A survey on netritive value of general hospital diet and appetite of hospitalized patients in Pusan city (부산시내 종합병원 일반식의 영양가 및 환자식욕상태에 관한 조사연구)

  • To study the nutritional value of general hospital diet, the author surveyed in 5 hospitals which are located in Pusan. Thd information on appetite and dietary habits was taken from the questionnaire results of 166 patients and 185 non patients. The survey of nutritional value was conducted on 104 males and 61 females hospitalized patients, taking three consecutive days in each hospital. RESULTS : 1. The average nutritive value of general diet per patient per patient per day served in hospitals was 2446.601$\pm$57.31 kcal, 100.23$\pm$8.18g protein, 42.35$\pm$6.46g fat, 413.35$\pm$31.46g carbohydrate. 2. The average percentage of diet consumed by patients per day was 69.7$\pm$4.5%. 3. The average nutrient intake by patients per day was 2025.94$\pm$194.46kcal, 77.04$\pm$6.38g protein, 31.71$\pm$6.80g fat, 356.20$\pm$26.40g carbohydrate. 4. The meals were taken more regularly by patient group than by non patient group. 5. The psychological appetite was lower in patient group. 6. The patients thought hospital diet as reliable and were willing to take diets well in order to get well as soon as possible.

Relation of pH value to the availability of P32 (인산흡수와 산성도와의 관계)

  • 1. The effect of the pH value on P32 absorption of leaves of three forest trees under the water culture is investigated. 2. The degree of the P32 absorption to the pH value is quite different in each forest tree. 3. The phosphorus contents are proved higher in the leaves of Quercus accutissima(the saw shaped oak) than in the leaves of Pinus densiflora(the red pine) and Lespedeza bicolar (bush clover). 4. Larger contents of phosphorus are found in acidity plots than in alkalinity. The leaves of treated plot of the pH 4 (red pine), of the pH 5.0 (bush clover), and of the pH 5.0-6.5 (saw shaped oak) have a higher nutrient capital as indicated by P32 compared with that of the other pH values. 5. It is also noticed that P32 absorption capacity is decreased with the higher pH values. 6. The content of P of leaves shows the lowest value in the plot of the pH 6.5 (pine), of the pH 7.5(bush clover), and of the pH 9.0(saw shaped oak). It is also noticed that the red pine is to do very well in acid cultivation and then follow bush clover and saw shaped oak in the order.

The Effects of Milk Group Intake to Dietary Diversity Score and Nutrient Adequacy Ratio among Toddler (유아의 우유군의 섭취가 식이의 다양성과 영양소 섭취의 적정도에 미치는 영향)

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. Nutritional Status of the Oldest-elderly Population in Sunchang County (순창군 장수인의 영양섭취 실태)

  • This study was investigated nutrient intakes and dietary evaluation index of the healthy subjects over 85 of Sunchang County to explore the improved dietary pattern for healthy aging of the elderly. The survey was conducted by personal interview to 161 elderly subjects (59 males and 102 females over 85) in 2006, and their daily dietary intake was assessed by 24-hr recalls and weighing one meal. The daily energy intakes of males were 1,335 ${\pm}$ 67 kcal, and those of females were 1,095 ${\pm}$ 38 kcal comprised of 66.8% and 68.4% of the EER for the age group of 75. The proportions of energy from carbohydrate : protein : lipid were 70.7 : 14.6 : 14.6 for males and 68.6 : 14.0 : 17.4 for females. The average protein intakes were 95.4% for males and 85.0% for females of RI, and the average calcium intakes were 54.3% for males and 43.6% for females of RI. The daily vitamin intakes were below 70% except vitamin A, vitamin $B_6$, and vitamin E. The proportion of the relative risk groups of protein, phosphate, iron and vitamin A ranged 40-49% of RI over 75 year groups. The other nutrient intakes showed that there were over 50% risk groups. Especially for nutrients such as calcium, vitamin $B_1$, vitamin $B_2$, vitamin C, folate and niacin over 70% of the subjects were under risk. The median value of all nutrient intakes did not reach AI. The INQ of nutrients were over 0.8 except for folate and vitamin C. Calcium intakes were relatively low and needed attention. However, the ratio of calcium and phosphate showed 1 : 1.6, which appeared to be superior to the other districts. The DVS were higher as the dietary balance scores, KDDS were higher, and the groups with high KDDS had high intakes of nutrients compared to the groups with low KDDS. The high risk groups as judged by simple nutrition screening test had lower nutrient intakes than the groups of middle risk or low risk groups. The subjects in Sunchang area had relatively low intakes of several nutrients. However, judging from the desirable patterns of the energy proportion from three major nutrients, ratio of calcium and phosphate and INQ of nutrients there is a possibility that extended healthy aging might be related to the quality of nutrients and relative ratio between nutrients. To improve nutrient status of the elderly of the surveyed area further application involving KDDS and DVS appeared to be required.

Rapid Nutrient Diagnosis of Tomato by Test Strips and a Chlorophyll Meter (Test strip과 chlorophyll meter를 이용한 토마토의 신속한 영양진단)

  • This study was performed to develop a more rapid and simple nutrient diagnosis method of plants than the conventional leaf analysis method. tomato (Lycopersicon esculentum Mill. cv. super momotaro) was planted in the mixed media produced by mixing perlite and rock wool at 1 . 1 (v/v) ratio. The Yamazakki nutrient solutions for cucumber and tomato were supplied to the media using the micro-drip irrigation system. Experimental plots produced consisted of no fertilization, deficient fertilization, adequate fertilization and surplus fertilization for N, P and K, respectively. Each experimental plot was replicated four times. Specific color different sensor values (SCDSV) measured by the chlorophyll meter were closely related to total-N concentrations in the leaves measured by the conventional method. Nitrate, $PO_4$ and K concentrations in petiole sap measured by test strips #(Reflectoquant^{\circledR},\;Merck,\;Germany)$ showed a significant relationship with total-N, p and K concentrations in leaves. The linear regression equations between $NO_3,\;PO_4$ and K concentrations in petiole sap and total-N, p and K concentrations in the leaves were prepared. The optimum levels of $NO_3,\;PO_4$ and K in petiole sap were obtained by plugging the optimum concentrations of total-N, p and K in the leaves by other researchers into the equations. In conclusion, the SCDSV by the chlorophyll meter and concentrations of NO3, p and K in petiole sap measured by the test strips would be suitable for rapid estimation of plant nutrient status.

Effects of Yucca Extracts and Protein Levels on Growth Performance and Nutrient Utilization in Growing Pigs

  • A total of 120 pigs were used to investigate the effects of yucca extracts on the growth performance, nutrient digestibility and excretion of growing pigs fed different levels of dietary protein. Pigs were allotted into $2{\times}3$ factorial design by the supplementation with yucca extract (YE, 0 and 120 mg/kg) and 3 levels of dietary protein (16, 18, 20%). During the whole experimental period (18 to 52 kg body weight), there were no significant differences in ADG, ADFI or F/G by YE addition or different protein levels among treatments (p>0.05). Overall, although addition of YE to the diet and elevation of protein level showed better ADG, there were no significant differences in growth performance among treatments. Pigs fed diets with YE showed significantly (p<0.05) higher dry matter (DM), crude ash (CA) and crude protein (CP) digestibility than did the others during the growing period. Concerning the levels of dietary protein, only the CP digestibility was significantly higher in pigs fed high protein diet. Pig fed the low protein diet without YE showed a significantly low CP digestibility (p<0.05). No significant differences were found in crude fat (CF), calcium (Ca) and phosphorus (P) digestibilities regardless of YE supplementation or dietary protein levels. Pigs fed YE supplemented diets showed significantly (p<0.05) higher amino acid digestibility. Also, high CP level diets showed a higher amino acid digestibility than low CP diets (p<0.05). DM and N excretion did not show any significant differences among treatments, there was a slightly lower excretion with increase in dietary protein level. Supplementation with YE significantly decreased the DM and N excretion. Interaction (YE$\times$protein) was found in P excretion. Pigs fed a medium protein diet without YE showed the lowest P excretion during the growing period. The NH3-N content in the feces tended to be increased by the increased dietary protein levels and with YE supplementation. During the whole experimental period, the cost for YE supplementation was similar to value of the improvements of performance obtained. The cost of feeding high level protein was significantly higher than that of medium level protein by 10% and low level protein by 9% (p<0.05). It could be concluded that the effects of dietary protein level and yucca extract on growth performance, nutrient digestibility and excretion might play a role to some extent in growing pigs from the aspect of pollution control.

Studies on Productivity and Nutrient Quality of Forage Rape (Brassica napus Subsp. oleifera) VII. Productivity of forage rape cv.   • According to the results from the experiments of selecting a suitable variety of forage rape and comparing productivity and nutrient quality between forage rape and oil seed rape, Velox appeared to be the most suitable variety in terms of productivity and nutrient quality at the southern area of Korea among the varieties used in the experiments. Consequently, Velox was grown under two different cultural methods, individual culture and population culture, and productivity and variation of nutrient quality during the growth period were observed and compared between the cultural methods. The results from the experiment are summarized as follows: 1. Although variations were great in plant fresh weight and plant dry matter weight among plants, individual culture showed significantly higher value in these characters at the 1 % level than population culture. Plant fresh weight and plant dry matter weight were largely dependent upon the amount of branches in case of individual culture. However, in population culture, they were equally dependent upon the amount of branches and main stem. There was no significant difference in dry matter percentage between cultural methods, and main stem showed highest dry matter percentage. 2. Content of crude protein was decreasing gradually as plants continued to grow. Individual culture showed higher content of crude protein than population culture from 90 to 120 days after sowing but vice versa from 180 days after sowing to flowering stage. Contents of fiber such as NDF, ADF, cellulose and lignin was low at the early stage of growth. It was increasing gradually as plants grew older and at the latter stage of growth plants under individual culture showed higher values in contents of fiber. 3. In vitro dry matter digestibility (IVDMD) of both stems and leaves was decreasing gradually as plants grew older. Plants under individual culture showed higher IVDMD of stems than plants under population culture, but no significant difference in IVDMD of leaves was observed between cultural methods.

The Changes of Dietary Reference Intakes for Koreans and Its Application to the New Text Book (한국인 영양섭취기준에 대한 이해 및 새 교과서에의 적용 방안)

  • The purposes of this paper are to describe the newly established reference values of nutrient intakes: to apply the changed dietary reference intakes to the new text book based on the revised curriculum: and to contrive substantial contents in the domain of dietary life(foods & nutrition) of new text book. Dietary Reference Intakes for Koreans(KDRIs) is newly established reference values of nutrient intakes that are considered necessary to maintain the health of Koreans at the optimal state and to prevent chronic diseases and overnutrition. Unlike previously used Recommended Dietary Allowances for Koreas(KRDA), which presented a single reference value for intake of each nutrient, multiple values are set at levels for nutrients to reduce risk of chronic diseases and toxicity as well as prevention of nutrient deficiency. The new KDRIs include the Estimated Average Requirement(EAR), Recommended Intake(RI), Adequate Intake(AI), and Tolerable Upper Intake Level(UL). The EAR is the daily nutrient intake estimated to meet the requirement of the half of the apparently healthy individuals in a target group and thus is set at the median of the distribution of requirements. The RI is set at two standard deviations above the EAR. The AI is established for nutrients for which existing body of knowledge are inadequate to establish the EAR and RI. The UL is the highest level of daily nutrient intake which is not likely to cause adverse effects for the human health. Age and gender subgroups are established in consideration of physiological characteristics and developmental stages: infancy, toddler, childhood, adolescence, adulthood and old age. Pregnancy and lactation periods were considered separately and gender is divided after early childhood. Reference heights and weights are from the Korean Agency for Technology and Standards, Ministry of Commerce, Industry and Energy. The practical application of DRIs to the new books based on the revision in the 7th curriculum is to assess the dietary and nutrient intake as well as to plan a meal. It can be utilized to set an appropriate nutrient goal for the diet as usually eaten and to develop a plan that the individual will consume using a nutrient based food guidance system in the new books based on the revision in the 7th curriculum.

Nutrition survey of young children in a day care center in the low income area of seoul (서울 시내 변두리 저소득지역 유아원 어린이의 영양실태조사)

  • A nutrition survey of 128 perschool children, 4 to 6 years old, in the Saemaul Youlgok day care center, located in one uplane, overpolulated, poor area of the city of Seoul, sponsered by the Korean Red Cross Society, was undertaken between August 21 and 31, 1984, to investigate dietary and nutritional status. RESULTS: Mean values of height, weight, arm circumference, girth of chest, and head circumference ranged from 95 to 100% of KIST mean. However, 4.8~14.2% of the subjects were assessed as undernourished in terms of 'weight for height'. Mean hemoglobin vcalue was 12.1±0.7gm%, and mean hematocrit value was 38.5±2.2%; 4.1% of the subjects were proven to be anemic according to the criterion of hemoglobin established by the ICNND. Mean urinary urea nitrogen/creatinine ratio was 11.4±3.8. Regarding mean energy and nutrient intake, the following percentages had intakes below two-thirds of the 1985 RDAs: 28.8% of children, for protein; 48.8% of children, for iron; and 28.8% of children, for calcium. About 25% of children had vitamin A intake below one-third of the recommended allowance. Carbohydrate provided 71% of total energy intake; protein accounted for 13%; fat provided 16%. Energy intake was divided among breakfast, lunch, dinner and snacks in a percentage ration of 19:26:21:34. The lunch, and snacks which were served at the day care center provided 36.5~79.1% of daily energy and nutrient intake. The survey clarified that the day care feding largely supplemented the inadequate dietary intakes of these young children at home. According to factor analysis of energy and nutrient intake, there were two factor groups : the first factor group, for energy, protein, carbohydrate, iron and niacin, mainly provided by grains; and the second factor group, for calcium, vitamin A, thamin, riboflavin and ascorbic acid, provided by vegetables, fruits, milk and milk products. The survey also revealed significant correlation coefficients between family factors such as family income, educational level of parents, and number of children; and dietary or nutritional status of the subjects.

Effect of phytase supplementation on growth performance, nutrient digestibility, and meat quality in broilers

  • A total of 459 broiler chicks were studied from 1 to 32 days of age to evaluate the effect of phytase diet supplementation on their growth performance, nutrient digestibility, and meat quality. Chicks were randomly divided into 3 treatments (9 replicates/treatment, 17 chicks/replicate). This was a 32 day experiment that included 2 phases: phase 1, grower (0 to 17 day); and phase 2, finisher (17 to 32 day). Dietary treatments were: T1, control basal diet (CON); T2, CON + 0.01% phytase (300 IU); and, T3, CON + 0.01% phytase (500 IU). Results showed that supplementation of the basal diet with phytase increased pH value of meat. During the period between day 7 and 17 of the study, T2 and T3 groups had higher body weight gain (BWG) than T1 group. After phase 2 and the use of finisher feed, T3 group had significantly improved BWG and feed intake (FI). During the whole experiment, T3 resulted in higher BWG and FI than other treatments. But feed conversion ratio was not affected by phytase supplementation throughout the experiment. Both T2 and T3 groups had significantly higher apparent total tract digestibility of dry matter when compared with T1. However, no differences were observed for Nitrogen, Ca, and P during the experiment. In conclusion, supplementation of phytase increased BW, FI, and apparent total tract digestibility (ATTD) of dry matter (DM). However, there was no significant influence in feed conversion ratio (FCR), relative organ weight and breast muscle quality.
