Dietary peptides have recently received attention regarding their beneficial effects on nutrient metabolism since the caseinphosphoptides obtained from casein hydrolysate are generally believed to enhance the intestinal absorption of Ca. The two experiments were conducted to investigate the effects of various hydrolyzed fractions of gluten on Ca bioavailability. The gluten hydrolysate of dietary components was produced by enzymatic hydrolysis of gluten whereas gluten hydrolysate supernationt and its precipiate resulted from centrifugation. In experiment I, the rats were for 4 weeks fed the 4 kinds of diets containing same amount of nitrogen and calories and diffeing only in the forms of nitrogen sources. The diets were gluten (G), gluten hydrolysat(GH), gluten hydrolysate supernatant(GHS) and gluten hydrolysate precipitatie(GHP). Determination was made for the body weight gain, serum Ca concentration, Ca solubility in small intestinal contents, bone weight, length and stength, bone ash and Ca content, and Ca balance, respectively. No significant difference was noticed as regards growth, serum Ca, and bone dimension and Ca content among rat groups. More significant increase was observed with regard to Ca absorption and intestinal solubility in the rats receiving the GH or GHS diet which containe crude gluten peptides, than in those subjected to G or GHP diet. In experiment II, in vitro determination for Ca solubility was made to ascertain the mechanism responsible for the effects of gluten peptides on Ca absorption. The 10mM Ca in potassium phosphate buffer solution(pH 7.0) incubated for 3 hours at 37$^{\circ}C$ by the GHS fraction, was observed to be capable of increasing the Ca solubility at 5-25mg/ml concentration of gluten peptides. These observations suggest that the gluten peptides from gluten hydrolysate may enhance the Ca absorption efficiency by increasing the solubility of Ca in small intestine.

A metabolism trial was conducted with 28 Najdi rams allocated into seven dietary groups to evaluate the effect of dietary inclusion of Salicornia bigelovii Torr biomass on nutrient digestibility, rumina I fluid metabolites and nitrogen and mineral balances. Either the stems (ST) or spikes (SP) of this seawater-irrigated halophyte were incorporated into complete diets at rates of 0, 10, 20 and 30% levels, replacing equal amounts of rhodesgrass hay in a ground mixed control diet. Digestibility of DM, OM, EE, NFE and fecal and urinary nitrogen were not affected by increased level of ST in the diet. As level of ST increased from 0 to 20% in the diets, CP digestibility and nitrogen retention approached their maximum (p<0.01), whereas CF digestibility reached its minimum (p<0.01). On the other hand, except for EE, digestion of all nutrients and nitrogen retention were linearly depressed (p<0.01) as SP increased in the diets from 10 to 30% level. Concentration of ammonia-N, total VFA and pH values in the rumen fluid were lower (p<0.01) with the ST- or SP-fed diets than with the control diet. Increasing level of ST or SP in the diet was associated with an increase (p<0.01) in the proportion of acetate and a decline (p<0.01) in molar percentage of propionate in the ruminal fluid. Sodium absorption increased (p<0.01) with increased ST and SP in the diets up to the 10 and 20% level, respectively, followed by constant absorption values up to the 30% level. When the level of ST in the diet gradually increased to 30%, a concomitant increased (p<0:01) in Ca and P absorption were obvious; whereas, increased level of SP in the diets from 0 to 30% resulted in noticeable (p<0.01) depression in Ca and P apparent absorption.
This research was conducted to determine the amount of water absorbed by a polyacrylamide hydrogel such as Stocksorb C (STSB), effect of salts on inhibition in hydration of STSB, and the hydrogel effects on changes of nutrient concentration in external solution. Absorption of deionized water by STSB reached a maximum of 180 $mL{\cdot}g^{-1}$. Monovalent soluble salts such as $KH_2PO_4,\;KNO_3$, and $(NH_4)_2SO_4$ reduced absorption of the hydrogel, but the degrees of inhibition in absorption were similar in three kinds of salts. Twenty milliequivalents per liter of $Ca_{2+}\;or\;Mg_{2+}$ reduced water absorption of STSB to $14\%$ compared to those of deionized water. Solution absorption was consistently lower in the presence of divalent cations than in the presence of the monovalent cations. But the absorption was unaffected by the uncharged salt such as urea in all concentrations tested. The final $K^+\;and\;NH_4^+-N$ concentrations of the solution remaining after absorption by STSB was higher than those of the initial solution. The soaking of STSB to full strength of Hoagland solution resulted in increase of $NO_3^--N,\;H_2PO_4^-\;and\;SO_4^{2-}$ concentrations in external solution compared to initial solution, reaching 5,300, 250 and 1,500 $mL{\cdot}g^{-1}$, respectively, at 24 hrs after soaking.

This study was carried out to acquire basic data for a long-term hydroponic culture through investigating water and inorganic ion uptake characteristics at different EC level of nutrient solution of three tomato varieties. Three different tomato varieties, the European type(cv. Daphnis), the Asian type(cv. Super Doterang) and cherry type(cv. Minichal), were used for the investigation. Also, the deep flow technique(DFT) was applied. The three different electrical conductivity(EC) level(1.0, 2.0, 3.0, and 4.0 dS·m-1) of hydroponic nutrient solution were used as variable. At a high EC level of nutrient solution, the leaf area and fresh weight decreased in the early stage, and its growth(plant height, leaf number, leaf area, fresh-weight) was poor with salt stress. Result showed that the higher the EC level of the nutrient solution, the lesser was water uptake. The water uptake was not significantly different from varieties in the first survey, but In the second survey, the 'Daphnis' did not show a significant decrease in water uptake in the EC level higher than 2.0 dS·m-1., on the other hand, 'Super Doterang' presented very low water uptake. At a low EC level, N, P, and K, were absorbed more than the concentration of the irrigation water, while Ca, Mg, S uptake were low. At a high EC level, almost ions absorbed less than 50% of the initial concentration of irrigation water. Thus, imbalance among ions was severe at low EC level compared to high EC level. 'Daphnis' was a variety that effectively utilize nutrients under nutrient stress, showing high absorption at low concentration condition and low absorption at high concentration condition. However, 'Daphnis' suffered most seriously by absorbing nutrients excessively.

This experiment was conducted to investigate the effects of selenium (Se) sources and levels on growth performance, nutrient digestibility and Se retention in growing-finishing pigs. A total of 56 crossbred pigs ([$Landrace{\times}Yorkshire$]${\times}$Large White) with average $28.5{\pm}0.2kg$ BW were allotted to 7 treatments on the basis of sex and weight in two replicates and four pigs per pen. A $2{\times}3$ factorial arrangement of treatments was used in a randomized complete block (RCB) design. Two sources of Se (selenite Se or Se-enriched yeast) were added at 0.1, 0.3 and 0.5 mg/kg to each treatment diet. A basal diet without Se supplementation was the seventh treatment group. Three pigs per treatment were randomly selected and samples of loin, liver, pancreas and a kidney were collected, frozen and later analyzed for Se. The digestibility trial was conducted to evaluate the apparent absorption and retention of Se and availability of other nutrients. Growth performance was not affected by dietary sources and levels of Se. No growth retardation was observed in the 0.5 mg/kg dietary Se treatment group regardless of Se sources. The Se concentration of serum in Se supplemented groups was increased compared with the control group (p<0.01). During the growing and finishing phase, Se in serum was clearly increased when organic Se was provided (p<0.01). Interaction of Se source ${\times}$ Se level was observed in Se concentration of loin, liver and pancreas of the pigs at the end of experiment. Selenium retention in the liver, kidney, pancreas and loin of pigs was increased as dietary Se level increased and was higher when pigs were fed organic Se resulting in an interaction response (p<0.01). Nutrient digestibilities were not affected by dietary Se sources or levels. No dietary Se source ${\times}$ Se level interaction was observed in nutrient digestibility. The results from this experiment indicated that dietary Se sources and levels affected the distribution of Se in the body of growing-finishing pigs. Organic source of Se, such as Se-enriched yeast resulted in higher serum and tissue Se concentration compared to inorganic form, while no beneficial effects on nutrient digestibility were observed from dietary Se supplementation in growing-finishing pigs.
Physiological changes that affect nutrient absorption and utilization occur in older adults, and the collection of nutritional information is an important part of examining the nutrition and health issue. A nutritional survey using the 24-hour recall method was performed to identify nutritional quality and leading patterns of food group intake for protein, vitamin C, P and Fe were over 1, whereas those for vitamin A, $B_1$, $B_2$, niacin and Ca were below 1. The MAR(Mean Adequacy Ratio) was relatively low(0.75). The percentage of energy from carbohydrate, protein, and fat was 65.1, 15.6, and 19.5, respectively, thus the quantities of energy source were ideal. The Older subjects revealed poorer nutrition quality than the younger subjects did. The food group intake pattern of the elderly was not diverse, only 9% of them consumed all food groups in a day. These results suggest that nutritional guidelines for older Koreans should focus on the maintenance of adequate energy intake. In addition, selection of foods with high protein and calcium, such as dairy food, should be emphasized, particularly in the older elderly. Nutrition programs should target individuals at risk of not receiving enough nutrients, like the oldest elderly, and persons with lower education.
Analysis of mineral nutrients in plant is required for evaluating diagnosis of plant nutritional status. Pretreatment procedure for the analysis of plant can be varied depending on elements to be analyzed. Wet-digestion is suitable for total nitrogen, phosphate and cations, however, digestion solution including nitric acid is not suitable for nitrogen analysis. Incineration procedure is required to analyze chloride, silicate and total sulfur. After digestion, total nitrogen is analyzed by Kjeldahl method, and phosphate is detected at 470nm by colorimetric analysis with ammonium meta vanadate. Cations and micro elements are determined by titration or colorimetry, also, these elements can be measured by Atomic absorption spectrometer (AAS) or Inductively coupled plasma spectrometer (ICP).
It was hypothesized that variations within the range of usual calcium(Ca) and sodium(Na) intakes of Korean influence bone mineral density(BMD) in healthy premenopausal women The relationship of nutrient intake urinary excretion physical activity and circulating IGF-1 level with spine({{{{ { L}_{2 } }}}}-{{{{ { L}_{4 } }}}}) and femur BMD was determined in 47 normal premenpausal women. There was a positive relationship between BMD of the lumbar spine and body weight. The BMD of femoral neck was positively correlated with Ca and protein intakes from animal source and circulating IGF-1 level. There was a negative relationship between femur BMD and both Na intake and urinary excretion. The complex interrelations between femur BMD regression analysis, From this analysis. Ca intake from animal origin was the only significnat Premenopausal women of femur BMD. In the basis of femur BMD three groups were divided Premenopausal women of femur BMD$\leq$0.84g/cm2 showed depressed Ca intake of animal origin in later and early life and enhanced urinary Na excretion compared to women of femur study suggests that dietary Ca is a major constituent affecting femur BMD because of a decrease in net Ca absorption and an increase in urinary Ca loss.

A three year's field experiment was carried out on newly reclaimed tidal saline soils to evaluate the salt tolerance and growht characteristics, and their relationship to dry matter production and nutrient quality of main selected pasture species. Nine temperate grasses (14 varieties) and two forage crops (sorghum and pearl millet) were grown under different mulching treatments with medium sand and red-yellow soils (fine loamy materials of Typic Hapludults) from 1986 to 1988. Tall wheatgrass, tall fescue, reed canarygrass and alfalfa showed a good tolerance to soil salinity, especially tall wheatgrass (cv. Alkar) produced 19.6 ton/ha dry matter yield annualy under mulching treatment with medium sand depth in lcm. Pearl millet (cv. Gahi-3) was also evaluated as a salt tolerable forage species. Under salt stress in newly reclaimed tidal lands, plant showed a decrease in the assimirable leaf area (LA) as well as specific leaf area (SP. LA) and a low leaf weight ratio(LWR), and it resulted in a low concentration of crude protein and low digestible dry matter contents. Absorption of macro and micro elements in the plant on tidal lands was increased markedly.

Chromium has been known to be involved in the glucose metabolism, and hence the utilization of cellular glucose is impaired in the chromium deficiency. Chromium has been recognized as an essential nutrient since the finding of low-molecular-weight Cr-binding substance (LMWCr) as a biological modifier of insulin action. Clinical chromium deficiency associated with glucose intolerance that respond to the administration of chromium. The major impediment to the use of orally administered chromium is poor absorption of trivalent chromium in its inorganic form. Trivalent chromium is more available in yeast md, more recently, as chromium picolinate for oral absorption. The widespread use of these supplements has resulted in controversy regarding chromium's role as a nutrient, its use for treatment of insulin resistance, and its potential toxicity. Most recent evidence strongly supports tile conclusion that there is little fear of toxic reactions from chromium consumption. This report reviews the evidence for the potential toxicity of chromium supplements in contrast with its usefulness as a nutrient or therapeutic agent in the treatment or prevention of insulin resistance.
