Comparison of Storage Stability, Volatile Compounds and Sensory Properties between Coarsely-and Finely-Marbled 1+ Grade Hanwoo Beef Loins

  • This study aimed at comparing the storage stability, fatty acids profile, volatile flavor compounds and eating quality of Hanwoo beef longissimus thoracis (LT) muscles between two marbling morphological groups (fineness and coarseness). The 1+ grade Hanwoo LT muscles were measured for marbling fleck morphology at the 13th thoracic vertebrae location by using computerized image analysis. Results reveal that both marbling groups had similar proximate composition (protein, fat, moisture and collagen), color and technological quality traits (p>0.05). However, the coarse marbling group presented greater C18:2n6 and polyunsaturated fatty acids contents compared to the fine marbling group (p<0.05). Furthermore, the fine marbling group presented lower volatile basic nitrogen (VBN) and 2-thiobarbituric acid reactive substance (TBARS) contents compared to the coarse marbling group after 14 d storage (p<0.05). Also, higher amounts of C18:2n6 oxidation-derived volatile compounds such as hexanal and 3-ethyl-2-methyl-1,3-hexadiene, were found in the coarse marbling group. In term of sensory aspects, the finely-marbled group received higher scores of flavor and taste compared to the coarse marbling group (p<0.05). Overall, the marbling flecks morphology partially showed its effects on the storage stability, fatty acids profile and eating quality of the 1+ grade Hanwoo beef LT muscle.

  • There are three major bonding types such as chemical bonding, thermal bonding, mechanical bonding to produce nonwoven fabrics. The development of the past few years has shown that the share of thermally bonded webs is growing steadily. The viability of the thermal bonding process is rooted in the price advantage obtained by lower energy costs. Mariannaea samuelsii Isolated from a Bark Beetle-Infested Elm Tree in Korea

  • During an investigation of fungi from an elm tree infested with bark beetles in Korea, one isolate, DUCC401, was isolated from elm wood. Based on morphological characteristics and phylogenetic analysis of the internal transcribed spacer and 28S rDNA (large subunit) sequences, the isolate, DUCC401, was identified as Mariannaea samuelsii. Mycelia of the fungus grew faster on malt extract agar than on potato dextrose agar and oatmeal agar media. Temperature and pH for optimal growth of fungal mycelia were 25oC and pH 7.0, respectively. The fungus demonstrated the capacity to degrade cellobiose, starch, and xylan. This is the first report on isolation of Mariannaea samuelsii in Korea.

지식 기반 프랑스어 발음열 생성 시스템 (A knowledge-based pronunciation generation system for French)

  • This paper aims to describe a knowledge-based pronunciation generation system for French. It has been reported that a rule-based pronunciation generation system outperforms most of the data-driven ones for French; however, only a few related studies are available due to existing language barriers. We provide basic information about the French language from the point of view of the relationship between orthography and pronunciation, and then describe our knowledge-based pronunciation generation system, which consists of morphological analysis, Part-of-Speech (POS) tagging, grapheme-to-phoneme generation, and phone-to-phone generation. The evaluation results show that the word error rate of POS tagging, based on a sample of 1,000 sentences, is 10.70% and that of phoneme generation, using 130,883 entries, is 2.70%. This study is expected to contribute to the development and evaluation of speech synthesis or speech recognition systems for French.

자성 Co-Ni 계 형상기억합금의 특성 (Characterization of Co-Ni Based Ferromagnetic Shape Memory Alloy)

  • The magnetic shape memory alloys have recently received a lot of attention due to the considerable progress achieved in understanding the particular importance and the development of the factors. Among these alloys, the ferromagnetic Co-Ni- alloys have been concerned specially because of the thermoelastic character of the fcc (g) - bct (a) martensitic transformation which exhibits under the action of the temperature (shape memory effect), the stress (superelasticity) and the magnetic field (magnetoelasticity). The morphological, the crystallographical, and the thermal characteristics of thermally induced martensite in Co-35.3Ni-11.3Al(wt.%) and Co-28.1Ni-47.4Fe-3.3Ti (wt.%) alloy have been investigated by the scanning electron microscope (SEM), the X-ray Diffraction (XRD), and the differential scanning calorimeter (DSC).

First Report of Two Colletotrichum Species Associated with Bitter Rot on Apple Fruit in Korea - C. fructicola and C. siamense

  • Bitter rot caused by the fungal genus Colletotrichum is a well-known, common disease of apple and causes significant yield loss. In 2013, six fungal strains were isolated from Fuji apple fruits exhibiting symptoms of bitter rot from Andong, Korea. These strains were identified as Colletotrichum fructicola and C. siamense based on morphological characteristics and multilocus sequence analysis of the internal transcribed spacer rDNA, actin, calmodulin, chitin synthase, and glyceraldehyde-3-phosphate dehydrogenase Pathogenicity tests confirmed the involvement of C. fructicola and C. siamense in the development of disease symptoms on apple fruits. This is the first report of C. fructicola and C. siamense causing bitter rot on apple fruit in Korea.

Morphological evolution of ZnO nanowires using varioussubstrates

  • In recent years, ZnO nanostructures have drawn considerable attentions for the development of futuristic electronic devices due to their superior structural and optical properties. As the growth of ZnO nanowires by MOCVD is a bottom-up technique, the nature of substrates has a vital role for the dimension and alignment of the nanowires. However, in the pursuit of next generation ZnO based nanodevices, it would be highly preferred if well-ordered ZnO nanowires could be obtained on various substrates like sapphire, silicon, glass etc. Vertically aligned nanowires were grown on A and C-plane sapphire substrates, where as nanopencils were obtained on R-plane sapphire substrates. In addition, C-axis oriented vertical nanowires were also found using an interfacial layer(aluminum nitride film) on silicon substrates. On the other hand, long nanowires were found on Ga-doped ZnO film on glass substrates. Structural and optical properties of the ZnO nanowires on various substrates were also investigated.

  • Endocrine disrupting chemicals probably cause the cytological or/and morphological changes of germinal cells in gonad. Accordingly, this study was aimed to make sure that the effect of hormone-mimicking chemicals on gonad morphology such as decrease of germinal cells, inhibition of cellular maturation and change in the ratio of germinal cells in the different developmental phase can be observed by histopathological procedures and can be a useful bio-indicator for the evaluation of endocrine disruption by environmental chemicals. In this experiment, female Japanese medaka were exposured to quercetin, a phytoestrogen, at the concentration of 100 $\mu\textrm{g}$/L. quercetin showed the significant decrease in the number and rate of vitellogenic follicular oocytes in the treated group for 4 and 6 weeks. The weak development of yolk could be also observed. We could conclude that quercetin has anti-estrogenic or androgen-like potency by exerting the inhibition effect on oogenesis in fish female- gonad. From the result of this study, the applied methods and techniques can be evaluated to be a useful biomonitoring means for water pollution, expecting a good result of the subsequent study on apoptosis.

  • Zeta potential measurement not only can provide surface information on colloidal biomaterials but more importantly can be used in bioprocess control and products quality control. In this study, zeta potentials for intracrystalline proteins of each layers from oyster shell prepared in 1mM NaCl at different pH were measured. Also, in forming calcite crystals with intracrystalline proteins as an additive extracted from oyster shell, the zeta potentials were measured. These studies were performed to verify the primary role of intracrystalline proteins in controlling the formation, morphological development and crystallography of the biocomposite.

  • The insect cuticle undergoes drastic morphological alterations during postembryonic development and is an extracellular structure composed mainly of chitin and proteins that are synthesized and secreted by epidermal cells.
