  • In order to identify valuable factors for improving dietary quality of Korean rural elderly, the consumption frequency of food groups, dietary habits and health behaviors related to nutrient intakes of the elderly over 85 of Sunchang County were studied. The 171 subjects (61 males and 110 females) were chosen from Sunchang Province by stratified sampling. Among food groups, the consumption frequency of meat and fish groups influenced significantly on their nutrient intakes than the other groups. The subjects consuming more than 4 times per week of meat or fish had significantly higher nutrient intakes level than the other groups. The group consuming milk and milk products everday was higher in vitamin $B_2$ intake level than the other groups. Among dietary habits, the groups with good appetite and regular mealtime compared with the groups with low appetite and irregular mealtime had significantly higher nutrient intake levels. The family type was the determining factor of nutrient intakes. The subjects living with family members consumed higher nutrient intakes than the subjects living alone. The smoking and the alcohol consumption themselves did not affect nutrient intakes, but the subjects having alcohol consumption frequently more than once a day had lower nutrient intakes than the others. The group with dentures did not differ significantly from the without denture group in nutrient intakes; however, those who had chewing problems showed the lower nutrient intakes compared to those who did not have chewing problems. The subjects with more than two kinds of clinical symptoms had lower nutrient intakes than the subjects with less than two kinds of clinical symptoms. These results indicate that the identifying factors for desirable nutrient intakes of rural elderly were characterized as appropriate consumption frequencies of meat and fish, good appetite, living with family, regular mealtime, chewing without difficulty, and low incidence of chronic disease.

  • The purpose of this study was to investigate eating behavior, nutritional status and health conditions of college students attempting a weight control. The subjects are 88 students of the Daegu area. Their weight, height, triceps, and mid-arm circumference were measured and their dietary intake and eating behavior were obtained by using questionnaires. The 24-hour recall was obtained from the subjects. The results are summarized as follows: The average height, weight and BMI of the attempt and no-attempt male and female students were 171.2cm, 70.7kg and 24.1; 170.4cm, 79.9kg and 27.5; 159.3cm, 60.9kg and 24.0; 157.7cm 60.1kg and 24.2, respectively. Energy intake of the attempt and no-attempt male and female group was 63.9%, 61.8%, 76.2% and 83.9% of RDA respectively. Protein intake of each group was 97.5%, 83.9%, 60.1% and 67.3% of RDA respectively. The following items registered a negative correlation weight and carbohydrate, weight and Na intake, weight and vitamin C intake, PIBW and Na intake, TSF and fiber intake, TSF and Na intake, TSF and vitamin C intake, MAMC and Na intake, and MAMC and vitamin C intake. A relative magnitude of factors affecting weight control was analyzed by Stepwise multiple regression analysis. Overall results about relative influence of independent variables to the dependent variable(weight control) indicated that the BMI (p<0.01) was the most significantly correlated with weight control in all subjects. The results of this study suggest that the extensive nutrition education in the weight control program should be emphasized to prevent obesity early.

  • In mordern society, nutritional and appetite disorders occur in epidemic proportions and are serious health harzards. Obesity and diabetes affect over 30% of American population, while eating disorders, such as anorexia nervosa and bulimia nervosa occur in a growing number of adolescences and young adults. The changes in various sociocultural aspects with the introduction of Westernized culture have had the effect of increasing the risk of same problems in Korea. Disorderd eating patterns are a primary symptom of numerous psychiatric disorders and loss of appetite and cachexia, during illness or in the elderly, preclude proper medical treatment for restoring good health or preserving life. Increased understanding of the systems of the body and brain, related to energy and nutrient balance, may help us to treatment and ultimately prevent these commom disorders. In this review, the author highlights the psychobiological mechanisms or factors which are associated with eating behavior, especially in the view of intake psychobiology. This review would be concentrated on 1) the theoretical concepts and theories of eating behavior ; 2) the psychobiological determinants of food intake ; and 3) the psychobiological control of eating behavior.

  • The purpose of this study was to investigate the effects of dietary behavior on the nutritional status of university students in Korea. A dietary intake survey of 603 university students (223 males and 380 females) was conducted using a 24-hour recall method. The resulting data on dietary behavior and nutrient intakes were analyzed by the SAS program package. The main results were as follows : 1) Most of the subjects were in their twenties and no obese cases were found. 2) Dietary intake data showed that, except for vitamin C in the female students, the average daily intakes of most nutrients did lot meet the Korean Recommended Dietary Allowances (RDA). The study also showed that most of the subjects, especially the female students, were concerned about having satisfactory physical appearances. Fat provided 25% of the daily energy intake, and this level was higher than the 20% recommended by the Korean Dietary Guidelines. In the female students, the iron intake from animal foods was lower than that from plant foods. 3) Male students were not very serious about healthy eating. However, the female group, who obtained a high score in dietary behavior, consumed more vegetables and had higher intakes of energy, protein, Ca, p, vitamin A, and vitamin C than the male group, even though they did not meet the Korean RDA in most nutrients. Energy intake from fats, as a percent of total energy intake, was lower than in the group of females who obtained higher stores in dietary behavior than the other groups. To sum up, the university students surveyed in this study were found to have the typical dietary behavior of young adults, such as frequent eating out and snacking. Female students were extremely conscious of their body images this can exert an important direct influence on their dietary intakes and health status. It is very important for university students to develop healthy lifestyles and desirable dietary behaviors, to best enable them to continue to lead a healthy lift: in their later years.

  • This study was carried out to compare the dietary behaviors and the nutrient intake of a middle school and a high school girls in Iksan. The subjects consisted of 132 middle school girls and 122 high school girls in Iksan. The proportion of subjects eating meals irregularly was higher in the high school girls (98.6%) than in the middle school girls(78.7%). The proportion of subjects skipping a meal also was higher in the high school girls(61.5%) than in the middle school girls(53.8%) and most of them (65.8%) skipped breakfast though they thought breakfast was the most important meal of a day (87.4%). The subjects tended to overeat at lunch (38.6%), and at dinner (55.9%). The main reasons of skipping a meal were 1. They had no time (49.3%), and 2. They had poor appetite (24.7%) Mean daily energy intake was 2198.5Kcal in the middle school girls and 2150.5Kcal in the high school girls and mean daily intake of protein, iron, vitamin $B_1$, vitamin $B_2$ and niacin was significantly higher (p<0.05, p<0.01) in the middle school girls than in the high school girls. Mean daily calcium, iron, vitamin $B_1$, vitamin A and C intake of middle school girls were lower than those of RDA and all nutrients intake of high school girls except for phosphorus was lower than those of RDA. The index of nutritional quality (INQ) was under 1.0 for calcium, iron, vitamin A, $B_1$ and C. Mean blood level of cholesterol, triglyceride, Hb, Hct, GOT, GPT were 170.9mg/dl, 78.9mg/dl, 13.1g/dl, 39.5%, 18.8mg/d and 15.7mg/dl, respectively.

  • The purpose of this study was to compare the degree nutrient intake, health status and other characteristics of females aged 65 years and over in a longevity area according to family arrangement. For analysis, 585 female elderly were recruited from the Kugoksoondam area (Kurye, Goksung, Soonchang and Damyang counties), known as the longevity-belt region in Jeonla province, Korea. The subjects were categorized into three groups according to family arrangement (living alone, living with spouse only and living with family). Demographic characteristics were collected, as well as information on physical measurements, blood tests for biochemical indicators, health status and health-related life style, dietary behavior, favorite food groups, consumption frequency of food groups, nutrient intake and mini nutrition assessment. In the group living with their spouse only, the highest education, physical activity, diverse food intake, frequency of eating meats and fish, energy and nutrients intake, and score on the mininutrient status assessment (MNA) were found to be significantly favorable factors. Taken together, these results demonstrated that the group living with their spouse only had relatively superior nutrient intake and the quality of diet. In contrast, the group living alone showed the lowest self-rated economic status, diversity of food intake, and physical activity, with the highest frequency of drinking, smoking and regular exercise for almost everyday compared with the other groups. On the other hand, those living with family demonstrated the lowest intake of supplements or functional foods, and levels of hemoglobin hematocrit MCH, but the highest HBA1c and blood sugar. Therefore, the group living with family was assumed to be at risk of anemia and diabetes. These results could be useful to plan effective strategies to increase the health-life expectancy of Korean elderly people living in rural areas, according to family arrangement.

  • The purpose of this study was to investigate the effect and correlation of anthropometric data, eating behaviors, and nutrient intake on the bone mineral density(BMD) of female college students. 349 female college students were surveyed and their age, height, and weight were an average of 20.5 years, 163.2 cm and 54.0 kg, respectively. Their average BMI was 20.2, with 66% falling in the normal range, 21.8% classified as underweight, 8.0% as overweight, and obese individuals comprised 3.4% of the sample by BMI classification. Calcaneal BMD was measured and the average T-score was 0.117. The results of BMD measurements were normal in 268 people(76.8%), osteopenia was found in 71 individuals(20.3%), and osteoporosis in 10(2.9%), respectively. There was a significant difference in bone mineral density according to height(p<0.05) and BMI (p<0.01). There were significant differences between BMD and eating behavior, regularity of eating behaviors(p<0.05), instant food intake(p<0.05), eating out(p<0.05) and nutritional supplement intake(p<0.05). In addition, normal the group with normal BMD had a more desirable eating behavior compared to the osteopenia and osteoporosis afflicted groups. BMD had a significant difference according to the nutrient intake of calcium(p<0.05), vitamin A(p<0.05), and vitamin C(p<0.05). In conclusion, BMD showed a good correlation with height(p<0.01), BMI(p<0.01), body composition including total body water(p<0.05), FFM(p<0.05), body protein(p<0.05) and intake of calcium(p<0.05), iron(p<0.05), vitamin A(p<0.05), and vitamin C(p<0.05). Therefore, an education plan and training on balanced diets proper body weight control, and desirable eating behaviors for female college students will be needed.

  • This study was designed to develop, implement and evaluate a nutrition education program for elementary school children. Subjects consisted of 47 children in the 6th grade in Seoul, Korea. They received five sessions of nutrition education from June to July, 1999. Topics for nutrition education included function of nutrients, food sources of nutrients, balanced diet, meal planning, and adequate energy intake. Each session lasted 40 minutes. To evaluate program effectiveness, one group pretest-posttest design was used. Subjects were given a pretest and a posttest on nutrition knowledge, eating attitudes, eating behavior, and dietary intake. All data were statistically analyzed mainly using the paired t-test and $\chi$$^2$-test. There was a significant difference between pretest and posttest score on nutrition knowledge(p<0.001), subscales of nutrition knowledge including food sources of nutrients, function of nutrients, and balanced diet(p<0.001). These changes in nutrition knowledge were also shown both in boys(p<0.001) and in girls(p<0.001). Eating attitudes, subscales of eating attitudes, and eating behavior were not significantly changed after nutrition education, although some changes were observed in these variables. Dietary intakes were not significantly were not significantly changed after nutrition education for all subjects ; however, different patterns in dietary intakes were observed when examined by sex. There was an increase in nutrient intakes among boys, while there was a significant decrease in nutrient intakes among girls after program implementation. Especially, it was noted that girls had diets deficient in iron, calcium, and vitamin A, even after nutrition education. It was concluded that a five-week nutrition education program can improve nutrition knowledge or some dietary intake, but this might not be enough to induce changes in food attitudes, eating behavior or dietary intakes. It might be necessary to incorporate diverse approaches, targeting sub-groups of children, and follow-up in nutrition education for elementary school children. • Adolescents grow rapidly and have lots of schoolwork for entrance examination, so good nutrition is very important to them. However, adolescents tend to have a poor dietary behavior including frequent consumption of empty calorie foods and skipping breakfast. In particular, frequency of drinking milk has been low among Korean adolescents, thus their dietary calcium intakes has been low. Undesirable dietary behavior of adolescents is a risk factor for poor nutrition, obesity and chronic disease of them. Milk is a good source for calcium, high quality of protein, vitamin and bioactive compounds including anti-obesity component, thus it has been reported that milk helps improvement of dietary nutrient adequacy and physical growth, increment of bone mineral density, and prevention of obesity and chronic diseases. Therefore, milk consumption of adolescents should be encouraged in order to help their nutritional status, physical growth and health.
