  • The purpose of this study was to explore nutrition teachers/dietitians' perception towards production management practices as well as the importance & performance of nutrient preservation during production by school foodservices. A total of 120 school nutrition teachers/dietitians in the Daegu area participated in this study. The data were analyzed by descriptive analysis, t-test, and ANOVA using SPSS/Windows (ver 17.0). A questionnaire consisted of three dimensions with 66 items concerning the general characteristics of schools and respondents, production management practices, and perceived importance and performance of nutrient preservation. Exactly 79.2% of dietitians responded that scheduling of production management is necessary, and 52.5% of respondents perceived that their knowledge for nutrient preservation is of normal/average level. Thirty-eight percent of respondents did not establish scheduling of production management; according to them, cooking stage has priority over other stages of nutrient preservation. Perceived importance score was higher than perceived performance score in all stages of production management. The difference between perceived importance and performance in the production scheduling stage was found to be statistically significant. The results indicate that nutrition control point should be established and managed to prevent nutrient loss in all production stages. Further, dietitians who do not take measures to reduce nutrient loss should be carefully educated on the importance of nutrient control and be motivated to follow guidelines on nutrient preservation.

  • The purpose of this study was to examine nutrition management conditions of lunch with the elementary schools and middle schools in the Changwon area. 292 students (5th and 6th graders) from three elementary schools and 330 students from three middle schools (boys, girls, and co-ed) participated in the aggregate selective plate waste measurement for 5 days. Planned menus, serving sizes and plate waste amount data were collected. Nutrient analyses for the planned, served and consumed menus at school lunches were performed by using CAN-PRO 3.0. Nutrient analyses of the planned, served and consumed menus were compared with nutrient management standard (former edition) for school lunch and 1/3 Korean Dietary Reference Intakes (KDRIs). Significant difference was found in the average consumption rate between the elementary schools (82.2%) and the middle schools (71.8%). Specifically, the consumption rates of steamed rice (p < 0.001), side dish 1 (p < 0.001), and Kimchi (p < 0.01) at the middle schools were significantly lower than those of the elementary schools. When the nutrient contents in the served menus were put into percentages to the nutrient contents in the planned menus, middle schools (92.3%) showed bigger serving loss than the elementary schools (95.4%). In the nutrient assessment comparied with nutrient management standard (former edition), middle school lunches showed comparatively less energy or less some nutrient contents against the standard than the elementary school lunches. Specifically, in case of boys in middle schools, Vitamin C was the only nutrient content that satisfied the standard in the planned menus, served menus and consumed menus. In the 1/3 KDRIs based assessment, middle schoolers were found not to be provided proper nutrients with school lunches. To improve nutrition management at middle school foodservices, dietitians should reinforce nutrient assessment for menu planning, and try to decrease serving loss and plate waste.

  • We study on the dynamic interaction with a simulated physical-biological coupled model response to nutrient reduction scenario in Jinhae Bay. According to the low relative errors, high regression coefficients of COD and DIN, and realistic distribution in comparison to the observation, our coupled model could be applicable for assessing the marine ecosystem response to nutrient input reduction in Jinhae Bay. Due to the new construction and expansion of sewage treatment plant from our government, we reduce 50% nutrient inputs near Masan Bay and sewage treatment plant. COD achieves Level II in Korea standard of the water quality from the middle of the Masan Bay to all around Jinhae Bay except the inner Masan Bay remaining at Level III. When our experiment reduces 50% nutrient inputs near Masan Bay and Dukdong sewage treatment plant simultaneously, COD decreases to about 0.1-1.2 mg/L $(128^{\circ}30'{\sim}128^{\circ}40'\;E,\;35^{\circ}05'{\sim}35^{\circ}11'\;N)$. The COD from the middle of the Masan Bay to Jinhae Bay achieves Level II.

  • Assessment of nutrient balance in region unit is important to make a decision on nutrient management in agriculture. In this study, the nutrient demand in arable land and nutrient supply from livestock manure and chemical fertilizer were estimated from pig-concentrated areas. Three regions (H, I and J) were selected on the basis of pig numbers per unit area of arable land. In H and I regions, nitrogen amount from pig manure occupied about 50% of total livestock manure. Nutrient supply was three times higher compared to the nutrient demand in each of 3 regions. Soil available phosphate of higher pig-populated area in regional unit was higher than less populated livestock area. Therefore, livestock manure-derived regional management and monitoring of soil nutrient contents is necessary for the minimization and improvement of nutrient surplus.

  • The study was carried out to assess whether the nutritional management program by dietician at child center can affect nutritional status of children at child care center. The diet intakes were measured by mother\`s record at home and by direct weighing at child care centers, and the hight and weight of children were measured before and after nutritional management program for 3months to see the effects. The energy intakes were significantly increased 56.29 Kcal after program, and protein 3.61g, lipid 3.12 g, calcium 49.71mg, iron 0.39 mg, vitamin B$_1$ 0.084 mg, vitamin B$_2$ 0.116 mg, and vitamin C 10.10 mg, respectively, except vitamin A and niacin. the significant changes of nutrient intakes were more at higher age group compared to at the lower age group, and more at girls compared to boys, Although the significant increase fo nutrient intakes at child care center, most nutrient intakes at home were not significantly changed, except energy, lipid, iron, vitamin A. The changes at changes of fat and calcium intakes for 3 months were positively correlated to the change of Z-score for weight, and the change of A-score for weight was positively correlated to changes of Z-score for height. The results showed that the nutritional management program for 3 month at child care center can increase nutrient intakes significantly and the incresed nutrient intakes can enhance children\`s growth. • Nutrient (i.e., nitrogen and phosphorus) budgets are required under a 'Livestock Excreta Survey'. A nutrient budget is one of the agri-environmental indicators that calculates the difference between the inputs and outputs of the amount of nutrients within a certain boundary and for a certain time period (e.g., 1 year). In this study, a nutrients budget model was developed to effectively determine the surplus of nutrients within a region in Korea. The C# program language was used in order to facilitate the deployment of a graphical user interface (GUI) and to enhance compatibility. Also, the model was developed on Windows OS, which is the commonly used operating system in Korea. The model was based on the OECD/Eurostat nutrient budget method, and it was modified to consider manure composting procedures as well. There are key features of the nutrient budget model, including directly use of the original data sets from various input and output sources, and a collectively exchange of the address in different formats. The model can quickly show the results of various spatial and temporal resolutions with the same data, as well as perform a sensitivity analysis with coefficients and easily compareresults using tables and graphs. Further, it would be necessary to study the extension of the scope of utilization, such as the application of various nutrient budget methods. It would also be helpful to investigate both pre and postprocessing information such as linking input data through online systems.

  • As the automation of nutrient solution management proceeds in the field of hydroponics, effective supporting systems to manage the nutrient solution by computer become needed. This study was attempt to predict the EC of nutrient solution using the neural networks. The multilayer perceptron consisting of 3 layers with the back propagation learning algorithm was selected for EC prediction, of which nine variables in the input layer were the concentrations of each ion and one variable in the output layer the EC of nutrient solution. The meq unit in ion concentration was selected fir input variable in the input layer. After the 10,000 learning sweeps with 108 sample data, the comparison of predicted and measured ECs for 72 test data showed good agreements with the correlation coefficient of 0.998. In addition, the predicted ECs by neural network showed relatively equal or closer to the measured ones than those by current complicated models.

  • Objective: Due to rapid economic return, mixed crop-swine farming systems in Korea have become more intensive. Intensive farming practices often cause nutrient surpluses and lead to environmental pollution. Nutrient budgets can be used to evaluate the environmental impact and as a regulatory policy instrument for nutrient management. This study was conducted to select a nutrient budgeting approach applicable to the mixed crop-swine farms in Korea and suggest an effective manure treatment method to reduce on-farm nutrient production. Methods: In this study, we compared current and ideal gross nutrient balance (GNB) approaches of Organisation for Economic Co-operation and Development and soil system budget (SSB) approach with reference to on-farm manure treatment processes. Data obtained from farm census and published literature were used to develop the farm nutrient budgets. Results: The average nitrogen (N) and phosphorus (P) surpluses were approximately 11 times and over 7 times respectively higher in the GNB approaches than the SSB. After solid-liquid separation of manure, during liquid composting a change in aeration method from intermittent to continuous reduced the N and P loading about 50% and 47%, respectively. Although changing in solid composting method from turning only to turning+aeration improved the N removal efficiency by 30.5%, not much improvement in P removal efficiency was observed. Conclusion: Although the GNB approaches depict the impact of nutrients produced in the mixed crop-swine farms on the overall agricultural environment, the SSB approach shows the partitioning among different nutrient loss pathways and storage of nutrients within the soil system; thus, can help design sustainable nutrient management plans for the mixed cropswine farms. The study also suggests that continuous aeration for liquid composting and turning+aeration for solid composting can reduce nutrient loading to the soil.
