North Korean defectors who settle in South Korea have experienced severe food shortage and transition of food environment which could affect their health status. However, little is known about their anthropometric measurements and dietary intake after settlement in South Korea. The purpose of this study is to compare anthropometric measurements and dietary intake between North Korean young adults who defected to South Korea and those of South Koreans. We hypothesized that North Korean young adults' physiques and dietary intake would be poorer than that of South Koreans. We compared anthropometric measurements and dietary intake from 3-day food records in a cross-sectional study of 103 North Korean young adult defectors, aged 12 to 24 and 309 South Korean subjects. North Korean subjects were significantly shorter (4.9 to 10.8 cm) and lighter (6.0 to 12.5 kg) than the control group. Body mass index were significantly different between North and South Korean groups only in men. North Korean young adult defectors had lower mean daily intakes of energy and most nutrients and food groups compared to the control group, while North Korean subjects had higher nutrient density diet than that of South Koreans. The proportion of subjects who had dietary intakes of nutrients of less than the Estimated Average Requirement was higher in North Korean subjects than in controls except for in the cases of vitamin A and vitamin C. In conclusion, we recommend providing nutrition support programs for North Korean young adult defectors to secure adequate nutrient intake.
The relationship between mortality and the Korean Healthy Eating Index ("KHEI") is well established. This study was to investigate the associations between health habits, mental health, and nutritional status and KHEI in older Koreans (aged≥65 years). A total of 4,247 subjects (1,842 men and 2,405 women) that participated in the 2016~2018 Korean National Health and Nutrition Examination Survey were included in the analysis. The lowest scoring KHEI item was milk and milk products. KHEI tertile groups were classified by total KHEI score. Tertile group percentages were related to general characteristics such as gender, residential area, educational level, income level, number of family members, and age. Logistic regression analysis adjusted for general characteristics, showed that ex-smokers (OR: male 1.53 female 2.29), smokers (OR: male 2.90), low hand grip strength (OR: male 1.42 female 1.90), poor self-rated health status (OR: female 1.83), stressful mental status (OR: female 1.51), poor health-related quality of life (OR: female 1.64), poor nutritional status (OR: male 2.88~37.20 female 1.98~16.12), and food insecurity (OR: male 6.87 female 2.03) were significantly related to a lower KHEI. This study suggests that gender-specific associations exist between mental health status and KHEI.
This study was conducted to identify dietary factors that may affect the occurrence of gastric cancer in Koreans. Preoperative daily nutrition intake and diet quality of patients diagnosed with gastric cancer were evaluated. Collected data were comparatively analyzed by gender. The results were then used to prepare basic materials to aid in the creation of a desirable postoperative nutrition management program. The subjects of this study were 812 patients (562 men and 250 women) who were diagnosed with gastric cancer and admitted for surgery at Soonchunhyang University Hospital between January 2003 and December 2010. Nutrition intake and diet quality were evaluated by the 24-hr recall method, the nutrient adequacy ratio, mean adequacy ratio (MAR), nutrient density (ND), index of nutritional quality (INQ), dietary variety score (DVS), and dietary diversity score (DDS). The rate of skipping meals and eating fast, alcohol consumption, and smoking were significantly higher in males than those in females. The levels of energy, protein, fat, carbohydrate, phosphorous, sodium, potassium, vitamin $B_1$, vitamin $B_2$, niacin, and cholesterol consumption were significantly higher in males than those in females. Intake of fiber, zinc, vitamin A, retinol, carotene, folic acid were significantly higher in females than those in males. MAR in males was significantly higher (0.83) than that in females (0.79). INQ values were higher in females for zinc, vitamin A, vitamin $B_2$, vitamin $B_6$, and folic acid than those in males. The average DVS was 17.63 for females and 13.19 for males. The average DDS was 3.68 and the male's average score was 3.44, whereas the female's average score was 3.92. In conclusion, males had more dietary habit problems and poor nutritional balance than those of females. Our findings suggest that proper nutritional management and adequate dietary education for the primary prevention of gastric cancer should be emphasized in men.
An increasing global population requires a greater food supply, and accordingly there is demand for enhanced production of rice, as a major crop plant that covers half of the world's population. Rice production in arid area is extremely difficult due to poor soil fertility, salinity, deficit of irrigation water, and weather conditions. The aim of the present study was to determine whether various fertilization recipes could provide a countermeasure to allow rice production while also providing soil amendment such as soil pH adjustment. The study was conducted at an experimental field of the United Arab-Emirates (UAE) from January to April, 2022. Rice seedlings (cv. Asemi, alkaline-resistant) were transplanted in plastic containers, and different types of water and nutrient managements were employed as follows: water management (flooding and aerobic for NPKs treatment group) and nutrient management (NPKs, slow release fertilizers [SRFs] and SRFs + NPK-1 treatment groups with flooding). Water and nutrient management did not show any effect on soil pH adjustment. Rice growth was significantly enhanced in the flooding compared to the aerobic condition, whereas the effect of nutrient management clearly differed among the treatment groups, with SRFs + NPK-1 showing the best results followed by SRFs and NPKs. Most of the fertilization groups markedly accumulated soluble sugars in the shoots and grains of rice plants, but concomitantly a decrease in the roots. Overall, the level of starch showed a tendency of relatively slight perturbation by fertilization. Taken together, the results indicate that soil physical structure should be preferentially amended to find the key for suitable rice production.
Korea's aging population has been remarkably increased. They want to have not only extension of life expectancy but also improving quality of life. To maintain the quality of life, it is essential to have good nutrition. However, nutritional status of elderly in Korea has problems qualitatively and quantitatively. Risk factors for poor nutrition are advanced age, woman, living alone and low economic status. Another risk factor in rural area is season because seasonal changes can affect food intake of elderly. Thus this study surveyed the health status and dietary intakes of elderly by season in rural area. In this study, the elderly were grouped as group 1 {elderly who have one risk factor for chronic diseases (obesity, hypertension, dyslipidemia, diabetes)} and group 2 (elderly who have more than 2 risk factors). Can-Pro 3.0 was used for dietary data analysis and SPSS 12.0 program was used for statistical analysis. Obesity had the highest percentage 62%, followed by hypertension 59.5%, dyslipidemia 21.5% and diabetes 11.6%. Obesity, hypertension, and dyslipidemia were high in winter and WHR, diabetes and anemia were high in summer. Mean intakes of energy and nutrients were less than RI. Nutrients which were changed most by season were vitamin A and Vitamin C. Intakes of calcium and folic acid were less than recommended in summer. The ratio of CPF for carbohydrate was higher and fat was lower than recommended. In conclusion, the nutrient intake of Group 2 was better in quality but Group 1 was better in quantity. Nutrient intakes were poor in summer. In rural area, more careful nutritional assesment and management are needed for aged population, especially in summer.
영양섭취불량의 경우, 교육 수준이 낮은 사람들 (무학)에게서 Vitamin A (OR = 4.555; 95% CI = 1.491-13.914)를 EAR보다 적게 섭취할 위험이 높았고 자기 집을 소유하지 않은 사람의 경우, 단백질 (OR = 3.660; 95% CI = 1.118-11.981), 인 (OR = 3.428; 95% CI = 1.157-10.158), 철분 (OR = 3.765; 95% CI = 1.205-11.766)섭취가 EAR보다 부족할 위험이 집을 소유한 사람들보다 높았다.
The purpose of this study was to compare dietary attitudes, dietary behaviors and diet qualities of Food and Nutrition major and non-major female student at a university located in Inchon. The subjects included 74 female Food and Nutrition and majors and 45 non-Food and Nutrition major female university students. This cross-sectional survey was conducted using a self-administered questionnaire, and the data were analyzed by a SPSS 10.0 program. The nutrient intake data collected from Three-day recalls were analysed by the Computer Aided Nutritional Analysis Program and then the diet quality was estimated using the Mean Adequacy Ratio (MAR), the Nutrient Adequacy patio (NAR) and the Index of Nutritional Quality (INQ). There was no significant difference in dietary behaviors between Food and Nutrition majors and non-majors. However, most of the female university students had poor eating habits, such as overeating, unbalanced meals, and skipping of meals. In particular, more than 50% of the female university students skipped breakfast. As for weighing themselves once a week, changing dietary lifestyles, calculating food calories and having interest in information on nutrition on health, the ratio of Food and Nutrition majors was significantly higher as compared to that of the non-majors. There was a significant difference in food consumption frequency except for mick and milk products, and iron-rich foods between the Food and Nutrition majors and non-majors. However, there was a significant difference in the frequency scores of iron-rich floods between the Food and Nutrition majors and non-majors. The MAR of Food and Nutrition majors and non-majors were 0.80$\pm$0.13, 0.79$\pm$0.13, respectively. However, in the Food and Nutrition majors and non-majors, the NARs of calcium were 0.61$\pm$0.21 and 0.59 $\pm$ 0.20, and that of iron were 0.61$\pm$0.21 and 0.59$\pm$0.16, respectively, which was extremely low when compared to that of the other nutrients. This result was similar to that of the INQ. Therefore, nutritional education is necessary if female university students are to practice optimal nutrition, including well-balanced diets and eating foods of high nutritional quality.
A survey was performed to 238 male young men who were living alone (104 persons) or living with roommates (134 persons). Their average age was 22.6 years old, height 171.8cm, and weight 65.6kg. Their daily calcium intake level was averaged 271.9 $\pm$ 169.1mg, which was 38.8% of Korean Recommended Dietary Allowances(RDA). Comparing calcium intake of each mealtime, breakfast, lunch, dinner, and snacks were composed of 18.6%, 30.0%, 34.0% and 17.4%, respectively. Their daily iron intake level was averaged 8.9 $\pm$ 10.8mg, which was 74.3% of Korean RDA. Comparing iron intake of each mealtime, breakfast, lunch, dinner, and snacks were composed of 15.4%, 33.6%, 36.3% and 14.7%, respectively. Deficiency of these minerals in young male adults were severe and the nutrient qualities were also poor and the deficiency was more profound in calcium than in iron. And we observed iron nutrition differed significantly according to their living status, such as iron intake and its %RDA were significantly worse in single living subjects than the other. However calcium did not show significant difference. It was found mineral intake, especially iron, could be improved in young men living with roommates than living alone and regular breakfast could improve calcium and iron intakes. Nowadays, the nutritional deficits are rarely seen in Korea. However, an increased availability of the highly palatable energy dense, nutrient-poor foods increases the risks of obesity and deficits of vitamins and minerals in the general population. Also, optimum intake of vitamins and minerals, which varies with age and genetic back ground, might not suffice the poor, young, obese, and elderly people. Young girls and individuals participating in weight reductions and aesthetic components are prone to micronutrient deficiencies because they restrict food intake and specific micronutrient rich foods. An inadequate intake of vitamins or minerals is associated with reduced physical performance and exercise capacity, increased obesity, decreased cognitive function, increased DNA damages such as single- and double-stranded breaks or oxidative DNA lesions, and accelerated aging process and increased neuronal damages with mitochondrial oxidative decay. Most of these deleterious effects of the deficit could be prevented by a one tablet of multivitamins with a good balanced diet. High dose B vitamins are frequently administered to overcome the metabolic inadequacy to the people with the less functional enzymes with increased Km values for their coenzymes due to the single gene mutation or due to the single nucleotide polymorphisms. And some certain antioxidant vitamins are also used in large quantities to overcome the oxidative stress and to repair the damages. In this review, new nutritional concepts of some vitamins and minerals, which are widely used and useful for the children, will be discussed.
