good mutrition(Korean J Community Nutrition 3 (2) : 174-189, 1998)
