This study was intended to investigate food habits, dietary variety and the effects of nutrient intake of female college students. Food habits such as regularity of meal time, repast of breakfast, lunch, and supper, and duration of meal were assessed via a self reporting questionnaire, 24 hrs recall method for nutrient intake was obtained from 155 female college students in Yangju-si. Dietary variety was assessed by dietary diversity score(DDS). The mean height and weight of the subjects were $161.25{\pm}3.52cm$ and $52.26{\pm}4.52kg$, respectively. The dietary habits of female college students was generally inadequate. In the survey of dietary habits, the ratio of skipping breakfast 3~6 days a week in total subjects was 87.09%, showing a rather higher ratio of skipping breakfast. In the evaluation of nutrient intakes by DDS, subjects who had higher DDS had significantly higher nutrient intakes of energy, protein, carbohydrate, fiber, calcium, phosphate, iron, vitamin A, vitamin C, and cholesterol(p<0.05). There was a great difference in nutrient intakes, suggesting the risk of nutritional imbalance. These findings suggest that nutritional education based on female college students' eating variety and dietary habits(regularity of meal time, skipping breakfast and night snacks per week, and duration of meal) may be required to improve dietary variety. it is considered that the improvement in dietary habits will contribute to the improvement of nutrition.
The assessment of children's nutritional intakes is important because any nutritional inadequacies or toxicities may have adverse consequences. Studies on the nutritional intakes of Korean children are limited. The aims of this study were to determine anthropometric indices, estimate selectee nutrient intakes of young Korean children, and compare these intakes with current Dietary Reference Intakes for Koreans. This study included 136 healthy children(65 boys, 71 girls), 2-6 y old, living in Kwangju, Korea. Weights and heights were measured. Three consecutive 24-h food recalls were obtained. According to International Obesity Taskforce BMI cutoffs, 8% were overweight and 2% were obese. The energy intakes of 40% were < Korean Estimated Energy Requirements, while all subjects consumed $\geq$ Korean Estimated Average Requirement(EAR) for protein. The majority of the children consumed > Korean EAR for iron, zinc, vitamin $B_1$, vitamin $B_2$, vitamin $B_6$, and niacin. Vitamin E intakes of 65% of the Korean children were < Korean Adequate Intake, and approximately half of the subjects had < Korean EAR for calcium and for folate. Many young children in Kwangju, Korea, likely have inadequate status of calcium, folate, and vitamin E.
This study was carried to investigate the effects of alcohol intake on the dietary behaviors and nutrient intakes of students in university and was observed characteristics of alcohol drinking, smoking, dietary behaviors, and nutrient intakes of students. The mean of alcohol consumption was 25.7$\pm$21.7g/day and 47.5$\pm$25.8g/day, most high of high alcohol group in the male student than other groups. Smoking were high by increasing of alcohol intake. Most students had dietary problems as skipping meals, eating snack after dinner, high frequency of eating fast and instant food, and eating meals at watching TV or video. The dietary behavior problems in the high alcohol groups showed higher in the female students than the male students. Nutritional knowledge scores was no significantly different by sex and alcohol intake. The intakes of calorie, protein, phosphorous, iron, and niacin in the male students was significantly higher than those of female students. Except for calcium, vitamin $B_2$ and vitamin C, nutrients were satisfied to the level of Recommended Dietary Allowances(RDA). Nutrient intakes was not affected by alcohol intake. But intakes of calorie, protein, phosphorous, and iron were affected by sex and vitamin C intake was affected by sex and alcohol intake.
This study investigated the effect of taste preference(sweet, sour, salty, hot) on anthropometric measurements and nutrient intakes of 256 primary school children in Kwangju. There was no significant difference in the anthropometric measurements according to the sweet taste preference. Height, weight, triceps, abdomen, and chest circumferences of the group preferring a sour taste, however, were significantly lower than those of the other groups. The height of the group preferring a salty taste was significantly shorter than that of the other groups and there was a tendency toward high systolic blood pressure and diastolic blood pressure. The waist circumference of the group not preferring the hot taste was larger than those of the other groups. There was no significant difference in the energy intake according to the sweet taste preference. The protein intake of the group preferring a sweet taste as significantly lower than that of the other groups. The fiber intake of the group preferring a sour taste was significantly higher than that of the other groups. There were no significant differences in the nutrient intakes according to the salty taste preference. The energy intake of the group preferring a hot taste was lower than that of the other groups. The results show that children's taste preferences influence anthropometric measurements and nutrient intakes. These results suggest that children's eating behaviors are in needs of correction. The findings of this study should be applied to nutrition education to ensure better physical fitness of children.
This study was carried out to investigate the level of nutritional knowledge dietary behavior and nutrient intakes of rural housewives and to analyze the relationship among each other. The data for this study collected by the interview with questionnaire in 1990 from the 303 rural housewives of 13 districts and 3 cities in Chunbuk province sampled by random sampling method. Statistics used in analysis were frequency, proportion, X2-test and statistical significance was tested at 0.05 level. The main results of the study were summairzed as follows : 1) Nutritional knowledge score of rural housewives was higher, in young age group than in old group and in high income group than in low income. 2) There were not the significant difference between the dietary behavior of the rural housewives and their nutritional knowledge score. 3) As the nutritional knowledge score of the subjects was higher nutrient intakes level of calcium and iron were higher, however, there were not the significant difference between the nutritional knowledge score and nutrient intakes levels of energy, protein and fat respectively. 4) As the level of meal management were high, only protein intake among various nutrients was increased. There were not the significant difference between the nutrient intakes and their food habits.
The purpose of this study was to compare food habits and nutrient intakes among high school students with different obesity indexes who are residing in Seoul and Kyunggi-do. a total of 533 subjects were assigned to one of the following groups based on BMI : underweight, normal-weight and overweight. Food habits and nutrient intakes were evaluated based on questionnaires and 24hr-dietary record. The results were as follows. There was no significant differences in the general environmental characteristics of subjects with different BMI. However, the father\`s BMI was significantly higher in overweight female students compared to underweight or normal weight subjects. The menarch age was significantly decreased as the obesity increased. The self-satisfaction score for physical type was decreased as the BMI increased. The overweight group skipped dinner more frequently the other groups among male students. There was no significant difference in the scores of nutrition knowledge, nutritional attitude, and self -satisfaction of subjects with different BMI. The nutrient intakes of overweight group were the lowest among the three groups. In conclusion, obesity among female students may be related to family member\`s obesity. Also overweight students tend to have lower self satisfaction for their body image and undesirable food habits. Therefore, proper nutrition education is required to maintain desirable food habits for overweight students.
A survey was undertaken to investigate relationship between nutritional status and physical growth and behavior of school children. Dietary intakes, environmental factors, physical growth, personality, and cognitive development were measured in 323 children of 4 th and 6th grader in the urban and rural arcas. The results are summarized as follows : 1) The average intakes of the food groups and nutrients except ascorbic acid were lower in rural children. Comparing the intakes of the rural children with RDA of the Korean children, 64.0% of them in protein, 99.3% in calcium, 84.6% in iron, and 73.5% in riboflavin consumed less than 75% of RDA. Environmental factors were significantly related to the nutrient intakes 2) Height, weight, and head circumference were significantly related to the nutrient intakes. Retarded growth due to malnutrition was supposed in the $rural^{1)}$ area. 3) Some domains of personality were significantly related to nutrient intakes. 4) Environmental factors, physical growth, and nutrient intakes made independent contribution to variation in cognitive performance and their relative importance depended on the particular cognitive domain when stepwise multiple regression analyses were undertaken. Environmental stimulation was largely associated with verbal usage, and economic status and nutrient intakes with numerical reasoning. Above findings support that nutritional deprivation retards brain growth and performance on various cognitive dimensions of children. Therefore, amelioration of the several adverse social, economical, environmental influences as well as the improvement of dietary intake is required to bring about a substantial enhancement of the physical growth and the mental development of children.
The purpose of this study was to investigate the effects of relating factors on the nutrient intakes in elderly people aged over 85 years residing Namhae Kyungnam. The subject of this study was composed of 24 males and 76 females, the average age being 88.9±4.0 years old. The consumption of energy and most other nutrients was higher in females than males. There were significant positive correlations the education level, pocket money, self-perception of health and happiness, frequency and regularity of meal with nutrient intakes in elderly males and females. The smoking was negatively correlated with protein and niacin intakes(p<0.05). The alcohol drinking and sleeping hours were not significantly correlated with nutrient intakes.
The Dietary Reference Intakes (DRI's) are new nutrient intake standards that are being set for the United States and Canada. There are currently four types of DRI's: Estimated Average Requirements (EAR), Recommended Dietary Allowances (RDA), Adequate Intakes (AI), and Tolerable Upper Intake Levels (UL). The EAR is the nutrient intake that would be adequate for about half the population, while intake at the RDA should be adequate for 97-98% of the population. When the data are insufficient to set an EAR and RDA, then an AI is set. The UL is the highest intake level that does not pose a risk of adverse effects. The EAR, AI, and UL may be used to assess intakes of both individuals and of groups of people. For individuals, the EAR is used to calculate the probability that intake is inadequate, the AI is used to decide if the probability of inadequacy is low, and the UL is used to determine if a risk of excess intake is present. For groups. the EAR is used to estimate the prevalence of inadequacy, the AI is used to decide if the prevalence of inadequacy is low, and the UL is used to estimate the prevalence of excessive intakes. Because this approach to setting and applying nutrient standards is new, research recommendations include improving estimates of risk, improving dietary data, and improving statistical methods.
This study was accomplished to investigate the prevalence of obesity and the factors related to obesity of high school girls in the large cities from May 20 to July 10 1990. In this study, three hundred eighty nine high school girls were chosen from high schools located in Seoul and Inchon. Anthropometry including weight, height, and skinfold thickness (triceps) were measured, and dietary intakes were calculated according to food composition tables. Means of the obesity index, food pattern, nutrients intakes were compared by Pearson's correlation coefficient. Nutrient intakes of the groups categorized by tricep skinfold thickness were compared by means of Duncan's multiple range test. Prevalence of obesity was 16.7%, 3.6%, and 20.8% by criteria of skinflod thickness, BMI, and Rohrer Index, respectively. Most of the subjects had three meals and took snacks two times per day 23.9% of the subjects were taking nutrient supplements of which vitamin supplement was the most popular. Food habit of subjects such as frequency of snack and bedtime meal were positively related to fatness. Nutrient intakes of the obese groups classified by tricep skinfold thickness, tended to consume more calories than another tricep category groups. Therefore, it could be concluded that prevalence of obesity in this subject was higher than the one for the past years, and it was more profound in girls who had a poor food habits and high calorie intakes. Thus, these results suggested that a good food habits and adequate nutrient intakes are essential to prevent the obesity of high school girls.
